The effect of temperature and ethanol concentration on lipids yield and free fatty acids were investigated during 1-5 times of 8 hours extraction. The crude lipids recovered was generally increased as the ethanol concentration increased while it was decreased at higher extraction temperature. Fatty acids composition in free fatty acids showed linoleum and plasmatic acids to be the major fatty acids, accounting 60% of 16 fatty acids identified. Fatty acids pattern was little affected by the changes in ethanol concentration while increase in temperature resulted significant changes in fatty acids composition.
An attempt was made to investigate free and bound lipid contents and fatty acid compositions of ginseng and its eveven kinds related crude drugs. Contents of free and bound lipids of ginseng were 1.23% and 0.47%, and those of the related crude drugs were $0.31{\sim}13.05%$ and $0.26respectively. Fourteen even-numbered and 4 odd-numbered fatty acids were identified by GLC in those lipids from ginseng, and the major fatty acids were linoleic, palmitic, oleic and linolenic acids. The crude drugs are notably different from ginseng in kinds and compositions of fatty acids of free and bound lipids. Composition ratios of unsaturated fatty acids were higher in free lipids from ginseng than those of the crude drugs except 'Won-ji' Polygalae Radix.
The Lipids content of sea mussels was studied and the composition of neutral lipids, glycolipids, and phospholipids were analyzed for the sea mussels obtained from Pusan area in Korea. Fatty acids were found in roder of neutral lipid, phospholipid and glycolipid. total lipids and fatty acids were appeared higher in Mytilus edulis then Mytilus cosuscus. The neutral lipids showed to be approximately 50% of 새심 lipids in Mytilus coruscus and mytilus edulis. The phospholipids showed no significant differences between male and female of Mytilus edulis. The major fatty acids were consisted of C 16 : 0, C16 : 1, C18 ; 1 and C22: 6 in order. The level of C16 :0 with saturated acid was highest in lipids. The level of C18 :1 . C18 :2, C22 : 6 were higher in Mutilus edulis than Mytilus coruscus. $\omega$$_3$ High unsaturated fatty acid essential fatty acids C20 : 5, C22 ; 6 were higher in Mytilus edulis than Mytilus coruscus.

The objective of this study was to analyze fatty acid composition in lipids extracted from bullfrogs (Rana catesbeiana Shaw) inhabiting in Korea. Lipid contents in bullfrog legs and bodies were less than 1% (w/w, wet basis) and seasonal variation of the lipid contents was not observed. Lipids in bullfrog legs consisted of 26~31% (w/w) saturated fatty acids, 16~24% monounsaturated fatty acids, and 30~40% polyunsaturated fatty acids. Lipids in bullfrog bodies consisted of 23~28% saturated fatty acids, 29~44% monounsaturated fatty acids, and 16~30% polyunsaturated fatty acids. The major fatty acids in lipids extracted from bullfrogs were palmitic acid, oleic acid, and linoleic acid. Lipids in leg muscles contained 3~8% eicosapentaenoic acid (EPA) and 6~10% docosahexaenoic acid (DHA). Lipids in bodies had 1~3% EPA and 1~3% DHA.

The needles and pollen of Pinus densiflora and Pinus koraiensis were studied for their lipid contents and fatty acid composition. The total lipid contents in needles of Pinus densiflora and Pinus koraiensis were 5.0 and 4.5%, whereas in pollen of Pinus densiflora and Pinus koraiensis 3.5 and 5.6%, respectively. Twenty-four fatty acids ranged from lauric acid to docosahexaenoic acid(22:6${\omega}$3) were identified in the needle lipids. In needles, linolenic acid and palmitic acid were the major fatty acids. The needles of Pinus densiflora showed higher proportions of docosahexaenoic acid and 5-olefinic nonmethylene-interrupted polyenoic acids than those in the Pinus koraiensis. Twenty fatty acids ranged from myristic acid to lignoceric acid were identified in the pollen lipids. Linoleic acid was the major fatty acid in the pollen followed by oleic and palmitic acid. The fatty acid profile of pollen of Pinus densiflora was similar to those of the Pinus koraiensis pollen lipids.
Lipids were extracted from marine rotifer, Brachionus rotundiformis in order to examine the functionality of lipid enzymatic modification. The fatty acids, palmitic, linoleic, oleic and stearic acids were the dominant forms accounting for approximately 35.8%, 21.5%, 15.9% and 7.7% of the total lipid content, respectively. Lipid fractions were categorized as neutral lipids (38.5%), glycolipids (45.9%) and phospholipids (17.6%), and after extraction from the rotifer were isolated by thin-layer chromatography (TLC) as free fatty acids (FFA), monoacylglycerol (MAG), diacylglycerol (DAG) and triacylglycerol (TAG). The production of polyunsaturated fatty acid (PUFA) concentrate from rotifer lipids was studied using lipase-catalyzed hydrolysis. In addition, rotifer lipids were modified by hydrolysis using lipases such as porcine pancreas, Candida rugosa and Rhizomucor miehei. The lipase from Rhizomucor miehei was effective in extracting linoleic acid (C 18:2), while the lipase from Candida rugosa was effective in palmitic acid (C16:0) extraction.

