Survey on Storage Temperature of Domestic Major Chilled Foods in Refrigerator (우리나라 주요 냉장판매식품의 보관온도 실태 조사)

  • We investigated temperature management for refrigerated foods in large discount markets, department stores, and convenience stores. Eleven stores in the Seoul area were used to examine temperature maintenance for frozen and refrigerated foods, including soybean curds (tofu), fish surimi, mook, wet noodles, kimbab, and salads. The surficial and central temperatures of foods in a refrigerator and a freezer were examined. While the difference between the highest ($7.5^{\circ}C$) and the lowest ($6.4^{\circ}C$) temperature spaces in a refrigerator was $1.1^{\circ}C$, the corresponding difference between the highest ($8.9^{\circ}C$) and lowest ($7.5^{\circ}C$) food surface temperatures was $1.4^{\circ}C$. The average temperatures of both chilled food surfaces and refrigerator spaces were $7^{\circ}C$ (max. $22.9^{\circ}C$) and 8.2 degrees C (in. $-0.4^{\circ}C$), respectively. The temperatures of chilled food surfaces were $6.1{\times}10.6^{\circ}C$ for soybean curds, $6{\sim}12.3^{\circ}C$ for fish paste, $2.3{\times}18.2^{\circ}C$ for kimbab, $4.6{\times}12.2^{\circ}C$ for salads, $3.4{\times}12.6^{\circ}C$ for wet noodles, and $7.1{\times}19^{\circ}C$ for mook. Our results indicate that chilled foods require careful management for storage at temperatures below $10^{\circ}C$ with careful recording of the warmest area of the refrigerator.

An Effect of the PB Products attribute of the Large-sized Discount Stores on the Consumer Attitude and the Purchase Behavior (대형할인점 PB제품 속성이 소비자의 태도와 구매행동에 미치는 영향)

  • Recently the sales of PB products attribute shows a steady growth day by day. The consumers buy them due to low prices, however, lately they buy the high premium PB products. And thus the large distributors made a rapid growth of sales. The aim of this study is to analyze what the PB products attributes may affect the consumers' purchase behavior. First, the attribute factors of the PB products: store image, knowledge and information, quality perception, economic value etc. have effects on the consumer attitude after usage experience with PB products. Second, the consumer attitude after usage experience with PB products can have an effect on the purchase behavior. As a result of this study, the various attributes of PB products such as store image, knowledge and information, quality perception, economic value appeared to be positive effect. At the same time the attitude after buying the PB products showed positive effects on the purchase behavior.

Empirical research on the influence of spatial competition in the distribution industry on consumer behaviors in South Korea (유통업태간 경쟁구도가 소비행태에 미치는 영향에 관한 실증연구)

  • When Korea's retail industry was liberalized, new store formats such as large discount stores and Super Supermarket(SSMs) have grown. New types of business have borne significant influence on traditional market. Traditional markets have been in gradual decline since they fail to meet to consumer's purchasing behavior. The South Korean government has been making sustained efforts to revitalize the modernization of traditional markets since 2004. This research is conducted to analyze how changes in the distribution of different types of distributors influence the consumer's purchasing behaviors depending on the changes in the market environment. The purpose of this research is to present a policy to invigorate consumer-oriented traditional markets by analyzing the consumption behavior among major retail channels at a point when competition among retail channels is becoming intensified. In order to examine the effect of the spatial competitive landscape among major retail channels on consumption behavior, an empirical analysis was conducted with 613 consumers in 6 cities nationwide, using the multiple regression model. This research identified three main areas of factors. The analysis result indicates that the physical factor (time required to go to the traditional market), socioeconomic factors (the number of vehicles owned and average monthly income), and competitive factors (intensity of competition in spatial locations and average monthly spending in supermarkets) have significant influence on consumption patterns of consumers. The findings present that the Korean government should go ahead with policies aimed to revitalize traditional markets, keeping in mind the factors that influence the consumption patterns of customers based on these results. We propose that the policy supporting traditional markets need to be a customized-strategy, considering traditional market's characteristic.

Study on the Standardization of Korean Distribution Terminology through its Usage Survey (유통분야 전문용어 사용실태 조사를 통한 용어 표준화 연구)

