Vitamin U(S-methylmethionin) levels were affected by cultivars, portion and storage times in Kimchi made from Korean Chinese cabbages. From this study, the outward parts contained high levels of vitamin U in two cultivars of Winter Pride and 55 days. Vitamin U levels in Kimchi during storage were increased during fermentation at $4^{\circ}C$. Leaf parts were 1.1-5.2 times higher in vitamin U levels than midribs in both cultivars. The levels of vitamin U were shown highest in outward leaf parts of 55 days cultivars. Like vitamin U, free amino acid also showed much higher levels in leaves. Levels of amino acids showed similarly changing patterns at different parts and cultivars of Korean Chinese cabbages in Kimchi. Threonine, alanine and proline appeared relatively abundant amino acids in most parts of sample. Moreover, methionine as a precursor of vitamin U has been reported that leaf parts contained the higher levels than midrib parts. But methionine was shown most core leaf parts. Methionine as a precursor of vitamin U, may not play a role in an increase of vitamin U of Korean Chinese cabbages in Kimchi.
The uptake and transportation patterns of the residual boscalid and chlorfenapyr were investigated from the soils to Korean cabbages. The recovery rates of the pesticides spiked in the soils and Korean cabbages were 87.5 to 105.2%. Korean cabbages were cultivated in soils treated with two different concentrations of the pesticides as low (3.0 mg/kg) and high (6.0 mg/kg) concentrations in greenhouse for 28 days. The initial level of boscalid was determined as 2.77 and 5.66 mg/kg for the low and high concentration of boscalid-treated soils, respectively. After 28 days of treatment, the residual boscalid in soils decreased to 0.53 and 1.60 mg/kg for the low and high concentration of boscalid-treated soils, respectively, and thus it was reduced to 71.7 to 81.9%. The initial level of chlorfenapyr was determined as 2.38 and 6.43 mg/kg for the low and high concentration of chlorfenapyr-treated soils, respectively. After 28 days of treatment, the residual chlorfenapyr in soils decreased to 1.36 and 2.91 mg/kg for the low and high concentration-treated soils, respectively, and thus it was reduced to 42.9 to 54.8%. The residual pesticide analysis was done with 2 day intervals from 21 days-cultivated Korean cabbages after seeding. Uptake rates of boscalid from the soil to Korean cabbages were 2.4 and 2.2% for the low- and high-concentration of boscalid-treated soil, respectively. However, the uptake rate of chlorfenapyr by the cabbages was 1.5 and 1.3% for the low and high concentration-treated soil, respectively. The uptake rate of chlorfenapyr by the cabbages was lower than that of boscalid. These results showed that the residual pesticides in soil could be absorbed by Korean cabbages depending on their physicochemical properties.

Summer cabbages in an alpine area are very sensitive to the fluctuations in supply and demand. Yield variability due to weather conditions dictates the market fluctuations of cabbage price. This study reports an empirical relationship based on weather conditions to estimate the growth and harvestable biomass of cabbages, factors that are critical for supply of summer cabbages. Based on experimental results testing sowing date effects over the two years from 1997 to 1998, a logistic equation was parameterized to predict leaf area expansion of summer cabbages. This logistic model for leaf area expansion was then combined with an empirical allometric relationship to predict total biomass. The final equation for estimating fresh weight accumulation of Chinese cabbage is given by: $$Fresh\;weight=3500/(1+{\exp}(5.175-1.153{\times}(6/(1+{\exp}(6.367-0.0064{\times}PHU)))))$$ Where PHU is potential heat units ($^{\circ}C$). The model performance was tested using weather data from 2003 to 2006 to predict fresh harvestable biomass. Overall the model performance was satisfactory with the correlation efficient ranging between 0.89 and 0.94 for each year.

The brined Chinese cabbages and kimchi seasoning mixture were separately stored and used for preparation of kimchi and the alternative method of conventional kimchi-manufacturing process was investigated. Chinese cabbages brined with 3% and 7% salt contents were stored at $0^{\circ}C$ and $10^{\circ}C$, and kimchi seasoning mixture without salt was stored at $4^{\circ}C$ and $10^{\circ}C$. The changes in pH and total acid of the cabbages were significantly slowly for the brined cabbage of 7% salt and storage at $0^{\circ}C$. Microbial growth including lactic acid bacteria were also increased slowly at $0^{\circ}C$. But, pH and total acid content of the kimchi seasoning mixture were not changed significantly at both temperatures during storage. Sensory evaluation on the kimchi samples showed that the modified method of kimchi preparation with separately stored seasoning mixture and brined cabbages is useful industrially or at home.
Whole apples were cut with a sharp or dull knife, and whole cabbages and crisp lettuce heads were cut into salad or thin strips with a knife or by hand. The fresh-cut apples, cabbages, and lettuce were packed in low-density polyethylene bags and kept at $4^{\circ}C$, and their qualities were investigated. Browning and softening of the apples that were cut with a sharp knife were more delayed than those of the apples that were cut with a dull knife. The soluble solids and pH of the fresh-cut apples were not affected by the sharpness of the cutting blade. The browning indexes of the fresh-cut cabbages and lettuce were significantly lower in the samples that were cut with a knife than by hand and in the samples that were cut into large pieces. The results suggest that the cutting blade sharpness, cutting tools, and cut types affected the quality of the fresh-cut apples and leafy vegetables, and that the cutting methods which minimized the cutting damage should be used to retard the browning and softening of the produce.

