This study was conducted in order to better understand the local and specialty foods of the Yeong-ju region. This study provides basic data for new menu development and commercialization. The results of 384 surveys, which were conducted to determine traditional rice cake production methods and their traits, were analyzed. Samgyetang was ranked top in the survey on recognition, public interest, and frequency of the local foods. Dakjuk was ranked second, followed by Baechujeon and Bopguk, in order. The levels of recognition and preference of specialty foods were in the order of hasuo, peach, apple, and meat. Among the answers in the survey on the popularization and commercialization of local foods, changing of the cooking style for younger generations' taste was considered to be the most important. Holding events to promote regional specialty foods and initiate the public to traditional cooking styles were listed sequentially by importance. The survey results show that promotion of local foods through education, and as well as incorporation of new ingredients are both highly effective ways to commercialize local foods for tourism. The results also indicate that taste, nutrition, and appearance of food should be considered in order to improve quality.
The purpose of this study was to categorize and comparatively analyze tourists of different life-style groups who visit Yesan according to their lifestyles as well as their consumption behaviors and attitudes towards local foods or specialty agricultural products in order to understand the various needs, attitudes, and behaviors of consumers in each life-style group. Group 1 had a high percentage of single people in their 20s and those who worked in technology. Group 2 had a high percentage of those in their 30s and 40s who were married and were professionals. Group 3 had a high percentage of men and those in their 40s and 50s, as well as a high percentage of high income, highly educated people. Group 4 had a high percentage of those in their 20s or those in their 60s or higher. Compared to other groups, group 4 had a larger percentage of lower income and less educated people. In verifying the difference between life-style groups in terms of their behaviors and attitudes toward local foods and specialty agricultural products, consumption and experience of regional specialty foods showed high average scores in groups 1, 2, and 3, with significant differences from group 4.
According to the definition of 'native local food', Jeju has combined its regional specialty products with its own cooking method. It has almost four-hundred kinds, which reflects regional specialty and diversity, yet it is not very well-known. Thus, this present study provides basic research information through the investigation of tourist awareness, intention to consume, drawbacks, development necessity and direction of development of Jeju local foods. The survey was conducted with 295 domestic tourists who had visited Jeju in the last 10 years. In response to a question asked about the consciousness of Jeju local foods, 67.8% of respondents chose average, indicating a relatively high cause for concern. Intention to consume averaged 3.26, which was higher than tourist awareness, having an average of 2.60. Furthermore, local food interest and demographic characteristics of respondents were found to have an influence on tourist awareness and intention to consume. 87.8% of respondents answered above average with respect to the drawbacks of Jeju's local foods and development necessity and direction, with the main drawbacks being lack of PR (43.1%) and high price (39.0%). The priority of most respondents was the quality and taste of the food (50.8%). Based on the results of this study, if tourist awareness can be effectively increased, an escalation in intent to consume will follow, naturally promoting the consumption of Jeju's local foods. Consequentially, for tourism commercialization, the quality and taste of the foods have to be improved in addition to the gain in popularity through efficient PR methods.
The purpose of this study was to investigate the effect of local food selection attributes on customer satisfaction and behavioral intention. The purpose of this study was to investigate the effect of local food selection attributes, customer satisfaction, Respectively. The purpose of this study is to investigate the relationship between the variables and the structure of each variable through literature review. The questionnaire survey was conducted on 249 consumers who used specialty food through local food restaurants and local festivals in Gangneung. Respectively. Data were analyzed by frequency, exploratory factor analysis, reliability analysis, correlation analysis, and regression analysis using SPSS 20.0 statistical program. The purpose of this study is to identify the factors that select local specialty foods and to provide them as basic data for increasing the number of tourists through local specialty foods and revitalizing the local economy. I would like to present a marketing strategy. In particular, consumers who have used local specialty foods must come up with a marketing strategy that will maximize customer satisfaction, and it is necessary to revitalize the taste, quality, and best service of food.
The purpose of this research was to develop healing food dishes for the vitalization of forest healing tourism in agricultural areas by enhancing satisfaction of food experiences by visitors to Mount Chungnyeong, Jangseong. Results from site visitation by three professors from food-related departments, association opinions, Jangseong-gun policies, and research materials relating to healing foods were applied for the preparatory experimental cooking, and the final dishes were selected through a food demonstration event. As a result of observation during the site visitation, the main dishes of the subject restaurant appeared to be limited to Samchae Bibimbap, Samchae Ddeokgabi, and Korean set menu items, revealing a limited selection for tourists and referencing a failure to induce customer attraction and long-term stay. Development of a menu conforming to the image of forest healing at Mount Chungnyeong is desperately needed. As a result of applying the results of the surveys from visitors to Mount Chungnyeong, the types of dishes preferred appeared to be Korean table d'hote and Bibimbap, and pork was preferred as the $entr{\acute{e}}e$. The characteristics of preferred dishes appeared to be based on tradition and regionality. Thus, Forest Healing Savory Dish, Yellow Health Dish, and Samchae Kalguksu applying the policy direction of the Yellow City, Jangseong-gun and the image of Jangseong-gun based on Confucianism were developed. Tourists may further enhance the effectiveness of forest healing through foods based on dishes by adding traditional taste using seasonal food ingredients and local specialties, which can contribute to the vitalization of forest healing tourism.

