유지함유식품(油脂含有食品)의 보존성(保存性)에 관(關)한 연구(硏究) (제1보) -보존조건(保存條件)이 인스턴트 Noodle의 산패도(酸敗度)에 미치는 영향(影響)- (Studies on the Storage of Fat-Containing Foods (I) -Effect of Storage Factors on the Rancidity of Fried Instant Noodle-)

  • 인스턴트라면을 태양광선군(太陽光線群), 포장지제거군(包裝紙除去群), 실내보존군(室內保存群), 항온기보존군(恒溫器保存群), 골판지상자 포장군등(包裝群等), 각각(各各)의 조건하(條件下)에서 오개월간(五個月間) 저장(貯藏)하고 함유유지(含有油脂)의 경시변화(經時變化)를 조사(調査)하여 다음과 같은 결론(結論)을 얻었다. 1) Orange 색(色)으로 착색(着色)한 polycello 포장지(包裝紙)로 밀봉(密封)하고 골판지상자에 넣어 실온(室溫) 암소(暗所)에서 저장(貯藏)하면 과산화(過酸化) 물가(物價)(P.O.V.), 산가(酸價)는 Fig. 1과 2와 같이 완만하게 증가(增加)하여 150일(日) 경과후(經過後)에도 안정(安定)한 품질(品質)을 보였다. 관능검사(官能檢査)에 있어서의 변패취(變敗臭)도 150일(日) 경과후(經過後)까지 인정(認定)되지 않았다. 2) 태양광선(太陽光線)을 조사(照射)하거나 포장지(包裝紙)를 제거(除去)하고 실내(室內)에서 방치(放置) 저장(貯藏)하면 P.O.V. 및 A.V.는 Fig 1과 2와 같이 급격(急激)한 증가(增加)를 보였으며 30일이내(日以內)에 변패취(變敗臭)가 인정(認定)되었다. 3) Polycello 포장지(包裝紙)로 밀봉(密封)하고 실내산광하(室內散光下)에 저장(貯藏)하거나 또는 항온기내(恒溫器內)에서 $30^{\circ}C$ 정도(程度)(하절기(夏節期) 평균기온(平均氣溫)에 상당(相當))로 가온(加溫) 저장(貯藏)하면 P.O.V.의 변화(變化)는 비교적(比較的) 완만하였으나 변패취(變敗臭)는 $90{\sim}120$일경과후(日經過後)에 발생(發生)하였다. 4) P.O.V., A.V. 및 굴절률(屈折率)이 증가(增加)됨에 따라서 iodine value는 Fig. 3과 같이 점차 감소(減少)하였다. 5) 관능검사(官能檢査)에 있어서 변패취(變敗臭)의 발생(發生)은 P.O.V. 함량(含量)과 어느정도 상관관계(相關關係)가 인정되었으나 반드시 일치(一致)하지는 않았다.

재가열 튀김유의 이화학적 특성과 전자코에 의한 향기 패턴 분석 (Physiochemical Properties of Repeated Deep-frying Oil and Odor Pattern Analysis by Electronic Nose System)

  • Chemical characteristics of soybean oil after deep-frying with potato sticks (200 g, 10% w/w of soybean oil) were studied according to the 34 deep-frying times. After consecutive 34 deep-frying, total polyunsaturated FA contents was gradually decreased while the total saturated FA and trans FA were increased. Acid value and peroxide value were increased while iodine value decreased, respectively. The Hunter $L^{\ast}$ value decreased while each $a^{\ast}\;and \;b^{\ast}b$ value were gradually increased. Electronic nose equipped with 12 metal oxide sensors was used for the discrimination of odor pattern of frying oils against the times of deep-trying. The proportions of 1st and 2nd principal component analysis showed 75.97% and 21.23%, respectively. While 6 among total 12 sensors well responded to discrimination of odor in the repented frying oils, suggesting that the odor pattern of each oil after deep-frying would be discriminated against fresh soybean oil, especially after 14 times. From the results, electronic nose could differentiate the degree of quality deterioration of the repeated deep-frying oils.

