Effect of recombinant yeast producing Sus scrofa ferritin Heavy-chain on piglets (자돈에서 Sus scrofa ferritin Heavy-chain 생산 재조합 효모의 효과)

  • Iron deficiency anemia is also recognized as a serious disorder in many livestock, especially, piglets. We previously studied that the iron-fortified yeast (Saccharomyces cerevisiae) producing Sus scrofa ferritin heavy-chain (FER) was bioavailable to mice with iron deficiency. In this study, we determined whether FER could improve iron deficiency in piglets. The bioavailability of FER was examined by measuring body weight gain, hemoglobin concentration and hematocrit value in suckling and weaning piglets. We found that FER significantly increased hemoglobin value and the hematocrit ratio in suckling piglets (P<0.05). Furthermore, FER treatment significantly enhanced body weight gain in both groups of the suckling and weaning piglets (P<0.05). These results suggest that the iron-fortified recombinant yeast strain is helpful in iron absorption in piglets.

Cross-Sectional Study on Iron Status of Asan Residents and Regional Comparison

  • Iron deficiency and anemia are severe nutrition problems in most of Korea. Iron intake, especially iron with better bioavailability is insufficient over a total age group. Recent changes in diet and life style of Koreans have been repeatedly suggested problems caused by excess nutrient intake rather than under intake. Despite the changes in diet patterns, iron deficient anemia is still prevalent in many parts of Korea. Eight hundred and fifty subjects (323 male and 527 female subjects) in Asan were recruited from farming, factory and urban area. Each subject was interviewed to assess nutrients intakes according to a 24hr-recall method. Twelve hour fasting blood samples were collected to vacutainer with EDTA for hemoglobin (Hb) and separate the tubes for serum iron (SI) and total iron binding capacity (TIBC). The mean serum iron value of female subjects in the factory area was significantly higher (p < 0.05) than that of the female subjects in the urban area although subjects in urban area showed significantly higher the dietary iron intake for both the men and woman (p < 0.05). Dietary iron intake for the younger women was lowest in the farming area and those in the urban area showed the highest dietary iron intake (p < 0.05). When the dietary iron intake was compared by different the age groups, dietary iron intake of the older women from animal sources was less than that of younger women in the urban area (p < 0.05). Dietary iron intake of Asan residents was not sufficient regardless of age, sex and regions and intake of heme iron was especially lower than nonheme iron. (J Community Nutrition 5(1) : 37∼43, 2003)

A Study on Iron Nutritional Status of Girls at Puberty in Kangnung Area (강릉지역 일부 사춘기 소녀의 철분 영양상태에 관한 연구)

  • This study was designed to assess the iron nutritional status of girls at puberty in Kangnung area. The subjects consisted of 161 adolescents in sixth-grade in primary school and first-grade in middle school girls. Anthropometric measurements were taken for body weight, height, percentage of body fat, and circumferences of waist and hip. Nutrient intakes were assessed by modified 24-hour recall method. Food models and other measuring tools were also used. Fasting blood samples were obtained and analyzed for hemoglobin(Hb) concentration, hematocrit(Hct), serum iron(FE) and total iron binding capacity(TIBC). Mean values for Hb, Hct, Fe, TIBC, TS and serum ferritin were $13.6{\pm}0.9g/dl$, $39.6{\pm}3.9%, 91.3{\pm}36.3{\mu}g/dl$, $327.9{\pm}45.2{\mu}g/dl$, $28.3{\pm}11.8%$ and $37.4{\pm}24.2ng/ml$, respectively. Prevalence of iron deficiency greatly varied by indices from 4.8% when judged by Hb to 18.4% by serum Fe concentration. The Hb concentration was positively correlated with Hct(r=0.641), serum iron(r=0.266) and transferrin saturation(r=0.237)(p<0.05). On the other hand, serum ferritin concentration showed significantly negative correlation with TIBC(r=-0.572). Mean daily intake of iron was 14.94mg and heme iron intake was 1.13mg and which was 7.6% of total iron intake. Total absorbable iron calculated by the method of Mosen was 1.38mg and bioavailability of dietary iron was 9.3%. These results suggest that the prevalence of iron deficiency of pubertal girls is very high, therefore the guidelines for diet and social supports, such as, school food service system should be provided to improve their iron status in middle school students.

