Native and acetylated soybean protein with acetylation percentage of $25\%$ were incubated with glucose to induce Maillard reaction. Acetylation of ${\varepsilon}$-amino group of lysine residues changed the conformation of soybean protein. The direct uv spectrum of native and acetylated soybean protein showed conformational changes with accessibility of tyrosine and tryptophan residues increased. Acetylation suppressed Maillard reaction between soybean protein and glucose. Acetylated soybean protein showed improved water sorption, fat binding, foam formation, and emulsion activity of the protein, but depressed brown pigment development and trypsin digestion. Thus aceylation prevented deterioration of certain functional characteristics that occurred during storage, besides causing functional characteristics to be improved on its own.
A high-throughput screening strategy was developed to simplify the selection process for improved mannitol producing strain after chemical mutagenesis. Ethylmethyl sulfonate (EMS) was used as a chemical mutagen to alter the fructokinase-I gene which is an essential enzyme to metabolize fructose for growth. Leuconostoc mesenteroides treated with EMS were plated on the modified MRS solid medium containing fructose as a sole carbon source. Strains showing inhibited growth were primarily selected to evaluate the mannitol producing ability. By applying this strategy, L. mesenteroides ATCC 8293 M1, L. mesenteroides ATCC 9135 M3 and L. mesenteroides D1 M3 showed improvement in mannitol production.
The antioxidative capacity of Monascus koji was studied in raw bologna-type sausage by measuring thiobarbituric acid reactive substances (TBARS) and peroxide values (POV) during storage at $25^{\circ}C$ for 7 days. The addition of 2% Monascus koji effectively inhibited lipid oxidation in the mixture without vitamin C and NaNO$_2$, evidenced by its prevention of an increase in TBARS and a significantly reduction in increases in POV. Monascus koji in raw minced processed meat significantly improved the shelf life of the food.
The purpose of this study is to investigate children's satisfaction with side dishes served in elementary school food service program in Seoul area. Two hundreds and thirty two children participated in this study through a questionnaire developed by the researchers. Conclusion drawn from the results of this study is that there seems no significant problems in school food service program since children are generally satisfied with food provided by school. However, minor problems such as hot and salty food, inappropriate temperature of warm dishes, and excessive amount of food, need to be improved through a newly developed menu, cooking method, and food distribution method.
To assess the food intake and diet quality of Korean adults living in rural areas , a dietary survey using a one day 24-hour recall method was conducted with 2037 subjects over 30 years of age living in Yeonchon-gun , Kyungki province of Korea. Eighty percent of total food intake was in the form of vegetable food and the rest in the form o fanimal food . Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When counting the major food groups consumed (DDs), 47% of subjects had a DDS of 3 and 31% of subjects had a DDs of 4. On average, subjects habitually consumed 14.9 different foods daily, with the mean score of diet variety (DVS) for males(14.4) being significantly lower than for females (15.2). Persons who had higher DDSS also had higher DVSS(p<0.001). As the DDs increased , MAR(Mean adequacy ratio) improved. Correlation coefficients between NAR(nutrient adequacy ratio) and DVS ranged from r=0.34 for vitamin C to re=0.51 for vitamin B$_2$. NAR also improved as the number of foods or food groups consumed increased (p<0.001). Associations between the NAR of most nutrients with DVS was better than those with DDS. Based on these results, the food intake of the study subjects was not adequate, especially with regards to the dairy and fruit groups . Dietary diversity (DDS) and especially dietary variety (DVS) would be useful in assess nutrient intake because of their associations with total diet quality.

This experiment was conducted to investigate the effects of pig skin collagen supplementation on growth performance, organ weight, blood characteristics, and intestinal microbiota in broilers. A total of 50 Ross 308 broilers were used for 2 weeks. The five dietary treatments were as follows: NC) basal diet, PC) NC + fish collagen powder 0.1%, T1) NC + pig skin collagen 0.1%, T2) NC + pig skin collagen 0.5%, and T3) NC + pig skin collagen 1.0%. The body weight gain (BWG), feed intake (FI), and feed conversion ratio (FCR) were not affected (p > 0.05) by the dietary treatments in this experiment. Additionally, there were no significant differences (p > 0.05) in the organ weights among the treatments. Broilers fed T1, T2 and T3 diets had higher (p < 0.05) white blood cell (WBC) counts than the broilers fed the NC and PC diets. The Lactobacillus counts in the excreta were improved (p < 0.05) in the broilers fed the T1 and T2 diets. Moreover, the Salmonella counts in the excreta were decreased (p < 0.05) in the broilers fed the PC and T1 diets. In conclusion, supplementation of pig skin collagen in diets improved the white blood cells (WBCs) in the blood and Lactobacillus counts in the excreta, and reduced the Salmonella counts in the excreta. However, when pig skin collagen was increased in the diets, there were no significant differences (p > 0.05). Therefore, the addition of 0.1% pig skin collagen in the feed provided beneficial effects on the blood characteristics and the intestinal microbiota environment.

