노년기 고혈압 관리 대상자의 체질량지수, 허리둘레에 의한 비만정도와 영양소 섭취 상태 비교 연구 (Association of Nutritional Status with Obesity by Body Mass Index and Waist Circumference among Hypertensive Elderly Patients)

  • Hypertension and obesity are important modifiable risk factors for cardiovascular disease, the leading cause of death in Korea. Therefore, we assessed the association between dietary pattern and obesity in hypertensive patients to formulate health promotion strategies for the older population. Dietary information was collected from hypertensive patients visiting community health education and information center by using 24 hour recall method. The 2005 DRIs for Koreans was used to evaluate the dietary adequacy. When subjects were categorized by body mass index (BMI) as normal, overweight and obese, no significant difference in energy intake was found among groups. Dietary intakes of folate, and vitamin C in obese hypertensive patients were significantly lower than in normal weight patients (p < 0.05). When we compare the nutritional status by waist circumferences, dietary intakes of zinc, vitamin A, thiamin, vitamin C and folate were significantly lower in the obese group. Vegetable intake was significantly lower in the obese group according to BMI as well as waist circumference. Energy intake from carbohydrate was significantly higher in obese hypertensive patients (p < 0.05). Obese hypertensive patients had a higher risk of nutritional inadequacy compared to normal weight patients. Our results indicated the need for developing interventions that encourage greater consumption of vegetables while cutting down salt intake with wise selection of staple foods, for obese hypertensive patients.

강화도 장수 노인의 식습관 점수별 식생활태도 및 영양상태 조사 (A Study on Dietary Pattern and Nutritional Status of the Long-Lived Elderly People by Food Habit Index in Ganghwa-gun Area)

  • This study was carried out to assess the food habit index of the long-lived elderly who were aged over 85 years living in Ganghwa-gun. A survey was conducted during December 2003. Dietary nutrient intake data was obtained through the 24-hr recall method. The subjects were 96 (32 males, 64 females) aged people and divided into three groups based on food habit index scores. Such as group A: good $16\∼20$, group B: fair $11\∼15$, and group C: poor $5\∼10$. The three groups of the subjects were 90.7 years of age and $21.3\;kg/m^{2}$ of BMI on average. Healthy eating index scores of the subjects were $9.4\%$ in group A, $54.2\%$ in group B and $36.5\%$ in group C. Their level of education were lower and their levels of living standards tended to have been middle and lower of the middle class. The percentage of living together with their families or spouses in all groups were over $60.0\%$ and the rates of the subjects who have responsibility for their meal preparations were also very high in all groups. Most subjects tended not to drink nor smoke, and spend $8\~10$ hours for their sleep. The percent of number of diseases in group A was lower than in groups B and C. Their dietary habits such as taking three meals a day regularly have shown that they have good eating habit in general. There was a positive correlation between the eating behaviors and nutrient intakes. The protein, animal protein, fat, PUFA, vitamin E, vitamin $B_{2}$, niacin, P and K intaks in group A were significantly higher than that of the groups B and C. For group A of good food habits aged had no sufficient intake of Ca and vitamin A than the Korean RDA and long-lived elderly of group C in Ganghwa areas had worse nutrients intakes, especially Ca, vitamin A, vitamin $B_{2}$ and vitamin E. According to this research having a good eating habits could be considered as increasing of the health and nutritional status. (Korean J Community Nutrition 10(6) $892\∼904$, 2005)

Studies for Physicochemical and In Vitro Digestibility Characteristics of Flour and Starch from Chickpea (Cicer arietinum L.)

