The resting cells of Candida sp. SY16 produced a large amount of mannosylerythritol lipid as a biosurfactant when incubated in the distilled water containing only the carbon source. The resting cells exhibited the highest production at 20 g cells per liter on the soybean oil of 75 g/1 as a sole substrate and pH 4∼5 in the shaking culture. Under the optimal conditions, the biosurfactant was extracellularly produced to 58 g/1 after 120 h in jar fermentor, and the yield became higher than that obtained by using the glowing cells of the strain in batch fermentation.
The effect of excess L-ascorbic acid(AsA) in blood, liver lipid levels and peroxidation status were investigate . Ten Sprague-Dawley male rats weighing 150-200g were fed 300mg AsA/100g body weight/day, mixed into ground chow diet, for 4 weeks. And another set of then rats were fed only chow diet as the control. Average body weight gain was slightly lowered by AsA feeding without food intake change. The AsA group showed higher AsA levels in plasma and liver than the control group. In addition, the AsA group showed a higher plasma TBARS value. Liver TBARS seemed to be elevated in the AsA, but not significantly. The hemolysis of red cells tended to increase with excess AsA, accompanied by a raised GSH-Px activity and lowered total GSH levels. Plasma HDL-Chol level was increased while the levels of total Chol, LDL-plus VLDL-Chol , and triglyceride were unchanged . Atherogenic index decreased. Hepatic TG levels were also decreased, but the total amount of Chol increased slightly . Platelet TXA$_2$ production was inhibited by excess AsA feeding. Above results indicafe that oral feeding of excess AsA may be beneficial in reducing the risk of atherosclerosis ; however such practice may be detrimental for tissue lipid peroxidation and weight gain.
The changes in fatty acid composition of total intramuscular lipid and phospholipids were investigated in the longissimus dorsi, left-hind leg muscle, and abdominal muscle of male Ira rabbits. Changes were monitored at 35, 45, 60, 75, and 90 d. Analysis using gas chromatography identified 21 types of fatty acids. Results showed that the intramuscular lipid increased and the intramuscular phospholipids (total intramuscular lipid %) decreased in all muscles with increasing age (p<0.05). An abundant amount of unsaturated fatty acids, especially polyunsaturated fatty acids, was distributed in male Ira rabbits at different ages and muscles. Palmitic acid (C16:0), stearic acid (C18:0), oleic acid (C18:1), linoleic acid (C18:2), and arachidonic acid (C20:4) were the major fatty acids, which account to the dynamic changes of the n-6/n-3 value in Ira rabbit meat.
This study investigated the effects of soy oligosaccharide consumption on feces bifidobacteria proliferation and feces lipid profiles in Korean young women. Eight healthy young women (25 - 34 years) were fed 15 g/day of soyoligosaccharide solution, containing 3 g of oligosaccharide as form of raffinose and starchyose, for 15 days with their habitual meals. Soyoligosaccharde intake increased the numbers of fecal total bacteria significantly until 10 days (p < 0.05) and the numbers of fecal bifidobactreia were significantly increased until 15 days (p < 0.05) . The fecal pH was significantly decreased (p < 0.05) by soyligosaccharide intake. Fecal lipid concentration showed the trend to increse, especially fecal triglyceride level was significantly increased by soy oligosaccharide intake (p < 0.05). The water contents of feces, the amount of feces, evacuation frequency and taking time to evacuation were not affected by soyoligosaccharide intake. The color of feces changed to yellow-brown, and hardness of stool and effort to evacuation were reduced by soyoligosaccharide intake. These results suggest that soyoligosaccharide intake (3 g/day) in young women improved the gut microflora and fecal lipid profile. Therefore, soy oligosaccharide has a potential to be used as one of the promising prebiotics, and controlled trials with larger sample sizes and longer duration are need to be studied further.
This study was carried out to investigate the cooking properties and lipid oxidation stability during storage at $4{\pm}1^{\circ}C$ when the various levels (5 to 20%) of doenjang (Korean fermented soybean paste) were added to pork patties cooked by pan frying (PF) and convection oven (CO). With increasing the addition of doenjang, cooking properties of pork patties revealed the improved cooking yield, less diameter reduction, and less thickness increase. Also, the shear force, hardness, and chewiness of pork patties were reduced. The PF cooking method showed better cooking properties than CO. Lipid oxidation expressed by the thiobarbituric acid reactive substances (TBARS) values was significantly reduced by the addition of more than 5% doenjang (p<0.05). The TBARS values of cooked pork patties by PF were significantly lower than CO during the 8 days of the storage (p<0.05). The development of warmed-over flavor (WOF) in cooked pork patties was delayed as the amount of the doenjang was increased. It was suggested that the addition of doenjang and PF favorably affected the cooking properties and stability of lipid oxidation in pork patties.
