Studies on Mixing Conditions of Sub-ingredients of Kimchi Tablet by Response Surface Methodology (반응표면 분석에 의한 김치 타블렛 부재료의 혼합조건 연구)

  • Optimal mixing renditions of sub-ingredients(citron, apple, carrot and mushroom) for preparation of kimchi tablet were investigated by response surface methodology. Hardness of kimchi tablet was low with the addition of 0.75 g carrot powder but increased as increasing of mushroom amount. Hue angle of kimchi tablet was 83 ∼86 degree when the amount of citron, apple, carrot and mushroom was lower than 0.5 g. Solubility in artificial bile acid of kimchi tablet was not affected by the addition of carrot and was high in the group with 1.0 g mushroom added and the group with 0.75 g apple added. Flavor of kimchi tablet was better as increasing of the amounts of apple and carrot added. The results of investigating the effects of independent factors on each response variable showed that only carrot affected on the hue angle of tablet and other sub-ingredients not affecting on response variable. Therefore, carrot, apple and mushroom could be added in a wide range of concentration around 0.75 g.

Preparation and Characteristics of Kimchi Tablet (김치 타블렛의 제조와 품질특성)

  • In order to prepare kimchi tablet(K7), the kimchi was fermented with crushed materials and lactic acid bacterial starter. The effect of raying methods (hot air-drying : HAD, freeze drying: FD), moulding pressure (100, 150 and 200 kg/cm2) and moulding time (0, 1, 2, 3 and 4 min) of kimchi tablet on residual solid, characteristics of filtrate, color, textual properties, hygroscopicity and sensory quality were investigated. No great difference showed in residual solid of the tablet prepared with freeze dried kimchi (FD-KT), but the tablet prepared with hot air-dried kimchi (HAD-KT) decreased markedly with an increase in moulding pressure. Residual solid of FD-KT was lower than that of HAD-KT. The pH and redness for HAD-KT and FD-KT were similar. Total sugar. acidity and lightness of FD-KT as compared with HAD-KT were higher, while higher max, yield, strength and hardness were found for HAD-KT. Color, tactile, flavor, chewing taste, acceptability and hygroscopicity of FD-KT were generally higher than those of HAD-KT. Hygroscopicity of HAD-KT decreased with an increase in moulding pressure in md time, but that of FD-KT increased. Overall qualities of FD-KT and HAD-KT showed best in 200 kg/㎠ of moulding pressure, 3min of moulding time.

Anti-Obesity Effects of Kimchi Tablet Composition in Rats Fed High-Fat Diet (김치를 이용한 타블렛 조성물이 고지방식이로 유도된 흰쥐의 비만 억제에 미치는 효과)

  • Anti-obesity effects of kimchi tablet composition (KTC) were investigated with male Sprague-Dawley rats fed high-fat diet for 8 weeks. Fifty rats were classified to 4 groups: normal diet (ND), high fat diet (HFD), HFD+KTC 5% and HFD+KTC 10% for feeding experiments. This research showed that the final weight, weight gain, food efficiency ratio and organ weight were decreased by the addition of KTC compared to those of HFD group. Amount of subcutaneous fat of KTC groups were 13.6% and 21.3%, respectively. The plasma triglyceride concentration of KTC groups was lower than that of high fat diet group. Plasma cholesterol concentration of all four groups were not significantly different. HDL-cholesterol concentration of KTC groups was higher than those of high fat diet group. In addition, triglyceride and cholesterol concentrations in the liver and heart were reduced by the addition of KTC. Moreover, triglyceride concentration of fecal and hepatic HMG-CoA reductase activity were increased in KTC group. These results suggested that KTC might be useful for obesity control and good source of functional kimchi tablet.
