어성초의 화학적 특성과 휘발성 향기성분 추출물의 항균효과 (Chemical Characterization and Antibacterial Effect of Volatile Flavor Concentrate from Houttyunia cordata Thunb)

  • SDE연속추출장치로 추출, 농축한 어성초 휘발성 향기성분 추출물이 15종의 병원성 세균에 대한 항균활성을 측정한 결과는 다음과 같았다. 어성초의 추출물은 주로 Vibrio와 Bacillus속의 세균들에 대해 강한 항균활성을 나타냈고, S. aureus와 epidermidis, S. dysenteriae, C. xerosis, L. monocytogenes에도 비교적 높은 활성을 나타냈다. 하지만 E. coli, S. typhi, E. cloaceae, Y. enterocolitica와 같은 세균들은 어성초 휘발성 향기성분 농축물에 저항성을 가지는 것으로 나타났다. 어성초의 잎과 줄기에 대한 일반성분 중 수분, 조단백질, 조지방, 조회분은 잎에 많이 함유되어 있고 조섬유는 줄기에 많이 함유되어 있었다. 잎에서 9종의 유리아미노산이 검출되었고, 줄기에서는 8종의 유리아미노산이 총 8.81 mg/l00 g 으로 더욱 많이 검출되었다. 지방산조성을 분석한 결과 잎과 줄기에 linolenic acid (C18:3), linoleic acid (C18:2), palmitic acid (C16:0)이 다량 함유되어 있다. 무기성분 중 잎과 줄기에서 K의 함량이 가장 많았고 Ca, P, Mg, Fe, Zn, Cu의 순으로 많이 함유되어 있었다.

  • Many studies have showen that Letinus edodes have a reducing effects on blood pressure and lipid levels in animals with high blood pressure and hyperlipidemia. But the only cap has been on the market as goods and the stipe has been wasted. The price is very variable and is based on harvest time and the part of the plant currenty, there is not much information about the nutritional composition and bio-fuctional effects of Letinus edodes based on harvest time and part. Some farmers have been selling the powder seasoning by drying and pulverizing Letinus edodes including stipe to develop value added, late harvested Letinus edodes and its stipe these days. This study was conducted to investigate and compare the nutritional composition of Letinus edodes harvested at different times (early: E, late: L) and separated by part (cap: C, stipe: S). The 4 kinds of materials were named as early harvested cap (EC) and stipe (ES), and late harvested cap (LC) and stipe (LS) samples were obtained from Mungyeong City Agricultural Technology & Extension Center. The composition analysis of the nutrients in the 4 materials was conducted by using the AOAC method. The proximate components (moisture, protein, fat, fiber, ash, and carbohydrates), minerals and vitamin content were measured. Nutritional composition of Lentinus edodes did not show any significant difference between early and late harvested mushrooms. Nutritional compositions were different according to part. The results demonstrate that the late harvested stipe can also be used as a quality food material.

도토리에 대한 국내의 연구 동향 (A Study on the Literature Review of Acorn in Korea)

  • This study was surveyed and compiled the contribution about acorn in korea .the physico-chemical properties of acorn and acorn starch. preparation of acorn starch and elimination of the acorn tannin, the rheological properties of acorn starch gel. Nutrition of acorn and antioxidative activity of tannin in acorn extract. The result obtained were as follow. 1. The chemical compositions of acorn were water 6.5∼13.7%, crude ash 1.9∼3.4%, crude fat 1.1∼5.0%, crude protein 5.8∼7.8%, crude fiber 2.1∼3.6%, N-free extract 71∼77.5%, total tannin 4.6∼9.3%, Ca 92.7∼460.9mg%, p 80.0∼740.9mg%, Na 66.2∼93.9 mg%, and K 867.9∼983.1mg%. 2. The acorn tannin was extracted with water, acetone, and ethanol. The generation method was wash SE settling method with water. 3. The shape of acorn starch granule was rounded triangular and some elliptical, rasing power 12.4∼12.5, Blue value 0.43∼0.47, Alkali number 10.8∼11.3, Amount of Arnylose 28.8∼30.50% Tannin contents on the initial go tim-zation temperature of acorn starch were not influenced but maximum and cooling viscosity o the acorn starch were decreased. 4. Nutritional effect and diet absorption rate were not influence, by rice and 20% T-A(elimination of tannin from the acorn) mixed diet, and the content of lipid in s rum were not influenced by rice 40% and T-A (elimination of tannin from the acorn) mixed diet. 5. jallic acid, digallic acid, gallotannin were contained in acorn powder extract. The main antioxidative : stlvity was speculated due to the gallic acid.

