Characteristics and Nutritional Status of Elders Who Under-report Intake on 24 Hour Recalls in USA

  • The objectives of this study were to determine whether older Americans would provide valid energy intake information using a 24-hr recall method and to determine which characteristics were predictive of under-report of energy intake. We conducted 24-hour recalls on 83 male and 105 female community-dwelling older adults(66-87y) in the USA to assess energy(EI) and nutrient intakes. Basal metabolic rate(BMR) was calculated from age-and gender-specific equations of Schofield. Under-reporting was defined a priori as EI : BMR<0.9. Subjects volunteered demographic information, underwent depression and cognition exams, and completed a Level II Nutrition Risk Screen. Differences between under- and adequate-reporters were assessed using t-tests for characteristics and macro-nutrient profile. Stepwise regression analyses were used to predict under-reporting status. Under-reporting of EI occurred in 34% of the sample. Neither geriatric depression scale(GDS) score, nor self-reported weight loss were related to under-reporting. On average, under-reporters had higher body mass indices. The most significant variables for the main effect to predict the ratio of energy intake to estimated basal metabolic rate(EI : BMRest) were BMI and age. Using a standard cut-off of 76% of the recommended dietary allowances for Americans, under-reporters were consistently more likely to be classified as having inadequate nutrient, as well as energy, intakes. 1998년도 국민건강영양조사자료를 이용한 한국인의 경제수준별 끼니별 영양 및 식품섭취현황 (Nutrient and Food Intake of Koreans by the Economic Status and Meal Pattern Using 1998 Korean National Health Examination Nutrition Survey)

  • The objective of this study was to investigate difference in the diet by the kind of meal and the economic status. Nutrient contents at each meals were compared and differences in food intake at different meal were analyzed by economic status. Data from the 1998 Korean National Health Examination Nutrition Survey were used. Using the poverty line based on the 1998 Korean minimum cost of living, the subjects (n = 10400) were classified into high class (36.1%), middle class (40.7%) and low class (23.1 %). Most nutrient intakes were obtained for main meals regardless of economic status. For high class, breakfast, lunch, dinner and snacks bring about 21, 29, 30 and 19 % of total energy intake, for middle class 22, 29, 30 and 19% and for low class 24, 30, 30 and 16%, respectively. The high-middle class people tend to get more food intakes and nutrients at dinner and snacks, while the low class at main meals. This result was associated with the consumption of a smaller number of meals and a greater number of snacks daily as the economic level was going up (p 〈 0.05). Meals contributed to energy, protein and fat intake, and snacks to water, retinol and vitamin C. The food intakes by food group were different at meals by economic class. Seaweed product were popular breakfast foods in both middle and low groups. Thus three meals such as breakfast, lunch and dinner still delivered most of the energy and most of the macro-nutrients regardless of economic status.

  • Livestock production depends on the utilization of nutrients, and when this is accomplished, there is accelerated momentum toward growth with a low cost-to-feed ratio. Public concern over the consumption of pork with antibiotic residues in animals fed antibiotic growth promoters (AGP) has paved the way for using other natural additives to antibiotics, such as herbs and their products, probiotics, prebiotics, etc. Numerous feed additives are trending to achieve this goal, and a classic example is vitamins and minerals. Vitamins and minerals represent a relatively small percentage of the diet, but they are critical to animal health, well-being, and performance; both play a well-defined role in metabolism, and their requirements can vary depending on the physiological stage of the animals. At the same time, the absence of these vitamins and minerals in animal feed can impair the growth and development of muscles and bones. Most commercial feeds contain vitamins and trace minerals that meet nutrient requirements recommended by National Research Council and animal feeding standards. However, the potential variability and bioavailability of vitamins and trace elements in animal feeds remain controversial because daily feed intake varies, and vitamins are degraded by transportation, storage, and processing. Accordingly, the requirement for vitamins and minerals may need to be adjusted to reflect increased production levels, yet the information presented on this topic is still limited. Therefore, this review focuses on the role and function of different sources of minerals, the mode of action, the general need for micro and macro minerals in non-ruminant diets, and how they improve animal performance.

한국 중년여성의 전곡류 섭취수준과 영양소 섭취 및 대사적 위험지표의 연관성 (Association of Whole Grain Consumption with Nutrient Intakes and Metabolic Risk Factors in Generally Healthy Korean Middle-Aged Women)

