Interrelations Among Fast Food Intake, Food Behavior, and Personality in Adolescents (패스트푸드 섭취가 청소년의 식행동 및 인성에 미치는 영향)

  • Especially, the teenage period, an important lifetime to develop both physically and mentally, needs to be helpful to promote the growth of the body and to keep a well-balanced mind through a balanced and nourishing diet. It is well known that the western style fast food is the most liked meal by teenagers. Wrong recognition about fast food and its frequent intake by adolescents can lead to unbalanced diet and food behaviors which may also connect with a poor impact on their personalities as well as their physical health. In this study, therefore, relationships between fast food intake frequency and food behavior, sociability, and personality, such as anger expression, were surveyed from 1,295 adolescents (666 in Seoul, 316 in Changwon, and 313 in rural communities), and then analyzed using SPSS program. The results are shown as follows. The fast food preference score and the fast food intake frequency score showed no differences between male students (22.9/30, 14.4/30 respectively) and female students (23.0/30, 14.0/30 respectively). But, the fast food preference score correlated positively with the intake frequency score (r=0.304) significantly (p<0.001). The more frequently eating of fast food group showed significantly lower scores (r=-0.233, p<0.001) in food behaviors. The frequency of fast food intake had no relationships with sociability, but it had a significantly effect on anger expression (r=0.213, p<0.001) and control (r=-0.l47, p<0.001). From these results, we could see the necessity of various nutrition education programs to build proper eating-out habits and also more studies are needed to find the relationships between fast food intake and growth and personality.

A Study of the Effects of Dietary Behavior on the Nutritional Status of University Students

  • The purpose of this study was to investigate the effects of dietary behavior on the nutritional status of university students in Korea. A dietary intake survey of 603 university students (223 males and 380 females) was conducted using a 24-hour recall method. The resulting data on dietary behavior and nutrient intakes were analyzed by the SAS program package. The main results were as follows : 1) Most of the subjects were in their twenties and no obese cases were found. 2) Dietary intake data showed that, except for vitamin C in the female students, the average daily intakes of most nutrients did lot meet the Korean Recommended Dietary Allowances (RDA). The study also showed that most of the subjects, especially the female students, were concerned about having satisfactory physical appearances. Fat provided 25% of the daily energy intake, and this level was higher than the 20% recommended by the Korean Dietary Guidelines. In the female students, the iron intake from animal foods was lower than that from plant foods. 3) Male students were not very serious about healthy eating. However, the female group, who obtained a high score in dietary behavior, consumed more vegetables and had higher intakes of energy, protein, Ca, p, vitamin A, and vitamin C than the male group, even though they did not meet the Korean RDA in most nutrients. Energy intake from fats, as a percent of total energy intake, was lower than in the group of females who obtained higher stores in dietary behavior than the other groups. To sum up, the university students surveyed in this study were found to have the typical dietary behavior of young adults, such as frequent eating out and snacking. Female students were extremely conscious of their body images this can exert an important direct influence on their dietary intakes and health status. It is very important for university students to develop healthy lifestyles and desirable dietary behaviors, to best enable them to continue to lead a healthy lift: in their later years.

High School Students' Sugar Intake Behaviors and Consumption of Sugary Processed Food Based on the Level of Sugar-related Nutrition Knowledge in Seoul Area

  • Objectives: The present study aimed to investigate high school students' sugar intake behaviors, the status of consuming sugary processed foods, the awareness of sugar, and the experience and interest in sugar-related education based on the level of sugar-related nutrition knowledge. Methods: In this study, five high schools were selected in Seoul, Korea, and a survey was conducted in 400 students on the level of sugar-related nutrition knowledge and sugar intake status. A total of 349 questionnaires were used for the final analysis. For statistical analysis, descriptive statistics was performed; a t-test, ${\chi}^2$ test, and Friedman test were used for comparative analysis. Results: The study results showed a positive association between the knowledge level of sugar and the appropriate sugar intake behavior and sugary food choices. The group with more nutrition knowledge on sugar was found to have good eating habits and to eat less sugary food. The main sources of sugar were beverages, confectionary, and bakery goods in the corresponding order, irrespective of the level of nutrition knowledge related to sugar. A significant difference was found in the groups' awareness of the sugar content of the drinks with 89.4% for the higher-knowledge group, and only 81.5% for the lower-knowledge group (p < 0.05). Results also showed that 43.9% of the higher-knowledge group and 36.4% of the lower knowledge group were interested in participating in education on sugar. Conclusions: This study result indicated the need to help adolescents to avoid excessive sugar intake from only certain favorite foods. Therefore, it is necessary to seek a systematic foundation for participatory education in order for them to maintain a low sugar intake in daily life and lead healthy eating habits by increasing their level of sugar-related information and knowledge.