  • Purpose - This study aims to investigate the current state of distribution terminology usage by retailers and consumers nationwide, and to suggest a practical improvement plan for its standardization. The Korean distribution industry is closely related to consumers' daily lives. However, in reality, there exists a gap among producers, distributors, and consumers in terms of the definition, understanding, and perception of the terminology. Therefore, standardizing this terminology is essential for more smooth communication. This paper suggests the necessity of committing overall research and survey activities to the actual conditions of using Korean distribution terminology by organizations and their respective management situations, and further, the necessity of probing the problem and its measures in line with the objective and mission of the "Fundamental Law of the Korean Language." Research design, data, and methodology - This study's scope is limited to wholesale and retail including some information systems. First, the study covers most written material including lexicons and glossary of distribution terminology, university textbooks and teaching material for national certificate of qualification, and related laws and ordinances. Second, the survey covers retailers' management situations by store format. The retailers used as the sample for the survey include department stores, discount stores, SSM, and convenience stores. Altogether, 20 specialists were interviewed in their respective sectors or retail formats. Finally, the project team surveyed a sample of 1,300 consumers nationwide on 50 distribution terms mainly used by consumers, including those about awareness, understanding, usage, and attitude. Results - In total, 1,249 terms are drawn through literature research including distribution terminology used in the related literature, glossary and lexicons, distribution terminology in textbooks, and legal terminology. A classified table comprises four large categories including general distribution, distribution marketing, distribution information, and merchandise. The results of the three-step research including literature survey, field survey of retailers, and consumer survey were advised to be screened by academia (retail associations, faculty etc.), retailers (major retail management by store format), retail specialists and consultants, consumers, and Korean linguists. In total, 1,300 questionnaires for 50 terms of the distribution terminology closely associated with consumers were distributed to subjects nationwide. Conclusions - The desired and expected results from this study are summarized from three perspectives as follows: First, from retailers' perspective, a new concept, or coinage of new terms of the distribution industry stems from advanced countries such as America and Europe. However, the original meaning and definition are diluted and distorted with changes in the language users' situations and context. This study provides basic guidelines for standardization of distribution terms used among various retail formats in most daily life situations that consumers encounter. Second, from the nation's perspective, this study suggests optimal choices of distribution terminology in the context of laws and ordinances regarding concerned Ministries. Last, from the consumers' perspective, this paper enables consumers to understand and use distribution terms properly in their daily life.

  • The retail business of drugstore was introduced to Korea for the first time 10 years ago. Since Olive Young introduced a retail store in the name of drugstore in 1999 for the first time in Korea, new distribution channel combining drugstore, cosmetic products and dairy products, etc has been made. At initial stage, the new distribution channel grew up slowly because of low specialty and economic stagnation. However, the three big distribution channels, that is to say, Olive Young (CJ), Watsons (GS) and W Store (Kolon Well Care), etc, were established to produce new distribution system following large-scaled discount stores as well as convenience stores. The purpose of the study is to investigate ways making Korean style drugstore be new retail business in addition to traditional markets, department stores, E-Mart and other general super markets and to examine problems preventing the drugstore from being promoted and to find out solutions. The speciality retailers that is called a category killer attacking department stores as well as marts is expanding market quickly. New consumption trend that gives priority to wellbeing is being expanded in accordance with high level of standards of living life: The drugstore is thought to be new alternative of distribution because it keeps special products. Young ladies who are main customers of drugstores respond to the trend sensitively to have more buying power that is thought to be promising. And, consumers' desire has become concrete and special. This is because consumers want not only convenient shopping but also special shopping system that is current trend. These days, so called Multi-shop and Total shop and other special shops have been recently opened. Special multi-shop has been concentrated on fashion product and miscellaneous goods so far: Health total wellbeing shop shall be popular in accordance with wellbeing trends. Drugstores can play an important role. Drugstores were opened for the first time ten years ago. In particular, Olive Young succeeded in going into the black after making efforts for a long time by many persons. Drugstores could succeed in the business owing to many persons in the past as well as customers who liked drugstores. However, drugstores once lost ways and recorded poor business results. The three drugstores, that is to say, Olive Young, Watsons making efforts to go into the black and W-Store pursuing traditional drugstore shall compete each other and make effort to satisfy customers' desire. In that way, the three drugstores can be assured of present business as well as future business. The consumers' demand trend has become special at sub-division so that drugstores that can satisfy the demand can succeed in the business. Large businesses may be more interested in the 4th generation retail business to produce good income and to have bright future. Drugstore business and market are likely to expand and develop owing to large business' participation in drugstore business. Drugstores expanded shop at Seoul and Gyeonggi-do until middle of 2000. Drugstore business at station sphere in Seoul and Gyeonggi-do that have high ratio of temporary population has low customer loyalty to have limitation on continuous growth. Since 2009, drugstores have opened new shops at local towns: From the year of 2010, drugstores need to establish multiple shop strategy by accelerating business speed and to allow customers to drop in the shop anywhere in the nation and to enter consumers' life deeply, so that they can strengthen business base definitely. Drugstores need to have price competitiveness to have multiple shop opening strategy and to satisfy consumers and to supply high quality services that is future subject to solve. And, Olive Young and Watsons that are Korean style drugstore need to keep system in order and to strengthen substance as Korean style drugstore and to expand marketing, so that they can get business outcome within 5 years that was done 10 years before and they become the 4th generation retail business. The study had difficulties at collecting material from the three drugstore because of poor cooperation. And, the author had great difficulty at collecting statistical material that was made in disorder. Further effort is needed considering such problems.