  • Flour and isolated starch from chickpea (desi type, 328S-8) were evaluated for their in vitro digestibility and physicochemical properties. The protein content, total starch content and apparent amylose content of chickpea flour and isolated starch were 22.2% and 0.6%, 45.8% and 91.5%, and 11.7% and 35.4%, respectively. Chickpea starch granules had an oval to round shape with a smooth surface. The X-ray diffraction pattern of chickpea starch was of the C-type and relative crystallinity was 24.6%. Chickpea starch had only a single endothermic transition (13.3 J/g) in the DSC thermogram, whereas chickpea flour showed two separate endothermic transitions corresponding to starch gelatinization (5.1 J/g) and disruption of the amylose-lipid complex (0.7 J/g). The chickpea flour had a significantly lower pasting viscosity without breakdown due to low starch content and interference of other components. The chickpea starch exhibited significant high setback in the viscogram. The average branch chain length, proportion of short branch chain (DP 6~12), and long branch chains (DP${\geq}$37) of isolated chickpea starch were 20.1, 20.9% and 9.2%, respectively. The rapidly digestible starch (RDS), slowly digestible starch (SDS) and resistant starch (RS) contents of chickpea flour and starch were 9.9% and 21.5%, 28.7% and 57.7%, and 7.1% and 9.3%, respectively. The expected glycemic index (eGI) of chickpea flour (39.5), based on the hydrolysis index, was substantially lower than that of isolated chickpea starch (69.2).

한국 청소년의 식사의 질 평가에 적절한 식품군의 조성 -Kant의 최소량에 기초하여- (Composition of Food Groups Appropriate for Evaluation of Diet Quality of Korean Adolescents -Based on Kant's Minimum Amount-)

  • The purpose of this study was to determine composition of food groups appropriate for the evaluation of the quality of total diet or food guide, using the data from the 1998 National Health and Nutrition Survey. Twenty-four-hour-dietary recalls of total 1,110 Korean adolescents aged 13 - 19 years (male 543, female 567) were analyzed for food group consumed (Dietary Diversity Score, DDS), intake patterns of food group, mean index of nutritional quality (mINQ) and nutrient adequacy ratio (NAR). Considering Korean food pattern different from the Americans, this study is to check if Korean 5 food groups with both of oil & sugar group and vegetable & fruit group, and a minimum amount of 30 g in grain group and 15 g in meat group modified from Kant's minimum amount, 15 g in grain and 30 g in meat, could also be appropriate for the diet evaluation of Korean adolescents. Combination of food group and minimum food intake per each food group used in the first trial were categorized into 6 kinds of types: 1) American 5 food groups with Kant's minimum amount as control or 2) American 5 food groups with modified Kant's minimum amount 3) Korean 5 food groups excluded by sugar with the modified amount 4) Korean 5 food groups with modified amount 5) American food groups added oil group with the modified amount 6) American food groups added oil & sugar group with the modified amount. In case of oil group or oil and sugar group, 5 g was quoted for the minimum amount. Correlation between DDS and indices of other diet quality in each type of food group composition were analyzed and the best food group composition was traced by comparing the correlation coefficients of DDS and mINQ or MARs at ${\alpha}\;<\;0.01$. There was no meaningful difference in weight length index of the subjects of eating or not-eating oil or oil & sugar, while the values of mINQ showed higher in the subjects eating oil but no difference in the subjects eating oil & sugar, compared to the group not-eating, respectively. In comparison of type 1 and type 2, correlation between DDS and indices of other diet quality showed higher in type 1 using Kant's amount. And comparing the type of a combined group of fruit & vegetable (type 3 and 4) and the type of separated group of fruit and vegetable (type 5 and 6). six groups of separated vegetable and fruit showed the higher correlation of DDSs and indices of diet quality. In case of being classified into six groups with oil, DDS showed correlation of r = 0.293 with INQ. While, being classified into six groups with oil & sugar instead of oil only, DDS showed correlation of r = 0.249 with INQ. Accordingly the type 5 with oil is regarded as the better food group type than the type 6 with oil & sugar. Since better result was shown in the composition of six groups with Kant's minimum amount, the comparative analysis on both of type1 with oil and oil & sugar was finally performed. Then oil added type 1 showed higher correlation of DDS and indices of diet quality. These result indicated that it would be more appropriate to use six food groups with separate vegetable and fruit including oil group (oil-added type 1) rather than oil & sugar group for evaluation of dietary quality of Korean adolescents using DDS.

