브랜드화된 돈육의 품질 특성 (Quality Properties of Brand Pork)

  • 시중에 유통 중인 브랜드 돈육의 품질 특성을 조사하기 위해 3개 브랜드(Y처리구 :재래돼지$\times$멧돼지, 맥강과 한약제 급여; J처리구 LY$\times$D, 무항생제, 생균제 급여; M처리구 :LY$\times$D)돈육 등심을 구매하여 품질 특성을 분석하였다. 수분과 조회분 함량은 Y처리구가 J와 M처리구에 비해 높았지만, 조지방 함량은 J처리구가 Y와 M처리구에 비해 현저하게 낮았다(p<0.05). Y처리구의 미경산돈이 거세돈보다 수분과 조지방 함량이 현저하게 높았다(p<0.05). Y 처리구의 미경산돈의 pH는 J와 M처리구의 미경산돈에 비해 현저하게 높았다(p<0.05).돈육의 L(명도)값과 W*(백색도)값은 Y처리구가 J와 M처리구에 비해 현저하게 낮았다(p<0.05). 조직 특성 중 탄력성은 J처리구가 Y와 M처리구에 비해 현저하게 높았다(p<0.05). 관능적 점수는 Y처리구가 J와 M처리구에 비해 높았고, M처리구의 미경산돈은 거세돈에 비해 다즙성이 현저하게 높았다(p<0.05).지방산 조성 중 linoleic acid와 arachidonic acid 함량은 Y처리구가 J와 M처리구에 비해 높았지만 palmitic acid, pamitoleic acid, stearic acid 및 oleic acid 함량은 낮았다. 포화지방산 함량은 Y처리구가 J와 M처리구에 비해 낮았지만, 불포화지방산, 필수지방산, 불포화지방산/포화지방산 비, 필수지방산/포화지방산 비 및 필수지방산/불포화지방산 비는 가장 높은 함량을 나타내었다. 성별 간에는 M처리구에서 거세돈이 미경산돈에 비해 stearic acid 함량이 현저하게 높았다(p<0.05). 이상의 결과를 종합해 볼 때 재래돼지$\times$멧돼지를 교잡하여 맥강과 한약재를 급여한 Y처리구가 J와 M처리구에 비해 육의 이화학 특성과 관능적 특성에서 우수한 것으로 나타났다.

Effect of all-trans retinoic acid on casein and fatty acid synthesis in MAC-T cells

  • Objective: Caseins and fatty acids of milk are synthesized and secreted by the epithelial cells of the mammary gland. All-trans retinoic acid (ATRA), an active metabolite of vitamin A, has been shown to promote mammary development. This study was conducted to determine the effect of ATRA on casein synthesis and fatty acid composition in MAC-T cells. Methods: MAC-T cells were allowed to differentiate for 4 d, treated with ATRA (0, 1.0, 1.5, and 2.0 μM), and incubated for 3 d. We analyzed the fatty acid composition, the mRNA expression of casein and fatty acid synthesis-related genes, and the phosphorylation of casein synthesis-related proteins of MAC-T cells by gas chromatography, quantitative polymerase chain reaction, and western blotting, respectively. Results: In MAC-T cells, ATRA increased the mRNA levels of αS1-casein and β-casein, janus kinase 2 (JAK2) and E74-like factor 5 of the signal transducer and activator of transcription 5 β (STAT5-β) pathway, ribosomal protein S6 kinase beta-1 (S6K1) and eukaryotic translation initiation factor 4E binding protein 1 of the mammalian target of rapamycin (mTOR) pathway, inhibited the mRNA expression of phosphoinositide 3-kinase and eukaryotic initiation factor 4E of the mTOR pathway, and promoted the phosphorylation of STAT5-β and S6K1 proteins. Additionally, ATRA increased the de novo synthesis of fatty acids, reduced the content of long-chain fatty acids, the ratio of monounsaturated fatty acids to saturated fatty acids (SFA), the ratio of polyunsaturated fatty acids (PUFA) to SFA, and the ratio of ω-6 to ω-3 PUFA. The mRNA levels of acetyl-CoA carboxylase 1, fatty acid synthase, lipoprotein lipase, stearoyl-CoA desaturase, peroxisome proliferator-activated receptor gamma, and sterol regulatory element-binding protein 1 (SREBP1) were enhanced by ATRA. Conclusion: ATRA promotes the synthesis of casein by regulating JAK2/STAT5 pathway and downstream mTOR signaling pathway, and it improves the fatty acid composition of MAC-T cells by regulating SREBP1-related genes.