Lessons from Haitai Distribution Inc's experience in Korea

  • Owing to the rapid growth of hypermarket/discount store formats since 1996, Korean retailing has suddenly attracted the significant attention from researchers. Before the emergence of large scale retailers such as E-Mart, Lotte Mart and Tesco Korea, there were the two retail formats who led the Korean retailing in the modern retailing history: department store and supermarket formats. Nevertheless, there has been little literature concerned about the two retail formats as a case study, while some authors have paid their attention to hypermarket/discount store formats. In addition, when mentioning the development process of retailing history, it is less likely that authors have made an effort to illustrate supermarket retailing history. In order to regard supermarket retailing as part of the Korean retailing, it is interesting to look at a representative supermarket retailer, Haitai, who was one of the subsidiaries of Haitai chaebol. Based on supermarket retailing, the company which was established as a joint venture in 1974 led a supermarket retailing in the Korean modernised retailing history. Before analysing whether Haitai failed or not, the definition of failure should be illustrated. With regard to the term, failure, in the academic world, authors have interchangeably used the following terms: failure, divestment, closure, organisational restructuring, and exit. To collect research data as a case study, the author adopted an in-depth interview method. The research is based on research interviews with 13 ex-staff who left after Haitai went bankruptcy, from store management department to merchandise department. By investigating Haitai's experiences through field interviews, the research found that Haitai restructured organisational decision-making process at the early stage when companies started to modernise organisational charts, benchmarking sophisticated retailing knowledge through the strategic alliance with a Japanese retailer. In respect of buying system, the company established firmly buying functions by adopting central buying system, and further, outstandingly allocated considerable marketing resources to the development of retailer brands with the dedicated team of retailer brand development. In the grocery retailing, abandoning a 'no-frill' packaging concept, the introduction of retailer brand packaging equal to, or better than national brand packaging design, encouraged other retailers to change their retailer brand development strategies. In product sourcing ways, Haitai organised for the first time the overseas sourcing team with the aim of improving the profit margins of foreign products and providing exotic products for customers, followed by other retailers. Regarding distribution system, the company introduced the innovative idea which delivered products ordered by stores directly to each store withboth its own vehicles and its own warehouse in which could deal with dry foods, chilly foods, frozen food, and non-foods, and even, process produce. In addition, Haitai developed many promotional methods to attract more customers like 'the guarantee of the lowest price', and expanded its own business to US in 1996, although withdrew, because of bankruptcy in 1997. Together with POS introduction in 1994, Haitai made a significant contribution to the development of the Korean retailing, influencing other retailers in many aspects. As a case study, the study has provided a number of lessons from Haitai's experiences for academicians and practitioners, suggesting that its history should be involved in the Korean modernised retailing.

A Study on Improving the Fisheries Products Distribution Structure (수산물의 유통구조 개선에 관한 연구)

  • This study intends to examine the distribution channel of the most popular ten species caught in Korean coastal and off-shore fisheries with the aid of interviewing fish brokers and cooperative staffs in fish landing markets. This paper finds and emphasizes the following three suggestions, in order to improve the present scheme of fish distribution system. Firstly, annual catch of 10 kinds of fishes is successively decreasing in quantity from 1994 to 1998. Moreover annual catch shows larger variations than fish price and cooperative sales quantity. Except sea eel and sole, cooperative sales accommodates more than 90% of the fish landed, accounting for the small variation in cooperative sales, which invalidates the effectiveness of the free distribution system adopted by the government. Secondly, diversified distribution channels are exposed according to the nature of the fish, the method to harvest, and the quantity caught. Large retailers such as discount stores, super chains and home shopping institutions are actively involving themselves in direct purchase in fish landing markets. Through the analysis of distribution routes, the general distribution channel of fresh fish has been found such as producers longrightarrow fish brokers in landing markets longrightarrow fish brokers in central wholesale markets longrightarrow wholesalers longrightarrow retailers longrightarrow consumers. In order to reduce distribution margin through the analysis of distribution function and distribution margin, this paper presents a new distribution channel such as producers longrightarrow fish brokers in landing markets longrightarrow wholesalers longrightarrow retailers longrightarrow consumers. Thirdly, to improve the fish landing markets, this paper suggests the M&A of uneconomical fish landing markets or renovating toward wholesalers, introduction of processing services and improvement of processing facilities, subsidizing fish brokers in landing markets, revitalization of marketing divisions in cooperatives and improvement in fish auction system.