  • 우리나라의 여러가지 현실정을 고려해볼 때 모든 영양소의 보급원이 될 수 있으며 값이 바서 농어촌 어린이까지 널리 이용할 수 있는 영양식품의 개발은 대단히 시급하고도 중요한 일이다. 이 연구에서는 그 개발을 위하여 몇 가지 농산물을 주원료로 적절히 가공하고 여기에 FPC 효모 경화유 비타민 무기질 등을 첨가한 새로운 분말식품을 제조하고, 이에 대한 이화학적 성상을 조사하였다. 가. 시제품은 담황색 분말로서 순한 향취를 가지며 ;water absorption index, 320; 총균수, $10^4/g$ 이하:sedimentation value, 63: Bostwick consistency value, 15cm/30% 및 ring test value, 23cm/30% 이었다. 나. 단백질을 22-25% 함유하는 이 시제품은 FAO표준구성(1957)을 기준으로 할 때 주제한아미노산이 총 함유황아미노산이며, 단백가는 F-F-3가 45, F-P-4는 75이었다. 그러나 수정된 FAO 표준구성(1965)과 비교해보면 threonine이 제한아미노산이며 이 때의 F-P-4의 단백가는 93이었다. 한편 Holt 등이 제안한 유아필수아미노산 소요량을 F-P-4와 비교한 결과 12 개월된 유아의 하루 소요량을 P-P-4 130g으로서 대체로 만족시키고 있었다. 다. 비타민 및 무기질 함량을 분석 조사한 결과 이 제품 100g으로서도 유유아의 1일 권장량을 대채로 충족시킬 수 있었다.

자색고구마 anthocynin 색소의 대량추출 및 농축 (Pilot Plant Scale Extraction and Concentration of Purple-Fleshed Sweet Potato Anthocyanin Pigment)

  • 자색고구마로부터 anthocyanin색소를 대규모로 추출 및 농축하여 색소의 추출효과 및 색소액의 품질을 조사하였다. 자색고구마 원료 50 kg에 1% citric acid를 함유한 20% ethanol용액 500 L를 가하여 추출하였으며, bag filter와 pore size $1{\mu}m$인 microfilter를 이용하여 2단계로 여과한 후 $40^{\circ}C$, 진공도 600 mmHg에서 감압농축하였다. 전반적으로 대규모 추출시의 색소의 추출양상은 실험실규모의 소규모 추출의 경우와 유사하였다. 추출된 색소액의 TOD는 6.53이었으며, 농축액의 TOD는 120.45으로 18.45배 농축되었다. 색소추출액의 BI와 DI는 각각 5.86, 1.55이었으며 농축액의 BI와 DI는 각각 5.89, 1.56으로 농축과정 중에 색소의 변색이나 변질이 없었다. 색소추출액의 pH는 2.9이었으며 농축액의 pH는 2.5로 감소하였다.

유아기 어린이의 영양 인식과 관련된 요인 분석 -III. 식이 섭취와 영양 인식- (Analysis of Factors Associated with The Preschool Children's Nutrition Awareness -III. Dietary intakes and nutrition awareness of children-)

  • This study estimated the status of dietary intake of 258 children from ages 3 to 6 living in Seoul and analyzed the correlation between the degree of children's nutrition awareness and dietary intake, to provide some basic informations on nutrition education program for their health promotion. Average height and weight of the children were 110.5 cm and 19.7 kg. And their body mass index was 16.2 and obesity index was 6.5%. Proportions of carbohydrate, protein and fat to the total calorie intakes were on the average 55.8%, 15.6% and 28.6%. Calorie intake proportion of breakfast, lunch, dinner and snack were 20.9%, 21.9%, 22.3% and 34.9%. In protein intake, proportion of animal and vegetable protein was 1.4, in fat intake pattern, P/M/S ratio was 1.2/1.2/1.0. As a consequence of analyzing the correlation between children's nutrition awareness and dietary intake, children of high awareness degree to the food value did not intake much calorie and carbohydrate, and did not choose cereals and starches, condensed fat food. As a result, dietary intake of pre-school children showed very good but partially showed a problem of over and under nutrition in quantity or in quality we hope that the result of this study could be helpful for the nutrition education program for the health and nutrition of the pre-school children.

Physicochemical Properties of Job's Tears (Coix lachryma-jobi L.) Starch Modified with Different Levels of Acid Hydrolysis

  • Physicochemical properties of native and acid-modified Job's tears (Coix lachryma-jobi L.) starches were investigated. Starch extracted from Job's tears was treated with 2.2 N hydrochloric acid for different length of time (3, 6, 12, and 18 hr). The hydrolysis pattern of starches with the acid proceeded rapidly up to 12 hr and then the approached constant values. The swelling power of acid-modified starches measured at all temperatures was lower than that of its native counterparts and the water solubility index increased as temperature and hydrolysis time increased. Rapid visco analyzer viscograms of acid-modified starches demonstrated a very low viscosity as compared with that of native starch. However, Xray diffraction did not show any significant alteration in the crystallinity after acid-modification.

