뽕잎 분말을 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies containing Mulberry Leaf (Morus alba Linne) Powder)

  • This study examined the quality characteristics of cookies prepared with mulberry leaf powder (0, 1, 3, 5, and 7%) substituted for flour. The pH of the cookie dough decreased significantly in response to the addition of all levels of mulberry leaf powder. The spread factor of the cookies also increased significantly with increasing mulberry leaf powder content added to the cookies recipe. In addition, the Hunter's color L and a values decreased significantly with increasing mulberry leaf powder content, whereas the b value increased. According to hardness measurements, the substitution of 1~7% mulberry leaf powder resulted in increased hardness compared to the control. Moreover, the DPPH free radical scavenging activity of the cookies was increased significantly (p<0.05) with increasing levels of mulberry leaf powder. The sensory evaluation revealed cookies containing 3% to have the highest scores.

난백의 첨가수준에 따른 약과의 품질특성 (Quality Characteristics of Yackwa Prepared by Different Amounts of Egg White)

  • Yackwa was prepared by the addition of different amounts of egg white, and the samples were analyzed by texture profile analysis, Hunter's colorimetry and sensory evaluation during 5 days of storage. Tn texture profile analysis, the hardness, gumminess and chewiness of Yackwa were increased in all the samples during storage and the texture parameters were increased by increasing egg white level. No significant difference was observed in the lightness, redness and yellowness (p〉0.05), but Hunter's color values were slightly increased during storage in all the samples. In sensory evaluation, no significant difference was observed among the samples during storage except the increase of crispiness and overall acceptance by the addition of egg white. The results showed that Yackwa prepared with 10 g of egg white/(100 g of other ingredients ---약과재료 얼마당 10g 첨가인지 명확히 해야 함) had an acceptable sensory quality.

어린 보릿가루를 첨가한 설기떡의 재료 혼합비의 최적화 (Ingredient Mixing Ratio Optimization for the Preparation of Sulgidduk with Barley(Hordeum vulgare L.) Sprout Powder)

  • This study was performed to determine the optimum ratio of ingredients in the Sulgidduk with barley(Hordeum vulgare L.) sprout powder. A mathematical analytical tool was employed for optimization of the typical ingredients. The canonical form and trace plot showed the affect of each ingredient in the mixture against the final product. Mixture design showed 14 experimental points, including 4 replicates for three independent variables. The three independent variables selected for the experiment were: water($15{\sim}22%$), barley sprout powder($1{\sim}4%$), and sugar($12{\sim}19%$). The optimum responses variables such as color values(L, a, and b), instrumental texture parameters(hardness, gumminess, and chewiness), and sensory characteristics(appearance, color, smell, taste, softness, moistness, and overall acceptability) were evaluated. The Hunter colorimetric L- and a-values of the Sulgidduk decreased with an increasing amount of barley sprout powder. As more barley sprout powder was added, a higher b-value resulted. Textural hardness, gumminess, and chewiness were lowered by the addition of barley sprout powder. The optimum formulation obtained by both numerical and graphical methods showed similar results. The representative optimal ingredient ratio commonly obtained by both methods were: 18.2% water, 2.0% barley sprout powder, and 14.8% sugar.

스피루리나 첨가 쌀엿강정의 품질 특성 (Quality Characteristics of Riceyeotgangjung with Added Spirulina Powder)

  • Riceyeotgangjung (RYG) with added spirulina was prepared with citron juice for masking of odor. Oil temperature for puffing was found to be $220^{\circ}C$ for frying dry rice based upon the results of expansion rate and color. RYGs with added spirulina (1, 2, and 3%) were prepared under the above conditions, and their physicochemical and sensory properties were examined under storage at $60^{\circ}C$ for 15 days. Moisture content of RYG decreased proportionally with the spirulina content and storage time. The hardness levels of the freshly made RYGs with spirulina were higher than that of control. During storage, the hardness of the control gradually increased, but those of the RYGs with spirulina gradually decreased, although no significant differences existed between the spirulina containing RYGs. Lightness and redness values in the Hunter color system decreased according to the spirulina content and storage time. Yellowness value also increased with the spirulina content and storage time. Phycocyanin and total phenolic content increased with spirulina content, but decreased with the storage period. Sensory evaluation results showed that RYG with 2% added spirulina received the highest scores for color, taste, overall acceptability, and intention of purchase. As a result, the optimal addition amount of spirulina to RYG is recommended to be 2%.

