강황분말을 첨가한 만두피의 품질특성 (Quality Characteristics of Mandupi Added with Curcuma aromatica Powder)

  • The purpose of this study was to investigate the effects of Curcuma aromatica powder on the functional and sensory characteristics of Mandupi. Various Mandupi samples were prepared with wheat flour along with addition of various amounts of Curcuma aromatica powder, after which instrumental characteristics and sensory evaluations were investigated. According to the amylograph data, the composite Curcuma aromatica powder-wheat flour samples showed increased gelatinization temperatures with increasing Curcuma aromatica powder content, whereas initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity were reduced. In terms of Hunter's color values, L value decreased while a and b values increased with increasing Curcuma aromatica powder content. Besides cooked weight, cooked volume and turbidity of Mandupi increased as the addition level of Curcuma aromatica powder increased. In terms of textural characteristics, addition of Curcuma aromatica powder increased springiness, chewiness, and brittleness, whereas springiness and adhesiveness decreased. Based on sensory evaluations, the overall preference of Mandupi with 3% added Curcuma aromatica powder was higher than that of control.

현미가루 첨가량에 따른 와플의 품질특성 (Quality Characteristics of Waffle by adding Brown Rice Flour)

  • The effects of added brown rice flour on the quality characteristic of waffle were investigated. Waffle were prepared by the addition of 0%, 25%, 50%, 75% and 100% of brown rice flour on wheat flour. The weight of waffle with brown rice flour ranged from 103.0~107.0 g and that of the control was 100.0 g. The volume of the waffle prepared by adding brown rice flour were 225.0~303.0 mL and that of the control was 307.5 mL. The weight of the waffle increased with increasing brown rice flour concentration, whereas volume and baking loss decreased. The hardness, chewiness (p<0.05) and springiness decreased with the addition of brown rice flour. The Hunter L values of waffle decreased, whereas a and b values increased with the addition of brown rice flour. The result of the sensory evaluation showed that taste and overall acceptability (p<0.05) was the highest for added brown rice flour.

녹두전분과 설탕의 함량을 달리한 도편(桃片)의 품질특성과 기호도 (Effect of Addition of Mung Bean Starch and Sugar on the Textural and Sensory Properties of Dopyun)

  • This study was conducted to develop the standard recipe of Dopyun according to the various content of mung bean starch and sugar. The effects of mung bean starch(10%, 15%, 20%) and sugar(20%, 30%) were evaluated on textural and sensory properties of Dopyun through the mechanical properties using texture analizer and sensory evaluation. Color was tested by color and color difference meter. For sensory evaluation, higher content of sugar and lower content of mung been starch(sugar 30%, mungbean starch 10%) showed advantages in acceptance fo taste and overall quality. Mechanical properties of hardness, cohesiveness and chewiness of Dopyun were increased significantly in Dopyun with higher content of mung bean starch and sugar. The values of Hunter color system indicated that "L" and "b" values tended to decrease and "a" value increase, as the mung bean starch and sugar proportion increased. In the analysis of correlation between sensory evaluation and acceptance test, it was found that they were highly related. In view of the above results, it came to the conclusion that Dopyun with the addition of 30% sugar and 10% mung bean starch could give the best result among the groups studied.sult among the groups studied.

수박무 가식부 분말 첨가 양갱의 품질 특성 및 항산화 효과 (Quality Characteristics and Antioxidant Activity of Yanggaeng Added with Watermelon Radish Flesh Powder)

  • This study investigated the quality characteristics and antioxidant activity of Yanggaeng prepared with various amounts of watermelon radish flesh (WRF) powder, in ratios of 0 (control), 2.5, 5, 7.5, and 10% of the cooked white bean paste. The proximate composition, pH, sugar content, Hunter's color values, texture analysis, and antioxidative activities of Yanggaeng were examined. Increasing the amount of WRF in the Yanggaeng tended to increase the crude ash, carbohydrate, sugar, total polyphenol, total flavonoids, and anthocyanin contents, a value, DPPH and ABTS radical scavenging activities, with decreasing the moisture and crude protein contents, L and b values, and pH. Texture measurement scores in terms of springiness, chewiness for Yanggaeng showed that 2.5% or 5.0% group was higher than those of the control group. Hardness was higher in the sample groups than in the control group. In conclusion, the results show that Yanggaeng with up to 7.0% added WRF powder can be developed as products, and there is a possibility of developing health functional snack products using WRF powder.

고령소비자를 위한 칼슘 강화 식단 개발 (Development of Calcium Enriched Menu for the Aged)

  • The objectives of this study were to develop calcium enriched menu for the aged and to investigate physicochemical characteristics and consumer acceptances of the menus. four kinds of the menu were developed with emphasis on calcium enriched food materials of red pepper leaves seasoned vegetables for menu1, shrimp for menu2, anchovy for menu3, seaweed for menu4. one portion of calorie, polysaccharide, protein, fats and calcium for the aged were calculated as 567kcal, 92.8g, 21.3g, 12.6g 223.1mg, respectively based on the recommended daily allowances for adults. Calcium content increased in the lowest value of all(p<0.05). The hunter lightness(L) values of barely rice in menu 1, radish soup in menu 1, chopped roast chicken in menu 4 and radish salad in menu 2 had significantly the highest values of all(p<0.05). The calcium enriched menus for the aged were successfully developed and these data could be used as basic informations for the improvement in health and life of the aged.