어촌과 도시지역 여고생의 영양실태, 체조성 및 혈액성상에 관한 연구 (A Study on Nutrients Intakes, Body Composition and Hematological Status of High School Girls in Fishing and Urban Areas)

  • The purpose of this study was to examin height, weight and body composition nutrient intakes and serum lipids for high school girls in urban and fishing area. The subjects consisted of 78(44 fishing and 34 urban) high school girls aged in average 17.3 and 17 years. Their dietary intakes were assesed for 1 day by means of 24 hours dietary recall method. Concentrations of serum lipids, percentage of body fat and volume of total body water were measured. The mean energy intake of the subjects were 1431 ㎉ in fishing and 1659 ㎉ in urban area. The subjects in fishing area(urban) consumed 58(67) g protein, 27(36) g lipid, 459(634) mg calcium, 676(945) mg phosphorous, 11(14) mg iron, 786(574) RE retinol, 2.8(3.6) mg tocopherol, 0.9(1.0) mg thiamin, 1.2(1.1) mg riboflavin, 16.9(20.5) mg niacin and 64.1(92.8) mg ascorbic acid, respectively. Energy, calcium, iron and tocopherol intakes were lower than the Korean RDA in both girls. The mean percentage of fishing girls were 19.8% and significantly lower than 25.6% in urban. These values seem to fall in the desirable range in fishing girls, but high school girls in urban is seemed to overweight. The mean saturated fatty acid(SFA), monounsaturated fatty acid(MUFA), polyunsaturated fatty acid(PUFA) and dietary cholesterol(Chol) intakes were 7.3 g, 8.1 g, 7.2 g and 263 mg for fishing girls were 13.1 g, 12.1 g, 9.1 g and 216 mg for urban girls respectively. The fat, SFA and MUFA intakes in fishing girls were significantly lower than urban girls. The P/M/S ratio was 0.9/1.1/1 for fishing, was 0.7/0.9/1 for urban. The mean serum triglyceride(TG), total cholesterol, HDL cholesterol, LDL-cholesterol concentrations were 77.7(61.8) mg/dl, 124.5(142.3) mg/dl, 59.3(22.4) mg/dl and 49.6(107.8) mg/dl in fishing girls(urban girls), respectively. All of these values seem to fall in the desirable range but HDL-chlesterol concentrations in fishing girls were significantly higher than urban girls and LDL-cholesterol concentrations in fishing girls were significantly lower than urban girls. There were positive correlations between body fat percent and total cholesterol or LDL-cholesterol concentration : negative correlations between between body fat percent and HDL-cholesterol concentration : positive correlation between fat intake and LDL-cholesterol concentration : negative correlations between serum HDL-cholesterol concentration and fat or SFA or MUFA intakes. 우리나라 일부 초등학교 아동의 육류 및 생선 섭취수준에 따른 지방산 섭취양상과 혈청 지방산조성의 비교연구 (Dietary Fatty Acid Pattern and Serum Fatty Acid Composition of Korean Elementary School Children)