The survey was conducted using 266 consumers who have heard about or purchased local foods and eco-friendly foods centering on Seoul and Gyeonggi-do, and statistical analysis was carried out using SPSS (Version 23.0) to generate descriptive statistical values such as frequency and percentage and implement a Chi-square test. The results showed that consumers purchased local food in large shopping malls, supermarkets, and local food stores, whereas eco-friendly food were usually bought in large shopping malls, supermarkets, and eco-friendly food specialty stores. For local food, consumers bought fruits the most, followed by vegetables, whereas for eco-friendly food, consumers purchased vegetables the most, followed by fruits. The top reason for purchasing local food was its "fresh and high quality," whereas the top reason for buying eco-friendly food was "safety from pesticides and additives." According to results of the Chi-square test, women, unmarried people and younger people turned out to have more experiences in purchasing local foods and eco-friendly foods compared to men, married people and older people, respectively. Although local and eco-friendly food were completely different concepts, results of the study show that consumers were not able to make a clear distinction between the two. Consumer education, therefore, should involve defining the two types of food and spreading awareness on local and organic food to help them made the right choices when buying food.

Tasmania with its clean air, isolated from mainland Australia, has been producing high-quality agricultural products and has been continually developing organic farming since 1946 when the Living Soil Association of Tasmania(LSAT) was established. The organic farming movement in Tasmania has been actively advocated through three steps: the philosophical embryonic period, the movement diffusion period and the industrialised development period. The campaigns for informing about the connection between healthy soil and life unfolded during the embryonic period. This was followed by the birth of publicity of organic farming and the certification system through the dissemination of organic farming techniques and various events related to agriculture in the diffusion period when the Organic Gardening and Farming Society(OGFS) was established in 1972. In the industrialised development period, The Organic Coalition of Tasmania (OCT) which is representative of Tasmania was organised in 2000 and has been leading the organic farming industry. The organic farming movement in Tasmania not only limits the use of artificial agricultural chemical but pursues the quality of food, environment, the health of life including all animals and plants, the issue of development in rural society, social justice, and equity in understanding. It is far more holistic in its philosophy. The output of organic food accounts for 1 % of the total amount of agricultural production and 150 certified organic farms have managed with 5,000ha of land in 2010. The supply channels for organic foods vary from farmer's market, specialty stores, supermarket chains, local store to the cooperative community. Also the consumers' behaviour for organic foods has been establishing as an alternative life style. The education of the value and role of organic farming on the environment should be enlarged for the consumption of the organic food. In addition, organising for small farmers who act individually and the link with differentiated local food have still remained issues.
The purpose of this study is to investigate consumer perception and importance of food tourism properties and performance of the properties in Sangju province of Gyeongsangbuk-do. The study has found that persons who have food tourism experiences (75 persons, 50.7%) had slightly more than not experience persons (72 persons, 48.6%). Additionally, most of the respondents were usually satisfied with the local foods. Also, it was found that food tourism had been taken 1-2 times per 6 months (48 persons, 64.0%) on average, and 135 persons (91.2%) had intention of experiencing food tourism. According to the result of Importance-Performance Analysis (IPA) on consumers' food tourism properties, high importance was on 'There are attractive landscapes.' ($4.52\;{\pm}\;0.56$), 'Accommodations with reasonable price.' ($4.18\;{\pm}\;0.80$), and 'The food of the area is famous.' ($4.15\;{\pm}\;0.73$); and the properties such as 'There are local specialty shops or markets selling local produce.' ($3.03\;{\pm}\;0.83$), 'The climate is temperate.' ($3.03\;{\pm}\;0.87$), and 'There are attractive landscapes.' ($3.02\;{\pm}\;0.98$) showed average performance. A factor analysis about consumers' importances to the food tourism properties shows that the factors were divided into four kinds and each of the factors were named as 'convenience-stable propensity', 'valued-oriented propensity', 'adventurous-aggressive propensity' and 'traditional-active propensity'. Variance ratios of each factor were 22.319%, 10.286%, 8.723% and 6.239%, respectively. According to the result of a reliability analysis, Cronbach's alpha value was 0.8621, implying that reliability of each item was very high. Therefore, it is considered that development of food tourism products and promotion strategies therefore should be designed based on the importance of food tourism properties hereafter.
