Analysis of Grain Quality Properties in Korea-bred Japonica Rice Cultivars (우리나라 자포니카 벼 품종의 식미관련 미질특성 분석)

  • This study was conducted to make clustering analysis based on major physicochemical characteristics related to palatability of cooked rice. 89 Korea-bred japonica rice cultivars could be largely classified into two groups, that is, Dongjinbyeo and Ilpumbyeo groups. The Ilpumbyeo group was divided into two subgroups; Ilpumbyeo and Chucheongbyeo groups. The two major rice groups showed significant difference in viscogram properties of rice flour. Ilpumbyeo group revealed slightly higher estimates of viscogram traits as compared with Dongiinbyeo group in average. Early-maturing rice group showed slighly lower estimates of taste meter and higher protein content compared with medium or medium late maturing ones. Also, early and medium-maturing groups exhibited slightly higher estimates of peak, hot and breakdown viscosities but lower estimates of consistenency and setback viscosities compared with medium-late-maturing one. The rice cultivars developed in 2000's revealed slightly higher estimates of peak, hot, cool and consistency viscosities compared with those in $1980's{\sim}1990's$. The grain quality properties significantly associated with the esimates of Toyo taste meter were protein and amylose contents and hot viscosity. The lower protein content and hot viscosity and the higher amylose content, the higher estimates of the taster meter. The protein content was highly negatively correlated with amylose content of milled rice. The important quality components contributed to multiple regression formula for estimating the Toyo taster meter values were protein content, alkali digestion value, and hot viscosity. The fittness of this formula was about 49% along with the coefficients of determination.

A Study on the Physiological Symptoms and Pathological Symptoms of Vietnamese according to Sasang Constitutions (사상체질에 따른 베트남인의 소증 및 병증 특성 연구)

  • Objectives In this study, the Sasang Constitutional diagnosis were carried out to Vietnamese subject living in Vietnam, and the external applicability of Sasang Constitutional Medicine was evaluated by analyzing the physiological symptoms and the pathological symptoms according to their constitutions. Methods Total 170 Vietnamese subjects who live in Hanoi were invited from Sep. 2012 to Jun. 2013 for the research, and subjects were diagnosed by 2 Sasang Constitution Medicine specialists. The collected data were analyzed in terms of the physiological symptoms and the pathological symptoms according to the Sasang Constitutions. Results There were significantly different in the physiological symptoms according to Sasang Constitutions, which were 'digest', 'perspiration', 'excrement', 'hot and cold', 'water' and in the pathological symptoms, which were 'sting pain in head' in Soyangin, 'back pain' in Soeumin, 'chest discomfort' in Taeeumin, 'skin discomfort' in Taeeumin, 'fatigue in the afternoon' in Soyangin, 'digestion' in Soeumin. Conclusions The Sasang Constitution Medicine which is a Korean traditional medicine is also applicable to foreign countries, and it can contribute to the health promotion.

  • The purpose of this study was attempted to understand the substance and meaning of menopause experienced by women through informal interviews with oral consent. The informants were 6 perimenopausal women of 50-55 years old who are executing menopause. Colaizz's analytical method, a type of phenomenological analysis, was used to analyze data recorded by audiotape. One professor and a master's degree student who understand phenomenology, and the one who has a master of arts examined the validity between the meanings composed of the clusters of themes. Findings were turned out to be valid through validation process as the last step. The meaning of menopause implied both 'concept about menopause' and 'menopause as a time of change'. Menopause was mostly considered as cessation of menstruation as a physiological, natural, and normal process by aging. However, some people regarded menopause as a loss of youth and womanhood and lessening of every function of the body. Menopause as the time of changes means 'the period of' 'hormonal changes' such as change of menstruation, hot flushes, perspiration, and palpitation ; 'body function changes' of visual acuity, physical strength, sleeping, digestion, thoughts, bone and joints, skin sensibility, sexual pattern and intelligence ; 'emotional changes' such as anxiety, loneliness, gloominess, and nervousness. Menopause is a turning point on the women's life cycle accompanying various kind of changes and health problems. Therefore it is inevitable to develop strategy helping menopausal women pass through the critical successfully by adapting and coping with their critical period toward the healthy and better quality of life individually rather than putting them all into the standardized hormonal replacement protocol.

