Rheological and Pasting Properties of Naked Barley Flour as Modified by Guar, Xanthan, and Locust Bean Gums

  • To understand the effects of adding different gums (guar, xanthan, and locust bean gums) on naked barley flour (NBF), the rheological and pasting properties of NBF-gum mixtures were measured at different gum concentrations (0, 0.3, and 0.6% w/w). Steady shear rheological properties were determined by rheological parameters for power law and Casson models. All samples showed a clear trend of shear-thinning behavior (n=0.16~0.48) and had a non-Newtonian nature with yield stress. Consistency index, apparent viscosity, and yield stress values increased with an increase in gum concentration. Storage modulus values were more predominant than loss modulus values with all concentrations of gums. There is a more pronounced synergistic effect of elastic properties of NBF in the presence of xanthan gum. Rapid visco analyser pasting properties showed that the addition of gums resulted in a significant increase in the peak, breakdown, setback, and final viscosities, whereas the pasting temperature decreased.

미세캡슐화를 위한 분무건조 다당류의 특성 (Characteristics of Spray Dried Polysaccharides for Microencapsulation)

  • 미세캡슐화를 위한 기초 연구로 다양한 다당류의 점도를 측정하고, 분무건조법을 이용하여 미세캡슐을 제조하여 특성을 비교하였다. 10% maltodexrin의 점도는 2.2 mPa.s, 10% gum arabic은 9.2 mPa.s, 10% dextran은 13.0 mPa.s, 1% gum locust bean은 4660.0 mPa.s, 1% gum karaya는 77.0 mPa.s로 측정되었다. 분무건조기를 이용하여 제조한 각종 다당류의 미세캡슐을 전자현미경으로 관찰한 결과, gum arabic은 20%의 농도에 비하며 30%에서 입자가 크게 형성되었으나 40%에서는 섬유상의 늘어진 형태가 관찰되었다. Maltodextrin 30%메서 고른 분포의 원형 입자가 관찰되었으며, 40%의 농도에서는 다양한 크기의 입자가 뭉쳐서 관찰되었다. Dextran은 20%에서 구형의 캡슐이 골고루 관찰되었으나, 30%이상의 농초에 서는 섬유상의 형태가 관찰되었다. Gum arabic : maltodextrin (1:3, w/w) 경우에서는 20%, 30%, 40%농도에서 구형의 캡슐이 고르게 관찰되었고 농도가 높을수록 입자의 크기가 증가하였다.

Paenibacillus woosongensis의 만난분해 효소활성 (Mannanolytic Enzyme Activity of Paenibacillus woosongensis)

  • 만난의 분해활성을 갖는 Paenibacillus woosongensis의 배양 상등액으로부터 mannanase, ${\beta}$-mannosidase와 ${\alpha}$-galactosidase 활성이 관찰되었다. 배양상등액 내의 locust bean gum를 분해하는 mannanase는 pH 5.5와 $60^{\circ}C$, para-nitrophenyl-${\beta}$-D-mannopyranoside를 분해하는 ${\beta}$-mannosidase는 pH 6.5, $50^{\circ}C$, para-nitrophenyl-${\alpha}$-D-galactopyranoside를 분해하는 ${\alpha}$-galactosidase는 pH 6.0-6.5와 $50^{\circ}C$에서 각각 최대활성을 보였다. 배양상등액의 만난 분해효소는 mannotriose, mannotetraose, mannopentaose, mannohexaose와 같은 만노올리고당을 분해할 뿐 아니라 mannobiose도 분해하였다. 또한 melibiose, raffinose, stachyose 등의 ${\alpha}$-1,6 결합형 galacto-oligosaccharides를 분해하여 galactose를 생성하였다. 이러한 결과로 보아 P.woosongensis는 galactomannan을 완전히 분해하는데 필요한 3종류 효소를 모두 생산하는 것으로 판단된다.

Digestive Tolerance and Safety of an Anti-Regurgitation Formula Containing Locust Bean Gum, Prebiotics and Postbiotics: A Real-World Study

