Physicochemical and functional properties of Gochujang with fermented tomato products (토마토 발효액을 이용한 고추장의 이화학적 및 기능적 특성)

  • This study was conducted to investigate the physicochemical and functional properties of Gochujang in the presence of fermented tomato products. To accomplish this aim, tomatoes were fermented using Bacillus subtilis SRCM100333, and the products were used with Gochujang. As a control, non-fermented tomato liquid was used with Gochujang. There were no significant differences in quality characteristics except for amino nitrogen in Gochujang. The functional properties of tomato liquid (TL), fermented tomato product (FTP), Gochujang made with tomato liquid (TLG), and Gochujang made with fermented tomato products (FTG) were investigated. There were significant differences in the pancreatic lipase inhibition (PLI) and superoxide scavenging activity between FTP (87% and 28%, respectively) and TL (77% and 14%, respectively). Nitric oxide scavenging activity of FTG (52%) was higher than that of other groups (TL, FTP, and TLG). Overall, the results indicate that the fermented tomato can be used to develop functional Gochujang.

Functional Properties of Angelica gigas Nakai Leave (AGL)Extracts and Quality Characteristics of Mumalangi Kimchi Added AGL (당귀잎 추출물의 기능성과 당귀잎을 첨가한 무말랭이 김치의 품질특성)

  • This study investigated the development of health promoting high quality Mumalangi Kimchi. Angelica gigas Nakai leaves (AGL) were extracted with water and 70% ethanol, and the extracts tested for their electron donating ability (EDA), nitrite scavenging ability (NSA) and inhibitory effects on MDA and A549 cells. The EDA in 100-1,000 ppm water extracts from AGL ranged from 40 to 80%, but that of the ethanol extracts ranged from 37 to 81%. The NSA increased with increasing AGLconcentration in the extracts and decreasing pH. The NSA of the 1,000 ppm water and ethanol extracts from AGL were 29 and 35%, respectively, at pH 1.2. The inhibition ratios of the water and ethanol extracts from AGL on MDA cell growth were 35 and 32%, while those on A549 cell growth were 27 and 23%, respectively, at 1,000 ppm. After sun drying radishes for 15 hours, for the preparation of Mumalangi, the water contents were higher in summer radishes (39.5%) than fall radishes (32.6%) the color of summer radish also changed to brown. During storage of Mumalangi Kimchi, with the addition of 1-3% AGL, at 20?for 4 weeks, the yeast growth was inhibited. The shelf-life of Mumalangi Kimchi was extended by the addition of AGL. In the sensory evaluation of Mumalangi Kimchi, that with the addition 2% AGL had the highest scores for color, flavor, taste, texture, after taste and overall acceptability. Mumalangi Kimchi with the addition of 2% AGL had significant high scores for both taste and overall acceptability (p.0.05).

Effect of Night Minimum Temperature During Winter Season on Growth and Flowerng in Chrysanthemum 'Baekma' (국화 '백마'의 겨울철 재배시 야간최저온도가 생장과 개화에 미치는 영향)

  • To investigate the effect of night minimum temperature on growth and flower development in standard type chrysanthemum 'Baekina' during winter season, morphological characteristics and physiological disorders were compared with standard chrysanthemum 'Jinba'. Although the flower budding of 'Baekma' was delayed about 2 to the days compared with 'Jinba', the days to flowering of 54 to 59 showed no difference between the two cultivars. Flowering was delayed as minimum temperature decreased at night. The length and weight of cut flower decreased in the two cultivars as minimum temperature increased at night. In 'Baekina', the number of petals at 16 showed the highest values among other temperatures. Whereas there was no significant difference among the temperature treatments in 'Jinba'. Rosette occured only in 'Baekma', and the ratio was 11.1% at 14, 55.6% at 16, and 56.1% at 18. The inhibition of flower budding appeared only at 14 in the ratio of 17.3% in 'Baekma' and 4.0% in 'Jinba'.