Mineral bioavailability and physicochemical properties of muffins prepared with enzyme-treated whole wheat flour (효소처리 통밀가루를 첨가한 머핀의 미네랄 생체이용율 및 품질 특성)

  • The effects of phytase and cellulase treatment on the bioavailability of iron, calcium, and zinc in whole wheat flour and their food applications were evaluated in this study. Whole wheat flour was treated with phytase and cellulase either individually or in combination and incubated at 50℃ for 2 h; the concentrations used for the individual enzymes were 2%, 10%, and 20%. The concentration of the combination enzyme was 20% with a mixing ratio of 5:5. Total dietary fiber and phytate contents were reduced as the concentrations of phytase and cellulase increased. The bioavailability of iron, calcium, and zinc was notably improved after in vitro digestion in 20% cellulase, combination enzyme, and 20% phytase, respectively. Muffins made with cellulase- and phytase-treated whole wheat flour showed improved quality and bioavailability of minerals. Phytase- and cellulase-treated whole wheat flour may be useful for development of functional food products with improved bioavailability of minerals.

Effects of hot melt extrusion processed nano-iron on growth performance, blood composition, and iron bioavailability in weanling pigs

  • This study was conducted to investigate the effects of hot melt extrusion (HME) nano-iron as an alternative for the common ferrous sulfate on iron (Fe) bioavailability, growth performance, nutrient digestibility, intestinal morphology, and intestinal microbiota of weanling pigs. A total of 200 piglets (Landrace ${\times}$ Yorkshire ${\times}$ Duroc) were randomly allotted to seven treatments on the basis of initial body weight (BW) and sex. Treatments were the INO100 (100 ppm Fe as $FeSO_4$), HME-Fe levels (50, 75, and 100 ppm nano-Fe as $FeSO_4$). ORG100 (100 ppm Fe as iron methionine). In phase 1, the HME50 pigs showed the lowest Fe content in feed and feces. Plasma Fe concentration was increased in HME100 and ORG100 pigs. In phase 2, there were significantly lower concentration of Fe in feed and feces of HME50 pigs (p < 0.01). A lower Fe concentration in the plasma and liver were observed in HME50 pigs compared with HME100 pigs. Concentration of red blood cell (RBC) was the lowest (p < 0.01) for HME50 pigs. During phase 2, the HME100, HME75, and ORG100 pigs showed a higher RBC and hemoglobin values compared with HME50 pigs. Digestibility of gross energy (GE) and crude protein (CP) were significantly higher in HME100 pigs compared with HME50 pigs. There was an increased (p < 0.01) villus height in the duodenum and jejunum of HME100 pigs compared with HME50 pigs. It is concluded that dietary Fe does not improve growth performance of weanling pigs; however, increasing the dietary iron concentration in weanling piglets increased the RBC and hemoglobin. In addition, the potential ability of HME to be used at a lower level (HME75) was observed.

A Comparative Study of Dietary Mineral Intake Status and Serum Mineral Concentrations of Postmenopausal Vegetarian Women with those of the Omnivores (채식과 일반식 폐경 후 여성의 무기질 섭취량과 혈청 내 농도 비교)

  • The purpose of this study was to compare the mineral status of postmenopausal vegetarian women with those of the omnivores, and to investigate the relationship between dietary pattern and minerals status in postmenopausal Korean women. The research group was composed of vegetarian women (n = 38), all of them were seven day adventists, who had been on vegetarian diet over 20 yrs. Their anthropometric measurements, dietary intakes, and blood mineral concentrations were compared to age matched omnivores controls (n = 38). The average age of vegetarians and omnivores were 60.7 yrs and 60.5 yrs, respectively and there was no significant difference. The mean daily energy intake of vegetarians and omnivores were 1518.5 kcal and 1355.5 kcal, respectively and their was no significant difference. The mean calcium intake of vegetarians (492.6 mg) was not significantly different from that of omnivores (436.6 mg). The vegetarians consumed significantly greater quantities of magnesium (p < 0.001), iron (p < 0.001), copper (p < 0.001), manganese (p < 0.001) and dietary fiber (p < 0.05). There were no significantly differences in serum calcium, magnesium and manganese levels between vegetarians and omnivores. However, serum levels of phosphorus (p < 0.01), iron (p < 0.05), ferritin (p < 0.01), zinc (p < 0.001) and copper (p < 0.05) were significantly lower than those of omnivores. In conclusion, vegetarian postmenopausal women may have low bioavailability of iron, zinc and copper. Therefore it was needed that further study on mineral bioavailability of vegetarian diet. Nutritional Status of Iron of Elderly in Jeon-Ju Area (전주지역 노인의 철분영양상태)

