딸기쨈의 색깔과 물성에 관한 연구 (Studies on Color and Rheological Properties in Strawberry Jam)

  • 딸기원료 및 가공제품의 색깔을 비교하고 원료에서 오는 영향을 관찰하기 위하여 물리적인 측정기기를 이용해서 색깔의 수치를 조사하였다. 딸기의 물성은 레오텍스춰 메타를 이용해서 측정하였고, 아울러 딸기쨈의 리올로지 특성을 측정하였던바, 얻어진 결과는 다음과 같다. 1. 딸기의 색깔을 헌터값 X, Y, Z Lab로 나타날때, 숙성도에 따라 변화하는 것을 알 수 있다. 또한 pH 의 변화에 따라 a의 값이 규칙적으로 변화하였으며, 색깔의 양상은 수치적으로 나타낼 수 있었다. 즉 미숙과, 적숙과, 과숙과의 쨈에서 pH 2인 경우의 수치는 37.48, 42.21, 45.04가 됨을 알 수 있다. 2. 딸기의 적색소는 시간이 흐름에 따라 퇴색되고 헌터값의 수치는 낮아지는 경향이었다. 3. 또한 딸기쨈의 색소는 시간의 흐름에 따라 퇴색됨을 보여주었다. 즉 20일후의 딸기쨈의 a값은 16.63이었으나 50 일후의 값은 11.28, 90 일 후의 값은 7.65로 되었다. 4. 딸기에서는 T.P.A에 의해 나타난 양상은 첫번째 피크가 높았으며 이는 체리, 포도, 파인애플과 같은 양상을 보였다. 5. 딸기 조직의 특성인 Hardness 와 Cohesiveness의 특성관계는 반비례적이었다. 6. 딸기쨈은 의가소성 (PseudopIastic) 특성을 가지고 있으며, 또한 점도도 지수는 온도의존성을 보였다. 7. 딸기쨈의 활성화 에너지는 2.03 Kcal/g mol 으로 애플소스 1.3Kcal/g mol 토마토 농축액 1.9Kcal/g mol 보다 높은값을 나타내었고, 토마토 케찹 3.2Kcal/g mol 보다는 낮은 값을 나타내었다.

인삼을 첨가한 호박쿠키의 이화학적 및 관능적 특성 (Physicochemical and Sensory Characteristics of Pumpkin Cookies Using Ginseng Powder)

  • The purpose of this study was to provide the basic information on the functional cookies with pumpkin and ginseng powder. Pumpkin cookies with ginseng powder were prepared at various additions adding (0 g, 3 g, 6 g, 9 g). With increasing As the addition of ginseng powder additionincreased, there were significant decrease in the water contents and crude protein were significantly decreased (p<0.05). The spread factor and Hunter color's L, a, and b values in th dough and cookies were significantly decreased with increasing as the addition level of ginseng powder content was increased(p<0.05). Hardness measured using rheometer and onset, peak, and closing temperatures and gelatinization enthalpy using DSC showed significantly the higher values with increasing more additions of ginseng powder content. In sensory evaluation, surface cracking, and pumpkin flavor were decreased with lower levels of ginseng powder. Ginseng flavor and hardness were increased with lower levels of ginseng powder Overall desirability of cookies with addition of 3 g added ginseng powder was the highest of the four samplesproduction. Surface crakcracking washadhighly positively correlated with spread factor, a (redness) (p<0.01)and but negatively correlated with carbohydrate content (p<0.05). Ginseng aroma showed negative correlation to the water contents, crude protein, spread factor, and Hunter's a (redness) and b (yellowness) values (p<0.05).

Quality Characteristics of Bread Added with Oat Flours

  • Oat flour was purchased and investigated for quality characteristics of oat bread. Antioxidant and flour pasting properties of oat flour, and water content, weight, volume, Hunter color value, texture of bread were measured. DPPH radical scavenging capacity (%) of oat extract was 68.49%. Pasting temperature of oat flour ranged between $66.60^{\circ}C$ and $70.93^{\circ}C$. Flour pasting properties of sample added with 10 and 30% oat flour was shown similar results compared with wheat flour. Final viscosity of sample was increased by adding concentration of oat flour (up to 311.65 RVA). Water content (%) of bread was shown increasing trend by adding oat flour. Weight of bread loaf with 100% oat flour was shown higher score than other samples. Volume of loaf by adding oat flour of 10, 30, and 50 % ratio was 550, 450, and 388 mL, respectively. The Hunter color $L^*$ values of bread by adding oat flour was dark compared with wheat bread. Color value of bread added 10% oat flour was similar results with $L^*$ values of bread with wheat flour. The bread added with 20 and 30% oat flours had the higher hardness, gumminess, and chewiness compared with other samples. Cohesiveness of the bread with wheat flour showed higher than that of bread added with oat flour and increased by storage period. The growth of total viable cell was inhibited depending on the concentration of oat flour during storage.