파래가루를 첨가한 절편의 품질특성 (Quality Characteristics of Jeolpyeon by Different Ratios of Green Laver Powder)

  • 절편에 영양적 가치와 약리적 효능이 있는 파래분말 첨가량(0~8%)을 달리하여 절편을 제조하고 관능검사 및 조직감 특성을 비교 검토 하엿다. 파래분말 첨가량을 달리한 절편의 색도중 명도 L값은 파래분말 첨가량이 증가할수록 감소하였으며, 적색도 a값은 첨가량이 많아 질수록 유의적인 값을 보였다(p<0.05). 황색도(b값)는 파래분말을 첨가한 절편이 무첨가군보다는 높은 점수를 보였으며, 파래분말 첨가량이 증가할수록 황색도가 낮아져 절편의 녹색이 강하게 나타났다. 텍스쳐 특성에서는 경도, 응집성, 검성은 파래분말 첨가량이 증가할수록 증가하였으며 유의적인 차이를 나타내었다(p<0.05). 전반적인 기호도에서는 4%를 첨가한 파래절편이 가장 좋게 평가되었다.

녹두전분과 설탕의 함량을 달리한 도편(桃片)의 품질특성과 기호도 (Effect of Addition of Mung Bean Starch and Sugar on the Textural and Sensory Properties of Dopyun)

  • This study was conducted to develop the standard recipe of Dopyun according to the various content of mung bean starch and sugar. The effects of mung bean starch(10%, 15%, 20%) and sugar(20%, 30%) were evaluated on textural and sensory properties of Dopyun through the mechanical properties using texture analizer and sensory evaluation. Color was tested by color and color difference meter. For sensory evaluation, higher content of sugar and lower content of mung been starch(sugar 30%, mungbean starch 10%) showed advantages in acceptance fo taste and overall quality. Mechanical properties of hardness, cohesiveness and chewiness of Dopyun were increased significantly in Dopyun with higher content of mung bean starch and sugar. The values of Hunter color system indicated that "L" and "b" values tended to decrease and "a" value increase, as the mung bean starch and sugar proportion increased. In the analysis of correlation between sensory evaluation and acceptance test, it was found that they were highly related. In view of the above results, it came to the conclusion that Dopyun with the addition of 30% sugar and 10% mung bean starch could give the best result among the groups studied.sult among the groups studied.

표고버섯분말을 첨가한 가래떡의 품질 특성 (Quality Characteristics of Garaedduk with Lentinus edodes Powder)

  • This research focused on investigating the effect of lentinus edodes on the Garaedduk by analyzing its quality characteristics. Through this research, it could be verified whether this improved food has the potential to develop into a functional food. 5 pieces of Garaedduk with 0, 2, 4, 6, and 8% of lentinus edodes powder were analyzed by water content, color, sensory, textural characteristics and cooking characteristics right after the production and after one day. The five Garaedduk showed significant differences in water content during storage period of 0 & 1 day. As the result of Hunter's color values, with the increase of lentinus edode during storage period of 0 & 1 day, lightness was significantly decreased and redness and yellowness were significantly increased. As the result of textural analysis, hardness and chewiness showed significant increase and cohesiveness was significantly decreased in Garaedduk with the increase of lentinus edodes. When the Garaedduk were preserved for one day, the hardness and chewiness of the Garaedduk with 2% of lentinus edodes showed similar with the control. Cohesiveness showed significant decrease in all Garaedduk. The result of the sensory evaluation showed increase in the color, aroma and taste with the increase of lentinus edodes. The 2% Garaedduk showed similar hardness with the control. Garaedduk with lentinus edodes showed no difference in cohesiveness and adhesiveness with the control. The overall acceptability was significantly increased with the increase of lentinus edodes while the Garaedduk with 6% of lentinus edodes showed the highest overall acceptability. After one day of preservation, the Garaedduk with 4% lentinus edodes also showed the highest overall acceptability. As the result of cooking properties, weight gain and volume were significantly increased with the increase of lentinus edodes. The 2% Garaedduk particularly showed similar weight gain with the control. In turbidity of soup was significantly increased with the increase of lentinus edodes. In Hunter's color values of soup, lightness was significantly decreased with the increase of lentinus edodes. Redness and yellowness were significantly increased with the increase of lentinus edodes like Garaedduk.

