Objectives: This survey was designed to conduct the first nationwide dietary exposure assessment on hazardous substances including the intakes of functional food and herbal medicine. In this paper, we introduced the survey design and the results of the dietary exposure status and internal exposure levels of lead (Pb), cadmium (Cd), and mercury (Hg). Methods: We selected 4867 subjects of all ages throughout Korea. We conducted a food survey, dietary survey, biomonitoring, and health survey. Results: Pb and Cd were the highest (median value) in the seaweed ($94.2{\mu}g/kg$ for Pb; $594{\mu}g/kg$ for Cd), and Hg was the highest in the fish ($46.4{\mu}g/kg$). The dietary exposure level (median value) of Pb was $0.14{\mu}g/kg$ body weight (bw)/d, $0.18{\mu}g/kg$ bw/d for Cd, and $0.07{\mu}g/kg$ bw/d for Hg. Those with a blood Pb level of less than $5.00{\mu}g/dL$ (US Centers for Disease Control and Prevention, reference value for those 1 to 5 years of age) were 99.0% of all the subjects. Those with a blood Cd level with less than $0.30{\mu}g/L$ (German Federal Environmental Agency, reference value for non-smoking children) were 24.5%. For those with a blood Hg level with less than $5.00{\mu}g/L$ (human biomonitoring I, references value for children and adults, German Federal Environmental Agency) was 81.0 % of all the subjects. Conclusions: The main dietary exposure of heavy metals occurs through food consumed in a large quantity and high frequency. The blood Hg level and dietary exposure level of Hg were both higher than those in the European Union.

Dietary intake of whole grains reduces the incidence of chronic diseases such as obesity, diabetes, cardiovascular disease, and cancer. In an earlier study, we showed that Panicum miliaceum L. extract (PME) exhibited the highest anti-lipogenic activity in 3T3-L1 cells among extracts of nine different cereal grains tested. In this study, we hypothesized that PME in the diet would lead to weight loss and augmentation of hyperlipidemia by regulating fatty acid metabolism. PME was fed to ob/ob mice at 0%, 0.5%, or 1% (w/w) for 4 weeks. After the experimental period, body weight changes, blood serum and lipid profiles, hepatic fatty acid metabolism-related gene expression, and white adipose tissue (WAT) fatty acid composition were determined. We found that the 1% PME diet, but not the 0.5%, effectively decreased body weight, liver weight, and blood triglyceride and total cholesterol levels (P < 0.05) compared to obese ob/ob mice on a normal diet. Hepatic lipogenic-related gene ($PPAR{\alpha}$, L-FABP, FAS, and SCD1) expression decreased, whereas lipolysis-related gene (CPT1) expression increased in animals fed the 1% PME diet (P < 0.05). Long chain fatty acid content and the ratio of C18:1/C18:0 fatty acids decreased significantly in adipose tissue of animals fed the 1% PME diet (P < 0.05). Serum inflammatory mediators also decreased significantly in animals fed the 1% PME diet compared to those of the ob/ob control group (P < 0.05). These results suggest that PME is useful in the chemoprevention or treatment of obesity and obesity-related disorders.
골화석증은 파골세포의 기능 장애 및 증가된 골 밀도를 보이는 질환으로 그 중 유아기형 골화석증은 심각한 유형이다. 전신의 골경화와 범혈구감소증, 두개 신경 협착, 높은 감염위험성, 두부와 안모의 변형 등 다양한 증상을 유발한다. 대부분의 유아기 골화석증 환자는 발달 지연과 왜소증을 보이며, 조기에 사망에 이를 수 있다. 14개월의 여성 환아가 유전치부위에 초기 우식병소를 주소로 전남대학교 치과병원 소아치과에 내원하였다. 환아는 4세에 재 내원 하였으며 interferon-gamma, erythropoietin 치료를 받고 있었다. 성장 지연, 골격 변형, 좁은 상악궁, 총생, 선천적 영구치 결손, 우식증을 보였다. 소아과 의사와 협진하여 예방적 항생제 투여와 진정요법 후 치과 치료를 진행하였다. 이후 감염이 발생한 다수 유구치를 발치 후 상악에 가철성 연성 의치를 이용하여 구강 재건(rehabilitation)을 시행하였다. 골화석증 환자의 경우, 저하된 면역기능으로 인해 감염에 매우 취약하며, 출혈이나 발치와 연관된 골수염이나 패혈증이 유발될 수 있으므로 소아과 의료진의 협조와 예방적 항생제의 사용에 관한 고려가 간단한 치과시술 시에도 필수적이다. 또한, 당분섭취 제한 및 구강위생관리를 위한 의료진의 적극적인 개입이 필요하다.