Lipid composition and fatty acid composition were characterized in the membrane of a marine ciliate protozoan (Uronema marinum). Phospholipids accounted for 70% of total lipid, and the remainder was neutral lipids. Total phospholipids were separated as phosphatidylcholine $(24.26\%)$, phosphatidylethanolamine $(22.21\%)$, phosphatidylinositol $(6.14\%)$, phosphatidylserne $(5.11\%)$, cardiolipin $(3.07\%)$ and unidentified phospholipids $(28.72\%)$ through high performance liquid chromatography (HPLC). Fatty acid composition of neutral lipids and phospholipids was determined by gas chromatography (GC), based solely on comparision of retention times. In neutral lipids, the most abundant fatty acid group was monounsaturated fatty acid $(48.3\% of total fatty acids)$ with oleic acid (18:1) and nervonic acid (24:1). Saturated fatty acids comprised $29.6\%$ of total fatty acids, with palmitic acid (16:0), stearic acid (18:0) ane myristic acid (14:0), and polyunsaturated fatty acid accounted for $33.0\%$ with $Di-homo-\gamma-linolenic$ acid (20:3) and linoleic acid (18:2). Wherease phospholipids predominantly contained the fatty acid group in the following order: polyunsaturated fatty acids $(52.7\%\;of\;total\;fatty\;acids)$ with linoleic acid (18:2) and $\gamma-linolenic$ acid (18:3) > monounsaturated fatty acids $(28.5\%\;of\;total\;fatty\;acids)$ with oleic acid (18:1) and palmitoleic acid (16:1) > saturated fatty acids $(25.5\%\;of\;total\;fatty\;acids)$ with palmitic acid (16:0), stearic acid (18:0) and myristic acid (14:0).
The lipids of a Korean native blood-sucking leech (Hirudo nipponia) were isolated and analyzed. Cholesterol, fatty acids, triglycerides, glycerylether diester and cholesteryl esters were found from epidennal extracts. The major fatty acids in the leech skin were $C_{16:0}$, $C_{18:0}$, $C_{20:1}$. $C_{20:3}$ components. These components were derived from cholesteryl esters, glycerides, fatty acids and other polar lipids. After 60 days fasting, cholesterol, fatty acids and triglycerides in the skin were reduced in number and the total fatty acid composition was changed slightly. The data of total fatty acids in fasted and fed leech showed that medium-chain fatty acids were more affected than long-chain fatty acids. Other trace fatty acids appeared to be decreased by fasting.

The effects of procedures for preparation of fatty acid methyl esters for gas chromatography were investigated. A quantitative comparison of four procedures for the preparation of the fatty acid methyl esters from Korean sesame seed lipids which can be representative of fatty acid ranges of Korean vegetable oils has been made. The procedures employed were $BF_3$-methanol, HCI-methanol, sodium methoxide-methanol, and tetramethylammonium hydroxide-methanol. Twelve fatty acids ranged from 14:0 to 24:0 were identified in the lipids from Korean white and black sesame seeds. All four procedures gave similar results for the fatty acids, 16:0, 18:0, 18:1, 18:2, and 18:3 present in the range of $1{\sim}44%$ but only in the HCI-methanol procedure, the fatty acids, 16:1, 20:0, 22:0, 24:0 present in the range of $0.02{\sim}1%$ showed the lowest values. When using tetramethylammonium hydroxide-methanol procedure for determination of total fatty acid composition from white and black sesame seed lipids, unsaponifiable matters including sesamol, sesamolin and sesamin present in the seed lipids are not removed from the resulting reaction mixture. Thus the transesterification mixture is used without further treatment for injection into the gas chromatography. However, the gas chromatographic analysis of the transesterification mixture showed that the unsaponifiable matters had no effect on the fatty acid composition of the seed lipids. From the results, it appears that the $BF_3$-methanol, sodium methoxide-methanol and tetramethylammonium hydroxide-methanol procedures can be used to prepare fatty acid methyl esters from Korean vegetable oils. Among the methods, the tetramethylammonium hydroxide-methanol procedure, which give total fatty acid composition, glyceride fatty acid composition and composition of free fatty acids present, appears to be a simple, convenient and quantitative procedure and applicable to samples containing broad ranges of fatty acids.
This study was conducted to compare the lipid content and fatty acid composition of the Korean breast milk produced at 1, 2 and 3 months postpartum with the infant formula produced in Korea. The content of total lipids of the breast milk was low compared with the other data of Korean as well as foreign breast milk, and the content tended to reduce during the progress of lactation. The composition of fatty acids of the breast milk was characterized by low saturated fatty acids(SFA) and high $\omega$3 series of polyunsaturated fatty acids (PUFA), especially 20:5 and 22:6, so the P/S and $\omega$6/$\omega$3 rations were high. The formulas had more total lipids, triglycerides(TG) and phospholipids and less cholesterol(CHOL) and free fatty acids than the breast milk. The cholesterol content of the formulas was around 50% of that of the breast milk, so the CHOL/TG ratio was low. Although the formulas varied in fatty acid composition, the formulas had more SFA and $\omega$6 series of PUFA, but less monounsaturated fatty acids and $\omega$3 series of PUFA than the breast milk. This study shows that there are some differences in lipid content and fatty acid composition between breast milk and infant formula. Therefore, further studies needed to investigate the physiological effect of this difference on lipid metabolism of infants.
