Seasonal variations of nutrient intake ware evaluated through a 3-day dietary records in 196 Korean adolescents(86 males, 108 females) aged 13 - 15 years and living in urban and rural areas of Chungnam. The seasonal differences of nutrient intake were tested by repealed measure ANOVA. Comparing nutrient intakes among flour seasons using repealed measure ANOVA, mean values of daily intakes were higher in winter and autumn for most nutrients, and were the lowest in summer in the urban areas and in spring in rural areas. Girls recieved the largest amount of nutrients, except Ca and vitamin $B_12$, in winter and the lowest amount in summer, while in boys significant differences were not observed among the four seasons for meet nutrients, except fats, Mg, and vitamin E. Interestingly, the seasonal differences for many nutrients were more evident in rural areas than in urban areas. Vitamin A intake in urban areas was higher in winter and spring, while in rural oreas, in summer. Mean values of daily intakes as a percent of the RDA throughout the year in boys and girls ware 82.2% and 84.2% for energy and 88.9% and 82.7% for protein, respectively. Ca and vitamin A intakes were as low as 32.4% and 24.2% of the RDA in boys and 39.7% and 30.6% in girls. Intakes of Fe, Zn, folic acid and vitamin B$_{12}$ ranged from 40 - 60% of the RDA. The nutrients which showed the largest seasonal difference in the percent of RDA were vitamin E in boys and vitamin C, vitamin E, and Fe in girls. The index of nutritional quality(INQ) for Fe was significantly lower in autumn in both genders. The INQ for vitamin C in girls of both areas was much higher in winter. Annual mean adequacy ratio(MAR), an index of overall nutritional quality, ranged from 0.57 - 0.69, which was higher in winter than in other seasons. Conclusively, nutrient intakes of Korean adolescents showed seasonal variations, particularly in girls and in rural area. Thus, seasonal variations should be considered in the assessing nutritional status, particularly ill the rural areas of Korea.a.
The purpose of this study was to compare the dietary habit and nutrient intakes of Korean farmers according to their different family patterns and farming types. Food and nutrient intakes were obtained by food frequency method. The subjects(male 35%, female 65% : mean age, $48{\pm}11 years)$ were compared 46% of nuclear family, 59% of 3-4 person of family size ; 50% of middle-scale farming ; 54% of rice farming. Sixteen percent were over 60 years old group. In aspects of dietary habit, farmers of medium size farming and 10-20 years of farming experience frequently skipped meals. But their appetite was better than small farm famers. Dinner irregularity was more frequent in their group of 3-4 person families. The numbers of food intake were significantly different according to family pattern. Nuclear family groups consumed more kinds of foods. The mean energy intake was 2000Kcal/day, with PFC ratio of 19 : 16 : 65. The energy and nutrient intakes showed the same tendency as the food variety. Intakes of calcium and iron were lower than the Korean RDA. Families with over 5 people consumed higher amounts of protein and minerals. Intakes of thiamin, niacin, and vitamin E were better in large families and large-scale farming groups. As compared with the PMS ratio, the level of monounsaturated fatty acids as higher than saturated FA. The lipid intake was also better in large families and large-scale farming. The results suggest that dietary habit and nutrient intakes were different by family pattern and farming types.
The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin $B_6$, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.
The purpose of this study is to provide basic data for preventing preterm delivery in the aspects of blood pressure and hematic parameters. The blood pressure, hematic parameters, relationship between hematic parameters and nutritional intakes and pregnancy outcomes were compared between a preterm delivery group and a normal term delivery group. The results obtained are summarized as follows. Diastolic blood pressure was statistically higher in the preterm delivery group. White blood cells (p < 0.005) and alanine amino transferase (p < 0.05) of 3rd trimester in pregnancy were statistically higher in the preterm delivery group. Alkaline phosphatase (p < 0.0001) and lactate dehydrogenase (p < 0.05) were statistically lower in the preterm delivery group. Inverse relationships between niacin, vitamin B6 and zinc intakes and bilirubin (p < 0.05) were shown. Vitamin A intakes (p < 0.05) were significantly negatively correlated with blood protein, but zinc intakes (p < 0.05) were significantly positively correlated with blood protein. Vitamin B6 intakes (p < 0.05) were significantly negatively correlated with blood albumin. Calcium intakes (p < 0.005) and iron intakes (p < 0.05) were significantly positively correlated with blood lactate dehydrogenase. Also, vitamin A intakes (p < 0.05) were significantly positively correlated with blood glucose. Normal spontaneous vaginal delivery (p < 0.005) was statistically lower in the preterm delivery group. Birth weight (p < 0.0001) and birth length (p < 0.005) of the neonates were all statistically lower in the preterm delivery group.
