콩잎에 대한 문헌적 고찰 (A Bibliographical Analysis on Bean sprouts)

  • Bean sprouts have been one of the vital food for our ancestor for a long time. They were also hardy wild plants or first-aid medicine for needy people. Even nowadays they are served at table. For examples, bean curd, bean-curd dregs, bean sprouts, soybean paste, fermented soybeans, hot pepper paste, and soy are our daily food. Moreover bean sprouts are widely favored at the age of the well-being. Bean sprouts for a recover from a hangover, soybean paste for the prevention of cancer, beans leaf as the best well-being food for a diet, and so on. Thus the paper explains the origin of bean sprouts and their application as a food or medicinal stuff with the analysis of the various and wide-spread records.

고추장 산업의 현황과 세계화 제안 (Present status of Kochujang, a fermented hot pepper soybean paste, and its globalization)

  • Kochujang, a fermented hot pepper soybean paste, is a spicy condiment mixed with red pepper, boiled rice and mold fermented soybean (as koji) which is then fermented for several months. It has unique taste of hot, sweet, salty and savory flavor by all mixed ingredients by fermentation, and is one of most famous Korean traditional foods. The scale of the kochujang industry is about 200 billion won in Korea, and 7.8 million dollars and 4,500 tons in exports. Although it is still not a large part of the food industry in Korea, the scale of soy products will increase because it is a major subsidiary food in our dietary life and has grown from a homemade to a mass produced product. Kochujang has the largest market in the scale of sales among fermented soybean products and has merit because of its domestic base and its ability to grow to an international market due to its unique fermented taste. In order to make kochujang an international food, it Is necessary to study the scientific development of kochujang and the diversity of products using kochujang that are fitted to the taste of people around the world. In addition, participation in various exhibitions and food fairs supported by the government should help to promote kochujang throughout the world. In addition, these should be actively supported by the related businesses. Red pepper, a major ingredient in kochujang, has been widely studied and shown to have a positive effect on the reduction of fat, on the strengthening of the immune system, and on active biological functions. A fermented spice like kochujang has been shown to be beneficial for the body due to the process of fermentation rather than from the red pepper itself. If we prove the various biological functions of kochujang with a particular taste and flavor, it will energize a new market. It is necessary for business to make a continuous effort supported fly the scientific world and by government policy, in order to introduce this traditional food to the world. In the present day, the kochujang market is now on a firm basis and has been activated in the field of its study. Now, it is possible to achieve the birth of a secondary international market by concentrating on these efforts.

학동기 아동용 닭찜의 관능적 기호도에 영향을 주는 요인 분석 (Analysis of Factors Affect Sensory Acceptance of Dak-jjim in School Aged Children)

  • The purpose of this study was to analyze factors affecting acceptance of four kinds of dak-jjim samples in third year school-aged children (n=100). Soy sauce, red pepper paste, Vietnam fish sauce, and star anise were applied to samples for their familiar and exotic characteristics. Significant differences among samples were observed in odor, taste, and acceptance (p<0.001). Soy (Soy sauce sample), RPPaste (Red pepper paste sample), and Soy_FishS (Soy sauce and Vietnam fish sauce sample) samples scored higher than Soy_StarA (Soy sauce and star anise sample) sample. On the other hand, there were no significant differences in intensities of saltiness, sweetness, and hot spicy flavor (p>0.05). Liked attributes in samples were saltiness, sweetness, chicken flavor, potato flavor, moistness of chicken, hot spicy flavor, and color. Disliked attributes in samples were hot spicy flavor, saltiness, and ginger flavor. Significant differences among samples were observed in familiar intensity and willing to try again (p<0.001). Soy, RPPaste, and Soy_FishS samples scored higher than Soy_StarA sample. Panels considered taste (46%) and nutrition (45%). Higher familiar intensity of sample was associated with higher acceptance in samples. In other words, familiarity of food affects acceptance of food. Therefore, familiar ingredients such as soy sauce and chicken can be used for development of Korean menu items considering taste and nutrition with enhanced Korean food acceptance in school-aged children.