Fatty Acid Profiles of Supraspinatus, Longissimus lumborum and Semitendinosus Muscles and Serum in Kacang Goats Supplemented with Inorganic Selenium and Iodine

  • Fat and fatty acids in muscle and adipose tissues are among the major factors influencing meat quality particularly nutritional value and palatability. The present study was carried out to examine the effects of supplementing inorganic selenium (Se), iodine (I) and a combination of both on fatty acid compositions in serum, and supraspinatus (SS), longissimus lumborum (LL), and semitendinosus (ST) muscles in goats. Twenty-four, 7 to 8 months old, Kacang male goats with a mean live weight of $22.00{\pm}1.17kg$ were individually and randomly assigned into four groups of six animals each for 100 d of feeding prior to slaughter. The animals were offered the same concentrate (basal) diet as 1% of body weight with ad libitum amount of fresh guinea grass. The four groups were as follows: T1 (control) - basal diet without supplementation; T2 - basal diet with 0.6 mg Se/kg DM; T3 - basal diet with 0.6 mg I/kg DM; T4 - basal diet with combination of 0.6 mg Se/kg DM and 0.6 mg I/kg DM. The major fatty acids (FAs) detected in the serum were palmitic (C16:0), stearic (C18:0), oleic (C18:1n9) and linoleic (C18:2n-6), while the major FAs in the selected muscles were C16:0, C18:0 and C18:1n9 acids. The main polyunsaturated fatty acids (PUFA) detected in muscles and serum were (CI8:2n-6), linolenic acid (C18:3n-3), and arachidonic acid (C20:4n-6). No significant differences (p>0.05) were observed in the concentration of total saturated fatty acids (SFA) among the four groups. PUFA concentrations in the goats supplemented with Se (T2) were significantly higher (p<0.05) than the goats of the control group (T1). The PUFA: SFA ratio was significantly higher in the animals supplemented with dietary Se (T2) than those of control ones (T1). It is concluded that dietary supplementation of inorganic Se increased the unsaturated fatty acids in muscle. The supplementation of iodine with or without Se had negligible effects on muscle fatty acid content of Kacang crossbred male goats.

  • Present1y the X-Ray diagnosis system is a real condition that is changing by digital ways in it's existent analog ways. This digital radiation detector is divided by the direct method and the indirect method. The indirect method of applied voltage has special qualities that the resolution is low than direct method by diffusion effect that happens. The conversion process ( radiation${\rightarrow}$visible ray${\rightarrow}$electrical signal of two times, has shortcomings that the energy conversion efficiency of electrical signal is low. The direct method has shortcomings that need strong electric fie1d to detect electrical signal efficiently. This research achieved to develop digital detector of the Hybrid method that have form that mixes two ways to supplement shortcoming of direct. indirect method. A studied electrical characteristic by Iodine's Mixture ratio change is added to selenium in the detector which has a multi-layer structure (Oxybromide + a-Se). There are 8 kinds of Manufactured compositions to amorphous selenium Iodine each 30ppm, 100ppm, 200 ppm, 300ppm, 400ppm, 500ppm, 600ppm, 700ppm by a doped photoconductor through a vacuum thermal evaporation method. The phosphor layer is consisted of Oxybromide ($BrO_2$) which uses optical adhesives multi-layer structure. The manufactured compositions calculates and compares Net Charge and signal to noise ratio measuring Photocurrent about Darkcurrent and X-ray. When doped Iodine Mixture ratio is 500ppm to the multi-layer structure (Oxybromide + a-Se), applied voltage of $3V/{\mu}m$, leakage current of compositions $2.61nA/cm^2$ and net charge value by 764pC/$cm^2$/mR then the best result appeared.

호두 기름의 성분조성과 항알레르기 효과 (Physico-chemical Composition and Anti-Allegic Effects of Walnut Oil)

  • This study was conducted to investigate physicochemical properties and anti-allergic properties of walnut oil. pH, acid value and iodine value of walnut oil were respectively 4.9, 0.8 and 117. Most of general composition of walnut oil was crude fat(99.9%) Vitamin A and E were 0.06 and 10.25mg/100g and the major fatty acids of walnut oil was linoleic acid(62.8%). Total phenolics and antiallergic effects of walnut oil were estimated 27mg% and 62.82% at the concentration of 0.5% ethanol walnut oil. These results suggest that the walnut oil can provide one of the valuable resource for the functional foods.

