Influence the Fruit Quality of 'Campbell early' Grape according to Inoculation time of Kluyvera sp. CL2 (Kluyvera sp. CL2 처리시기가 포도 '캠벨얼리' 과실품질에 미치는 영향)

  • This study aimed to investigate the effect of inoculation time of phosphate- solubilizing Kluyvera sp. CL2 on fruit quality in cultivation of Campbell early' grape. When phosphate-solubilizing strain was treated at the stone-hardening stage, soil phosphorous increased, exchangeable cations such as K, Ca and Mg also increased. Soil pH was not changed severely due to the soil buffer capacity. Water soluble phosphate concentrations did not decrease heavily up to 20 days after inoculation. When this strain was treated at the berry-softening stage, soil phosphate solubilization ratio was high, cluster weight and sugar content also increased. Both anthocyanin contents and Hunter's values were seen to be significant when inoculation times were stone-hardening stage and berry-softening stage, in particular, increase of Hunter's value a resulted in the improvement of coloration. From these results, we could find that the inoculation of phosphate-solubilizing Kluyvera sp. CL2 at berry-softening stage was the most effective in improvement of fruit productivity and quality in cultivation of'Campbell early' grape.

Quality characteristics and antioxidant activity of fruit dressing using lentil (Lens culinaris Med. cv, Silvina) legume

  • Dressing is a seasoned mixture usually used as a stuffing in food. Quality characteristics and antioxidant activity of fruit dressing using lentil legume were investigated. The four groups were divided into D-1(fruit dressing purchased from the local market in Deagu, Korea), D-2 (grapefruit-sugaring dressing prepared with grapefruit sugaring and lentil legume paste), D-3 (vinegar dressing purchased from the local market in Deagu, Korea), D-4 (pineapple-vinegar dressing prepared with pineapple vinegar and lentil legume paste), and then they were analyzed with regard to general compositions, Hunter's color value, mineral and free amino acid content and antioxidant activities. The pH and titratable acidity in all samples ranged from 2.9 to 4.6 and from 0.6 to 1.2%, respectively. The crude protein content were 2.29% for D-2 dressing and 4.03 for D-4 sample, while were not detected D-1 and D-3 samples. In case of Hunter's value, The ' L'and 'a' values of all samples ranged from 45.98 to 56.54 and from -1.59 to 3.30, respectively. The D-4 sample exhibited the higher levels of Ca (215.40 mg/kg), K (1,105.83 mg/kg), Mg (233.63 mg/kg) and Fe (13.78 mg/kg). The levels of heavy metals (As, Pb, Cd and Hg) in all samples were not detected. The contents of total amino acid in D-3 and D-4 samples were 8.269 and 3.419 mg/mL, respectively. The highest contents of total phenols($191.13{\mu}g\;GAE/mL$) and DPPH radical scavenging activity(93.69%, Inhibition) were observed in D-4 sample.

Product Characteristics and Shelf-Life Effect of Low-Fat Functional Sausages Manufactured with Sodium Lactate and Chitosans During Storage at 10°C (젖산나트륨과 다양한 분자량의 키토산을 함유한 저지방 소시지의 10°C에서 냉장저장 중 품질과 저장성 효과)

  • Product quality and shelf-life effect of sodium lactate (SL) in combined with chitosans with various molecular weights (MW) in low-fat sausages (LFSs) stored at $10^{\circ}C$ were evaluated. LFSs with SL and chitosans had 75-76% moisture, 1-2% fat, and 15.8-17.1% protein with a pH range of 6.3-6.6. Water holding capacity was decreased, but most textural properties were increased with the addition of chitosan with MW of 30-40 kDa. Hunter a (redness) values were also increased with the addition of sodium lactate and chitosans in combination with laccaic acid at the level of 0.05%, resulting in similar Hunter a value of 150 ppm of sodium nitrite. The combination of SL and chitosans slightly extended the shelf-life of LFSs approximately 3-6 days at $10^{\circ}C$, resulting in inhibition the growth of L. monocytogenes and E. coli O157:H7, as compared to the control. However, the inhibition of microbial growth at $10^{\circ}C$ was not as strong as that at $4^{\circ}C$. Thus, the storage temperature should be as low ($<4^{\circ}C$) as possible to have a maximum antimicrobial activity in LFS containing SL and various chitosans.