This study was conducted to investigate the anthropometric data, serum profiles, food intakes frequency, and nutrient intakes of women aged 30-49 years. The subjects were divided into two groups: drinking group and non-drinking group. For the study, we obtained data for analysis from the combined 2008-2015 Korean National Health and Nutrition Examination Survey (KNHANES). Height and weight were 159.2 cm and 58.1 kg in the drinking group as well as 158.1 cm and 57.7 kg in the non-drinking group, respectively. Obesity percentage in the two groups were 22.5% and 24.8%, respectively. HDL-cholesterol (P<0.001) and Vitamin D (P=0.0248) levels in the drinking group were significantly higher than those of the non-drinking group. In the drinking group, rates of hypertension, myocardial infarction, and diabetes were significantly lower than those of the non-drinking group. Food and nutrient intakes, including energy, water, protein, fat, retinol, thiamin, riboflavin, and niacin, in the drinking group were significantly higher than those of the non-drinking group. In the two groups, energy, water, fiber, calcium, and potassium intakes were low while Na intakes were extremely high considering KDRIs (Dietary Reference Intakes for Koreans). The mean adequacy ratio (MAR) in the two groups was not significant.

This study examined intakes of nutrients, carotenoids and polyphenols according to lens turbidity levels among adults visiting a cataract clinic. A total of 102 males and females aged 40 years or higher agreed to participate in the study, and a face-to-face survey interview was conducted to obtain information on general characteristics, health behaviors, and dietary intakes of each participant. The dietary data were collected by a food frequency questionnaire which was previously validated in a Korean population. In addition to essential nutrients, intakes of a total of 10 carotenoids and polyphenols were calculated based on the tables of food functional composition developed by National Academy of Agricultural Science. The subjects were divided into 3 groups according to turbidity levels (< 16, ${\geq}16$ and < 25, ${\leq}25$), and health behaviors and dietary intakes were compared among the turbidity groups. Data showed seemingly higher energy intake and lower dietary antioxidant (i.e., vitamin A, ${\beta}$-carotene, lutein, zeazanthin, lycopene, cryptozanthin) intakes in the highest turbidity group. However, no statistically significant findings were found in all the comparative analysis on characteristics of health behavior and intakes of nutrients, carotenoids and polyphenols. The current study findings should be cautiously interpreted in consideration of several limitations including a cross-sectional study design, a small sample size, uneven sample size distribution across turbidity groups, and limited generalizability due to using a convenience sample. Therefore we cannot conclude that the risk of cataract is unrelated with dietary antioxidant intakes based solely on the results of this study.
Sodium is a necessary element for the body. Excessive intake of sodium is known as one of the risk factors for chronic diseases. Recently, increasing numbers of people in Korea are suffering from chronic diseases. Major causes of deaths were chronic degenerative disease with the rising aging population. Especially, the population of rural areas is growing older fast. In rural areas, it is known that under nutrition and high sodium intake were major nutritional problems. For sodium intake, there were some studies about contributing food items. They were not enough to show diets relate to sodium intakes. Thus, this study analyzed dishes contributing to sodium intakes of elderly living in rural areas. Dietary intakes using "the 24hour recall method" were used. For the analysis for sodium intakes, "Can-pro3.0" was used. Ranking of dishes by contributions of sodium intakes were Korean cabbage, kimchi (19.6%), seasoned soybean paste (5.3%), soybean paste (4.6%), soybean paste soup dried radish leaves (3.5%), hot pork and kimchi stew (3.4%) in order. Ranking of dish groups by sodium intakes was kimchies (28.3%), soup and hot soups (22.8%), stews and casseroles (9.7%), seasonings (8.2%),and seasoned vegetables (6.0%) in order. One-dish meals among cooked rice, wheat noodles among noodle and mandu, soups using the soybean paste, stews using soybean paste and kimchi, salted fish among grilled foods, stir-fried anchovy among stir-fried foods, seasoned spinach, and Korean cabbage kimchi contributed to sodium intakes. As the nutrition deficiency of the elderly living in rural areas could be a problem, and excessive sodium intakes is threatening to their health, it is needed for the senior citizens to have adequate knowledge for diets containing less sodium. And recipes for healthy food and nutrition education based on their diets are needed.