  • Purpose: Infant regurgitation is associated with other functional gastrointestinal disorders and signs and symptoms that have a major impact on the quality of life of infants and their families. This study evaluated the safety, tolerance, and real-world effectiveness of an anti-regurgitation formula containing locust bean gum (LBG), prebiotics, and postbiotics to alleviate digestive symptoms beyond regurgitation. Methods: This 3-month study involved infants with regurgitation requiring the prescription of an anti-regurgitation formula according to usual clinical practice. Outcomes included evaluation of the evolution of stool consistency and frequency; occurrence of colic, constipation, and diarrhea; and assessment of regurgitation severity. Infant crying, parental assessment of infant well-being, and parental satisfaction with the stool consistency were also evaluated. Results: In total, 190 infants (average age: 1.9±1.1 months) were included. After three months, stool frequency and consistency remained within the normal physiological range, with 82.7% of infants passing one or two stools per day and 90.4% passing loose or formed stools. There was no significant increase in the number of infants with diarrhea, whereas a decrease was observed in the number of infants with constipation after 1 month (p=0.001) and with colic after both 1 and 3 months (p<0.001). Regurgitation severity and crying decreased and parental satisfaction with stool consistency, formula acceptability, infant well-being, and sleep quality increased. Monitoring of adverse events did not reveal any safety concerns. Conclusion: Formulas containing LBG, prebiotics, and postbiotics were well tolerated and provided an effective strategy for managing infant regurgitation and gastrointestinal discomfort.

Development of Ready-to-Eat Bulgogi Sauce with No Change of Sensory Properties after High-Dose Irradiation

  • Viscosity is critically important for bulgogi sauce. However, exposure to irradiation may decrease the rheological properties of bulgogi sauce. This study was conducted to compare the effects of gamma irradiation (0-9 kGy) on viscosity, molecular weight, pH, reducing end level, and water solubility of xanthan gum, guar gum, and locust bean gum as thickening agents/stabilizers in bulgogi sauce. The physicochemical properties of all samples changed (p<0.05) from 3965 to 0 cP (viscosity), from 6048 to 28 kDa (molecular weight), from 5.79 to 4.62 (pH), from 0.13 mg/mL to 1.72 mg/mL (reducing end level), and from 6% to 87% (water solubility) following gamma irradiation. Viscosity after irradiation was most stable (p<0.05) in xanthan gum (from 1249 to 92 cP) compared with guar gum (from 3965 to 0 cP) and locust bean gum (from 1631 to 0 cP). The sensory properties (texture and taste) of bulgogi sauce prepared with xanthan gum (1%, w/w) were highly maintained (about 7.0-5.0) after high-dose irradiation of up to 40 kGy. These results indicate that xanthan gum can be effectively used as a thickening agent/stabilizer in bulgogi sauce, which had low viscosity after irradiation.

찹쌀 전분의 페이스팅/페이스트 특성 및 냉해동 안정성에 대한 잔탄검-로커스트콩검 혼합물의 영향 (Impact of Xanthan-locust Bean Gum Mixtures on Pasting/Paste Characteristics and Freeze-thaw Stabilities of Waxy Rice Starch)

  • 찹쌀 전분과 검(XAT, LBG, 및 XAT:LBG) 혼합물의 페이스팅 특성과 이들 페이스트의 점탄특성 및 냉해동 안정성을 조사하여 일반 쌀 전분(20% 수준의 아밀로오스 함유)의 물성을 대체할 수 있으며 낮은 냉해동 안정성을 개선할 수 있는 찹쌀 전분-검 혼합물의 조성을 제시하고자 하였다. 찹쌀 전분은 검(XAT 및 LBG) 및 검 혼합물(XAT:LBG)에 의해 건조중량 대비 19:1의 비율로 대체하여(총 고형분 함량 5%, w/w) 페이스팅 점도 특성을 조사하였을 때 찹쌀 전분-검 혼합물 내의 XAT 농도가 낮아질수록 찹쌀 전분의 페이스팅 온도에 근접하였다. 최고점도는 찹쌀 전분-XAT 혼합물에서 가장 낮았으며 XAT와 LBG를 75:25의 비율의 검 혼합물로 찹쌀 전분을 대체하였을 때(X075L025)가 가장 높았다. 또한 찹쌀 전분-XAT:LBG의 최고점도에서 최종점도 사이의 온도 프로파일 범위에서 찹쌀 전분만을 이용하였을 때보다 높은 수준의 페이스팅 점도를 나타내었다. 찹쌀 전분-검 혼합물 페이스트의 점탄특성은 찹쌀 전분-XAT:LBG (X050L050 및 X025L050) 페이스트들에 한해 5 rad/s의 높은 진동수에서 일반 쌀 전분 페이스트의 저장탄성률과 유사해졌다. 손실탄성률은 모든 찹쌀 전분-검 혼합물 페이스틀이 찹쌀 전분과 일반 쌀 전분들 보다 높은 수준을 나타내었다. 냉해동 안정성과 관련하여 일반 쌀 전분 페이스트에 비해 찹쌀 전분 및 찹쌀 전분-검 혼합물들이 높은 냉해동 안정성을 나타내었다. 이 중 찹쌀 전분-XAT와 찹쌀 전분-XAT:LBG (X075L025)가 7회의 냉해동 순환처리에도 syneresis 현상이 관찰되지 않았다. 모든 결과들을 고려할 때 일반 쌀 전분을 대체할 수 있는 찹쌀 전분-검 혼합물은 XAT와 LBG를 건조중량 비율로 50:50으로 혼합한 검 혼합물을 찹쌀 전분의 건조중량의 5% 수준으로 대체하는 것으로 판단되었다.