  • Supplementation of iodine at the level of 3.5mg/kg reduced weight gain of the rats fed rapeseed oil meal (ROM) diets. Treatment of ROM with ammonia at the level of 2 or 4% tended to increase metabolizable energy value and availability of dry matter, crude protein and crude ash of ROM in the chicken. Potential goitrin level of ROM was reduced by ammoniation at 6% level, while the level of potential isothiocyanates was increased by ammoniation. Treatment of ROM with ammonia at the level of 3% and above reduced weight gain of the chickens fed treated ROMs. Weight of thyroid glands of the birds increased as the level of ammoniation of ROM increased. Supplementation of Avoparcin to the diets containing ROM improved weight gain and dressing percentage of the broiler chickens.

감자분말(粉末)의 지방질조성(脂肪質組成)과 저장중(貯藏中)의 변화(變化)에 관(關한) 연구(硏究) (Some Chemical Properties and Composition of Lipid Extracts of Riced Dehydrated Potato Granules)

  • 국내(國內)의 대표적(代表的)인 감자품종(品種)인 Irish Cobbler와 Shimabara로 재흡수성(再吸水性)이 우수한 미곡형건조(米穀型乾造)감자 분말(粉末)을 실험실규모(實驗室規模)로 제조(製造)하였다. 이 감자분말(粉末)들은 일부 BHA처리(處理)한것을 포함하여 비닐봉지와 통조림형태(形態)로 저장되었다. 이들에 대해서 일반성분(一般成分), 색깔, 재흡수성(再吸水性), 추출지방산(抽出脂肪酸)의 화학적성질(化學的性質)과 조성(組成)등을 조사(調査)한 결과(結果)는 다음과 같다. 1. IC와 Shimabara 품종(品種)의 감자분말(粉末)의 회분(灰分), 단백질(蛋白質), 지방질(脂肪質), 당류(糖類), 전분(澱粉)의 %조성(組成)은 $3.5{\sim}2.9,\;8.5{\sim}8.2,\;0.6{\sim}0.5,\;1.5{\sim}1.9$$79.8{\sim}79.0%$로써 지금까지의 문헌치(文獻値)와 잘 일치(一致)했었다. 두품종(品種)사이에는 각성분함양(各成分含量)(회분함량제외(灰分含量除外))에 유의적차(有意的差)는 없었다. 2. 이상(以上)의 감자분말(粉末)의 색깔을 Hunter형(型) Tristimulus colorimeter로 측정한 결과(結果), L-value=83.8, aL-value=-1.1, bL-value=18.3로써 밀가루와 탈지(脫脂)대두가루사이에 위치(位置)하는 흰색깔을 표시하였다. 한편, 색깔에 대한 품종(品種), 저장형태(貯藏形態)의 영향은 없었다. 3. 이 감자분말(粉末)들은 품종(品種), 포장형태(包裝形態)와 관계없이 끓은물에서는 3분내(分內)에 최대수분함량(最大水分含量) $90{\sim}92%$에 도달했다. 한편, $8{\sim}14^{\circ}C$의 찬물에서는 5분(分)이 지난후 최대수분함량(最大水分含量)인 $72{\sim}74%$에 도달했었다. 4. 이상(以上)의 감자분말(粉末)(제조 3개월후)의 POV, TBA-value, carbonyl value, acid value. iodine value는 $150{\sim}460\;meg/kg,\;20{\sim}26,\;154{\sim}380\;micromole/g,\;24{\sim}59$$70{\sim}78$였다. 이상(以上)의 화학적성질(化學的性質)(IV 제외(除外))들은 모두 포장형태(包裝形態), 품종차(品種差)등에 영향을 받은듯 했다. 5. 두품종(品種)의 감자분말(粉末)의 지방질(脂肪質)에 대해서 GLC와 TLC에 의해서 구성지방산(構成脂肪酸)과 지방성분조성(脂肪成分組成)을 분석(分析)하였다. IC의 경우, 주요지방산(主要脂肪酸)은 palmitic, stearic, oleic acid(3.0, 18.8, 40.6%)였으며, Shimabara의 경우, palmitic, oleic, linoleic acid(26.7, 39.6, 23.4%)였다. 한편, 주요지방성분(主要脂肪成分)은 TG와 phospholipid로써 그 함량(含量)은 각(各) 19.1, 43.1%와 30.1, 37.4%였다.