외식급식산업에 있어서 국(탕)이 고객 충성도에 미치는 영향 (Effect of Korean Soup(Tang) upon Customers Royalty in the Food Service Industry in Korea)

  • This study has been designed to stress the thoughts that soups should be offered taking into account customer's preference aimed at leading to eventual customer's satisfaction and the importance that Korean traditional food should take the lead in shifting dining-out industry's paradigm to customer-orientation instead of product-orientation. From August 15 through August 30, 2003, the drawn-up questionnaires were handed out to 500 numbers of adults aged over 20 living in Seoul, metropolitan city of Korea and the finally collected 361 questionnaires from them have been analysed as a subject for this study. It showed that the male respondents(44%) dined out much more frequently than the female respondents(35%) and their rate of 5,000-7,000 Won for a meal was most preferred as their average expenditure at one sitting in the restaurant. When eating Korean food at home or in a restaurant, the majority(5l,3%) of them think the soups(Tang) should be served coupled with their ordered meals. Among soups using flesh and meat as a staple material, they most preferred beef & bone soup(33.2%), followed by beep rib soup(30.4%) and beef soup with seasoned red pepper(l0.8%), and among soups using fish & shell and crustacean as a staple material, most preferred were hot fish soup(20.6%), loach soup(l5.2%) and hot crab soup(11.4%). Among soups using beans as a staple material, they most preferred soybean paste stew(33.2%), uncurdled soybean curd stew(29.4%) and Dambuk stew(l5.8%). Among soups using fowls and birds as a staple material, chicken soup with ginseng(51.9%), plain chicken soup(l8.4%) and chicken soup with red pepper sauce(l2.3%) falls on the most preferred. Among soups using vegetables and seaweeds as a staple material, most preferred are sea mustard soup(25.3%), Kimchi soup(16.8%), soybean paste soup with Chinese cabbage(13.0%) and bean sprout soup(10.1%). The soups(Tang) most preferred in the morning time are those soups whose staple materials are vegetables and seaweeds, such as sea mustard soup, bean sprout soup, Kimchi soup and soybean paste soup with Chinese cabbage while the soups most preferred for the lunch time are beef & bone soup, beep rib soup, chicken soup with ginseng and beef soup with seasoned red pepper while beef soup with seasoned red pepper, beef & bone soup, soybean curd stew and Kimchi soup are most preferred soups for the dinner time. The survey showed that 41 % of the subject preferred chicken soup with ginseng for a food considered good by themselves for their health. The male respondents preferred Bosin-tang(soup of edible-dog meat) than the female counterparts did, while the female respondents preferred chicken soup with ginseng than the male counterparts did. The survey showed that when eating korean traditional food, 70% of the subject are visiting a restaurant where soups are cooked delicious while 61% of the subject think that price does not matter if only food tastes good, which is reflecting that taste of food is a decisive factor in selecting menu rather than its price is. In conclusion, you can say that taste of soup is the most important factor creating steady customer in the restaurant, taking it into account Korean people most prefer their traditional food when dining out.

어육소시지 부원료에 대한 세균학적 연구 (Bacterial Studies on the Subsidiary Materials of Fish Sausage)

  • 어육 연제품의 부패에 관여하는 세균의 보급원이 되고있는 부원료의 미생물 오염 실태를 알기 위하여 어육 소시지 가공공장과 시중에서 채취한 녹말, 각종 향신료 및 조미료 20종에 총 시료수 59점에 대하에 생균수, 대장균군, 분변계대장균, 곰팡이 및 효모, 내열균, 호기성 아포형성균(중온 및 고온균), 혐기성 아포형성균(중온 및 고온균), 혐기성 황화수소변패 아포형성균을 조사하였다. 1. 부원료 중 녹말, 후추, 고추가루, 양파, 마늘, 생강, 육즙, 프랑크 등은 일반세균 및 포자형성균의 오염이 높았으며 시판품이 가공공장의 것보다 세균함량이 많았다. 2. 생균수가 높았던 시료는 내열균, 호기성 아포형성 중온균 및 고온균의 함량이 높았다. 3. 가공공장의 후추와 육즙, 시판품의 후추, 고추가루, 양파, 마늘 등은 외국의 세균관계기준을 초과하고 있다. 4. 생균수는 가공공장의 후추, 밀가루, 양파, 마늘이 $10^4$~$10^{5}$ /g이었고 시판의 후추, 고춧가루, 양파, 마늘이 $10^{5}$ ~$10^{7}$ /g이였으며 후추정유와 색소에서는 검출되지 않았다. 5. 대장균군이 검출된 시료는 생균수의 함량이 높았던 종류들이며 후추, 고추가루를 제외한 다른 시료에서는 분변계대장균이 검출되지 아니하였다. 6. 곰팡이 및 효모는 가공공장의 녹말, 밀가루, 후추가 140~460/g이었고 시판하는 후추와 고추가루는 $10^3$/g이였으며, 다른 시료에서는 검출되지 아니 하였다. 7. 10$0^{\circ}C$에서 5분간 끓인 후 55$^{\circ}C$에서 배양한 혐기성 황화수소변패 아포형성균은 본 실험에 제공된 어느 시료에서도 검출되지 않았다.

