Study of Jang through Culinary Books of Qing Dynasty (중국 청대 조리서를 통해본 장류 고찰)

  • The sauce and paste, which is collectively called as 'jang' in Korean is the staple seasoning of Korean cuisine. Although China shares some aspects of the Jang (醬), the exact types and forms are different. In this study, we explore the current Korean jang through the six culinary books- "Seongwonlog (醒園錄)", "Yangsolog (養小錄)", "Jojeongjip (調鼎集)", "Susiggeeumsigbo (隨息居飮食譜)", "Junggwerok (中饋錄)", and "Sosigseolyag (素食說略)" from the Qing Dynasty of China. The Jang of Qing Dynasty are further classified into the Chumjang (甛醬), Dusi (豆豆支), Chungjang (淸醬), and jangyou (醬油). To make these four types, the huangzi (黃子) has to be first made from the flour or beans, after which salt is added and sun-dried. Chumjang is the type of Chunjang used to make Zhajiangmian and is widely used in the Northern part of China. Like Chumjang, Dusi is made from flour and beans. Salt as well as various spices like Star anise, Chinese pepper and sesame are added. This type of paste is widely used in the Southern part of China. Chungjang is made when salt and water are added and sun-dried, after which it is filtered through an apparatus called Jangyou. The final product is sauce similar to today's soybean sauce.

Post-Occupancy Evaluation of Housing Environments of Jangyou New Town in Gimhae (장유신도시 주거환경에 대한 거주 후 평가)

  • The purpose of the study was to perform the post-occupancy evaluation of housing environments of Jangyou New Town in Gimhae. The data for the analysis was collected through questionnaire survey method from August 10 to 27, 2010, and the sample consisted of 524 respondents living in apartment complexes in Jangyou. The features of housing environment were categorized into unit housing, apartment complex, and neighborhood and total 28 specific items were included in the evaluation. The data were analyzed using descriptive statistics and analysis of variance with Duncan's multiple range tests. The results were as follows: 1) Overall evaluation of housing environment of the residents in Jangyou were relatively high, expecially in floor plan layout of unit housing, self-expression through apartment complex, and natural environment of neighborhood. 2) The demographic and housing variables that had significant influences on the post-occupancy evaluation were age of the respondent, monthly income, apartment size and tenure type of apartment. Respondents who were over sixty years old, with monthly income of less than 2,000,000 won, or living in public rental apartments were more likely to evaluate overall housing environment positively than rest of the respondents.

A Study on the Irrigation Water Pollution of the Gimhae Plain (김해평야(金海平野)의 관개수(灌漑水) 오염(汚染)에 관한 연구(硏究))

  • Water quality of downstream of the Nagdong river, using for agricultural irrigation of the Gimhae plain, were observed. Water temperature, turbidity, residue, pH, BOD, COD, DO, hardness, chloride, sulphate, phosphate, inorganic nitrogenous compounds, sodium, general bacteria, E. coli and heavy metals of the water were investigated at Daejeo, Sikman, Bongrim, Noksan, Machal and Jangyou pumping stations in the Gimhae plain in May, July and October, 1981. The results obtained were as follows; 1) Average value of analyzed components of the water at all sampling sites were 7.8 pH, 6.3 ppm BOD, 6.5 ppm COD, 6.4 ppm DO, 231 ppm hardness, 582 ppm Cl-, 412 ppm $SO_4--$, 2.32 ppm $PO_4---$, 3.8 ppm $NH_4+,\;478\;ppm\;Na+$, 2964 No. /100 ml total coliform, 0.0040 ppm Cd, 0.0066 ppm Pb, respectively. 2) The most heavily polluted site of all investigated ones was Sikman. It seemed to be caused by the vast quantity of wastewater discharged from industrial district in Gimhae city. The next polluted sites were Bongrim, Daejeo and Noksan, and comparatively less polluted sites were Machal and Jangyou, judging from both appearance and physicochemical observation. 3) At Sikman, the most heavily polluted site, average value of components were 8.0 pH, 8.1 ppm BOD, 8.2 ppm COD. These values were close to the limit point of agricultural water quality standard of 8.0 ppm BOD (COD). 4) Any apparent variation was not observed by the sampling season in most components except DO and $NH_4+$. DO of October was higher than that of May or July but $NH_4+$ was low. 5) $NH_4+$ content was comparatively high in downstream of the Nagdong river of which water is used as the agricultural irrigation in the Gimhae plain. Therefore, fertilizer application on the farming land must make account of nitrogen content of the irrigation water 6) It was considered that chloride and sodium contents would not influence the crop cultivation in common season, but in dry season irrigation must be done carefully.

Effect of Irrigation Water Pollution on the Nutrition Physiology of Rice Plant in the Kimhae Plain;Especially on the Nitrogen Supply and Yield (김해평야 관개수 오염도가 벼 영양생리에 미치는 영향;질소양분 공급과 수량을 중심으로)

  • Water pollution status of the irrigation water, inorganic nutrient contents of rice plant, relationship between water quality of irrigation water and inorganic nutrient contents of rice plant, and nitrogen supply by irrigation water at six sites of pumping stations in Kimhae plain were investigated. The results were as follows : 1. Average values of water components analyzed at all pumping stations were in the range of 6.5-7.0 pH, 0.6-7.7ppm DO, 4.4-63.5ppm BOD, 7.3-73.9ppm COD, 1.84-16.22ppm $NH_4$-N, 1.22-15.49ppm $NO_3$-N and 0.07-1.35ppm $PO_4$-P respectively. 2. Comparatively heavy polluted sites were Sikman, Bongrim and Noksan, and less polluted sites were Daejeo, Myeongje and Jangyou, judging from BOD, COD and $NH_4$-N of the irrigation water. 3. Nitrogen supply by irrigated water for a year were 6.82Kg/10a, 5.98Kg/10a, 6.64Kg/10a, 2.31kg/10a, 6.22Kg/10a and 2.54Kg/10a in Daejeo, Sikman, Bongrim, Myeongji and Noksan area, respectively. 4. Positive correlation was observed between ammonium nitrogen of the water and total nitrogen contents of rice plant. Total nitrogen contents of rice plant were higher in Sikman, Borgim and Noksan area than in the other areas.