  • The purpose of this study was to investigate the pattern of individual fatty acid intake and to compare total serum lipid levels and total serum fatty acid composition of elementary school children in Seoul by fish and meat intakes. The subjects were divided into High-Fish / Low-Meat(HFLM, n=49) and Low-Fish/High-Meat(LFHM, n=47) group. The total energy from fat of HFLM and LFHM group was 22.0 and 30.0% respectively. The average intake of cholesterol was 237-287mg in HFLM group and 358-387mg in LFHM group. The average P/M/S ratio for all subjects was 1.1-1.4/1.1 - 1.2/1.0, which was very similar to desired ratio. The $\omega$6/$\omega$3 ratio of dietary fatty acids of HFLM and LFHM group were 8.0-10.9 and 18.9-29.3 respectively, which in case of LFHM group, was fat beyond the suggested range, 4/1 - 10.1. Serum lipid levels of all subjects fell within the normal range and there was no significant difference in serum lipid levels between HFLM and LFHM groups, except for HDL-cholesterol in upper grades(4th-6th grades). In lower grades(1st-3rd grades), serum PUFA composition of HFLM (40.8%) group was significantly higher than that of LFHM (38.3%) group (p<0.05) and SFA composition of HFLM(33.8%) was significantly lower than that of LFHM group, (p<0.001) between them. The $\omega$6/$\omega$3 ratio of serum fatty acid tended to be higher in LFHM than in HFLM group but there was no significant difference between two groups. This study suggests that the dietary fat pattern of growing children could affect the change in total serum fatty acid composition though it did not influence serum lipid levels significantly. Energy and EPA intakes were negatively correlated with HDL-cholesterol levels(p<0.05). Serum fatty acid compositions were more closely correlated with serum triglyceride(TG) levels than serum cholesterol levels. Especially, total SFA (p<0.001) and individual SFA, such as C14:0(p<0.001) and C16:0(p<0.001)compositions were positively correlated with serum TG levels, but stearic acid(p<0.01) was negatively correlated with it.

Protective Effects of Oleic Acid Against Palmitic Acid-Induced Apoptosis in Pancreatic AR42J Cells and Its Mechanisms

  • Palmitic acid (PAM), one of the most common saturated fatty acid (SFA) in animals and plants, has been shown to induce apoptosis in exocrine pancreatic AR42J cells. In this study, we investigated cellular mechanisms underlying protective effects of oleic acid (OLA) against the lipotoxic actions of PAM in AR42J cells. Exposure of cells to long-chain SFA induced apoptotic cell death determined by MTT cell viability assay and Hoechst staining. Co-treatment of OLA with PAM markedly protected cells against PAM-induced apoptosis. OLA significantly attenuated the PAM-induced increase in the levels of pro-apoptotic Bak protein, cleaved forms of apoptotic proteins (caspase-3, PARP). On the contrary, OLA restored the decreased levels of anti-apoptotic Bcl-2 family proteins (Bcl-2, Bcl-xL, and Mcl-1) in PAM-treated cells. OLA also induced up-regulation of the mRNA expression of Dgat2 and Cpt1 genes which are involved in triacylglycerol (TAG) synthesis and mitochondrial ${\beta}$-oxidation, respectively. Intracellular TAG accumulation was increased by OLA supplementation in accordance with enhanced expression of Dgat2 gene. These results indicate that restoration of anti-apoptotic/pro-apop-totic protein balance from apoptosis toward cell survival is involved in the cytoprotective effects of OLA against PAM-induced apoptosis in pancreatic AR42J cells. In addition, OLA-induced increase in TAG accumulation and up-regulation of Dgat2 and Cpt1 gene expressions may be possibly associated in part with the ability of OLA to protect cells from deleterious actions of PAM.