마(麻)의 품종별 영양성분 및 Diosgenin 함량 (Contents of Nutritional Ingredients and Diosgenin in the Tubers of Different Dioscorea spp.)

  • The principal objective of this study was to determine the available components in different varieties of Discorea spp. The Discorea spp. samples were divided into three groups by variety. The three groups were divided into Jangma(D. batatas Decaisne), Danma(D. japonica Decaisne), and Doonggunma(D. opposita Thumb), and then assessed with regard to the content of proximate compositions, minerals, sugars, crude saponin, and diosgenin. No substantial differences were noted to exist among samples in terms of carbohydrate and crude protein contents. The crude lipid contents were detected in the following order : Danma(D. japonica Decaisne, $0.71{\pm}0.15%$) > Jangma(D. batatas Decaisne, $0.65{\pm}10.12%$) > Doonggunma (D. opposita Thumb, $0.49{\pm}0.10%$). The Danma(D. japonica Decaisne) samples were determined to harbor the highest K($2.07{\pm}0.91%$), Ca($0.21{\pm}0.12%$), Fe($110.7{\pm}0.0$ mg/kg), Mn($20.6{\pm}3.4$ mg/kg) and Zn($31.2{\pm}3.9$ mg/kg) contents among all tested samples. The predominant sugar components in all samples were mannose($70.7{\pm}1.3{\sim}80.5{\pm}1.5%$), glucose($18.2{\pm}1.2{\sim}28.3{\pm}2.5%$) and sucrose($60.3{\pm}3.7{\sim}83.6{\pm}6.5%$). The crude saponin and diosgenin contents for Jangma(D. batatas Decaisne), Danma(D. japonica Decaisne) and Doonggunma(D. opposita Thumb) varieties were : $1.7{\pm}0.4%$, $3.9{\pm}0.8%$ and $3.2{\pm}0.7%$, and $13.59{\pm}1.74$ mg/g, $14.25{\pm}1.60$ mg/g and $18.00{\pm}1.92$ mg/g, respectively.

황련지황탕(黃連地黃湯)이 Streptozotocin으로 유발(誘發)된 당뇨병(糖尿病)에 미치는 영향 (Effects of Hwangryungeehwang-tang Aqueous Extracts on Streptozotocin-induced Diabetic Rat)

  • Objectives : The object of this study was to observe the effects of Hwangryungeehwang-tang (HRGHT), which has traditionally been used in Korean medicine for treating diabetes, by administering aqueous extracts to streptozotocin-induced diabetic rats. Methods : Three different dosages of HRGHT extracts were orally administered once a day for 28 days from 3 weeks after streptozotocin treatment (60 mg/kg, single intraperitoneally administered). 6 groups, of 8 rats per group were used in the present study, selected 3 weeks after streptozotocin treatment based on blood glucose levels and body weights. Changes to the body weights, blood glucose levels, serum low density lipoprotein (LDL), high density lipoprotein (HDL), triglyceride and total cholesterol levels were observed, as well as changes on the pancreatic, hepatic and kidney malondialdehyde (MDA) contents for lipid peroxidation and glutathione contents for antioxidant effects. The results were compared with a potent antioxidant silymarin 100 mg/kg, of which the effects on streptozotocin-induced diabetes and related complications are already confirmed. Results : Significant decrease of blood glucose levels, serum LDL, total cholesterol, triglyceride levels, pancreatic, hepatic and renal MDA contents and significant increase of body weights, serum HDL levels, pancreatic, hepatic and renal GSH contents were detected in HRGHT extracts 100 and 200 mg/kg administered groups as compared to the streptozotocin control group. The lowest dosage of HRGHT treated group, 50 mg/kg, did not show any favorable effects as compared with the streptozotocin control. Conclusions : HRGHT has favorable effects on diabetes and related hyperlipidemia. Therefore, more detailed mechanism studies should be conduced in future with efficacy tests of individual herbal compositions of HRGHT and screening of the biological active compounds in the herbs.