Comparison on the Food Quality Characteristics of Muscles from Salmonids according to Species, Imported Country, and Separated Part (연어류 근육의 종류, 수입국 및 부위별 식품학적 품질 특성 비교)

  • This study compared the food quality of salmonid fishes according to the species, country of origin, and separated part, such as fillet and frame. The proximate composition of chum salmon from Norway (CS-N) was 74.4% moisture, 19.5% crude protein, 4.2% crude lipid, and 1.2% ash. These values were within roughly 1% for the other salmon species. There was no significant difference (at P<0.05) in the Hunter a value of salmon muscle according to sepatated parts. However, there was a significant difference (P<0.05) in Hunter a value of salmon muscle according to the species and country of origin. There were significant differences in odor intensity and hardness of the salmon according to the species. The major free amino acid in all of the salmon muscles was anserine, which ranged from 61.3 to 73.0%. The taste value was the highest for salmon imported from Alaska (CS-A), followed by pink salmon, CS-N, and muscle separated from the frame (AS-C). In the taste value of all salmon muscles, the major amino acid was glutamic acid. The total amino acid content of salmon muscles ranged from 18.36 to 19.64 g/100 g, and the major amino acids were glutamic acid and aspartic acid. There were differences in the mineral contents, including Ca, P, K, and Fe, and fatty acid composition of salmon muscle according to species.

Sensory Characteristics of Cooked Rice Stored in an Electric Rice Cooker (전기보온밥솥으로 보온한 쌀밥의 관능적 특성)

  • The changes of cooked rice stored in an electric rice cooker at different temperature were investigated using sensory and mechanical methodology. The desirability of cooked rice was deteriorated during storage, particulary cooked rice stored at $80^{\circ}C$ had the lowest desirability. As the storage time increased, glossiness, clumpiness, adhesiveness, moistness and sweet flavor of cooked rice decreased but browning and off-flavor increased. The higher storage temperature resulted in the lower in glossiness, firmness, cohesiveness, moistness, sweet flavor and in the more browning, adhesiveness and off-flavor. L and b values measured by Hunter Color Difference Meter were highly correlated with the sensory glossiness and color.

Some Quality Changes during Fermentation of Kimchi (김치의 발효 과정중 품질변화)

  • The quality characteristics of pH, total acidity, and color of Kimchi juice and organoleptic properties of taste, odor and texture were studied for their changes during Kimchi fermentation. Kimchi was prepared by salting in 15% NaCl solution for 2 hours followed by addition of other spices and fermentation at $4-35^{\circ}C$. The results of pH decrease and acidity increase suggested that Kimchi fermentation can be classified into 3 steps of initial, intermediate and final stages. The activation energyes calculated from the intermediate stage where pH decreased rapidly were 15.67Kcal/mole for pH change and 18.99Kcal/mole for acidity change. The Hunter color values of Kimchi liquid showed that it becomes a weak greenish bluecolor as the fermentation progressed. Sensory characteristics of fresh sourness taste and odor and fracturability of Kimchi were increased until pH reached approx. 4.0 and then decreased while moldy taste and odor was increased rapidly thereafter.

Study on Cooking Properties of 'Bodeurami' Rice Cultivar (보드라미 쌀 품종의 취반특성에 관한 연구)