  • The effects of dietary cellulose to utilize the intake nutrients in the albino rats were investigated by the two consecutive experiments in this study. The author wanted to observe the effects of the age of animals and different level of dietary cellulose, high and low in the first experiment and the effects of dietary cellulose from three different sources, rice bran, vegetable and pure-cellulose at high level in the second experiment. The results were summarized as follows. (1) The obvious effect of dietary cellulose caused to increase feces weight. Consequently apparent digestibilities of intake nutrients in the diet decreased. It was noteworthy that fecal glucose excretion was significantly affected by cellulose intake. Since three nutrients, protein, fat and carbohydrate serve as energy sources in the body, this result can be interpreted to be lowered in the efficiency of energy utilization out of intake from the diet. (2) The nutrients loss due to dietary cellulose resulted in reduction of skeletal muscle and bone weights which lead eventually to affect in reduction of body weight. (3) The effects of dietary cellulose showed differently according to the amount of cellulose ingested, dietary nutrients composition, the kinds of dietary cellulose supplemented and the age of experimental animals. When the intake diet was proportionately imbalanced in three different energy sources, carbohydrate, fat and protein, the cellulose intake was adversely affected in the utilization of the nutrients in the body. Cellulose from rice bran decreased body weight gain, cellulose from vegetable maintained medium level in body weight and pure-cellulose increased body weight. Growing rats showed more sensitive effects of cellulose tolerance in the body than grown rats in every concerns of this experiment.

Consumer attitudes, barriers, and meal satisfaction associated with sodium-reduced meal intake at worksite cafeterias

  • BACKGROUND/OBJECTIVES: Targeting consumers who consume lunches at their worksite cafeterias would be a valuable approach to reduce sodium intake in South Korea. To assess the relationships between socio-demographic factors, consumer satisfaction, attitudes, barriers and the frequency of sodium-reduced meal intake. SUBJECTS/METHODS: We implemented a cross-sectional research, analyzing data from 738 consumers aged 18 years or older (327 males and 411 females) at 17 worksite cafeterias in South Korea. We used the ordinary least squares regression analysis to determine the factors related to overall satisfaction with sodium-reduced meal. General linear models with LSD tests were employed to examine the variables that differed by the frequency of sodium-reduced meal intake. RESULTS: Most subjects always or usually consumed the sodium-reduced meal (49%), followed by sometimes (34%) and rarely or never (18%). Diverse menus, taste and belief in the helpfulness of the sodium-reduced meal significantly increased overall satisfaction with the sodium-reduced diet (P < 0.05). We found importance of needs in the following order: 1) 'menu diversity' (4.01 points), 2) 'active promotion' (3.97 points), 3) 'display of nutrition labels in a visible location' (3.96 points), 4) 'improvement of taste' (3.88 points), and 5) 'education of sodium-reduction self-care behaviors' (3.82 points). CONCLUSION: Dietitians could lead consumers to choose sodium-reduced meals by improving their taste and providing diverse menus for the sodium-reduced meals at worksite cafeterias.

The Effects of Milk Group Intake to Dietary Diversity Score and Nutrient Adequacy Ratio among Toddler (유아의 우유군의 섭취가 식이의 다양성과 영양소 섭취의 적정도에 미치는 영향)

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. Effect of Early Protein Undernutrition of Rats on Later Susceptibility to Lead Toxicity (유년기백서(幼年期白鼠)의 단백질부족(蛋白質不足)이 성장후(成長後) 납 (연(鉛)) 중독(中毒)에 미치는 영향(影響))

  • This study was designed to investigate the effect of early protein undernutrition of rats on later susceptibility to lead poisoning. Weanling rats, weighing about 55 grams, were malnourished by feeding low protein diets ( 12% and 5% casein diet ) during the four weeks of protein deprivation period. For the following 5 weeks, the malnourished rats were fed with 25% casein diet as rehabilitation diet. After the rehabilitation period, all rats were fed with 25% casein diet and the drinking water containing 2000ppm-Pb during the four weeks. The results obtained were as follows ; 1 ) Feed intake, body weight gain and food efficiency ratio were reduced in all rats exposed to lead, especially in rats fed with 5% casein diet during the four weeks of weanling period. 2 ) Enlargement of kidney and spleen were observed in all rats exposed to lead and were more remarkable in rats fed with 5% casein diet. 3 ) In rats exposed to lead, activity of serum glutamic oxaloacetic transaminase ( S- GOT ) was significantly increased by increasing the degree of early protein deprivation, whereas hematocrit value was significantly decreased. Activity of serum glutamic pyruvic transaminase ( S- GPT ) was shown a tendency to increase by increasing the degree of early protein deprivation, but the difference was not significant. 4) In rats exposed to lead, the amount of lead accumulation in kidney was increased by increasing the degree of early protein deprivation. The significant increase was shown in rats fed with 5% casein diet during the four weeks of weanling period. The results of the experiment suggest that early protein undernutrition, even after some period of rehabilitation, may enhance the later susceptibility to lead poisoning.