말티톨 첨가 구운떡의 품질 특성 (Quality Characteristics of Baked Rice Cake Added with Maltitol)

  • 구운떡 제조 시 설탕과 식용유의 말티톨 대체에 따른 품질 특성 변화를 조사하기 위하여 말티톨 첨가 비율별 구운떡의 물성, 색도 및 기호도 조사를 실시하였다. 물성 측정 결과 경도는 대조군에 비해 말티톨 첨가 비율이 증가할수록 26.80에서 20.92로 감소하였고, 부착성은 증가하여 부드럽고 찰기 있게 나타났다. 색도의 경우 명도는 말티톨 5%군이 가장 높았으며 말티톨 첨가 비율이 증가함에 따라 감소하는 경향이었다. 대조군에 비해 말티톨군의 적색도는 증가하였고 황색도는 감소하여 ${\Delta}E$값에서 뚜렷한 차이가 발생하였다. 관능검사 결과는 말티톨군이 외관, 촉촉함, 쫄깃함, 경도에서 유의적으로 높게 평가되었으며, 전반적인 기호도는 말티톨 10%군에서 높았다. 대조군과 말티톨 10% 첨가군을 실온 저장하면서 색도와 물성의 변화를 분석한 결과, 저장기간에 따른 색도의 변화(${\Delta}E$값)는 저장 1일차 대조군 2.51, 말티톨군 1.77로 대조군이 더 컸으나 2일차부터는 말티톨군의 차이가 더 컸다. 저장기간 중 물성의 경우 대조군은 1일차까지만 측정 가능하였으나 말티톨군은 3일째에도 측정 가능하였고, 경도의 경우 대조군은 1일차에 두 배 가량 증가하였으나 말티톨군은 저장 0일 20.92에서 저장 3일 28.97로 완만하게 증가하였다. Avrami kinetics에 적용한 결과는 Avrami 지수(n)에서 대조군 2.418, 말티톨군 2.098로 말티톨군이 낮게 나타났고, 시간상수(1/k)는 대조군 43.860, 말티톨군 60.976으로 말티톨군이 높게 나타나 대조군에 비해 말티톨 10% 대체 첨가에 의한 노화 지연 효과를 확인하였다. 이러한 결과 구운떡 제조 시 말티톨 10% 첨가는 물성, 색도, 관능적인 품질 및 저장성 향상에 도움을 줄 수 있을 것으로 생각된다.

Microwave 열처리 및 혼합염의 첨가가 깍두기의 물리적 성질에 미치는 영향 (Combined effects of microwave heating and salts addition on physical characteristics of Kakdugi)

  • 깍뚜기 저장성 향상에 효과가 있었던 절임시 소금액에의 KCI 첨가, 절인무우의 microwave 열처리 그리고 발효중반기에 혼합염 첨가가 깍뚜기의 색, 견고성 등 물리적 특성과 관능적 성질에 어떤 영향을 주는지 밝히고저 깍뚜기를 $25^{\circ}C$에서 발효시키고 저장을 $4^{\circ}C$$25^{\circ}C$에서 하면서 이들 성질을 비교하였다. 그 결과 무우의 견고성은 발효 및 저장을 하면서 전반적으로 감소함을 보여주었으나 $4^{\circ}C$ 저장에 있어서는 경도의 감소가 적었다. KCI의 첨가용액에서 절인 무우는 약간 높은 견고성을 보여주었고 혼합염의 첨가는 큰 영향이 없었다. Hunter 값으로 나타낸 깍뚜기액의 색은 발효나 저장기간이 증가하면서 "L"값이 증가하여 초기의 거의 투명했던 깍뚜기액이 우유색의 탁한 액으로 변함을 보여주었고, "a"값은 약간 감소와 "b"값은 약간 증가하였다. 혼합염을 첨가한 즉시의 깍뚜기액은 "L"값이 감소하였다가 다시 증가하는 경향을 보여주어 무기염에 의한 일부 유기물의 침전가능성을 보여주었다. 한편 관능적 평가는 절임시 KCI을 낮은 농도로 넣고 발효과정중 혼합염을 첨가한 깍뚜기가 품질에 유익한 영향을 주는 것으로 밝혀졌다.

