  • Consumer's concerns over beef safety are increasing according to resuming U.S. beef import. And a few beef producers have converted into organic beef recently. This organic beef must have taste, nutrition and safety that consumers demand for. Korean organic beef should be gone on sale at the shop under direct management of producer's organizations or the special shop for Environmentally friendly products. So they should win consumers' confidence for beef safety and transparency in producing and marketing process.

유기한우 생산 및 유통실태에 관한 사례연구 (A Case Study on Production and Distribution Situations of Korean Organic Beef Cattle)

  • This study focused on production and distribution situations of Korean organic beef cattle at Hongseong Chungnam. Case Farmers have raised cattle organically based on interchange between a few Consumers' Life Cooperatives(CLC) and them. CLC furnished with funding to purchase calves and bought the cattle beef. However, they have many problems related to procuring organic feed in producing organic beef. Presently, they have used organic byproducts from sowing farming and prepared grass places. But they don't breed organic beef cattle in a large scale because of the limitation of organic feed output.

  • Producing Korean organic beef cattle costs a great deal because it needs breeding conditions like the organic feed, an uncontaminated breeding farm and so on. So the price of Korean organic beef (KOB) is more expensive than that of Korean general beef (KGB). To overcome this adverse price condition, a case production organization in Asan will choose direct marketing routes for consumers or the shop under direct management of the organization, or franchise shops. As a result, these marketing routes are expected to narrow the price gap between KOB and KGB. And consumers will accept the price of KOB if quality of KOB is very high level, for example the first grade++.

소고기 원산지에 대한 태도와 건강 관심도가 소고기 구입에 미치는 영향 분석 (The Analysis of the Impact of Attitudes and Health Concerns Towards Beef Origin on Beef Purchase)

  • This study examines how consumer attitudes toward food origin and health concerns influence beef purchasing behavior. Using data from the Korea Rural Economic Institute's food consumption behavior survey, we analyzed the frequency of purchasing domestic and imported beef. Results indicate that when not distinguishing between domestic and imported beef, perceptions of lower origin quality and higher health concerns are associated with an increase in purchasing frequency. However, such influences are statistically insignificant for imported beef. Further analysis reveals that for consumers exclusively purchasing domestic beef, these factors do not significantly impact purchasing frequency, while for consumers simultaneously purchasing both domestic and imported beef, these factors do significantly impact purchasing frequency.

  • The purpose of this study is to provide meaningful information for various stakeholders' decision-making process through forecasting of domestic beef demand. Three different exponential smoothing models were evaluated, and a double exponential smoothing model was used to forecast domestic beef demand based on time-series data, As a result of the forecast, domestic beef consumption is expected to increase by 37,000 to 40,000 tons per year from 2020 to 2025.

유기산에 의한 냉장우육의 저장효과 (Effects of Organic Acids on the Storability of Chilled Beef)

  • 저온 유통과정에 있는 우육에 유기산(아세트산, 시트르산, 락트산)을 처리하여 저온 보존기간에 따른 일반세균수, 부패취와 점질물의 생성, pH변화 등의 물리적, 세균학적인 실험을 대조군과 비교하여 실시하였으며 유기산 처리에 따른 냉장우육의 저장성을 파악하였다. 우육의 저온 보존기간에 따른 시료 처리군별 부패취 및 점질물 생성시기는 대조군에서 6일째에 세균수 $1.8{\times}10^7/cm^2$일 때 부패취를 발생하였고 7일째에 세균수 $6.1{\times}10^7/cm^2$일 때 점질물을 생성하였다. 유기산 처리군의 경우 $1{\sim}4%$ 모든 처리구에서 세균수 $0.8{\times}10^7/cm^2$일 때 부패취를 발생하였으며 1% 처리구에서는 대조군보다 1일, 2%에서는 2일, 3%에서는 3일, 4%에서는 5일이 늦어졌다. 또한 점질물 생성시기는 $1{\sim}3%$ 처리구에서 부패취 발생시기보다 2일 늦게 생성되었으며 이 때의 세균수는 $1{\sim}2%$ 처리구에서 $6.0{\times}10^7/cm^2$ 이상, 3% 처리구에서는 $2.0{\times}10^7/cm^2$ 이상이었다. 우육의 저장성을 부패취를 기준을 할 때 대조군은 $4^{\circ}C$에서 5일, 유기산 처리구는 1%에서 6일, 2%에서 7일, 3%에서 8일, 4%에서 10일이었다. 저온 보존우육의 pH변화는 시료처리 초기에 대조군에서 pH5.5를, 유기산 처리군은 1%, 처리구에서 $pH5.3{\sim}5.4$를, $2{\sim}3%$, 처리구에서 각각 pH5.2를, 4% 처리구에서는 아세트산이 pH4.9, 시트르산과 락트산이 각각 5.0을 보임으로써 대조군에 비해 pH가 $0.2{\sim}0.6$이나 더 낮았다.