  • Ascorbic acid수용액에 조미료 및 향신료를 단독독 또는 배합 첨가(添加)하였을 때의 ascorbic acid의 함량(含量)을 2,4 Dnitrophenylhydrazine method에 의하여 정량(定量)하였다. 조미료 및 향신료를 단독으로 ascorbic acid 수용액에 첨가(添加)하였을 때의 total ascorbic acid의 잔재율(殘存率)은 식초, 설탕, 소금, 미원, 파, 마늘, 깨, 엿, 간장, 고추, 고추장, 후추, 생강, 계피등이 ascorbic acid단독만의 수용액보다 높은치(値)를 나타냈으며 실백, 참기름, 된장의 첨가(添加)는 적은치(値)를 나타냈다. 또한 ascorbic acid의 자동산화율(自動酸化率)은 회향, 계피, 생강, 후추, 된장, 실백, 카레등이 가장 높은치(値)를 나타냈으며 마늘, 참기름, 미원, 설탕, 꿀, 소금, 새우젓, 고추장, 간장등이 대체적으로 얕은치(値)를 나타냈다. 또한 배합(配合)조미료에 있어서는 모두 ascorbic acid의 함량(含量)은 높은치(値)를 나타냈으며 콩나물, 무나물, 무침등 가장 빈용되는 조미료 배합(配合)인 No. 8,9,10이 높은 치(値)를 나타냈으며 겨자채의 조미료배합이 제일 적은치(値)를 나타냈다.

고수를 첨가한 고추장의 품질 및 관능적 특성 (Quality and Sensory Characteristics of Gochujang added with Coriander(Coriandrum sativum L.))

  • 본 연구는 서구권 국가에서도 영양학적 우수성을 인정하고 소비가 점차 증가하는 추세이며, 기능성이 있는 천연 향신료 중 독특한 향과 항산화, 항암효과를 갖고 중국인들이 가장 선호하는 고수(Coriandrum sativum L.)를 고추장에 첨가하여 기능성이 향상된 고수 고추장 개발을 통해 중국 시장에 고추장의 활용성과 소비를 확대를 높이고자 하였다. 고수 고추장의 고수는 파우더와 원액 넣어 본 연구의 결론은 다음과 같다. CP7의 색(4.04), 고수의 향(3.72), 고수의 맛(3.92), 부드러운 정도(4.36)가 강하게 평가되었고, CJ4는 윤기(3.42), 고수의 향(3.04), 고수의 맛(4.29)이 강하게 평가되었다. 이는 고수의 첨가량이 증가할 수록 고추장의 향과 고추장의 맛은 약하게 평가되는 것을 알 수 있었다.

Beneficial Effects of Traditional Seasonings on Quality Characteristics of Fermented Sausages