고추씨 기름의 저장 및 가열에 따른 이화학적 변화에 관한 연구 (Studies on the Variation of Physico-Chemical Characteristics During Storage and Frying)

  • To observe the propability as the frying oil and oxidative stability of red pepper seed oil, some physico-chemical tests of the oil were examined during 21 days storage period at 5$^{\circ}C$, 15$^{\circ}C$ and 30$^{\circ}C$, and AOM value determined and after heating the oil at 180${\pm}$5$^{\circ}C$ for 40 hours with or without antioxidants. The analysis storage stability of red pepper seed oil showed that the quality of storage group at 5$^{\circ}C$ was almost as good as fresh oil, and the storage group at 30$^{\circ}C$ showed certain degree of rancidity. Change of physico-chemical characteristic during storage were so small so that storage stability of red pepper seed oil was found to be good. AOM stability of red pepper seed oil was 7 hours which is lower than other vegetable oil, but the degree of stability grew greatly after adding phenolic antioxidants, such on TBHQ or PG. As for the chemical change after heating continuously for 40 hours, acid value, peroxide value and refractive index increased, but iodine value decreased as the heating processed. The fatty acid composition also showed the remarkable reduction of linoleic acid. The addition of antioxidants resulted in the delay of oxidation, the degree of which was greater in TBHQ than in PG.

The Effects of Fatty Acid Composition and Storage Conditions on the Oxidative Stability of Various Vegetable Seed Oils

  • Vegetable seed oils (VSOs) have been extracted and used not only as ingredients in food and as sources of dietary lipids, but also as sources of nutraceuticals used to overcome the various oxidative stresses that contribute to the development of diseases, including cancer and other chronic conditions. The chemical compositions and oxidative stabilities of various VSOs were therefore investigated; samples were stored for 35 d, with each oil having been tested under $O_2$ exposure, sealed from $O_2$ exposure and sealed from $O_2$ exposure while containing $O_2$ scavengers. Oxidative stability was evaluated by peroxide value (POV), p-anisidine value (p-AnV), iodine value (IV), and thiobarbituric acid (TBA) value. Perilla seed and flaxseed oil were mostly composed of linolenic acid (45.5% and 59.7%, respectively), whereas pine seed oil was mostly composed of linoleic acid (48.3%). Meanwhile, camellia seed and olive oils contained 80% oleic acid, which correlated strongly with oxidative stability. The POV, p-AnV, and TBA values were the highest under $O_2$ exposure, and the lowest in the presence of $O_2$ scavengers. These results indicate that VOS oxidative stability depends not only on storage conditions, but on unsaturated fatty acid profiles as well.

  • Purpose Serum Thyroglobulin measurement is a major tool for the follow-up of differentiated thyroid cancer (DTC) patients. Thyroglobulin is Normal thyroid tissue, or thyroid cancer tissue produced only. Thyroid hormone to a halt without Tg differentiation of thyroid cancer recurrence just by measuring how to decide whether there was increasing expectations if I can do it instead. Therefore, in excellent sensitivity Tg new inspection of the functional sensitivity by measuring the looked to evaluate the usefulness of reagents. Thyroidectomy is measuring the numbers Tg (total thyroidectomy) remaining thyroid ablation and radioactive iodine (radioactive iodine remnant ablation, RRA) DTC in patients being diagnosed with or help predict the remaining early detection of thyroid cancer recurrence. Materials and Methods Agent that I'm currently using Tg of the measurements of low clinical specimen for a second drainage of the three (0.08 0.17, 0.98, ng/mL) within the scope of the dilute magnification (2, 4, 8, 16, 32 times) by dilute Intraassy (n=10) and Interassay (n=10) out in no time. Concentration value according to the coefficient of variation and the mean and standard deviation of each measurement (Coefficient of variation, CV) the absolute value of the measured values that corresponds to 20 percent target a coefficient of variation of CV Find the value of the concentration of the functional sensitivity measurement did. Also, analytical sensitivity with recovery rates, Dilution test inspections, and interrelationship, compared. Results Sensitivity is an excellent analytical sensitivity within the prosecutor kit Tg 0.006 ng/mL, and core analytical sensitivity, conducted by the 0.006 ng/mL to same conclusion. Be rather high to 142 percent recovery rate was 60 to measurement and functional sensitivity, 0.01766 ng/mL(Intraassay n=10) was measured at. CBC is relatively good correlation as ($R^2=0.949$) the correlation. Conclusion Recently ultrasensitive thyroglobulin this clinically important indicators of the previous kit and demands are lower than sensitivity to the measurement results. Therefore, ultrasensitive thyroglobulin test is correlated that there would be useful in value in nuclear medicine the thyroid gland.