감자 변성 전분 배합 비율에 따른 현미다식의 품질 특성 (Quality Characteristics of Brown Rice Dasik using Modified Potato Starch)

  • 다식을 세계화시킬 목적으로 기능성 요소를 고루 갖추고 있는 현미에 식감과 기호도 향상을 위해 감자 변성 전분을 배합하여 품질 특성을 개선하고자 한 연구결과의 요약은 다음과 같다. 감자 변성 전분을 현미분말의 0, 25, 50, 75, 100% 수준으로 배합하여 제조한 다식의 일반성분 측정 결과 수분 함량은 유의차는 없었지만 감자 변성 전분 배합 비율이 증가할수록 증가하는 경향을 보였고, 회분, 단백질 및 지방 함량은 감자변성 전분 함량이 증가할수록 유의적으로 감소하였다. 감자 변성 전분 배합 비율이 증가할수록 밝기를 나타내는 명도(L값)는 유의적으로 증가하였다(p<0.001). 적색도를 나타내는 a값은 감자 변성 전분 배합비가 높아질수록 낮아지는 경향을 나타내었으며, 특히 감자 변성 전분 100%에서 -0.40으로 유의적(p<0.001)으로 가장 낮게 나타났다. 황색도를 나타내는 b값은 감자 변성 전분 배합량이 증가할수록 유의적으로 낮아지는 것으로 나타났다(p<0.001). 물성 측정 결과, 경도(hardness), 검성(gumminess) 및 씹힘성(chewiness) 모두 감자 변성 전분의 첨가량이 증가할수록 유의적으로 증가하였다. 관능 평가 결과, 색(color)은 감자 호화전분 배합 비율이 50% 수준에서 가장 좋은 평가가 나타났고, 그 이상의 비율인 50, 75, 100%로 배합 시에는 대조군에 비해 유사하거나 낮은 평가가 나타났다. 단맛(sweetness)의 경우 감자 변성 전분 25% 배합군(BM1)에서 유의적으로 높게 평가되었으며, 입안에서의 감촉(mouthfeel)은 50% 배합군(BM2)에서 유의적으로 가장 높았으며, 감자 변성 전분을 75% 이상 첨가한 경우는 낮아지는 것으로 나타났다. 씹힘성(chewiness)과 전반적인 기호도(overall-quality)에 있어서도 유의적으로 감자 변성 전분 50% 배합군(BM2)이 가장 높게 평가되어 현미다식에 감자 변성 전분 배합 50%가 바람직할 것으로 판단된다.

시판 청도반시 감말랭이 제품의 품질분석 및 등급화 (Quality Analysis and Grading of Sliced-Dried 'Cheongdobansi' Persimmons Marketed in Korea)

  • 시판 '청도반시' 말랭이의 품질 분석과 등급화 지표를 설정하기 위하여, 시중에 유통되고 있는 제조사가 다른 7종의 제품을 구입하여 객관적 및 관능적 품질을 분석하였다. 아울러 전반적 기호도와의 상관분석을 통해 등급화 지표를 설정하고 검정을 실시하였다. 감말랭이의 중량, 길이, 너비, 두께, 경도 등은 제품별로 다소 차이를 보였다. 가용성 고형분 함량은 제품별 차이를 보였으며, 그 범위는 $43.44{\sim}47.92^{\circ}Brix$로 나타났다. 기계적 색도 역시, 제품별 차이를 보였는데 L, a, b값의 범위는 $41.17{\sim}54.09$, $5.62{\sim}12.36$$10.51{\sim}20.59$를 각각 나타내었다. 관능검사에서 삽미, 산미 및 곰팡이취는 인지되지 않았으며 색상, 감미도 및 견고도는 제품별 차이를 보였다. 감말랭이의 전반적 기호도는 관능적 색상, 견고도 및 감미도와 높은 상관관계를 나타내었다. 관능적 색상과 견고도를 지표로 한 등급화에서 품질 특성의 차이가 확인되었다. 이로써 시판 청도반시 말랭이의 품질 특성은 불균일하지만, 관능적 색상과 견고도는 등급화의 지표로 설정되었다.

저장기간에 따른 산마늘 물김치의 품질특성 (Quality Characteristics of Allium victorialis Mul-kimchi during Fermentation)

  • This study was carried out to investigate the properties of mul-kimchi made with allium victorialis. Chemical and sensory characteristics were determined during fermentation at $4^{\circ}C$ for 4 weeks. The pH decreased with an increase in total acidity. Mul-kinchi showed salinity properties ranging within $1.0{\sim}1.5%$ during fermentation. Hunter's color L, a-values were gradually decreased, but b-value was increased. In the texture, hardness and strength decreased as the aging time increased. The numbers of total- and lactic bacteria cells rapidly increased up to the second week, and this slowly increased thereafter. Sensory evaluation of mul-kinchi was favored for appearance, flavor, taste, texture and overall acceptability during the second week. Sensory properties of well ripened odor and sour taste negatively correlated with physicochemical properties of pH and hardness. Sour odor and sour taste were positively correlated with acidity and total- and lactic acid bacteria.