Alteration of the Fatty Acid Profile of Pork by Dietary Manipulation

  • This work was undertaken to study the effect of dietary fat source on the fatty acid profile of pork, and to evaluate the effect of inclusion of vitamin E in pig diets on lipid oxidation of pork tissue and processed pork products. Fifty-six pigs were allocated to four treatments, that included two dietary fat sources and two levels of vitamin E inclusion. Dietary fat was derived from either tallow, a source of saturated fatty acids (SFA), or from a mixture of soybean and linseed oils, which contain polyunsaturated fatty acids (PUFA). Vitamin E was included at either 0% or 0.011% of the diet. Growth and carcass characteristics were not affected by the dietary treatments. Dietary fat source affected the fatty acid profile of the longissimus muscle and subcutaneous fat tissue, with the PUFA diet resulting in significantly more polyunsaturated fatty acids in the tissues, and more favourable ratios of SFA to PUFA and C18:2 to C18:3 in terms of human health considerations. Lipid oxidation was significantly greater in tissues and processed products from PUFA-fed pigs. Inclusion of vitamin E in the diets, however, reduced the extent of lipid oxidation in the meat and meat products. Dietary manipulation of the fatty acid profile of pigs is an effective means of altering the fat composition of pork in order to provide human consumers with a healthy product. Vitamin E is effective as an antioxidant agent, particularly where processed products are concerned.

Changes in the Total Lipid, Neutral Lipid, Phospholipid and Fatty Acid Composition of Phospholipid Fractions during Pastirma Processing, a Dry-Cured Meat Product

  • Pastirma is a dry-cured meat product, produced from whole beef or water buffalo muscles. This study was carried out to investigate the effect of production stages (raw meat, after curing, after $2^{nd}$ drying and pastirma) on the total lipid, neutral lipid, phospholipid and fatty acid composition of phospholipid fraction of pastirma produced from beef M. Longissimus dorsi muscles. The pH and colour ($L^*$, $a^*$ and $b^*$) analyses were also performed in raw meat and pastirma. It was found that pastirma production stages had significant effects (p<0.01) on the total amounts of lipid, neutral lipid and phospholipid, and the highest amounts of lipid, neutral lipid and phospholipid were detected in pastirma. In pastirma, neutral lipid ratio was determined as $79.33{\pm}2.06%$ and phospholipid ratio as $20.67{\pm}2.06%$. Phospholipids was proportionately lower in pastirma than raw meat. Pastirma production stages affected pentadecanoic acid (15:1) (p<0.01), linoleic acid (18:2n-6) (p<0.05), ${\gamma}-linoleic$ acid (18:3n-6) (p<0.05), erucic acid (22:1n-9) (p<0.05), docosapentaenoic acid (22:5n-6) (p<0.05), total unsaturated fatty acid (${\Sigma}USFA$) (p<0.05) and total saturated fatty acid (${\Sigma}SFA$) (p<0.05) ratios of phospholipid fraction and also the moisture content (p<0.01). Pastirma process also affected pH and colour ($L^*$, $a^*$ and $b^*$) values (p<0.01), and these values were higher in pastirma than raw meat.

GENI 제어 프레임워크 연구 개발 동향 (Technology and Trends of GENI Control Framework)

  • GENI 인프라스트럭처의 기본 구조와 연구 개발 현황을 GENI 표준 규격 문서와 세부 구현 결과를 중심으로 정리한다. 최근 발표된 SFA 2.0과 GENI Aggregate Manager API 1.0을 참고하여 GENI 전체 시스템 구조와 이기종 플랫폼의 상호 연동을 위한 인터페이스를 살펴보고, 이러한 규격에 대해 GENI에서 제시하는 참조 구현(GCF, Omni), ProtoGENI의 AM/CM API 및 참조 구현인 ReferenceCM와 관련 도구도 간략히 정리한다. 마지막으로 최근 활발히 진행되는 페더레이션 관련 연구 동향도 살펴보고 향후 계획을 전망해 본다.

  • Total contents of fatty acid compositions such as SFA, MUFA, and PUFA affected the beef preference more for Korean consumers than for Australian consumers while most of fatty acids had no relationship with the beef preference for Australian consumers. Although variations in the absolute concentration and in the relative proportions of different fatty acids would affect the flavor profile, the effect of fatty acids on the preference for clustering depended more on consumer groups than on beef origin.