스피루리나 첨가 흑임자다식의 품질특성 및 항산화능 (Quality Characteristics and Antioxidant Activity of Black Sesame Dasik Added Spirulina)

  • This study was carried out to investigate the quality characteristics and antioxidant activity of the black sesame Dasikadded spirulina (0, 10, 20, 30%). Black sesame Dasik with 30% spirulina showed a higher moisture content compared to control. L, a and b values of Hunter color system were decreased significantly according to the addition of spirulina (p<0.05). Hardness and gumminess analyzed by TPA (Texture profile analyzer) were increased significantly according to the addition of spirulina (p<0.05). The antioxidant property of black sesame Dasik increased according to the addition of spirulina: IC50 values of DPPH (1,1-diphenyl-2-picrylhydrazyl) and hydroxyl radical scavenging activity of the control was 112.3 g/mL and 56.2 mg/mL, respectively, whereas those of Dasik with 30% addition of spirulina was 58.2 mg/mL and 45.7 mg/mL, respectively. Sensory evaluation results showed that the overall acceptability was not significantly different up to 20% addition of spirulina, compared to that of the control. Based on these results, it was suggested that the addition of spirulina to black sesame Dasik was appropriated up to 20% for quality improvement with antioxidant activity.

1-Methylcyclopropene(1-MCP)와 MAP 처리가 저온 저장 중 복숭아 '대홍'의 품질 변화에 미치는 영향 (Effect of 1-Methylcyclopropene (1-MCP) Treatment and MAP on Quality Changes of Peach 'Daehong' during Cold Storage)

  • 본 연구는 '대홍' 복숭아를 대상으로 수확 후 1-MCP 처리와 MAP가 저온 저장 중 복숭아 '대홍'의 품질 변화에 미치는 영향을 알아보고자 수행하였다. 1-MCP는 1µL·L-1과 2µL·L-1 농도로 처리하여, MAP 포장 후 온도 5±1℃, 습도 85±5%의 저온 저장고에서 28일 저장하였고, 포장 대조구로 골판지 상자를 설정하여 품질변화를 비교하였으며, 각각의 포장 처리구에는 1-MCP를 처리하지 않은 대조구로 두었다. 저장 중 생체중 감소율은 MAP 포장구에서 1-MCP 처리구와 무처리구 과실 간에 유의한 차이가 없었으며 MAP보다 골판지 상자 포장구의 과실에서 감소율이 높았다. 호흡률과 에틸렌 발생률은 1µL·L-1 처리구와 2µL·L-1 처리구에서 유사한 경향을 나타내었고, 대조구는 1-MCP 처리구와 통계적 유의성을 보이며 높게 발생하였다. 포장 내 이산화탄소는 1-MCP 처리구에서 12% 내외로 무처리구에 비해 낮았고, 에틸렌은 1µL·L-1 처리구의 과실에서 다른 처리구와 유의성을 보이며 가장 낮게 유지되었다. 저장 기간이 경과할수록 경도는 대조구보다 1-MCP와 MAP를 처리한 과실에서는 9%(1µL·L-1 MAP)와 5%(2µL·L-1 MAP)로 유의하게 연화가 억제되었다. 과피와 과육의 Hunter a* 값은 1µL·L-1 처리구에서 대조구보다 유의하게 높았고, 안토시아닌도 1µL·L-1 처리구에서 다른 처리구에 비해 저장 중 높은 값을 나타내었으며, 특히MAP 포장한 과실에서 높았다. 위의 결과를 종합해 보면, 1µL·L-1를 처리한 MAP 포장구에서 '대홍' 복숭아의 저장 중 호흡률 및 에틸렌 발생량이 낮았고 경도, 과피와 과육의 Hunter a* 및 안토시아닌 함량 변화가 적은 것으로 조사되어 '대홍' 복숭아의 저장 중 품질 유지에 가장 적합하다고 판단된다.