Combined Effects of Modified Atmosphere Packaging and Organic Acid Salts (Sodium Acetate and Calcium Lactate) on the Quality and Shelf-life of Hanwoo Ground Beef Patties

  • The present study investigated the combined effects of modified atmosphere packaging (MAP) and organic acid salts on the quality and shelf-life of Hanwoo ground beef patties. The ground beef containing 500 ppm of ascorbic acid was prepared with air-packaging (Air-P), high oxygen-MAP (70% $O_2$+30% $CO_2$/OxyMAP), and nitrogen-MAP (100% $N_2$/NitroMAP), in combination with organic acid salts (1500 ppm of sodium acetate and 500 ppm of calcium lactate). The samples were stored for 11 d at $5^{\circ}C$. The pH value of ground beef patties decreased during storage in all the treatments. The ground beef patties with organic acid salts showed relatively higher level of pH during storage compared with non-added patties (p<0.05). Lipid oxidation was accelerated in OxyMAP while it was delayed in NitroMAP treated with organic acid salts. Nitro-MAP treated with organic acid salts was effective in stabilizing the color characteristics of lightness (CIE $L^*$) and redness (CIE $a^*$) during storage. Oxygen content in MAP was shown to be a more important factor affecting color stability and lipid oxidation of ground beef than organic acid salts. The aerobic and anaerobic bacterial counts were reduced both in OxyMAP and NitroMAP (p<0.05), and the lactic acid bacteria was inhibited by Oxy-MAP (p<0.05). Coliform bacteria decreased during storage as pH value was decreased in all treatments. According to the sensory evaluation, the ground beef patties in NitroMAP showed the best quality among all treatments during storage. Therefore, Hanwoo ground beef patties added with sodium acetate and calcium lactate and packed with NitroMAP showed better quality characteristics than other treatments. This packaging method is recommended and could be utilized for packaging hanwoo ground beef patties for improving quality and extending shelf-life.

코로나19가 한육우 시장 및 한육우 농가 인력수요에 미치는 영향분석 (An Analysis of the Impact of Coronavirus Disease (COVID-19) on the Korean Beef Cattle Market and Farm Labor Demand for Korean Beef Cattle)

  • The Coronavirus disease (COVID-19), first identified in China in December 2019, has widely spread worldwide and is an ongoing pandemic. It is expected that the ripple effect of COVID-19 on the global economy including the agricultural sector will increase substantially if not properly controlled shortly. This study examines the potential impact of COVID-19 on the Korean beef cattle sector and farm labor demand for Korean beef cattle using a dynamic partial equilibrium model. The agricultural production value and farm labor demand for Korean beef cattle in the scenario assuming pessimistic GDP growth rate (-1.2% in 2020) with no direct supply shocks fell by up to 4.00% and 0.67%, respectively, compared to the baseline which represents the future without COVID-19 outbreak. On the other hand, the agricultural production value and farm labor demand for Korean beef cattle in the scenario assuming both pessimistic GDP growth rate and supply shocks (-12.7% beef imports and + 2.4% feed cost in 2020) increased by up to 12.08% and 1.99%, respectively, compared to the baseline.

유기농 쇠고기에 대한 신념, 주관적 규범, 도덕 관념과 태도가 소비 의도에 미치는 영향 평가 (Measuring the Effects of Belief, Subjective Norm, Moral Feeling and Attitude on Intention to Consume Organic Beef)

  • The purpose of this study was to assess the causal relationships among belief, subjective norm, moral feeling, attitude, and the intention to consume organic beef. A total of 326 questionnaires were completed by adult in Jeonnam area. Structural equation modeling was used to measure the causal relationships among the constructs. The structural analysis results indicated an excellent model-data fit. The covariance effects of belief and subjective norm, and belief and moral feeling were statistically significant. The effects of belief and moral feeling on attitude and intention to consume were also statistically significant. As expected, attitude had significant effects on intention to consume. Moreover, attitude played a mediating roles in the relationship between belief and intention to consume. Finally, based on structural analysis, a model was proposed for the interrelations among belief, subjective norm and moral feeling towards organic food, attitude and intention to consume. It should be noted that the original organic food consumption model was modified, and should preferably be validated by future research. Other constructs, such as perceived behavior control and consumption, may be incorporated to form models that consist of new antecedent and consequence pairs.

한·미 FTA가 한육우 산업에 미친 영향에 대한 사후적 평가 - 전남지역을 중심으로 - (An Ex-post Analysis of the Impact of the Korea-US FTA on the Korean Beef Cattle Industry - Focused on Jeonnam Province -)

  • The Korea-US FTA was one of the most controversial FTAs Korea has ever signed and was expected to have a significant effect on the agriculture sector, especially the livestock industry. This study ex-post analyzed the impact of the Korea-US FTA on the Korean beef industry including the Jeonnam province using a dynamic partial equilibrium model. According to the scenario analysis results, if there was no Korea-US FTA, the beef imports would be reduced to as low as 0.24% to 4.19% compared to the Baseline applying existing Korea-US FTA beef tariff rates over the 2012 to 2022 periods. In addition, if there was no Korea-US FTA, the agricultural product value of Jeonnam and national Korean beef cattle would increase from 0.25% to 7.37% and 0.25% to 7.33%, respectively, compared to the Baseline. The results of the analysis are expected to be used as important information for policy establishment in preparation for CPTPP and supplementation of current FTA policies regarding Korean beef cattle not only for the central government but also Jeonnam province.
