호텔 중식 주방 한.중 조리 종사원의 갈등 요인 분석에 관한 연구 (A Study on Analysis of Conflicting Factors between Kitchen Staffs of Korean and Chinese in Chinese Restaurant of Hotel)

  • The aim of this study was to analyze conflicting factors between Korean and Chinese Kitchen staff within the Chinese restaurants if hotels, and formulate a plan for resolving problems. A closed-end questionnaire was used for survey, which was conducted between 30 April 2005 and 4 June 2005. The survey was conducted among Koran and Chinese (China/Taiwan) cooking staff at Chinese restaurants within 5 star hotels located in Seoul, Korea. 231 questionnaires were distributed to the staff members, and the data collected and analyzed Form the results, Chinese staffs that have more cooking experience were found to be in higher positions and receive higher salaries. In addition, compared to Korean staff, the Chinese staff had fewer problems with conflicts from personnel adminstration, personnel adminstration, personal/psychological areas, benefits/rewards and relationship with their outlet manager. Conversely, Korean staff experience more disagreements in each conflict factor area than Chinese staff, implying there is a divergence between Korean and Chinese staff.

호텔주방의 HACCP 시스템적용 유무에 따른 조리종사원의 직무스트레스, 만족, 몰입의 비교 분석 (A Comparative Study of Job Stress, Satisfaction and Commitment of Cooking Employees in Hotel Kitchens with and without HACCP Systems)

  • Objectives: This study was conducted to identify differences in job stress, satisfaction and commitment of cooking employees working in hotel kitchens with and without HACCP systems. Methods: Culinary employees of 12 five-star hotels were surveyed and 504 valid data were used for SPSS analysis. Sub factors of working environment factors (job stress, job satisfaction, and job commitment) were examined for analysis. Results: The results showed that hotels that implemented the HACCP system had significantly higher values for the five sub factors of employee job stress (job demand, relationship conflict, organizational system, lack of job autonomy, and job instability; p<0.001). For the sub factors of job satisfaction (internal and external satisfaction) statistic showed a statistically significant value in hotels that did not implement the HACCP system (p<0.001). Job attachment and job importance, which are sub factors of job commitment, showed no difference in relation to the implementation of HACCP system, and job responsibility showed a higher p-value in hotels that did not implement HACCP (p<0.05). Conclusions: The results of the study indicate that culinary employees working at venues with HACCP systems have more job related stress, lower job satisfaction and partially less job commitment. Based on this outcome, venues that have already implemented or are planning to implement HACCP systems should consider the implications regarding their management of employees. Managerial policies that enhance autonomy, job stability, achievement, self-development, promotion, and compensation should also be implemented. Finally, meticulous attention and high investments into the work environment and human resources are necessary.

청소년의 패스트푸드 메뉴 선택 속성과 만족도에 관한 연구 (A Study on Teenagers' Selection Attribute and Satisfaction of Fast Food Menu)

  • 본 연구는 청소년들의 패스트푸드 메뉴의 선택 속성 및 만족도를 알아보기 위한 연구로, 경남 창원시의 고등학교에 재학 중인 학생들을 대상으로 실시하였다. 총 400부의 설문지 중 306부의 유효한 자료만을 분석에 사용하였으며, 데이터 코딩 과정을 거친 후 SPSS 12.0을 활용하였다. IPA 분석 결과 1사분면에 8개, 2사분면에 6개, 3사분면에 5개, 4사분면에 8개의 변수가 포함되었으며, 요인 분석 결과 총 5개의 요인(분위기, 음식, 종사원, 편안함, 보상)으로 나타났다. 이들 요인 중 '음식' 요인만이 패스트푸드 만족도에 유의적인 영향을 미치는 것으로 나타났다.