The Effects of Bakery Worker's Occupational Asthma and Rhinitis on Job Performance and Turnover Intention (베이커리 종사자의 직업성 천식 및 비염이 직무 성과와 이직 의도에 미치는 영향)

  • This study investigates the effects of occupational asthma and rhinitis on job performance in order to maintain the health of bakery workers and to increase manufacturing productivity. Hotel bakery workers, small bakery businesses, bakery franchises and bakeries in large discount stores, located in Seoul, Kyungki and Incheon were sampled for the study over the period of December 1 to 15, 2008. A total of 245 samples were used for the final analysis. To verify the hypothesis established for the study, we conducted frequency analysis, factorial analysis, reliability analysis, correlation analysis and regression analysis using SPSS 12.0, a statistical package, to derive a conclusion. As a result of this study, it turned out that occupational asthma and rhinitis in bakery workers does affect job performance as well as motivating the intention to quit job. It is recommended that in order to increase the job performance of bakery workers and reduce their desire to quit job, their work environment should be improved and that training about occupational asthma and rhinitis should be provided for the prevention and reduction of disease.

Analyzing Factors Influencing Purchasing Behavior of PB Eggs: Focusing on Eggs from Large Distribution Companies (계란식품PB 구매에 미치는 소비자 요인 분석:대형유통업체 계란상품을)

  • Purpose - Eggs are nutritionally complete and one of the most popular natural foods. Moreover, the poultry industry is one of the important food industries. However, early industrialization of the poultry industry on its own did not lead to further development compared to other livestock industries. In this study, we investigate what factors influence consumers' behavior and how consumers' understanding of retail business affects their propensity to consume. This study is different from other studies as it analyzes how the brand names of manufacturers and distribution companies affect the purchasing characteristics or actual purchase behavior of consumers in order to suggest how these manufacturers and distribution companies can increase their competitiveness. Research design, data, methodology - This study conducted a survey of 250 randomly selected egg purchasers in discount stores from January to April 2013. Consumers' purchase tendencies were calculated through frequency analysis. This result was then utilized using cluster analysis to draw a conclusion about which purchase tendency influenced consumers buying three different brands of eggs or whether this tendency really affected consumers. As a result, the outcomes of Hypotheses 2 and 3 were not clear so we drew a conclusion with our analysis of Hypothesis 1. Results - While the outcomes of Hypotheses 2 and 3 did not clearly indicate whether purchasing tendencies affected consumers when buying eggs, our analysis of Hypothesis 1 indicated that consumers were affected by the quality of the eggs rather than exterior factors such as the brand name. Thus, we concluded that it is important to promote the excellence of the quality of the eggs. Usually firms buy eggs from farms and repackage them in order to sell them. In this sense, if consumers were aware of this egg production process, and eggs were fairly distributed to retailers, large retail PB businesses would also be able to enhance their competitiveness. Conclusions - The brand, packaging, retail outlet, and other external features influenced the purchase of eggs to a certain degree, while shelf life, grade of the eggs, cleanliness, and other intrinsic characteristics had more influence. In particular, shelf life was the most important factor influencing purchase. Consumers were influenced not only by intrinsic characteristics of the eggs but also by large-scale producers' brands. Consumers relied upon the brand despite reduced competition because they found it difficult to identify shelf life and/or cleanliness. Small businesses and/or large-scale retailers can remain competitive by maintaining the freshness and cleanliness of the eggs. Further studies need to investigate areas in which consumers' cognition of the product is poor and/or the purchase inclination with regard to less developed industries such as eggs. In this study, the greatest problem was that consumers did not consume in accordance with the current situation as consumers have preferred fresh and clean eggs for a long time compared to purchase decisions based on external brands and/or packaging.

Study on the Switching behavior of Customers of Local Monopolistic Department Store (지방 독점 백화점 고객들의 전환행동에 관한 연구)

  • Customers of local monopolistic department store can switch their store more easily than ever due to the rapidly changing environment in distribution system represented by multi-store-strategy of large department stores, increase in discount store and growing non-store retailing system. Consequently, local department stores which enjoyed their business with little competition are forced to study and understand the customer switching behavior. This work is intended to understand the switching behavior characteristics of monopolistic local clepartrrent store users. For the end, previous researches are reviewed firstly, then characteristics of store-switching behavior of custorrers amid rapidly changing distribution environment are studied in view of the relations of dissatisfaction factor, switching barrier, switch intention and custorrer characteristics such as shopping orientation, variety-seeking behavior, degree of openess to competition and sociodemographics. Study shows that; 1) dissatisfaction factor is related to customer characteristics (shopping orientation and degree of openess to competition), 2) switching barrier recognition is related to customer characteristics (degree of openess to competition and sociodemographics) and dissatisfaction factor, 3) intention to switch to expected competitor is related to customer characteristics (shopping orientation, degree of openess to competition and sociodemographics) and switching barrier recognition. Accordingly, switch control strategy of the monopolistic local department store facing competitors' entry into market, must be made, specifically, in a way to understand customer characteristics and to make deliberate effort to reduce customer dissatisfaction.