비만환자에 대한 방풍통성산(防風通聖散)의 무작위배정, 이중맹검, 위약-대조군 임상시험 (Randomized, Double Blind, Placebo-Controlled Study of Bofu-tsusho-san on Obese Patients)

  • Objectives The clinical trial was designed to investigate the safety and effects of Bofu-tsusho-san extracts on the change of the weight, body compositions, serum in obese patients. Methods This study was a 4-weeks, double blind, comparative clinical trial. Eligible subjects had a body mass index(BMI) greater than $25\;kg/m^2$ and waist circumference(WC) longer than 85 cm in woman or 90 cm in man. Among 38 subjects, 36 subjects were randomized either to Bofu-tsusho-san or placebo. After 4 weeks of treatment, we measured anthropometric factors(weight, height, WC, BMI etc.), abdominal fat area by CT scanning, serum lipid(total cholesterol(TC), triglyceride(TG), HDL cholesterol, LDL cholesterol), blood level of variety(glucose, adiponectine, leptin, C-reactive protein(CRP) etc.), blood pressure(BP). Adverse events also evaluated. Results BMI, BP, TG, CRP were reduced and weight, WC, score of KOQOL(Korean version of obesity-related QOL scale), SRI(Stress response inventory) were significant changed in Bofu-tsusho-san. But there were no considerable difference between Bofu-tsusho-san and placebo. there were no serious adverse events in either group. Conclusion There were limitations in this study that it conducted within a short period of 4 weeks. but its weight and WC loss effect was significant and it had few adverse events.

장기간의 Pyridoxine 부족이 흰쥐 뇌의 지방산 조성에 미치는 영향 (Effect of Long-Term Pyridoxine Depletion on the Fatty Acid Composition of the Rat Brain)

  • Weanling female Sprague Dawley rats were fed diets containing 22mg pyridoxine HCI/kg diet(control diet) and 1.2mg pyridoxine HCI/kg diet(deficient diet). One deficient group and one control group were fed their diets throughout the period of growth, gestation and lactation. After the pups were born and weaned, the deficient group was divided into two groups. Therefore, one(DC) switched to control diet and the other continued the same deficient diet until 10 week-old. Analysis of chemical composition of fatty acid in the total brain lipid was conducted in the pups of 5, 10, 15, 21, 35, 50 days of age. Arachidonic acid content was significantly decreased in the deficient group at 5 days compared to the control, but at almost all ages, there were no significant differences in fatty acid contens among all the groups. The fatty acid compositions of the brain phospholipids were determined on pups at 1, 14, 21, 35, 70 days of age. The content of $C_{20}\;_{4}$ in the brain phosphatidylcholine birth and contents of $C_{22}\;_{4}$ and $C_{22}\;_{5}$ at birtd, and $C_{22}\;_{5}$ and $C_{22}\;_{6}$ at 14 days in the phosphatidylethanolamine were depressed in the deficient group. These changes were not consistent with ages. Therefore, it may reflect that the major part of the changes occuring in the pyridoxine depleted rats depends, not so much on the pyridoxine depletion itself, as on the age or development of the rats.

