Effects of adding ethanol extracts from Ulmus davidiana to Yackwa base as an antioxidant during storage

  • This study aimed to assess the antioxidative potential of adding ethanolic extracts from Ulmus davidiana to Yackwa (Korean fried cookie). The reducing power and antioxidant activity of U. davidiana-treated Yackwa were assessed against DPPH, nitric oxide, superoxide anions, superoxide dismutase, and ABTS radicals. Increasing the amount of U. davidiana extract in Yackwa dough resulted in improved antioxidant properties. U. davidiana extracts were effective antioxidants with a radical scavenging potency similar to the potency of butylated hydroxytoluene (BHT) and L-ascorbic acid. The DPPH and nitric oxide radical scavenging activity of Yackwa containing 0.2% U. davidiana resulted in increased oxidative stability relative to control dough. Although the antioxidant effects of Yackwa containing U. davidiana extract were lower than those of Yackwa containing BHT and L-ascorbic acid, these results suggest that U. davidiana extracts have potent antioxidant activity. Accordingly, U. davidiana extract is a potential additive for deep-fried foods, such as Yackwa, to improve their oxidative stability.

  • Due to the increase of the number of farmers who have entrepreneurial intentions and the expansion of governmental support to invigorate the regional economy, the interest in manufacture of high-quality agricultural processed food is increasing, and the study of the method to realize it efficiently is continuing. Especially, the method to visualize a manufacturing process by simulation and analyze it to extract an improved scheme has advantages of saving time and cost in comparison with trial and error method. In this study, the current manufacturing environment was analyzed by applying simulation on Korean traditional sweets, which is typical agricultural processed food. By extending this kind of method into small businesses processing other agricultural products, as well as Korean traditional sweets, it can draw strengthening of comparativeness through the improvement of productivity and product quality.

Changes in Body Composition, Health Status, and Dietary Behavior for Middle-Aged Obese Women in a Weight Control Program at a Community Health Center (보건소 중년 여성 비만관리 프로그램의 운영에 따른 체성분, 건강 상태 및 식행동 변화에 관한 연구)

  • The purpose of this study was to evaluate the body composition, health status, and dietary behaviors of middle-aged women in a weight control program at a community health center. The study subjects were 66 middle-aged women who lived in Ansan city, and they participated in the program for 24 weeks. Anthropometries, blood pressure, and serum biochemical indices were measured. These measurements were taken both before and after the weight control program, and the data were analyzed using the SPSS 12.0 program. Weight, fat mass, body fat %, and the waist-hip ratio all decreased. According to the decreases in body fat %, blood pressure, serum biochemical indices and dietary behaviors were improved after the weight control program. Thus, this study demonstrated the desirable changes of a weight control program offered at a community health center, for health conditions and physical fitness.

Analysis on Selection Attributes of Chujado as Island Tourism using IPA (IPA에 의한 추자지역의 도서관광 선택 속성 분석)

  • This study was focused on tourists visiting the Chujado, Jeju Special Self-Governing Province as island tourism. First, this study collected the selection attributes visiting Chujado from literature review and applied the IPA (Importance-Performance Analysis)with the attributes to this research. The results are as follows: First, in the area I, the attributes (climates, exotic atmosphere, tourism information, reservation service, a variety of food, clean food etc.) both with high importance and high performance need to be kept continuously. And, in the area II, the IPA map showed that other attributes (accessibility, a variety of food, accommodation, affordable price etc) with high importance and low performance) need to be improved in the future time. These results can give the implications for establishing an appropriate policy of Chujado tourism development.

A Quinolone Alkaloid, from the Aleurone Layer of Oryza sativa cv. Mihyangbyo, Inhibits Growth of Cultured Human Leukemia Cell

  • Oryza sativa cv. Mihyangbyo is one of several recently developed varieties of rice; characterized by high levels of aromatic components, which may increase its sensory and nutritional properties. In conjunction with our continuing investigation of bioactive components of improved grain varieties, a quinolone alkaloid was isolated from the n-butanol soluble fraction of the aleurone layer of Oryza sativa cv. Mihyangbyo (Gramineae) through activity-guided fractionation and isolation. The compound exhibited moderate antineoplastic activity in a human leukemia cell line (U937) with an $IC_{50}$/ value of 118.1 ug/mL, based on the MTT(3-[4, 5]dimethylthiazol-2-yl]-2, 5-diphenyltetrazolium bromide) cell proliferation assay. The chemical structure of the functional compound was determined, based on physical and spectroscopic characteristics.

Improved Menthol Production Using Suspension Cultures of Mentha piperita with Pectinase Elicitation

  • The effect of pectinase on menthol production by Mentha piperita in shake flasks was investigated. The optimum concentration of pectinase and period of elicitation for menthol production were 15 U/1 and 9 days, respectively. Pectinase elicitation at 15 U/1 for 9 days using a Lin-Staba medium with 2,4-dichlorophenoxyacetic acid (2,4-D) enhanced menthol production 37-fold (211.5 ㎎ menthol/l) with the specific menthol concentration (menthol concentration per unit weight of cells) of 27.5 ㎎/g dry cell weight (DCW). Our results also indicate that pectinase elicitation may activate the conversion of pulegone to menthol.

Functional Properties of Modified Soybean Protein Isolate by Dimethylglutarylation (Dimethylglutarylation에 의한 변형대두단백질의 기능적 특성)

  • This study was conducted to improve the functional properties of soybean protein isolate by dimethylglutarylation and acetylation. Amino acid composition and solubility of modified soybean protein by dimethylglutarylation were not changed, but lysine and trypsin inhibitor activity was decreased an isoelectric point was moved from pH5 to pH4 as a result of modification. Emulsification capacity and stability, foaming capacity and thermal stability were increased by the modification. In that 91% dimethylglutarylated protein did not coagulate when heating at $100^{\circ}C$ for 20 min. while its foaming stability was decreased. Whereas specific gravity was decreased by the modification of the soybean protein, relative viscosity and whiteness were improved. Generally, dimethylglutarylation produced more conformational changes in protein system than did in acetylation.

Enhanced Production of L-Aspartate ${\beta}-Decarboxylase$ by Nitrogen Source in Pseudomonas dacunhae

  • Improvement of L-asparate ${\beta}-decarboxylase$ production from Pseudomonas dacunhae ATCC 21192 was attempted by optimizing fermentation conditions. Optimum carbon and nitrogen sources for cell growth and enzyme production were determined. L-Glutamate (2%) was the most suitable carbon source, and D-glucose, D-glycerol and fumarate repressed enzyme production. Yeast extract (2%) was the most effective as nitrogen source. A slight change of pH to 6.5 from medium pH resulted in a meaningful increase in the production of enzyme. The production of the enzyme was highly improved by using 2% yeast extract and 2% L-glutamate in culture media. Maximum L-asparate ${\beta}-decarboxylase$ activity reached up to over 24 U/mL-broth by 15 h flask fermentation.

  • A Liquid Chromatogaphic Method was applied to analyze the following nine preservatives used for foods simultaneously; propionic acid, sorbic acid, benzoic acid, dehydroacetic acid, ethyl p-hydroxy benzoate, propyl p-hydroxy benzoate, i-butyl p-hydroxy benzoate, butyl p-hydroxy benzoate, ethyl salycilate. A cosmosil $5C_{I8}$ was used and 1% phosphoric acid-acetonitrile (60 : 40) was used as the mobile phase. Pretreatment of the food sample with steam distillation improved the resolution of peaks at 220 nm.