Changes in Enzyme Activity and Physiological Functionality of Doenjang (Soybean Paste) Prepared with Extracts of Phellinus linteus (상황버섯 추출액을 이용하여 제조한 된장의 효소 활성 및 기능성의 변화)

  • To evaluate changes in functional characteristics of traditional Doenjang during aging, Doenjang was prepared using an extract of Phellinus linteus (Phellinus extract). Control Doenjang was aged without the extract. The protease activity of Doenjang prepared with Phellinus extract was 3.15 units/mL. Tyrosinase and acetylcholinesterase inhibition activities were 45.78% and 55.18% of control, respectively, in the treated sample. When Salmonella enterica serovar Typhimurium TA100 was used as a reporter strain, antimutagenic activities against the mutagens MNNG and NPD were 90.42% and 82.57% of control values in the treated sample. When S. enterica serovar Typhimurium TA98 was used, antimutagenic activities were 60.28% and 50.33% of control, respectively. Hydrogen-donating activity was 86.65% in the treated sample, which was higher than that of the control (61.69%). Daidzin (an isoflavon glucoside) levels in Doenjang prepared with Phellinus extract were higher, by 35.49 mg/kg, than the control, whereas genistin was not detected in either group. Daidzin and genistin aglycone levels were 263.01 mg/kg and 262.60 mg/kg in the control and test groups, respectively.

Characteristics of butyric acid bacterium, Clostridium butyricum DIMO 52, isolated from feces of Korean breastfeeding infants (국내 모유수유 유아의 분변에서 분리한 낙산균 Clostridium butyricum DIMO 52의 특징)

  • After isolating the DIMO 52 strain with a large inhibition zone diameter for Clostridium perfringens and maximum butyric acid production from the fecal sample of a breastfeeding infant, it was identified as Clostidium butyricum. The maximum growth of the DIMO 52 strain was reached 24 h after inoculation, and the maximum butyric acid concentration was approximately 34.73±4.27 mM. The DIMO 52 strain survived approximately 67.5% of the initial inoculum at pH 2.0, and approximately 64.9% survived in RCM broth supplemented with 0.3% (w/v) oxgall. In addition, DIMO 52 showed antibacterial activity against Escherichia coli KCTC 2441 and Salmonella Typhimurium KCTC 1925. In LPS-stimulated RAW264.7 cells, 1×103 CFU/mL viable cells of the DIMO 52 strain also exhibited significant NO (nitric oxide) production inhibitory activity (33%, p<0.01). This result suggests that C. butyricum DIMO 52 has anti-inflammatory activity related to NO radical-scavenging activity. In conclusion, C. butyricum DIMO 52 isolated in this study has the potential to be used as a probiotic.

Quality Properties of Herbal Wine containing Schizandra chinensis and Lycium chinense according to Extract Concentration (추출농도에 따른 오미자 및 구기자를 첨가한 한방약술의 품질특성)

  • In this study, the following is the result of measuring the quality characteristics of herbal wine and the active inhibition of Glutathione S-transferase in order to measure the release of physiological active substances according to the concentration of extracts. The pH level of herbal wine was 4.4, up from 3.9 before fermentation. These changes are attributed to fermentation and organic acids during alcoholic fermentation. The acidity of herbal wine was 0.55%, about six times higher than the pre-fermentation control of 0.09%. These results show that organic acids are used for flavor formation, ether, in combination with alcohol. The inhibitory activity of glutathione S-transferase were $5.1{\pm}0.31$ in herbal wine 15%, $6.5{\pm}0.6$ in herbal wine 20%, $7.6{\pm}0.6$ in herbal wine 25%, $8.4{\pm}0.2$ in herbal wine 30% and $9.7{\pm}0.7$ in herbal wine 35%. As the extract concentration was increased the inhibitory activity of glutathione S-transferase were significantly increased (<0.05).

Effect of Light-emitting Diodes on Photosynthesis and Growth of in vitro Propagation in Tea Tree (Camellia sinensis L.) (LED 광질이 차나무 기내배양묘의 생육 및 광합성에 미치는 영향)

  • The influences of light generated by LEDs on shoot growth and photosynthesis of Tea plant(Camellia sinensis L.) were evaluated. The growth characteristics were investigated after 45 days of culture under four different light qualities: fluorescent lamp, red LED, blue LED, red+blue+white LED. Shoot growth was promoted by red light, especially root length and area were further promoted under the red+blue+white LED. Also, T/R ratio and Chlorophyll content were highest in red+blue+white. Fluor Cam was used to measure the fluorescence images of the plants, inhibition of photochemical efficiency(Fv/Fm) were not changed in all treatment. However, non-photochemical quenching(NPQ) were found rapidly increasing in blue LED, these results were that blue LED were inhibit photosynthetic efficiency and must be considered for efficiently in vitro cultivation of the tea plant. The above results suggest that light qualities could be an important factor to foster in vitro growth of the species. Also, In order to produce healthy plants, it is effective to using light qualities of red+blue+white LED on in vitro culture of the tea plant. These results could be used to mass propagating shoot and produce of healthy seedling.