Purpose of this study was to compare nutrient intakes of disabled children and non-disabled children. Subjects consisted of 86 disabled children from a special education school and 127 non-disabled children from an elementary school in Seoul. Nutrient intakes were assessed by modified 24-hr recall method, with the help of children's parents and teachers. Almost all nutrient intakes (energy, protein, fat, carbohydrates, vitamin B$_1$ and niacin) of children with cerebral palsy were significantly lower than those of other groups. But nutrient intakes per body weight of children with cerebral palsy were not significantly different with those of other groups. There was no significant difference between disabled and non-disabled children in almost % RDA (rate of actual intake to RDA) except of energy %RDA in children with cerebral palsy. NARs (nutrient adequacy ratio) for energy and vitamin B$_1$ of children with cerebral palsy were significantly lower than those of children with autism and mental retardation, and non-disabled children. The proportions of energy, carbohydrate and protein intakes from lunch were significantly higher than those from breakfast and dinner in children with mental retardation and autism. The nutrient intakes of disabled children were different between other groups according to the type of handicap. For example, children with cerebral palsy had the risk of undernutrition. On the other hand, autistic children had the tendency of overnutrition. These results suggest that nutrition educational programs and educational materials for disabled children, their teachers and their parents should be developed considering the type of handicap.
The number of school lunch-supported children who belong to low-income families has been rapidly increased in Korea. This study was aimed at evaluation of nutritional status of school lunch-supported elementary school children. One hundred school lunch-supported children and 119 non-supported children of fourth to sixth year class in 3 elementary schools in Gyeongbuk rural area were selected, and surveys were conducted twice, i.e., once during school term and once during summer vacation in 2006. Food consumption survey during school term was carried out through an interview by dieticians at school-lunch time using a 24-hour recall method, and the survey during summer vacation conducted by recording food intakes for three days by children. Nutrient intakes were calculated using CAN-Pro 3.0 program. School lunch-supported children showed higher rate of skipping breakfast and rather irregular meal time as compared to non-supported students. Eating alone was more frequent in school lunch-supported children than in nonsupported children. The average nutrient intakes and nutrient adequacy ratios were lower in supported children than in non-supported children. During term, percentages of nutrient intakes provided by school-lunch were higher in supported children than in non-supported children. Intakes of energy nutrients were within acceptable macronutrient distribution ranges, but proportion of carbohydrate intake increased during vacation. Analysis of patterns of food intakes based on major food groups (dairy, meat, grain, fruit, vegetable) indicated that meals during term were more balanced as compared to meals during vacation. In conclusion, food behaviors and nutrient intakes of school lunchsupported children were inferior to those of non-supported children during term and during summer vacation. They were provided with more nutrient intakes from school lunch during term as compared to non-supported children. Therefore, it is necessary not only to keep meal support program during vacation but also to provide a proper nutrition education as a part of school lunch program to improve nutritional status and food behaviors of school lunch-supported children.
Agreement between open question and closed question on portion size of a food frequency questionnaire was assessed for the influence by the restricted choices in closed question on estimated nutrient intakes and agreement of ranking individuals. Dietary intakes of 361 subjects in a rural country, Yang-pyeung Gun were obtained using a interview method. The results are as follows ; 1) Nutrients intakes calculated from closed question on portion size were lower than those calculated from open question on portion size. 2) For most nutrients the percentage of Korean RDA were significantly lower with closed question than open question. 3) Correlation coefficient of nutrient intakes and food intakes obtained by two methods were higher than 0.6 for all nutrients and food items. 4) For each nutrient, misclassification into extreme quartiles was less than 1 percent. 5) These data indicate that closed question on portion size can provide the corresponding information as open question if food frequency questionnarie is used for the ranking of individuals.