Effects of Lycii Fructus Water Extracts on the Lead-Induced Nephrotoxicity in Rats (구기자(枸杞子) 추출물이 납 투여(投與)에 의한 흰쥐의 신장(腎臟) 손상(損傷)에 미치는 영향(影響))

  • This study was designed to investigate the effects of Korean Lycii Fructus water extract in Pb-administered rats. The Pb exposed rats were given 100 ppm and 200 ppm in the distilled water. Sixty male Sprague-Dawley rats weighing between 90 and 110g were blocked into 6 groups according to body weight. The control group was fed a normal diet, without lead. The experimental groups, which was fed a normal diet plus 100 ppm and 200 ppm lead, and one group received a normal diet plus Lycii Fructus water extracts. The results: the Food intake, the weight gain, and the kidney weight content in the cadmium added groups were lower than those in the Lycii Fructus water extracts group. The contents of Pb in the kidneys of the rats were determined by using ICP(lnductively Coupled Plasma Spectrophotometer). The accumulation of lead in the kidney was lower in the Lycii Fructus water extracts group. The Plasma levels of renin activity was higher in the lead administration groups, as compared with the Lycii Fructus water extracts. Plasma levels of aldosterone activity was higher in the lead administration group, as compared with Lycii Fructus water extracts. These results suggest that Lycii Fructus water extracts has a lowering effects on the accumulation of pb on kidney and it is believed that the Lycii Fructus water extracts have some protective effects on lead-induced nephrotoxicity in rats, but the mechanism of these effects was obscure.

Recognition and Intake Frequency of Sugar by College Students and Suggestions on Reducing Sugar Recipes for Institutional Foodservices (당류에 대한 대학생들의 인식과 섭취빈도 조사 및 단체급식용 당류 저감 메뉴 제안)

  • Purpose: Although excessive intake sugar may increase the overall energy intake, it leads to a reduction in the intake of foods containing other nutritionally adequate calories. Excessive sugar intake can also lead to an unhealthy diet, weight gain, and risk of metabolic disorders. The purpose of this study was to assess the recognition by college students, their frequency of eating sugar containing foods, and suggesting sugar reduction in the menus of institutional foodservices. Methods: A questionnaire was used to survey 145 college students to evaluate their recognition and eating frequency of consuming sugar containing foods. Subsequently, sugar reduction menus for institutional foodservice were suggested. Results: Most of the subjects (80.0%) were aware of the meaning of sugar reduction. The necessity of reducing sugar in their meals was recognized by 57.8%. These participants tended to check nutrition labeling more. Eating frequencies of sugar containing foods were not significantly different by the subjects' BMI, but they were significantly different by gender, when evaluating cooked foods. We suggested 20% sugar reduction recipes of Korean style barbequed pork, and sweet and sour chicken for institutional foodservices. Conclusion: The awareness of college students and the knowledge regarding sugar reduction were low. Sensory acceptabilities of Korean style barbequed pork and sweet and sour chicken were not significantly different, until the benefit of 20% sugar reduction was mentioned. Thus, continuous education for reduction of sugar intake are required, and also efforts are needed to develop menus containing less sugar.

Comparison of Self-living Ability, Obesity Indices and Nutrient Intake according to Physical Fitness among the Elderly in Rural Areas (농촌 지역 일부 노인에서 신체 기능 정도에 따른 활동 제한도, 비만도 및 영양소 섭취 수준의 변화 양상 비교)

  • Aging is associated with decreased energy expenditure, thermogenesis and energy requirements. Maintenance of physical fitness of the elderly has been reported to reduce the rate at which the basal metabolic rate, muscle strength, skeletal muscle mass and bone density deteriorate. Skeletal muscle disease is known to increase the risk of physical disability and psychological problems. This study was conducted to investigate changes in disability, emotional problems, body compositions, obesity indices and nutrient intake levels according to physical fitness with the elderly in rural areas. According to the results, physical fitness was negatively related with Activities of Daily Living(ADL, p<0.05), Instrumental Activities of Daily Living(IADL, p<0.001), Body Mass Index(BMI, p<0.001) and abdominal obesity(p<0.05), while it showed a positive correlation with the General Self Efficacy Scale(GSES)(p<0.001) and nutrient intake(p<0.05). When changes in these factors were compared according to the range of quartile of the Fullerton Advanced Balance Scale(FAB Scale), GSES(Q1=35.3, Q2=43.5, Q3=53.2, Q4=51.9, p<0.001), BMI(Q1=36.1%, Q2=34.7%, Q3=33.2%, Q4=28.6%, p<0.01), abdominal obesity(Q1=1.02, Q2=0.99, Q3=0.97, Q4=0.94, p<0.001) and nutrient intake(Q1=71.1%, Q2=75.4%, Q3=80.6%, Q4=80.2%, p<0.05) differed significantly. Taken together, these results suggested that better physical fitness would lead to a reduction in negative factors including physical disability and obesity indices, but to an increase in positive factors such as GSES and nutrient intake. The results of this study are expected to be used as basic data for the development of programs to promote the health of the elderly in a local society.