Effect of LED LightIrradiation on the Mycelial Growth and Fruit Body Development of Hypsizygus Marmoreus (LED 광원이 느티만가닥버섯 균의 균사 생장과 자실체 생육에 미치는 영향)

  • A edible mushroom, Hypsizygus marmoreus is commercially cultivated. However, the researches of cultivation and physiological characteristics were not conducted in Korea. In this study, we conducted on artificial cultivation of H. marmoreus and elucidated the effect of light on the mycelial growth and fruit body development using LED light sources with different wavelength; blue (peak wave length 460nm), green(peak wave length 530nm), yellow(peak wave length 590nm), red(peak wave length 630nm), and white as positive control. Mycelial growth of H. marmoreus strains were inhibited about 30~40% in inhibition ratio under the illumination with blue, green, yellow LED light. However, red LED light was not inhibited. Elongation of stipe was effective under the long wave length such as yellow and red light. Abnormal fruit body was produced under the long wavelength and dark. However, development of pileus was effective under the short wavelength such as green and blue light. Also, as a result of cultivation with mixed light for high quality and harvest, many effective numbers and yields of fruiting bodies were obtained in the mixed treatment of blue and white light, and pileus developed well.

The Relationship between Transgressive Behaviors of Humanity and Moral Anger in Korean Culture ('사람됨' 준거 위반과 도덕적 정서로서의 화(火)의 관계 분석)

  • Many researches have argued the most important dimension of perception or evaluation of person is morality and competence in Korean culture. This study was to investigate the cultural characteristics of the criteria of personhood. Two studies were conducted to investigate the criteria used to evaluate person by qualitative approach and the differences of evaluation of wrongdoer who violates interpersonal norm or individual autonomy by experimental method. In addition, anger as emotional response to wrongdoer is conceptualized in terms of moral and self-conscious emotion. Expression of anger is less an outpouring of emotion and more a culturally regulated and normative mode of managing and putting into practice our society's system of rights and obligations - its moral code. According to results of qualitative data by interview and focus group interview, the most important criteria used to evaluate personhood was interpersonal concern, esp, expectation and norm. The results of experiment revealed that violation of interpersonal norm domain evoked angrier towards violator than autonomy domain. The subjects ascribed more blame and responsibility to interpersonal norm violator than autonomy keeper. Also function of behavior inhibition of anger was higher in interpersonal norm domain than autonomy domain.

Study of Plant Growth Inhibition with Edible Sweetener Saccharin and Acesulfame Potassium (식용 감미료 사카린과 에이스셜팜 칼륨의 식물 성장 저해 연구)

  • Five commercially available edible sweeteners are used as diet products because they can replace sucrose. In studies on the effects on animals and the human body, stability has been proven by excreting-oriented studies with characteristics of animal cells, and accumulation in small amounts has been ignored. On the other hand, plants can absorb, degrade, and accumulate foreign substances, so the effect of degradability and accumulation potential can be studied using plants. Metabolic effects in plants of commercially available saccharin and acesulfame potassium (Ace K) were tested using germinated barley and bean sprouts. In germinated barley and bean sprouts, saccharin and ace K showed inhibitory effects on plant growth in all organs from low concentrations in leaves, stems and roots. In addition, it can be observed that the symptoms of death appear clearly over time, so it can be seen that they are accumulated in the body of the plant. As the accumulated amount increases, the toxic effect increases and the plant reaches a state where it is unable to metabolize, turning black from the tip of the leaf and reaching a state of death. In order to remove the accumulated artificial sweetener, recovery was attempted by culturing in distilled water, but it acts as a substance that is not degraded and dies without avoiding toxicity. Saccharin and ace K cannot be excreted from the cell. Its toxic effects are thought to be persistent, inhibiting growth and eventually leading to cell death.