  • Though traditional seasonings are widely used in many dishes, however, no attention has been paid to the investigation of their effects on quality characteristics of food products. The present investigation was undertaken to study the effects of incorporating several traditional seasonings including doenjang (fermented soybean paste), gochu-jang (red pepper paste), fresh medium-hot, and hot peppers, and fresh garlic on the lipid oxidation, cholesterol content and sensory characteristics of fermented sausages. Six fermented sausage treatments (5 with 1% (w/w) each test seasoning and 1 without added test seasoning (control) were prepared. The addition of seasonings generally had beneficial effects on the improvement of fermented sausage's quality however the effects differed depending on the each type of seasonings added. Significant lower pH values were found in all fermented sausages made with the seasonings while, lower levels of lipid oxidation were found in the treatments with hot peppers and garlic as compared with the control (p<0.05). The treatment with seasonings did not cause color or texture defects in the products whereas the sausages made with gochu-jang had significantly higher Commission International de $l^{\prime}Eclairagea^{\ast}$ (redness) value in comparison with the control. Noticeably, incorporating doenjang, medium-hot peppers, hot peppers and garlic resulted in reduction of 26.50, 32.54, 47.04, and 48.54 mg cholesterol/100 g samples, respectively (p<0.05). Higher scores for the sensory traits such as aroma, taste, color and acceptability were also given for the sausages made with seasonings. The current work demonstrates that the test seasonings represent potentially natural ingredients to be used for producing healthier fermented sausages.

한국 전통음식에 사용된 매운 맛 (Spicy Taste of Korean Traditional Food)

  • The origin of Korean traditional food's spicy taste dates back to the first telling of the Dangun myth-a story of a tiger and bear who tried to reincarnate themselves in human form by eating garlic and wormwood. For a long time, Koreans have eaten spicy vegetables such as green onion, garlic, ginger, mustard, leeks, corni, cinnamon bark, and Chinese peppers (Zanthoxylum schinfolium) and Zanthoxylum bungeanum. In prehistoric times, spicy vegetables were probably used to eliminate the smell of meat. In the agricultural age, they were used to supplement meals with fresh taste. They were also used as a substitute for salt (salt was very precious and expensive) as well as side dishes for the poor. Spicy vegetables have also been used as a substitute for main dish like medicinal gruel and used to increase the spiciness of soup, and they are usually used as a side dish and with condiments in namul (cooked vegetable dishes), sangchae (salad), ssam (wrapped in greens and garnished with red-pepper paste or other condiments) and Kimchi. In addition, chili pepper was introduced to the Korean Peninsula in the middle of the Joseon Dynasty (mid-15th, 16th century). The soil and climate of the Korean Peninsula are suitable to growing chili pepper, and chili pepper has excellent adaptability and productivity. Accordingly, it is processed to red pepper powder and has become a major part of traditional Korean food along with Chinese pepper. Since the Joseon Dynasty, many kinds of Kimchi made with red pepper powder have been developed, and most Koreans enjoy them these days. The main characteristics of Korean food are spiciness and honest-to-goodness taste.

순창전통고추장의 물리화학적 특성에 관한 연구 (Studies on the Physicochemical Characteristics of Sunchang Traditional Kochujang)

  • This study was conducted to investigate the physicochemical characteristics of Sunchang traditional kochujang(fermented hot pepper-soy bean paste) for quality standardization. The kochujang samples, which have been fermented for 8 months in 1999, were collected from 20 firms at folk village in Sunchang area and analyzed their chemical compositions and color reference. The mean value of moisture, amino-type nitrogen, pH, acidity and salt content of the samples collected were $44.62{\pm}1.79%$, $132.66{\pm}21.67\;mg%$, $4.52{\pm}0.08$, $15.77{\pm}1.62$ and $8.76{\pm}1.55%$, respectively. The moisture, pH, acidity and salt content of each sample did not show much differences among samples. The Hunter values(L, a and b) of Sunchang traditional kochujang were $25.72{\pm}1.58$, $23.26{\pm}1.71$ and $9.86{\pm}0.94$, respectively. The mean content of amino-type nitrogen of Sunchang traditional kochujang was $132.66{\pm}21.67\;mg%$, and there were a little difference between the minimum(100.33 mg%) and the maximum(164.56 mg%). The main free sugars of Sunchang traditional kochujang were fructose($1.86{\pm}1.01%$), dextrose($4.29{\pm}2.06%$), sucrose($0.54{\pm}1.21%$), and maltose($1.48{\pm}0.77%$). The contents of fructose, dextrose, and maltose had little difference among samples. The fatty acids in Sunchang traditional kochujang were composed of palmitic, stearic, oleic, linoleic, linolenic, octadecatetraenoic, arachidonic and behenic acid. The linoleic acid(18:2) showed the highest, occuping 59.37% of the total fatty acids.
