서울과 강릉지역 초등학교 아동의 급식에 대한 만족도 평가 (The Assessment of Children's Satisfaction with Foodservice in Elementary Schools Located in Seoul and Kangnung)

  • A survey of 28 school foodservice establishments in Seoul and Kangnung was undertaken and detailed information was collected from 3,590 elementary school students. Childrert's satisfaction with the quality of school food was evaluated by questionnaires. It was measured by assessing 15 variables. Statistical data analysis was using SAS package program for descriptive analysis and T-test. Elementary schools in Seoul were all located in urban areas, whereas elementary schools in Kangnung were in urban areas (40.4%), provincial areas (40.0%) and in isolated areas (20.0%). Children seemed to be generally satisfied with the food served, with the lowest score of milk. Mean wastes for soups and Kimchi were found to be larger than those for milk and side dishes. The major reasons for leaving leftover were 'dislike the food (27.4%)'>'too big portion size (23.6%)'>'food is not tasty (19.2%)'>'low appetite (17.6%)'>'food is too overcooked or undercooked (3.9%)'>'food is not hot enough (3.2%)' in order.

증국 운남성 백족의 음식문화 (Food of China Yunnan Baizu)

  • The Purpose of this study was to understand the China Yunnan Baizu food. This study was performed a visit market based on in- depth interview with food experts those who lived in Baizu province. The results were summarized as follows. The main food of Baizu were Bab, Dduk(BaBa), Nuddle(Mi xian) made from rice. They ate all kind of food from vegetables, fish, and pork, but the remarkable thing was that there were practical limit to select the ingredient. They would use some fermented products such as Pao-chai, Yan-chai, Zha. Pao-chai was fermented vegetables like Kimchi, Yan-chai was similar with Changachi in Korea, and Zha was prepared from meat and fish. Menus for Banquets were included 8 kinds of cold appetizer, 8 kinds of hot dishes, and 2 kinds of sweet desserts. The ingredients were local products and they considered hot, sour, cold taste importantly. The method of cooking was simple and Rusan, Sengpi was the most traditional Baizu food. Ru san is one of dishes prepared from the milk, and milk pedimented product. Sengpi was uncooked pork.

남녀 대학생의 음식선택기준과 외식행동 (Factors in Food Selection and Eating Out Behavior of College Students)

  • This study was undertaken to assess eating out behavior and factors in food choices of 369 college students in Kwangju. 47.1% of subjects ate out at least once a day and lunch was the most frequent meal for eating out. Eating out expenditure was significantly associated with student's allowances. Significant differences were observed in frequency, expenditure of eating out and related factors in food preference between male and female students. Taste was the most considered factor but nutrition was the least considered in food selection of respondents. Among male respondents, the most important nutritive factor was protein followed by calorie and vitamin. However, female counterpart regarded calorie as the most important nutritive factor affecting food selection. Tendency of increased vegetable and fruit consumption was noted in subjects over past a few years. It might be suggested that effective nutrition education for college students be implemented to improve and develop eating out behavior related to nutrition in food selection.

비빔밥에 대한 독일 바이로이드지역 학생들의 인식 및 기호도 조사 연구 (A Survey on the Recognition and the Preference of Bibimbab with Students in Bayreuther, Germany)

  • In 2013, for the 130th anniversary of the establishment of diplomatic relations between Korea and Germany as well as the 50th anniversary of the dispatch of Korean workers to Germany, a survey on the recognition and preferences related to Bibimbab was carried out among students in Bayreuther, Germany majoring in hotel management who had not tried Korean food before. As part of the globalization of Korean food, 10 different foods that Germans might like were prepared, and the survey took place after food tasting. In the results, 44% of students noted that their first impression of Bibimbab was good, and impression was more favorable after tasting than before. The preference for nine foods other than Bibimbab was in order of Kimchi, Bulgogi, Mandu, Modum-jeon, Samgyetang, Gimbab, Japchae, Tteokbokki, and Sangchu-muchim. Students liked Bibimbab due to its healthiness, and most students showed interest in Korean food after tasting Bibimbab. To improve Bibimbab, most students answered diversifying sauces.

  • The results obtained by survey on 599 respondents of different age groups for preference of 84 prepared foods were subjected to statistical principal component analysis, factor analysis, analysis of variance, scheffe verification, and discriminant analysis so as to find a structure of preference for foods. The results may be summarized as follows: 1. The results of the factor analysis indicate that 84 prepared food items may be classified into 3 groups and that by knowing an indvidual's preference to one prepared food, one can presume his preference to the others in the same group without carrying out actual test. 2. The results from an analysis of variance showed that most of primary school children extremely liked snacks, seniors liked Korean cooking, primary school children and collegians had weaknesses for western cookings while kindergarden children and adults over 50 years old disliked them.

산업체 근로자의 식습관과 영양상태에 관한 연구 (Food Habits and Nutritional Status of Men working at Industry)

  • This study was carried out to obtain the information concerning nutritional status, including factors of food habits of 293 men working at industry in Ulsan area. The subjects of this study were composed of 152 clerical workers and 141 physical workers. The results of this study can be summarized as follows: Average age of this subjects was 34.7 years (ranging from 21 to 52), the mean height and weight were 171.5 cm and 66.9 kg, corresponding to the BMI of 22.7. The mean food habit score was 4.4 (ranging from 0 to 9.5) and the mean nutrition knowledge score was 4.9 (ranging from 0 to 10.0) which showed significant correlations with food habit score. Dietary intake data showed the average daily intake of energy, protein, calcium and iron were higher than Korean recommended dietary allowances (RDA), vitamin A, $B_1,\;B_2$, niacin, ascorbic acid were lower than RDA. Among the various influential factors, nutrition knowledge, drinking, smoking and prevalence symptoms of subjects correlated with food habits significantly.