  • The purpose of this study was to assess the nutritional status of iron of the elderly residing in the Jeonju area. The anthropometric parameters, nutrient intake and biochemical status of iron, were measured for 60 korean elderly(23 elderly men and 37 elderly women aged 60 - 79 years old). The level of hemoglobin(Hb), hematocrint(Hct), serum iron(Fe), total iron binding capacity(TIBC) and serum ferritin(Ferritin) were measured and transferrin saturation(TFsaturation) was calculated. Mean values of Hb, Hct, Fe, TIBC, TFsaturation and Ferritin were 14.49$\pm$0.93g/이, 42.47$\pm$2.59%, 125.48$\pm$52,.46$\mu\textrm{g}$/dl, 338.13$\pm$45.92$\mu\textrm{g}$/dl, 193.00$\pm$125.03$\mu\textrm{g}$/l in elderly men and 12.82$\pm$0.99$\mu\textrm{g}$/dl, 37.66$\pm$2.90%, 100.08$\pm$42.82$\mu\textrm{g}$/dl, 356.41$\pm$54.65$\mu\textrm{g}$/dl, and 99.35$\pm$117.22$\mu\textrm{g}$/l in elderly women, respectively. Prevalence of iron deficiency varied greatly with biochemical indices of iron. It was 13.0% when judged by Fe(60 $\mu\textrm{g}$/dl) and TFsaturation(15%) whereas 34.78% by Hct(41%) in elderly men. However 13.5% of the elderly women showed iron depletion(Ferritin<20$\mu\textrm{g}$/l) and 43.2% showed suppressed erythropoiesis with iron deficiency(TIBC>360$\mu\textrm{g}$/dl). The anemic subjects assessed with TFsaturation(<15%) represented 13.5% of the elderly women, whereas 18.9% of the subjects possessed less than 12g/dl of Hb. The Hb concentration was positively correlated with Hct(r=0.980, p<0.001), Fe(r=0.384, p<0.01) and TFsaturation(r=0.349, p<0.01). On the other hand, Ferritin concentration showed a significantly negative correlation with TIBC(r=0.349, p<0.05) and a positive correlation with TFsaturation(r=0.362, p<0.01). Major food groups of iron intake in the elderly were vegetables, cereals, and fish. The mean daily intake of iron was not significantly different between elderly men and women(12.82mg vs 10.35mg). Intake of heme iron however, was significantly higher(p<0.01) in elderly men(1.03mg) than women(0.42mg). Total absorbable iron caculated by the method of Monsen was 0.55mg, 0.40mg in elderly men and women, respectively and bioavailability of dietary iron 4.29% and 3.87%.

Applicability of Stabilization with Iron Oxides for Arsenic-Contaminated Soil at the Forest Area near the Former Janghang Smelter Site ((구)장항제련소 주변 송림산림욕장 지역 비소 오염토양의 철산화물을 이용한 비소 안정화 공법 적용 가능성 평가)

  • This study evaluated the applicability of stabilization of arsenic (As)-contaminated soil with iron (Fe) oxides at the former Janghang smelter site. Three Fe oxides (magnetite, goethite, and hematite) were tested as stabilizing agents to one soil sample collected from the study site. Amendment of 5% of magnetite, goethite, or hematite for one week showed the 64, 58, and 36% of reduction of the SBRC (Solubility/Bioavailability Research Consortium)-extractable (bioaccessible) As, respectively. Duration of stabilization more than one week did not show an additional reduction in SBRC-extractable As. Amendment of 5% of magnetite, which showed the highest As stabilization efficiency, was applied to 24 soil samples collected from the same site for one week, and 72% of reduction in the bioaccessible As was observed. The potential carcinogenic human health risk at the study site caused by As was $1.7{\times}10^{-5}$, which could be reduced to $8.1{\times}10^{-6}$ by the amendment of 5% magnetite for one week.

Effects of Various Amendments on Heavy Metal Stabilization in Acid and Alkali Soils (여러 안정화제가 산성 및 알칼리 토양에서 중금속 안정화에 미치는 영향)

  • BACKGROUND: Recent studies using many amendments for heavy metal stabilization in soil were conducted in order to find out new materials. But, the studies accounting for the use of appropriate amendments considering soil pH remain incomplete. The aim of this study was to investigate the effects of initial soil pH on the efficiency of various amendments. METHODS AND RESULTS: Acid soil and alkali soil contaminated with heavy metals were collected from the agricultural soils affected by the abandoned mine sites nearby. Three different types of amendments were selected with hypothesis being different in stabilization mechanisms; organic matter, lime stone and iron, and added with different combination. For determining the changes in the extractable heavy metals, water soluble, Mehlich-3, Toxicity Characteristic Leaching Procedure, Simple Bioavailability Extraction Test method were applied as chemical assessments for metal stabilization. For biological assessments, soil respiration and root elongation of bok choy (Brassica campestris ssp. Chinensis Jusl.) were determined. CONCLUSION: It was revealed that lime stone reduced heavy metal mobility in acid soil by increasing soil pH and iron was good at stabilizing heavy metals by supplying adsorption sites in alkali soil. Organic matter was a good source in terms of supplying nutrients, but it was concerning when accounting for increasing metal availability.