함초 분말을 첨가한 콩다식의 품질특성 (Qualities of Soybean Dasik with Added Saltwort (Salicornia herbacea L.) Powder)

  • Soybean powder is a readily-available food ingredient. Furthermore, saltwort powder is an herb with various physiological effects. Therefore, in this study we examined the physiochemical characteristics of soybean dasik prepared with 0, 4, 8, and 12% saltwort powder. We measured Hunter's color values, mechanical characteristics, and sensory qualities. The result of each analysis is as follows. There were not significant differences between the moisture content of the control group and the groups with saltwort powder. The ash content increased while the fat and protein content decreased as the ratio of saltwort powder increased (p<0.001). In the analysis of color differences, the L, a, and b values decreased as the ratio of saltwort powder increased (p<0.001). The hardness (p<0.001) of the groups increased as the ratio of saltwort powder increased, but adhesiveness decreased. Sensory evaluation data showed that softness, hardness, and chewiness decreased while color increased as the ratio of saltwort powder increased. Finally, aroma, sweet taste, nutty taste, and overall acceptability was shown to be best for the 4% addition group.

곤드레 첨가량, 저장기간에 따른 곤드레개떡의 품질특성 (Quality Characteristics of Gondregaedduck by the Level of Cirsium setidens and Storage)

  • The objectives of this study were to investigate the quality characteristics of Gondregaedduck containing 0, 10, 20, and 30% Cirsium setidens. By increasing the level of Cirsium setidens, Hunter color L and a values of Gondregaedduck decreased, whereas b value increased. Hardness, springiness, and cohesiveness of Gondregaedduck decreased upon addition of Cirsium setidens. Over 3 days of storage, Gondregaedduck showed a slightly high total bacterial count compared to control. Sensory evaluation showed that Gondregaedduck containing 10% Cirsium setidens had higher color, taste preference, and overall acceptability.

백삼, 홍삼, 흑삼 분말을 이용한 양갱 제조 및 품질 특성 (Quality Characteristics of Yanggaeng with White, Red and Black Ginseng Powder)

  • Powders prepared from three different varieties of Korean ginseng (white, red and black) are consumed daily by many Koreans as a functional food material. These variants exert a variety of physiological effects. The principal objective of this study was to evaluate the quality characteristics of Yanggaeng prepared with three different types of ginseng powder. We conducted tests for ginsenosides content, Hunter's color values, mechanical characteristics, and sensory evaluation analysis. The ginsenosides of black ginseng were higher than those of white and red ginseng. The lightness of the black ginseng Yanggaeng was significantly less than the white, red, and control samples (p<0.05). We noted significant differences in Hunter's a and b values. With regard to the mechanical properties of the samples, we noted significant differences in gumminess (p<0.05), but no differences in hardness, springiness, chewiness, and cohesiveness were detected. The results of sensory evaluation showed that there were significant differences in the color, flavor, and overall quality of the samples (p<0.05), but there were no significant differences in taste and texture. Overall, red ginseng Yanggaeng appeared to have the most commercial value for improving the Yanggaeng product.

천연색소 첨가에 따른 식빵의 관능적 특성 (Sensory Characteristics of Bread Prepared with the Addition of Natural Pigment Powders)

  • The sensory characteristics of bread prepared with the addition of Angelica plant(Bakluncho) and Jujube(Daechu) powders were investigated The moisture, crude protein, as reducing sugar and vitamin C content of Angelica plant(Bakluncho) powders were 7.78%, 6.07%, 7.37%, 6.13% and 50.10 mg% respectively, and those of Jujube(Daechu) powders were 11.19%, 4.43%, 2.36%, 14.23% and 49.20 mg% respectively. Lightness value decreased but redness and yellowness values increased with increasing natural pigment powders content. The mechanical hardness of the bread decreased with the addition of 3% Angelica plant(Bakluncho) powders, but increased with the addition of 1% and 5% Angelica plant(Bakluncho) powders. The mechanical hardness of bread decreased with the addition of 1% and 3% Jujube(Daechu) powders, but increased with the addition of 5% Jujube(Daechu) powders. In sensory characteristics, the crust color, mb color, moistness and springiness decreased, but aroma and hardness increased with the increasing natural pigment powders content. The savory taste and overall quality of breads with 1% Angelica plant(Bakluncho) powders and 3% Jujube(Daechu) powders were higher than those of the control without my addition. A negative correlation was observed between Hunter's color value and overall quality of the bread prepared with addition of Angelica plant(Bakluncho) and Jujube(Daechu) powders.

가열-냉각 처리한 찹쌀전분을 첨가한 인절미의 텍스처 특성 (Effects of Autoclaving-Cooling Cycled Waxy Rice Starch on the Texture of Injulmi)

  • Effects of autoclaving-cooling cycled waxy rice(Hwasunchalbyeo) starch(ACW) on textural and sensory properties of Injulmi were investigated. The protein, ash and lipid contents of waxy rice flour were higher than those of waxy rice starch and ACW. The RS level of ACW was 8.21%. By increasing ACW content added to Injulmi, hardness and adhesiveness of Injulmi decreased, Hunter color L and a values increased and b values decreased. The sensory test showed that the hardness of Injulmi decreased, but springiness and adhesiveness increased by increasing ACW content to Injulmi. Overall Qualities of injulmi added with ACW up to 20% were similar to the non-added Injulmi.