The aim of this study was to investigate the effect of adding curcumin-steviol glycoside complex (CSG) on the growth performance and meat quality of white semi broilers. A total of 60 one-day-old white semi broilers with an initial body weight (BW) 40.0 ± 0.2 g were used in a 5-week experiment. The three treatments were as follows: 1) CON; basal diet, 2) T1; CON + 0.5% CSG and 3) T2; CON + 1.0% CSG. Each treatment consisted of 5 replicate cages with 4 broilers per cage. In 0 - 2 weeks, the supplementation of 1.0% CSG in the diets significantly increased (p < 0.05) the BW and decreased the feed intake (FI), thereby improving the feed conversion ratio (FCR) compared to the CON group. For meat quality, the T2 group showed a higher water holding capacity (WHC) and lower drip loss (DL) and cooking loss (CL) compared to the CON group (p < 0.05). For meat color, the T2 group showed a significantly lower lightness (L*) and yellowness (b*) than that of the other treatment groups (p < 0.05). In the sensory evaluation, the meat color and texture in the T2 group were significantly improved (p < 0.05) compared with those of the other treatment groups. As a result, the acceptability of consumers was ameliorated. In conclusion, this study shows that the supplementation of CSG improved the growth performance and meat quality in white semi broilers. This study suggests that 1.0% CSG is the optimal level in the diet.
Purpose: This study analyzed the dietary patterns of Central Asian immigrant workers (Mongolia, Kazakhstan, Uzbekistan, and Kyrgyzstan) living in South Korea to determine the food acculturation and how their dietary practices have changed after immigration. Methods: Self-administered questionnaires were completed by 186 Central Asian immigrant workers living in South Korea. A food frequency questionnaire (FFQ) was used to obtain information on the consumption frequency of 22 food items before and after their immigration to Korea. Results: Central Asians switched to Korean meat consumption patterns, which consume mainly pork, chicken, and beef, showing a decrease in the intake of beef and lamb and an increase in that of pork. Their consumption of Namul (cooked vegetable), Kimchi, rice, and marine products increased while that of potatoes decreased during acculturation to Korean food culture. Positive changes were observed in Mongolians' eating habits. Their meat-based diet turned into a healthy one in which nutritional balance was achieved by consuming the various food groups. Negative dietary changes were also observed; intake of instant foods and coffee increased while black and green tea consumption decreased. Intake of Namul (p < 0.01), Kimchi (p < 0.01), rice (p < 0.001), ramen (p < 0.001), pork, chicken (p < 0.01), fish (p < 0.01), seafood (p < 0.001), and coffee (p < 0.001) increased significantly in the group that responded and their health improved after moving to Korea. This result suggests that health improved among those who were well settled in Korea and ate the various food groups. Conclusion: These findings can help understand the acculturation process to Korean food culture and provide a basis for developing policies to help them adjust to Korean food culture.

Effects of copigments (succinic acid, $Cu^{2+}$, ascorbic acid, sucrose, and pH) on stability of anthocyanin extracted from black beans (Glycine max Merrill.) were investigated during storage for 8 days at 4 and $40^{\circ}C$. Succinic acid improved stability of anthocyanin by 7~15% compared to the non-treatment group at $40^{\circ}C$. $Cu^{2+}$ maintained stability of anthocyanin by about 100% for 8 days at $4^{\circ}C$. Ascorbic acid reduced stability of anthocyanin by 64~72% of non-treatment at $40^{\circ}C$. Sucrose treatment did not significantly affect stability compared to the control. The lower pH improved stability of anthocyanin. Stability at pH 1 was improved by 81~87% compared to that at pH 7. These results show that temperature, organic acid, and pH were effective in improving storage stability of anthocyanin from black beans.
Concerns on environmental waste problems caused by non-biodegradable petrochemical-based plastic packaging materials as well as consumer's demand for high quality food products has caused an increasing interest in developing biodegradable packaging materials using annually renewable natural biopolymers such as polysaccharides and proteins. However, inherent shortcomings of natural polymer-based packaging materials such as low mechanical properties and low water resistance are causing a major limitation for their industrial use. By the way, recent advent of nanocomposite technology rekindled interests on the use of natural biopolymers in the food packaging application. Polymer nanocomposites, especially natural biopolymer-layered silicate nanocomposites, exhibit markedly improved packaging properties due to their nanometer size dispersion. These improvements include increased mechanical strength, decreased gas permeability, and increased water resistance. Additionally, biologically active ingredients can be added to impart the desired functional properties to the resulting packaging materials. Consequently, natural biopolymer-based nanocomposite packaging materials with bio-functional properties have huge potential for application in the active food packaging industry. In this review, recent advances in the preparation and characterization of natural biopolymer-based nanocomposite films, and their potential use in food packaging applications are addressed.