  • Purpose: The aim of this study was to compare the cooking properties of Bodeurami and Ilmi to promote consumption of rice. Methods: The properties of Bodeurami and Ilmi such as proximate composition, Hunter's color value, water absorption rate, and cooking properties as well as Hunter's color value, texture properties, and sensory evaluation of cooked rice were analyzed. Results: Crude protein, crude fat, and crude ash contents of Bodeurami and Ilmi were higher in brown rice than in white rice. Regardless of rice cultivars, L-value was lower, whereas a and b-values were higher in brown rice than in white rice. The water absorption rate of rice grains was higher in white rice than in brown rice and increased rapidly to 75 min for white rice and 4 hr for brown rice. Cooking properties, water absorption, and expansibility of white rice were higher than those of brown rice, and there were significant differences between Bodeurami and Ilmi. Immediately after cooking and after storage at warm ($70^{\circ}C$) and room temperatures ($25^{\circ}C$), hardness of cooked rice increased after storage, but was not significantly different between Bodeurami white rice and Ilmi brown rice. The sensory evaluation shows that Bodeurami brown rice scored the highest for taste, texture and overall preference. Conclusion: Thus, the results of this study shows that Bodeurami brown rice is characterized by high cooking quality without any mixed white rice, and Bodeurami white rice could be used for the rice processing industry as well as cooked rice.

Effects of Gamma-Irradiation on Biological Activities and Color Changes of Extracts of Schizandrae fructus (감마선 조사가 오미자의 생리 활성과 색상 변화에 미치는 영향)

  • This study was carried out to examine the effects of gamma irradiation on the color removal, antioxidation, DPPH radical scavenger, and antimicrobial activity of Schizandra fructus extracts by different solvents. Schizandra fructus was extracted by hot water, ethanol, acetone and methanol, and the extracts were irradiated 10, 20 and 30 kGy with gamma rays. Hunter color L-value was increased by irradiation in a dose-dependent manner, resulting in brighter color for all solvents used. The a and b values were decreased by irradiation in a dose-dependent manner. Antioxidant activity of the ethanol extract of Schizandra fructus against soybean oil was the highest. The free radical scavenging activity was the strongest in hot water extract. All solvent extracts from Schizandra fructus had the strongest antimicrobial activities to B. subtilis, B. natto, B megaterium, S. aureus, Sal. typhymurium and E. coli. These results suggested that Schizandra fructus extracts have a strong potential as natural food preservatives and cosmetic raw materials. Furthermore, irradiation may not influence adversely on biological activites of the extracts when irradiated up to 30 kGy.

Quality Properties of Green Tea Prepared with Alkaline Ionized Water (알칼리 이온수로 제조한 녹차의 품질 특성)

  • The physicochemical characteristics of green tea prepared by four kinds of alkaline ionized water (AIW; pH 8.57, 8.85, 9.23, and 10.06, respectively) were evaluated. Green tea was made by soaking commercial green tea leaves in AIW at $75^{\circ}C$ for 10 min (1.0 g/100 mL). Total phenol contents, total flavonol contents, and ascorbic acid contents of green tea decreased with increasing pH of AIW. Increasing pH of AIW tended to decrease lightness (L) and redness (a) of green tea but increase yellowness (b) in Hunter color values. The amount of epicatechins and radical scavenging activity of green tea also decreased with increasing pH of AIW, while caffeine was not significantly affected. Tyrosinase inhibition activity was the highest in AIW of pH 8.85.

Effect of Electron Beam Irradiation on Microbial Qualities of Whole Black Pepper Powder and Commercial Sunsik (전자선 조사가 통후추 분말과 시판 선식의 미생물학적 안전성 및 품질에 미치는 영향)

  • Electron beam irradiation was applied to examine microbial safety and qualities of black pepper powder and commercial Sunsik. Whole black pepper powder and commercial Sunsik were irradiated at 2, 4, 8, 12, and 16 kGy. Microorganism contamination in black pepper powder and commercial Sunsik were significantly decreased by irradiation. Decimal reduction doses ($D_{10}\;value$) of total bacteria count in black pepper powder and commercial Sunsik were 5.32 and 1.56 kGy, respectively. $D_{10}\;value$ of yeast and mold were 2.54 and 2.14 kGy for black pepper powder and commercial Sunsik, respectively. Electron beam irradiation caused negligible changes in Hunter color L, a, and b values. Sensory evaluations of black pepper powder and commercial Sunsik showed no significant changes among samples. These results indicate electron beam irradiation improves microbial safety and qualities of black pepper powder and commercial Sunsik.