  • 약물 전달 시스템은 약물의 방출 프로파일, 흡수, 분배 및 제품의 효율성과 안전성, 환자의 편의성과 협조를 향상시키기 위한 제거를 개선하는 명백하게 보호화된 공식화 기술이다. 가장 일반적으로 쓰이는 transdermal 시스템은 다양한 종류의 기술을 사용하는 skin patch다. 다른 투약 방법과 달리, transdermal 시스템은 장기간 사용이 가능하다. 또한, 부작용이 생길 경우, 약물 투약의 중단이 가능하다. karaya gum and locust bean gum(LBG)/water-soluble chitosan oligomer(WSCO)과 같은 Polysaccharide를 TDS의 기본 물질로 선택하였다. 또한, 이 polymers들은 tacrine 물질, 강화제로 규정되어진다. 이러한 polysaccharide 중에서, karaya gum matrix의 침투율은 lipophilic drug in vitro 와 같은 tacrine 내에서 가장 빠르다. 우리는 glycerin, PEG 400, and PEG 800를 강화제로 사용하였다. 그러므로, transdermal의 tacrine 흡수율은 vehicle 구성을 바꿈으로써, 혹은 침투 강화제를 사용함으로써 향상되었을 것이다. 특히, vehicle이 스스로의 효과를 강화하는 것과 더불어, vehicle에 강화제를 첨가함으로써 높은 침투 효율이 얻어질 것으로 기대된다.

천연 Gum류를 이용한 생분해성 필름의 제조와 생체분해 (Biodegradation and Preparation of Biodegradable Film by using Natural Gums)

  • Gum is known as natural polymer. Biodegradable films were prepared by solution blend method in the weight ratio of natural gums(Xanthan, Locust bean, Guar) for the purpose of useful bioimplants. The possibility of bioimplants, which prepared from natural gums as a skin substitute was evaluated by measuring biodegradability. This biodegradable films were inserted in the back of rats and their of biodegradability were investigated by hematological change evaluation as a function of time to the biotransformation. Rats implantation test results showed that Guar induced increments of monocyte and basophil after 48 hours of implantation. And Locust bean showed increase of monocyte and neutrophile counts after 48 hours of implantation. And Xanthan induced decrease of monocyte and neutrophile at 24 hours after implantation. Guar and Locust showed high hemoglobin contents and hematocrit after 48 hours of implantation. Guar and Locust induced some suspects of incompatibility in the tissue after 48 hours, but three were little effects to the skin inflammation at 24 hours. These values of biodegradable films, which prepared from prepared from natural gums measured in this were some satisfiable results at short period with those of ideal skin bioimplants.

다당류를 이용한 중금속 이온의 흡착특성 비교

  • Polysaccharides are very effective adsorbents for heavy metals. In this study, the adsorption characteristics of various polysaccharides for heavy metal adsorption were investigated. Tested polysaccharides were homogeneous polysaccharides such as curdlan, chitin, starch, cellulose, Avicel, and Solka floc and heterogeneous polysaccharides such as zooglan, locust bean gum, ghatti gum, pectin, and xylan. Lead(II) adsoption characteristic on these polysaccharides followed Freundlich isotherm and the isotherm parameters were calculated. For adsorption of lead(ll), Avicel, starch, and zooglan were found to be good adsorbents.

Studies on the Optimum Models of the Dairy Product Kou Woan Lao Using Response Surface Methodology

  • Kou Woan Lao is an oriental-style dairy product, which is coagulated by milk-clotting enzyme from the culture filtrate of lao-chao. The product appears smooth, sweet, slightly wine flavour, and the flavour differs from yogurt. The aim of this study was to search for the optimum model to shorten the period of manufacture, and to improve the quality of Kou Woan Lao. A response surface design was used for studying the effects of addition of carrageenan, locust bean gum, and culture filtrate from lao-chao on the curd firmness, viscosity, and syneresis. Results indicated that the best rheological property, preservative quality and acceptability of Kou Woan Lao could be obtained by the combination of 0.22% carrageenan, 0.21 % locust bean gum and 12% culture filtrate from lao-chao. The curd firmness, viscosity and syneresis of resultant product were 29.3 g, 21,347.7 cps, and 8.92%, respectively and the microstructure of the curd revealed a relatively complete three-dimensional spider web-like structure.