고등어 신선도 유지를 위한 해수와 담수 얼음의 저장효과 (Storage Effects of Seawater and Tapwater Ice For Freshness of Mackerel(Scomber japonicus))

  • 본 연구는 근해에서 잡은 고등어의 신선도유지효과를 확인하기 위해 해수 슬러리얼음(SS), 해수 큐브얼음(SC), 수돗물 슬러리얼음(TS), 수돗물 큐브얼음(TC)에 저장하며, 신선도분석을 시행하였다. 각 얼음 성분 중 세균수는 음용수 기준 이하였고, 암모니아성 질소는 해수 기준치인 11 mg/L를 초과했다. 민물에 비해 바닷물의 탁도가 심했다. 고등어의 일반성분 분석결과 수분 함량이 72.7%, 단백질 20.5%, 지질 5.25%, 회분 함량이 1.3%로 나타났다. 해수 슬러리 얼음은 수돗물 얼음과 비교하여 pH가 낮게 유지되었다. 저장 초기에는 모든 저장소에서 VBN 증가가 억제되었다. 전반적으로 해수빙이 담수 얼음보다 휘발성 염기질소(VBN) 값이 낮게 유지 되었다.

구기자 추출액을 첨가한 다식의 품질특성 및 항산화 효과 (Quality Characteristics and Antioxidative Effects of Dasik added with Lycii Fructus Extract)

  • The purpose of this study was to investigate the quality characteristics and antioxidative effect of Dasik prepared with Lycii fructus extract(LD). LD were added in ratios (w/w) of 0(C), 5(LD1), 10(LD2), and 15%(LD3), and then proximate compositions, physicochemical properties, sensory evaluations and antioxidative effect of the Dasik were measured. LD1~LD3 samples showed higher contents of moisture, crude lipid, crude protein and crude ash as well as pH and sugar content compared to control (p<0.001). The total phenol content of LD samples (LD1, 31.5% ; LD2, 66.1% ; and LD3, 69.7%) was higher than that of control (4.71%). DPPH radical scavenging activity of LD3 showed the highest activity of 65.3%, whereas that of control (27.0%) was the lowest among samples. Additionally, ABTS radical scavenging activity of LD samples was higher than that of control (C, 38.9% ; LD1, 53.6%; LD2, 80.5% ; and LD3, 83.3%). The results of texture analysis on all samples showed that control had the highest but LD3 was the lowest (p<0.001). In sensory evaluation, the scores of appearance, flavor, taste and overall preference for LD2 was significantly higher than the samples(C, LD1, and LD2). Form the findings, this study suggests that 10% addition of LD was effective for preparation of Dasik in the aspects of the consumer acceptability and functionality.

Chemical composition of nuts and seeds sold in Korea

  • Eleven types of nuts and seeds were analyzed to determine their energy (326-733 mg), moisture (1.6-18.3 mg), carbohydrate (8.8-70.9 mg), protein (4.9-30.5 mg), lipid (2.5-69.8 mg), and ash (1.2-5.5 mg) contents per 100 g of sample. Energy content was highest in pine nuts (733 mg/100 g), carbohydrate level was highest in dried figs (70.9 mg/100 g) and protein was highest in peanuts (30.5 mg/100 g). The amino acid compositions of nuts and seeds were characterized by the dominance of hydrophobic (range = 1,348.6-10,284.6 mg), hydrophilic (range = 341.1-3,244.3 mg), acidic (range = 956.1-8,426.5 mg), and basic (range = 408.6-4,738.5 mg) amino acids. Monounsaturated fatty acids (MUFA) were highest in macadamia nuts (81.3%), whereas polyunsaturated fatty acids (PUFA) were highest in the walnuts (76.7%). Macadamia nuts did not contain any vitamin E, whereas sunflower seeds contained the highest level (60.3 mg/kg). Iron (Fe) content was highest in pumpkin seeds ($95.85{\pm}33.01$ ppm), zinc (Zn) content was highest in pistachios ($67.24{\pm}30.25$ ppm), copper (Cu) content was greatest in walnuts ($25.45{\pm}21.51$ ppm), and lead (Pb) content was greatest in wheat nuts ($25.49{\pm}4.64$ ppm), significantly (P < 0.05). In conclusion, current commercial nuts and seeds have no safety concerns, although further analysis of Pb contents is necessary to ensure safety.