  • Objectives: Epidemiological studies have suggested that a higher consumption of whole grain foods can significantly reduce the risk of chronic diseases including cardiovascular diseases, type 2 diabetes and obesity. The objective of the current study was to examine associations among the consumption of whole grains and nutrient intakes and biochemical indicators associated with chronic diseases among generally healthy middle-aged Korean women. Methods: Using 24-hour recall data from the 2008-2009 National Health and Nutrition Examination Surveys, whole grain intake (g/day) was calculated for a total of generally healthy 1,953 subjects. The subjects were divided into three groups by the level of whole grain consumption (0 g/day, > 0 and < 20 g/day or ${\geq}20g/day$). Mean values or proportions of various nutrient intakes and metabolic risk factors were compared according to the level of whole grain consumption. All statistical analysis was conducted using SAS software version 9.2. Results: We observed that the overall consumption of whole grains was quite low. Specifically, 58.2% of subjects reported no whole grain consumption on the day of the survey, and the mean whole grain intake was only 15.3 g/day. The whole grain consumption was positively associated with intakes of various macro and micronutrients, namely, plant proteins and fats, dietary fiber, calcium, plant iron, potassium, zinc, vitamin A, ${\beta}$-carotene, thiamin, riboflavin, niacin, vitamin $B_6$ and folic acid. In addition, we found significantly decreasing trends in abdominal obesity and hypertriglyceridemia as whole grain intake levels increase. Conclusions: The study findings suggested the importance of promoting whole grain consumption as an efficient tool for improving various dietary aspects and preventing chronic diseases.

Systematic Investigation of the Effects of Macro-elements and Iron on Soybean Plant Response to Fusarium oxysporum Infection

  • Nutrient manipulation is a promising strategy for controlling plant diseases in sustainable agriculture. Although many studies have investigated the relationships between certain elements and plant diseases, few have comprehensively explored how differing mineral nutrition levels might affect plant-fungal pathogen interactions, namely plant susceptibility and resistance. Here, we systematically explored the effects of the seven mineral elements that plants require in the greatest amounts for normal development on the susceptibility of soybean plants (Glycine max) to Fusarium oxysporum infection in controlled greenhouse conditions. Nitrogen (N) negligibly affected plant susceptibility to infection in the range 4 to 24 mM for both tested soybean cultivars. At relatively high concentrations, phosphorus (P) increased plant susceptibility to infection, which led to severely reduced shoot and root dry weights. Potassium (K), calcium (Ca), magnesium (Mg), sulfur (S), and iron (Fe) induced plant resistance to infection as their concentrations were increased. For K and Ca, moderate concentrations had a positive effect on plant resistance to the pathogen, whereas relatively high doses of either element adversely affected plant growth and promoted disease symptoms. Further experiments were conducted, assessing disease suppression by selected combinations of macro-elements and Fe at screened concentrations, i.e., K (9 mM) plus Fe (0.2 mM), and S (4 mM) plus Fe (0.2 mM). The disease index was significantly reduced by the combination of K plus Fe. In conclusion, this systematic investigation of soybean plant responses to F. oxysporum infection provides a solid basis for future environmentally-friendly choices for application in soybean disease control programs.

일부 지역 중학생 대상 일품요리의 대표영양가 산출 및 영양적정성 평가 (Representative Nutrients Contents and Nutritional Adequacy Evaluation of Single-Dish Meal for Middle School Students)

  • Objectives: With the increasing number of single households and so-called Honbab-jok, those who eat alone, people tend to enjoy convenient and simple meals, such as single dish meals. This study was performed to provide data on the energy and nutrient content, and nutritional adequacy of single-dish meal. Methods: From the literature reviews, 61 types of single-dish meals were selected, and divided into 4 groups (steamed rice, noodle, porridge, and sandwich burger), and a further 11 sub-groups (bibimbab, fried rice, topped rice, rolled rice/ warm noodle, cold noodle, seasoned noodle, dukgook/ porridge/, and sandwich, burger). In addition, 382 junior high school students from Gyeonggi, Sejong, Jeonbuk, and Chungnam areas were recruited for the survey. The survey questionnaires were composed of the characteristics, preference, and intake frequency of single-dish meals. The representative energy content (arithmetic mean) of single-dish meals were calculated, and compared with the energy contents of preference and intake frequency-weighted values adjusted. The representative nutrient contents, energy contribution ratio, and INQ (index of nutritional quality) of a single-dish meal were calculated for a nutritional adequacy evaluation. Results: The study subjects considered a single-dish meal as tasty, simple and fast to prepare, inexpensive, nutritious, and no low calorie food. The preference scores of all but 1 sub-group of singledish meals were ${\geq}5.00$ (5.00~5.97), and 1 sub-group (porridge) was 4.67 on a 7-point scale. The intake frequency of 11 sub-groups were 0.31~1.71/week, porridge was the lowest at 0.31 and warm noodles was the highest at 1.71. Fried rice, rolled rice, and warm noodle' intake frequency were ${\geq}1/week$. The representative energy of steamed rice, noodle, sandwich burger were 443, 429, and 428 kcal, respectively, and that of porridge was 264 kcal. Less than 5% differences in the representative energy of 4 groups were observed when adjusted for the preference or intake frequency-weighted values. The energy contribution ratio of macro-nutrients calculations showed that porridge was a high carbohydrate and low fat food, whereas sandwich burger were high fat and low carbohydrate foods. The INQ of calcium and vitamin C were less than 1.0 in all 4 food groups, but the INQ of protein and thiamin were > 1.0 in all 4 single-dish food groups. Conclusions: The representative energy in the 4 groups of single-dish meal was 264~450 kcal, which is a rather low calorie meal, and the energy contribution ratio of macro-nutrients were inadequate. The protein and thiamin levels were sufficient but the calcium and vitamin C levels were insufficient in all 4 groups of a single-dish meal judged by the INQ. The additional intake of fruits and milk dairy products between meals with a single-dish meal, supply of calcium and vitamin C may increase, which will result in an improved nutritional balance.