In this study, we investigate the effect of pretreatment method on lipid extraction from Enteromorpha intestinalis using physical, thermo-chemical, and enzymatic process such as ultrasonication, high temperature treatment, freezing, microwave irradiation, osmotic shock, pH shock, homogenizing, and enzymatic treatment. In pretreatment with separated lipid extraction, the high extraction yield was obtained by high temperature treatment ($121^{\circ}C$ for 5 min) with 0.1 N HCl, which is 1.4 times higher than that of control. In pretreatment with direct lipid extraction, the high extraction yields were obtained by 0.1 N HCl pretreatment, microwave irradiation (700W, 1 min with twice), and 10% NaCl pretreatment, which is 1.45 times higher than that of control. In the result of enzymatic pretreatment with 17 kinds of enzymes, Cellic CTec II showed the high extraction yield of 5.3%, and which is 1.9 times higher than that of control. Moreover, the extraction yield was increased by the increase of enzyme amounts. In 10% enzyme amount, about 5.8% yield was obtained.

It is now generally accepted that individuals at increased risk for cardiovascular disease may be identified by certain traits or habbits. The factors such as high blood pressure, elevated blood cholestrol, age, sex and obesity are associated with increseaed frequency of disease. The blood cholesterol level lowering will decrease cardiovascular disease risk. The regression of atherosclerosis can be achieved by lowering the level of circulating cholesterol. Those things are connected with the quantity and quality of protein, fats, carbohydrates, especially soluble and non-soluble fiber, magnesium and calcium. The lipoprotein and lipid metabolism are connected with the lipid transport. The factors on lipid absorption and blood serum lipid pattern of human are exist. The factors have a variety of materials with different chemical and physical properties. The soluble fiber diet make a low blood and liver lipids. Many kind of soluble fiber results in a lowering of blood cholesterol and triglyceride levels. The cholesterol lowering effects of dietery fiber may be a results of alterations of in intestinal handling of fats, hepatic metabolism of fatty acid or triglyceride acid metabolism of lipoprotein. It is investigated that the high density lipoprotein (HDL) is inversely related to coronary artery disease. It has been postulated that HDL may be an important factor in cholesterol efflux from the tissues, therby reducing the amount of cholesterol deposited there. Alternatively, the HDL may pick up cholestyl ester and phospholipid during normal VLDL lipolysis in the plasma. The HDL levels are relatively insensitive to diet. At present time, the cause-and -diet effect of HDL's inverse relation to CHD remains unclear.
To investigate the energy, protein, lipid, and lactose intakes of breast-fed infants of lacto-ove-vegetarians, 25 infants(13 boys, 10 girls) were examined on the 0.5th, 1st, 2nd, and 3nd months of lactation. The amount of breast milk intake was determined by a test-weighing method, and the energy content of protein, lipid, and lactose was calculated using the Atwater factor. Thedaily energy intake for boys averaged 316, 436, 447, and 431kcal and that of girls averaged 284, 399, 401, and 390kcal during lactation, respectively. Average energy intake of boys from milk from 2nd week to the 3rd month postpartum was significantly higher than that of girls(p<0.05), because milk intake volume of boys was much higher than that of girls. The protein intake of boys on 2nd week-3rd month averaged 7.33g/day and that of girls averaged 6.29g/day. The lipid intake of 2nd week, months averaged 21.8g/day and that of girls averaged 20.1g/day. The lactose intake of boys averaged 45.48g/day, while that of girls averaged 41.09g/day. The mean intake of protein and lactose in boys was significantly higher than that of girls.
Crude catechin extracts were prepared using ethyl acetate from Korean Puerariae Radix (PR) and their biological effects on the alcoholic liver damage were investigated in male Sprague-Dawley rats (6 weeks old). Ethanol (5g ethanol/kg body weight/day) administration was performed for 8 weeks and after ethanol consuming rats were treated with one or two% catechin extracts of diet for 8 weeks. At the end of experimental period, lipid hydroperoxides in liver were analyzed using a chemiluminescence-high performance liquid chromatography (CL-HPLC) method. Compared with control animals, ethanol consumed rats showed lighter body weights, lower ratios of liver/body weight, higher activities of GOT and GPT, and increased lipid hydroperoxide amount in liver. With one or two% catechin extracts treatment, GOT and GPT activities returned to normal ranges. Lipid hydroperoxide contents in liver of on or two% PR treated rats lowered to 20% or 25% respectively, compared with the levels of those ethanol consumed animals without catechin extracts treatment. Therefore, we concluded that on or two% PR crude catechins treatment could be effective for alcoholic liver damage caused by lipid peroxidation.
Heavy reliance on fossil fuels has been associated with increased climate disasters. As an alternative, microalgae have been proposed as an effective agent for biomass production. Several advantages of microalgae include faster growth, usage of non-arable land, recovery of nutrients from wastewater, efficient CO2 capture, and high amount of biomolecules that are valuable for humans. Microalgae Chlorella spp. are a large group of eukaryotic, photosynthetic, unicellular microorganisms with high adaptability to environmental variations. Over the past decades, Chlorella has been used for the large-scale production of biomass. In addition, Chlorella has been actively used in various food industries for improving human health because of its antioxidant, antidiabetic, and immunomodulatory functions. However, the major restrictions in microalgal biofuel technology are the cost-consuming cultivation, processing, and lipid extraction processes. Therefore, various trials have been performed to enhance the biomass productivity and the lipid contents of Chlorella cells. This study provides a comprehensive review of lipid enhancement strategies mainly published in the last five years and aimed at regulating carbon sources, nutrients, stresses, and expression of exogenous genes to improve biomass production and lipid synthesis.