건강한 한국성인의 음료섭취패턴과 대사증후군의 연관성 연구 -2013~2015년 국민건강영양조사를 바탕으로- (Relation between Beverage Consumption Pattern and Metabolic Syndrome among Healthy Korean Adults)

  • Objectives: The purpose of this study is to describe beverage patterns among healthy Korean adults and investigate their association with prevalence and components of metabolic syndrome. Methods: Subjects consisted of 6,927 Korean adults, aged 19-64 years in the $6^{th}$ Korea National Health and Nutrition Examination Survey (KNHANES, 2013-2015). Beverages were regrouped into twelve groups based on food codes and beverage intake (g/day) was assessed by 24-hour recall. Factor analysis was used to obtain beverage patterns. Waist circumference and body mass index (BMI) were used as anthropometric data; fasting blood glucose, triglyceride, high density lipoprotein (HDL), and blood pressure were used as biochemical indicators. The odds ratio (OR) for prevalence of metabolic syndrome and components of metabolic syndrome was assessed using logistic regression analysis. Results: Three beverage patterns were identified using factor analysis: 1) carbonated soft drinks 2) coffee (without added sugar or powdered creamer), and 3) alcoholic beverages. Subjects with high scores for the carbonated soft drink and coffee without added sugar or powdered creamer patterns were younger and subjects with high scores for the alcoholic beverage pattern were older. There were significant differences in gender distribution in all three beverage patterns, with men more likely to have high scores for carbonated soft drink and alcoholic beverage patterns. On the other hand, women were more likely to have higher scores for coffee without added sugar or powdered creamer pattern. Within each pattern, there were significant differences in sociodemographic and lifestyle characteristics such as education, household income, frequency of eating out, and smoking status according to the quartile of pattern scores. Alcoholic beverages and carbonated soft drinks patterns were associated with an increased levels of metabolic syndrome components, but coffee without added sugar or powdered creamer was not associated with any of metabolic syndrome components in healthy Korean adults after adjusting for age, sex, education, BMI, weight management, household income, smoking status, frequency of eating out, and energy intake. Conclusions: Alcoholic beverages and carbonated soft drinks patterns are associated with increased levels of metabolic syndrome components while coffee without added sugar or powdered creamer pattern is not associated with any of metabolic syndrome components in healthy Korean adults.

노인의 흡연상태에 따른 식이섭취 패턴 (Dietary Patterns of Elderly People by Smoking Status)

  • It has been proposed that differences in diet between smokers and nonsmokers may partially explain the positive association between cigarette smoking and chronic diseases such as cancer and coronary heart disease. To investigate the potential for this confounding, the authors studied the relation between cigarette smoking and dietary pattern including nutrient intake in 152 Korean elderly people aged 59∼84years. Dietary intake was determined by a 24-hour recall method and a food frequency questionnaire. Male smokers were lighter than nonsmokers and had a lower body mass index(BMI)(p<0.05). But there were no differences in body weight and BMI between female smokers and nonsmokers. Female smokers had lower intakes of energy and carbohydrates than nonsmokers(p<0.05), but in male, smokers and nonsmokers did not show the difference in energy intake. The mean intake of fiber, protein, fat, minerals, and vitamins did not vary significantly by smoking status. However, both male and female smokers consumed fewer fruits than nonsmokers and ate fresh fruits less often than nonsmokers. The total food frequency score which reflect dietary quality of smokers was lower than those of nonsmokers(p<0.05). Male exsmokers' diet were similar to those of smokers, but in female, dietary patterns of exsmokers were similar to those of nonsmokers. These results confirm that elderly smokers have partially different nutrient and food intake patterns from nonsmokers. The decreased ingestion of fruits and less balanced diet by cigarette smokers could contribute to their increased risks of chronic disease compared with those by nonsmokers. The increased ingestion of nutrients and improved nutritional balance in the diet of exsmokers may help to reduce their risks as well.