한식당 세계화를 위한 성공모델로서의 일식당 실내공간과 음식관련요소의 특성 연구 - 홍콩 소재 일식당 대상 - (A Study on Characteristics of Indoor space and Food related of Japanese restaurant as successful model for globalizing Korean restaurants - Japanese restaurants in Hong Kong -)

  • The present study is a basic research for promoting the globalization of Korean food, aiming to analyze Japanese restaurants in Hong Kong, an international city successful in globalization, focused on their spatial characteristics and food related characteristics and to use the results as basic materials. The results of this study are as follows. As to the characteristics of indoor spaces and food of Japanese restaurants in Hong Kong, first, the locations of Japanese restaurants were mostly easily accessible luxury hotels, office buildings or shopping malls. They displayed Japanese styles well and used conspicuous signs. Their trade names were given after traditional place names, food names, greetings, etc. Second, the spaces of Japanese restaurants expressed contemporary and, at the same time, traditional styles moderately and elegantly by applying emphatic articles such as traditional furniture, tools and folk paintings to contemporary spaces with traditional air, and by doing so, they showed various possibilities. Third, as to the characteristics of food culture, menus were diversified from traditional menus such as kaiseki to everyday menus such as vinegared rice, ramen, skewered roast meat and fusion dish, and at the same time, differentiated by concept. In addition, some restaurants succeeded in globalization and modernization with chains throughout the world. Furthermore, while table setting, food dishing and tableware image were harmonized with the concept of the restaurant space, if tradition needed to be displayed it was used at a minimum, showing the Japanese aesthetic sense through the restaurant space and food. In globalizing Korean restaurants based on the results of this study, we need to link trade name, facade, sign, menu and space with served food, and to plan a consistent story so that Korean culture and images are expressed. In addition, if a manual is made by benchmarking the Japanese government's support policies and relevant businesses' efforts and ideas and provided to Korean restaurants, it will be helpful for Korean restaurants, which spread Korean food culture, to be more competitive and graceful.

문헌에 나타난 불고기의 개념과 의미 변화 (The Change of the Concept and Meaning of Bulgogi in Cookery Book & Dictionary)

  • The purpose of this research was to investigate the transition of the concept and meaning of "bulgogi". "Bulgogi" is a representative Korean food and is also a global menu item. The first dictionary that presented the word "bulgogi" was the Keunsajeon (big dictionary). The results of an analysis of 17 dictionaries published in the last 60 years showed the immutable definition of "neobiani" as seasoned and broiled beef. In contrast, "bulgogi" has been termed differently, from "simply grilled meat of an animal" to the same meaning as that of "neobiani". Furthermore, to define the difference between common grilled meat in modern versus present time, a review of 26 cookery books from Sieuijeanseo, written in late 1800, to The Taste of Korea, written in 1987, were selected and examined. To date, the first appearance of the word "bulgogi" mentioned in a cook book was in Practice in Higher Cuisine, which was written by Shin- young Bang in 1958. The book states that "bulgogi" is the second name or the vulgar designation of "neobiani".

탁주용 곰팡이 고체종국 제조 및 품질 특성 (Quality characteristics and preparing of solid starter using fungal strains for Takju)

  • 본 연구에서는 전분 및 단백질 분해력이 우수한 토착 발효종균 Aspergillus luchuensis 74-5 및 Aspergillus oryzae 75-2로 제조한 고체종국의 품질 특성을 조사하였다. 액체종국 접종량 5%와 10% 접종하였을 때, pH는 각각 5.78 및 3.85 이하로, 적정산도는 2.12와 8.54 이상, 아미노산도는 1.15 및 2.66 이상으로 균주에 따라 차이를 보였다. 효소활성의 변화는 발효종균에 따라 증감 패턴이 특징적으로 나타났고, 액국 접종량에 따라 A. luchuensis 74-5는 접종량이 증가할수록 ${\alpha}-amylase$와 glucoamylase 활성은 증가하나 acidic protease활성은 감소하였고, A. oryzae 75-2는 5% 접종하였을 때 모든 효소활성이 가장 높게 나타났다. 발효온도는 저온보다 중온(35, $40^{\circ}C$)에서 효소활성이 우수한 것으로 나타났고, 발효시간은 종균에 따라 차이는 있지만 각각 144시간과 120시간일 때 효소활성이 높은 것으로 나타났다. 발효조건에 따른 고체종국의 포자수는 약 $2.0{\times}10^7$, 세균의 오염은 약 $3.0{\times}10^3$으로 나타났으며, 세균에 의한 오염도 저감화 및 효소활성을 유지하기 위하여, 구연산, 종국의 건조법 및 부형제 등의 추가적인 연구가 필요하다.

  • Institutional foodservice is a type of meal provided to workers in industry and affects the health and psychological wellbeing of workers and productivity. Thus, research on customer satisfaction with institutional foodservice is important. In addition to food industry and food culture developments, the requirements of institutional foodservice customers are diversifying due to COVID-19. Therefore, the purpose of this study was to identify factors that affect customer satisfaction with institutional foodservice using a user-based approach. In this study, the quality of institutional foodservice was defined using customer satisfaction or dissatisfaction, and by using in-depth interview and open coding (a qualitative research method), we derived qualities of institutional foodservice from the user's perspective and compared these with those of previous studies. This study is meaningful as the quality of institutional foodservice was analyzed using a user-based approach, in-depth interview, and open coding and compares results with those of previous studies.