The main objective of this study was to investigate the patterns of glucosinolates (3-butenyl isothiocyanate, total glucosinolates) in different parts of young seedling and seeds on Korean Chinese cabbages 55 days and Winter pride cultivars. For determination of glucosinolates, two cultivars of Chinese cabbages seeds and different parts of 1-day-old, 3-day-old, 5-day-old, and 7-day-old seedlings were used for analytical sample preparation provided with an anion exchanges column, and measured by GC and UV-Visible Spectrophotometer. 3-Butenyl ITC concentration was the highest in the cotyledon and the hypocotyl parts of 55 days cultivar seedling. In the cotyledon part of Winter pride cultivar seedling, 3-butenyl ITC amount was increase to 3-day-old seedling and then reduced. The cotyledon of 55 days cultivar contained the highest concentration of total glucosinolates while those were increased in the hypocotyl and decreased by degrees in the root. Total glucosinolates amounts were increased to 5-day-old seedling and then decreased in the cotyledon and the hypocotyl parts of seedling on Winter pride cultivar. There was no significant difference in the root part. In the seeds, both of 3-butenyl ITC and total glucosinolates, 55 days cultivar concentration was higher than Winter pride cultivar. The study has shown the variability in 3-butenyl ITC and total glucosinolates concentrations among cultivars, growth stages, and parts.
The contents of free amino acid in cabbage cultivars originated from China and Korea were measured to determine the quality for taste and nutrition. The experimental variables were season (spring-sowing and fall-sowing), leaf position (inside and outside), and the cabbage color (green and red). Eighteen free amino acids were detected at the range of 0-38 mg/g dry weight. The most abundant amino acid was serine(0-128 mg/g). Alanine, aspartate, glutamate, asparagine, histidine, and proline were relatively rich at 2-12 mg/g dry weight. Glycine were significantly increased in spring-sowing cabbages by 2-fold but proline was reversely decreased by 7-fold. The inside parts of cabbages contained significantly more alanine, glutamate, glycine, isoleucine, serine, and valine than the outside ones. The higher contents of isolecuine, leucine, proline, and valine were observed in the red cabbages than the green ones. The significant cross effects of season-color and position-color were also observed, indicating the red and the green cabbages were differently affected by season and tissue position.
Kimchi cabbage is widely consumed in Korea, with the popularity of this pickled vegetable dish growing internationally due to its health benefits. In this study, the physical (size, color), functional (antioxidant activity, total polyphenol, and flavonoid content), and nutritional (water- and fat-soluble vitamins) characteristics of two new kimchi cabbage varieties, namely red and gold kimchi cabbages (RKC and GKC, respectively), were analyzed and compared with those of the common kimchi cabbage (CKC). There were no significant differences in the thickness or length of the three kimchi cabbages, although RKC had the narrowest outer leaves among the three varieties (11.94 cm). Regarding chromaticity, yellowness was highest in GKC (29.86), whereas redness was highest in RKC (9.31). Furthermore, RKC had the highest recorded vitamin B6 and B9 (1,288.5 ㎍/100 g and 776.7 ㎍ dietary folate equivalent/100 g, respectively). On the other hand, the fat-soluble vitamins vitamin A (β-carotene) and K (Phylloquinone) were both highest in GKC (907.1 ㎍/100 g and 712.2 ㎍/100 g, respectively). Generally, all kimchi cabbage samples contained high levels of vitamin E (1.8-4.9 mg α-tocopherol equivalent/100 g). RKC attained the highest antioxidant activity and total polyphenol and total flavonoid contents among the three kimchi cabbages. These results show that gold and red kimchi cabbage can be used as raw materials in the food-processing industry.
Vegetables and fruits purchased from several markets in Seoul from July to October in 1977 were analyzed to know the level of nitrate-and nitrite-nitrogen accumulation in relation to a public health. Radishes and chinese cabbages utilized mainly as pickled vegetables in Korea resulted in the highest concentration of nitrate-nitrogen. Some of the levels for radishes and chinese cabbages were notably high and exceeded a recommended upper limit of 300 ppm $No_{3}-N$, and thus these levels would render these samples unsafe for use. The levels in some of vegetables other than radish and chinese cabbage, e.g., spinach, lettuce, green onion, cabbage were relatively high and considered to be unsafe for use in feeding infants, where as those of green pepper, bean sprouts and parsely were very low and safe. And also the levells in fruits were very low and safe. Nitrite-nitrogen contents in all tested vegetables and fruits ranged to trace and appeared not to be accumulated in fresh vegetables and fruits. Stems and roots of radishes and chinese cabbages accumulated approximately 2 fold more nitrate-nitrogen than leaves in 5 samples of each vegetable tested.

To extend the shelf-life of salted Chinese cabbages, electrolyzed water (EW) was used to wash raw Chinese cabbages before the salting process (to control microbial growth), and different storage temperatures evaluated (0, 4, and $10^{\circ}C$). A tap water washing group (TW) was used for comparison. The initial total bacterial population was 5.36 log CFU/g in the TW treatment and 3.50 log CFU/g in the EW treatment. The EW treatment decreased bacterial numbers by approximately 2 log CFU/g compared to the TW treatment and kept this initial population number for 32 days at $0^{\circ}C$. The salinity had no difference during storage. In general, several factors (pH, reducing sugars, hardness, and transmittance) decreased over time, and decreased slowly with EW treatment and $0^{\circ}C$ storage. Overall, the salted Chinese cabbages with EW treatment showed lower bacterial populations compared to TW treatment, and when stored at $0^{\circ}C$, delayed decreases in quality.