황금 GAP 지침 설정을 위한 건조방법, 저장조건 및 포장재료에 따른 품질변화 (Changes in Quality by Drying Methods, Different Storage Conditions and Package Mediums for Established GAP Guide Book in Scutellaria baicalensis Georgi)

  • Background: The purpose of improving the quality of oriental medicinal herbs is to contribute to the improvement of the income of farm. The present study investigated the effect of reasonable drying methods, different storage conditions and packageing materials on quality and stability of Scutellaria baicalensis Georgi and for developing GAP (good agricultural practice) guide book. Methods and Results: Three methods of drying Scutellaria baicalensis roots produced over two years were used to estimate loss rate owing to drying, storage, and packaging. The methods of drying were categorized into natural drying (36 - 60 h by sunshine), drying with heat dryer (2 - 10 h), or drying with gas bulk dryer (2 - 10 h). After cleaning, and initial drying for a few days under controlled temperature conditions, the second phase of drying was carried out at 35, 45 and $55^{\circ}C$. Changes in hunter color values and quality under the two studied storage treatments (at $20^{\circ}C$ indoors and at $4^{\circ}C$ in a refigerator) were evaluated. Storage period for 60, 120, and 180 days in three packaging materials, PE (polyethylene package), PP (polypropylene gunnysack), and WP (watertight packing paper) were studied. Conclusions: Initial cleaning, reasonable gas drying and hot air drying, and drying in an oven at 35 and $45^{\circ}C$ after cutting the roots resulted in the lowest loss rates in S. Baicalensis root. Hunter color valuse indicated that stroage of dry roots at room temperature was better than PP packaging, and that cold stroage was better than PE packaging for long-term stability.

고추장굴비의 품질과 저장성에 미치는 초고압처리와 감마선 조사 효과 (Effects of High Hydrostatic Pressure and Gamma Irradiation on Quality and Microbiological Changes of Kochujang-Gulbi.)

  • 고추장굴비의 지방산패를 최소화하기 위하여 신선굴비를 동결건조한 굴비포를 사용하여 고추장굴비를 제조하고 비열처리 살균방법으로 초고압과 감마선 처리하여 저장 중에 품질과 미생물변화를 분석함으로서 고추장굴비의 저장과 유통기간 연장 가능성을 검토하였다. 초고압처리(200, 400, 600 MPa) 및 감마선 조사(7, 10, 20, 30 kGy) 후 pH 변화는 유의적으로 차이가 없었으며 20일 동안 상온에서 저장 중에도 시료간의 유의적인 변화를 보이지 않았다. 색도는 Hunter L값과 b값은 증가하는 경향을 보였으며 a값은 감소하는 경향을 보였으나 외관상 품질에 영향을 미칠 정도는 아니었다. 휘발성 염기질소 대조구와 처리구에서 저장 중 경시적으로 증가하는 현상을 보였으나 초고압처리 압력이 높을수록, 감마선 조사강도가 높을수록 유의적으로 현저히 낮은 증가율을 보였다. TBA값은 모든 시료에서 시간이 경과함에 따라 증가량의 차이는 있으나 증가하는 경향을 보였으며, 초고압 처리하지 않은 경우 초기 0.6 mg/g 수준에서 20일 저장 후 4.2 mg/g 수준으로 높은 증가율을 보였으며, 600 MPa 처리구와 30 KGy 처리구의 경우 각각 1.2mg/g과 1.5 mg/g 수준으로 현저하게 낮은 값을 보였다. 초고압처리에 의한 호기성 생균수 감소효과는 다소 낮은 편이었으며 10 kGy 이상의 방사선 조사에 의해 효과적으로 미생물 수를 감소시켰다. 특히 30 kGy 처리구의 경우 20일 동안 저장 후에도 검출되지 않아 멸균효과를 얻을 수 있었다. 고추장 굴비 대중화를 위해서 진공포장이 기본적으로 요구되며, 초고압처리 방법은 단기적인 유통기한 연장효과를 기대할 수 있으며 장기적인 효과를 위해서는 감마선 조사가 적합할 것으로 판단된다.

관행재배구의 유기질 비료의 시용이 배 과실 품질에 미치는 영향 (Effect on Fruit Quality of 2-Year Compost Application in a Conventionally Managed Pear Orchard)

  • 관행재배구의 유기질 비료의 시용이 배 과실 품질에 미치는 영향 1970년대부터 소비자의 선호도가 높은 신고 품종 재배가 급증하기 시작하였고, 2002년 현재 전체 배 재배면적의 70%를 차지하고 있다. 추석이 빠를 경우 성숙이 덜된 과일을 수확하여 시장에 출하함으로서 품질이 좋지 않은 과일로 인하여 소비가 둔화되고 가격이 떨어져 동양배를 재배하고 있는 농가의 수입을 감소시키는 요인으로 작용하고 있다. 따라서 본 실험은 미생물이 들어있는 유기질비료(compost)를 이용하여 추석에 조기 출하되는 신고배의 품질을 향상 시킬 수 있는 방법을 제시하고자 실시하였다. 2년 동안의 compost 처리가 과일에 미치는 영향은 색차계를 이용하여 측정한 결과 Hunter L값과 a값이 높은 경향을 보여 사람의 눈으로 보기에 더 익은 것처럼 보였고, 더 당도가 상승하고 산도가 낮아지는 경향을 보여 과실의 조기성숙이 이루어지고 있다고 판단하였다. 특히, 유기질 비료는 과실내 석세포 함량을 줄였고 칼슘함량을 높여서, 과실의 육질을 부드럽게 개선시킴으로써, 조기 출하되는 과실의 품질을 향상시킬 수 있는 방법으로 제안될 수 있다.