상황버섯균주를 이용한 생물전환법으로 만들어진 바이오플라본의 항고지혈 활성에 따른 인체 외삽 적용을 위한 최소량을 살펴보고자 실험동물을 정상식이군(NO), 고지방 식이군(CO) 및 바이오플라본 식이첨가군(BFP-0.35, 0.7, 3.0)으로 나눈 후 8주간 사육하였다. 바이오플라본 첨가 식이는 실험동물에 식이섭취량을 감소시키고 체중의 증가를 억제 시켰으며, 장기 무게에 있어서도 간장과 복부지방에 있어서도 CO군에 비해 유의적으로 감소함을 확인할 수 있었다(p<0.05). 또한 총콜레스테롤, LDL-콜레스테롤, 중성지방 및 AI는 감소시키는데 반해 HDL-콜레스테롤은 증가하였다. 그리고 간 조직 손상정도를 나타내는 ALT 및 AST 효소에 있어서도 10% 이상의 효소감소 효과를 나타내었다. 이상과 같이 바이오플라본에는 고지혈로 야기되는 성인병 및 동맥경화지수를 감소시키는 생리활성 성분이 있는 것을 알 수 있으며 특히 모든 실험결과를 종합하였을 때 바이오플라본 0.35%, 0.7%, 3.0% 농도 중 3% 바이오플라본 첨가군에서 가장 큰 고지혈 감소 및 예방 효과를 나타내었다. 이로서 동물 실험 결과를 이용한 사람에게로의 외삽은 3% 농도로 제품을 개발하는 것이 효과적이라 사료된다. 또한 위의 결과를 바탕으로 바이오플라본이 항고지혈과 관련한 식품소재로서의 사용에 대한 가능성을 제시하는 바이다.
In 2008, baby formula containing melamine was found to be responsible for a large outbreak of renal failure in infants in China. A total of 294,000 infants were hospitalized, and at least 6 babies died due to ingestion of the tainted formula. Melamine contains high levels of nitrogen (>60%), which is used as an indicator of protein content. Therefore, high levels of melamine in infant formula were thought to be the result of deliberate contamination m an attempt to increase its apparent protein content. Following inspections by China's national inspection agency, assorted products from at least 22 dairy manufacturers across China were found to have varied levels of melamine (range: 0.096196.61 mg/kg). Melamine co-exposure with cyanuric acid can induce acute melamine-cyanurate crystal nephropathy, which can lead to renal failure at much lower doses than if either compound were ingested alone. However, currently, there are very few data on melamine analogues other than cyanuric acid. At an expert meeting of the WHO and FAO held to review toxicological aspects of melamine and cyanuric acid on December 14, 2008, a new tolerable daily intake (TDI) of melamine was established that could be applied to the entire population, including infants. Therefore, a risk assessment of the various theoretical melamine contamination levels in infant formula and selected representative foods (other than infant formula and sole-source nutrition products) is urgently needed for Korean babies and children up to 7 years of age. Although the undetectable level regulation for infant formula may be low enough to guarantee the safety of babies under the age of 1 year (including premature babies), the melamine standard of 2.5 ppm for foods other than baby formula could be insufficient to protect the 95th percentile population aged 1~2 years because of this demographic's high consumption of milk, yogurt, and soy milk (hazard index = 1.79). Because TDIs are chronic values intended to protect an individual over his/her lifetime, occasional modest ingestion in excess of the TDI is not likely to be a health concern. However, children aged 1~2 years may have renal systems that are comparatively more sensitive to the crystallization of melamine and its analogues. Therefore, governmental jurisdictions may need to practice more prudent management of food items that could raise the melamine exposure for this population.
An experiment was conducted to investigate the effects of dietary supplementation of Rhodobacter capsulatus KCTC-2583 on egg-yolk and serum cholesterol, egg production and quality parameters during the late laying periods in hens. A total of 160 Hy-Line Brown layers (54 wk-old) were randomly allotted to 4 treatment groups on the basis of laying performance. Each treatment had 4 replicates with 10 birds each (40 birds per treatment). Two hens were confined individually with cage size $35{\times}35{\times}40$ cm and each 10 birds (5 cages) shared a common feed trough between them forming one experimental unit. Dietary treatments were; basal diet supplemented with 0 (control), 0.05, 0.10 and 0.15% R. capsulatus KCTC-2583. Experimental diets were fed in meal form for 56 d. Dietary supplementation of increasing levels of R. capsulatus KCTC-2583 reduced (linear, p<0.05) egg-yolk cholesterol and triglycerides (d 28, 42 and 56) concentrations. Also, serum cholesterol and triglycerides (d 21, 42 and 56) concentrations were linearly reduced (p<0.05) with increasing dietary R. capsulatus KCTC-2583. Laying hens fed a diet supplemented with increasing levels of R. capsulatus KCTC-2583 had increased (linear; p<0.05) overall egg production, egg weight, egg mass and feed efficiency. However, dietary treatments had no effect (linear or quadratic; p>0.05) on feed intake of laying hens. At d 28 and 56, breaking strength and yolk colour of eggs were linearly improved (p<0.05) in laying hens fed dietary increasing levels of R. capsulatus KCTC-2583. Dietary treatment had no effects (linear or quadratic; p>0.05) on albumin height, shell thickness and shell weight at any period of experiment. These results indicate that dietary supplementation of R. capsulatus KCTC-2583 has the potential to improve the laying hen performance and lead to the development of low cholesterol eggs during late laying period in Hy-Line Brown hens.