Detection of Foliar Nutrients of Oil Palm Crop Using Remote Sensing

  • This paper examines the capability of remote sensing technique for detecting and quantifying the foliar nutrients of oil palm crop. Study has been carried out in the Malaysian Palm Oil Board (MPOB) Research Station in Kluang Johore, Malaysia. Result of the study shows a strong relationship between measured foliar nutrient and the spectral reflectance measured using spectroradiometer. Model that has been developed can be used to estimate the nutrient concentration in the oil palm plantation at micro level and also at macro -level using appropriate satellite data.

  • A three year's field experiment was carried out on newly reclaimed tidal saline soils to evaluate the salt tolerance and growht characteristics, and their relationship to dry matter production and nutrient quality of main selected pasture species. Nine temperate grasses (14 varieties) and two forage crops (sorghum and pearl millet) were grown under different mulching treatments with medium sand and red-yellow soils (fine loamy materials of Typic Hapludults) from 1986 to 1988. Tall wheatgrass, tall fescue, reed canarygrass and alfalfa showed a good tolerance to soil salinity, especially tall wheatgrass (cv. Alkar) produced 19.6 ton/ha dry matter yield annualy under mulching treatment with medium sand depth in lcm. Pearl millet (cv. Gahi-3) was also evaluated as a salt tolerable forage species. Under salt stress in newly reclaimed tidal lands, plant showed a decrease in the assimirable leaf area (LA) as well as specific leaf area (SP. LA) and a low leaf weight ratio(LWR), and it resulted in a low concentration of crude protein and low digestible dry matter contents. Absorption of macro and micro elements in the plant on tidal lands was increased markedly.

Effect of N, P and K Fertilizers Application on Growth, Yield and Mineral Nutrient Content in Platycodon grandiflorum for. duplux

  • This study was carried out to investigate the effects of nitrogen, phosphorus, potassium (three main macro elements of fertilizer) on growth, yield and mineral contents of Platycodon grandiflorum for. duplux and to obtain the basic data of the proper fertilizer application for increasing the yield of P. grandiflorum for. duplux. Plant height showed significantly good results in all fertilization treatments compared to non fertilizer group (the control, T0), and in particular, the highest was 85.7 cm in the complete group (T4). Chlorophyll content showed a high amount in the range of 20.7 to 23.8 against all fertilization treatment groups, except for non fertilizer (T0) and non nitrogen (T1). The fresh weight of roots were higher quantity than other fertilization treatments in the complete group 55.8 g (T4). The mineral nutrient content ofNa, Mg, Cu and Al of the roots of P. grandiflorum for. duplux from T1 group showed the lowest amount compared to other groups. In addition, P from T2 group, Mn from T3 group and Ca, Fe, Zn from T4 group also exhibited the lowest mineral content compared to other groups respectively.

완전제어형 식물공장에서 저칼륨 상추 생산을 위한 적정 칼륨 농도 조성 및 처리시기 개발 (Development of Potassium Concentration of Nutrient and Supply Method for Low Potassium Lettuce Production in a Closed-type Plant Factory System)

  • 채소내의 칼륨은 만성 신부전 환자에게 악영향을 주는 것으로 알려져 있다. 하지만 채소는 많은 다른 영양 물질 또한 함유하고 있으므로, 이러한 환자들에게 채소의 섭취는 불가피하다. 본 연구는 완전제어형 식물공장에서 신장환자들을 위해 적합한 저칼륨 상추 개발을 위해 수행되었다. 본 연구에 사용된 상추 품종은 '찰스' 품종이었다. 완전제어형 식물공장에서 정식 후 28일간 수행되었으며, 광 환경은 LED (W:R, 9:1), 일장 16시간, $200{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ 이었고 재배 온도, 상대습도와 이산화탄소 농도는 각각 $15-21^{\circ}C$, 65%와 $600-650mg{\cdot}L^{-1}$ 이었다. 1차 실험에서 배양액은 수확 전 1주전과 2주전에 칼륨농도를 10%와 5%로 낮게 처리하였고, 이를 토대로 2차실험의 처리는 수확 전 2주전 5%, 1% 낮춘 처리와 원수로 재배한 처리였다. 식물체 내의 다량원소 분석을 위해 수확 후 ICP 분석을 하였으며 생체중과 엽수를 측정하였다. 실험 결과 식물체 내 칼륨함량은 대조구에 비해 2주전 처리에서 통계적으로 유의하게 낮았다. 생체중과 엽수는 대조구와 처리구에서 유의적인 차이를 보이지 않았으나 처리구간의 유의적인 차이는 있었다. 신장환자들의 채소섭취량을 고려했을 때, 저칼륨 상추 생산을 위한 적당한 칼륨농도 조성은 수확 2주전 1%와 5%로 낮춘 처리였다. 본 연구를 통해 양액 내 칼륨함량과 처리시리를 조절하여 신장환자를 위한 저칼륨 상추를 개발할 수 있었다.