고속도로 휴게소의 메뉴전략을 위한 외식서비스실태연구 (A Study on Foodservice Operation for a Menu Strategy in Expressway Rest Areas)

  • 고속도로 휴게소의 메뉴전략을 위한 실증적 재조명을 위해 고속도로 휴게소 직원들과 이용객 대상으로 외식서비스에 관해 조사하였다. 연구결과, 대부분 휴게소의 주된 외식 메뉴는 평균 10-30개 정도의 한식이 가장 많았고, 브랜드업체의 입점 필요성은 퓨전/패스트푸드업체, 스낵/즉석식품, 음료 순으로 높게 나타났다. 휴게소 외식조리에서 전문조리사 참여비율은 10-30%이고, 주로 한식으로서 조리 시 중요시하는 음식속성은 주로 '맛'이었다. 외국인 고객은 한식, 음료. 일식/중식보다 퓨전패스트, 스낵/즉석식품을 더 선호하고 관심을 보였으며, 주문 시 질문을 '전혀 안한다(55.5%)'와 '가끔 한다(34.8%)'로 답해 질문없이 구매를 하고 있음을 알 수 있었다. 휴게소에서는 외국인의 메뉴 이해를 위해 메뉴의 80-100% 정도를 사진/그림으로 이용하고 있었으나 메뉴의 외국어 표기 정확도는 매우 낮았다. 휴게소 이용객들은 고속도로 이용 시 평균이용횟수 1-2회, 평균 체류시간 10-20분(43.6%), 20-30분(38.6%)이고, 주된 교통수단은 자가용(77.7%)이며, 휴게소 방문 이유는 휴식/화장실 이용(61.1%)이 가장 높았다. 많이 이용하는 외식분야는 한식(32.7%)과 즉석/스낵(33.0%)이고, 1회 평균 지출은 5천원-1만원(51.3%), 3천원-5천원(25.8%)이었다. 또한 만족도는 성별, 연령, 교육정도와 직업에 무관하게 "보통"으로 나타났다. 이 같은 결과로 보아 고속도로 휴게소는 문제점을 분석 후 고객만족을 위한 메뉴전략과 대안을 준비해야 할 것이다.

이주여성 출신 지역 생활문화와 아동놀이에 관한 연구 : 중국 길림성 집안시를 중심으로 (A Study of the Living Culture of Transnational Married Women and of Children's Outdoor Plays in their Hometown : Jilin Province - Jian in China)

  • The purpose of this study is to understand the living culture of transnational married women and to analyze the out door play of children in their hometown. The data was collected through observation from 27th June to 7th July 2008 in Jian, Jilin Province China. The children's play and lifestyles were observed, and data pertaining to the culture of the people were collected by a teacher and staff. We also visited the residents for housing information. The results are given below. 1. They dressed in Korean clothes on festive days and the boys put on a hood. They had eating habits which included cooking for themselves or buying semi-manufactured goods but did not use, instant food. The housing habits involved a combination of cooking and heating by Korean floor heating system(Ondol). They utilized outdoor space to grow vegetables. Those with a fulltime job(teacher) preferred to live in an apartment but an apartment was too expensive. Public utility charges and traffic expenses were cheap. 2. The main festive days are the lunar New Year's Day and Chuseok. The children returned home and enjoyed the festive day with their parents. The language used are Korean language and Chinese. Some Korean words and phrases in Jian Joseonjok have different meanings as compared to how they are used in Korea. A capping ceremony did not to celebrate becoming an adult from an adolescent. Couples performed a wedding ceremony at a wedding hall attended by their parents and invited relatives from both families. The relatives gave the couple a wedding gift. They did not go on a wedding trip as it was not affordable but instead spent their wedding night at a hotel in this culture. When someone dies, they bury the body after cremation. They perform a memorial service for three years on the birthday of the departed. They have a banquet on the 60th birthdays with their relatives and neighbours and are typically presented with a carp for longevity. 3. They understand capitalism and therefore send their children to school to improve their social position. The Korean and Chinese languages are required subjects in school. The students choose a second language(English or Russian). They prefer English class but at the time of this study an English class was not offered at the school in Jian Joseonjok. Therefore the children entered a Chinese school. 4. The children play outdoor games such as Y$\acute{a}$o J$\grave{i}\bar{a}$(要家), X$\grave{i}$ang g$\grave{i}$(象棋), T$\grave{i}\grave{a}$o p$\acute{i}$ j$\grave{i}$n(r)(跳皮節), D$\grave{o}$uch ing g$\grave{u}$n 凍冷根, B$\bar{e}$i B$\bar{e}$i 背背, and soccer. They play games according to the season.