최근 육계의 체지방 과다축적현상은 큰 문제로 되어 있다. 이는 육계가 생리적요구량 이상으로 에너지를 섭취하기 때문에 일어난 현상이다. 많은 문헌들을 종합하여 보면 육계의 품종, 계통, 성, 연령, 사료조건, 운동정도, 환경온도 및 사육방법 등이 체내 지폐축적에 영향을 미치는 요인인 것 같다. 이들 요인들은 지방조직의 지방세포의 수와 크기를 좌우하는 것이 다. 육계를 도살하지 않고 체내 지방축적량을 추정하기 위한 여러 가지 생체조사측정치 중에서 흉부우역의 피층두께와 그의 지방함률이 복강지방량과 비교적 높은 상관을 보이고 있지만, 이들의 상관계수는 체지방량 추정에 이용할 수 있을 정도로 높은 것은 아니다. 대부분의 보고들은 체중이 큰 쪽으로 선발해 나갈 때 주어진 일령에서 체지방량도 증가되고 있으나 일부 보고들을 보면 체중 위주의 선발을 하여가도 같은 체중에선 지방축적량에 변화가 없다. 한편 사료효율이 좋은 쪽으로 선발하여 갈 경우는 체지방 축적량이 줄어들고 반대로 단백질과 수분함량이 높아진다. 따라서 체중위주의 선발이 반드시 포만 현상을 초래한다고 결론하기는 어려우나, 사료효율 개선방향의 선발은 포만현상을 완화시킨다고 결론할 수 있을 것 같다.
본 연구에서는 서울시내에 유통 중인 버섯류의 유해중금속 함량을 조사하여 식품공전에 새로 신설된 납과 카드뮴의 함량을 파악하고, 재배환경과 환경오염에서 유래할 수 있는 유해중금속인 비소, 크롬, 니켈, 수은의 함량을 조사하였다. 서울시 소재 마트 및 전통시장에서 구입한 버섯류 5품목 150건을 시료로 습식분해법 중 microwave법을 이용하였으며, 납, 카드뮴, 비소, 크롬, 니켈은 ICP-MS를 이용하여 분석하였다. 조사결과 버섯류의 평균함량(최소-최대함량, ${\mu}g/kg$)은 Pb 7.8 (1.9-30.0), Cd 45.3 (0.7-292.4), As 54.6 (2.4-229.3), Cr 42.6 (8.4-334.3), Ni 22.4 (ND-180.4), Hg 8.9 (2.0-25.0)으로 나타났다. 본 연구를 통해 얻어진 결과는 기존 연구결과들과 비슷하거나 낮은 수준으로 나타났다. 또한 조사한 품목의 주간섭취량을 FAO/WHO에서 안전성 평가를 위해 설정한 PTWI와 비교한 결과 그 수준이 매우 낮아 서울시에서 유통되는 버섯류로부터 섭취하는 유해중금속의 양은 안전한 수준으로 생각된다. 본 연구결과는 2013년 8월에 새롭게 신설되어 모니터링 자료가 필요한 납과 카드뮴에 대한 자료와 더불어, 아직 세부기준이 설정되어 있지 않지만 관리가 필요한 비소, 크롬, 니켈, 수은의 중금속 기준을 설정하는데 있어 참고 자료로 활용할 수 있을 것으로 기대된다.
Exposure to heavy metals through the consumption of contaminated seafood poses a health risk to humans. In Korea, seafood imports are increasing with consumption, with the largest increase in imported seafood coming from Russia. Peter the Great Bay and the Razdolnaya River are both major fisheries and protected areas under the Northwest Pacific Action Plan located near Vladivostok, Russia. This study analyzed heavy metal [cadmium (Cd), lead (Pb), total mercury (tHg), and total (tAs), and inorganic (iAs) arsenic] concentrations in shellfish and crustaceans collected from these areas. Except for iAs, the major toxic heavy metal concentrations of the samples met the national standards (Cd, 0.024-0.982 and 0.003-0.379 mg/kg; Pb, 0.021-1.533 and 0.002 mg/kg; tHg, 0.006-0.015 and 0.036-0.097 mg/kg). The tAs concentrations of three samples exceeded the Russian standard (5 mg/kg, wet weight), whereas the iAs concentrations were extremely low (ND-0.033 mg/kg). Compared with the provisional tolerable weekly intake (PTWI) of the Ministry of Food and Drug Safety and Joint FAO/WHO Expert Committee on Food Additives, the percentages of PTWI of Cd, Pb, and tHg were 0.239%, 0.001-0.049%, and 0.013-0.302%, respectively. These findings reveal that there is no potential health risk by heavy metals through the consumption of Russian seafood obtained in the surveyed areas.