Purification and Characterization of Complement-activating Acidic Polysaccharides from the Fruits of Capsicum annuum

  • Hot water-soluble crude polysaccharide (HCAP-0) that was obtained from the fruits of Capsicum annuum showed potent anti-complementary activity. The activity was unchanged by pronase digestion, but decreased by periodate oxidation. The HCAP-0 was fractionated by DEAE ion-exchange chromatography to give two major fractions, HCAP-II and III. These two fractions were finally purified by gel filtration to give HCAP-IIa, HCAP-IIIa1, and IIIa2 fractions that had high anti-complementary activities. The HCAP-IIIa1 and IIIa2 consisted of homogeneous polysaccharides. The anti-complementary activities were unaffected by treatment with polymyxin B, indicating that the modes of complement activation were not due to preexisting lipopolysaccharide. The molecular weight and sugar content of HCAP-IIIa2 had potent anti-complementary activity. The highest yields were 55 kDa and 75.9%, and the molar ratio of galactose (Ara:Gal, 1.0:4.6) was higher than other sugars. The crossed immuno-electrophoresis showed that both classical and alternative pathways were activated by HCAP-IIIa2.

Purification and Characterization of Complement System Activating Polysaccharide from the Bark of Kalopanax pictus N. (음나무 수피로부터 보체계 활성화 다당의 정제 및 특성)

  • It was observed that the hot-water extract of the bark of Kalopanax pictus N. had the highest anti-complementary activity among the 11 kinds of forest materials. Methanol-and ethanol-soluble portions had low anti-complementary activities, but crude polysaccharide. HKP-0 had a high activity of 80%. HKP-0 contained 54.8% of total sugar and 27.9% of protein. The neutral sugars of HKP-0 consisted of mainly arabinose, galactose and glucose. HKP-4 fraction obtained by cetavlon treatment of HKP-0 showed the highest anti-complementary activity of 90%. The activity was not changed by pronase digestion bu decreased greatly by periodate oxidation. HKP-4 consisted of mainly arabinose and glucose with molar ratio of 1.0 : 22.4, HKP-4-I, an unabsorbed fraction from HKP-4 on DEAE Sepharose CL-6B column showed higher yield and activity than those of absorbed fractions. HKP-4-I was homogeneous, and its molecular weight was about 25,000. HKP-4-I contained 84.0% of neutral sugar and consisted of arabinose and glucose with molar ratio of 1.0 : 11.2. The anti-complementary activity of HKP-4-I was not decreased by the treatment of polymyxin B, and the polysaccharide activated both classical and alternative pathway in complement system. Void volume fraction obtained from HKP-4-I hydrolyzed with ${\alpha}$-amylase on Sephadex G-25 column only had a high anti-complementary activity.

A Study on Gruel Intake and Preference of Cheongju Area Adults and Gruel Development according to Age (연령에 따른 청주지역 성인의 죽 섭취실태, 선호도 및 개발에 관한 연구)

  • This study was performed to investigate gruel intake, preference and opinions about gruel development to produce new products for breakfast. The subjects of this study were 307 adults in Chungju city. People who favored gruels were 212(69.5%) and 50.2% of the subjects liked the gruel because of good digestion and absorption. They liked midium thick or thin gruel and also liked grain granules with some stuff as contents. The gruels often taken were abalone gruel(45.9%), pumpkin gruel(41.7%), chicken gruel(34.9%), vegetable gruel(33.6%), beef and mushroom gruel(30.3%) etc. in order. The frequency of gruel intake was 1-2 times/year and 59.6% of subjects got gruels from the special gruel restaurant. People who need gruels most were patients, indigestible person, the elderly, weaning babies, workers and students missing breakfast in order. Sesame taste obtained the highest score of all, that of bitter taste was significantly higher in over fifty year old people (p<0.05), and hot taste score was significantly higher in 30-40 year old people (p<0.01). The gruels preferred most were abalone gruel, pumpkin gruel, chicken gruel, beef and mushroom gruel, vegetable gruel, red bean gruel, pine nut gruel, egg gruel, sesame gruel, plain grain gruel etc. in order. Fifty seven percent of subjects wanted to develope new gruels fortified nutrients. In conclusion, when the substitute gruel for breakfast is developed, it is better to use food materials to be easy to digest, to have grain granules with some stuff inside and to be sesame taste.

Screening of Anticoagulant PoIysaccharides from Edible Plants (식물로 부터 혈액 항응고 활성 다당류의 검색)

  • Screening of anticoagulant activity was conducted for the hot water extracts of 73 kinds of medicinal herbs, 41 kinds of Korean edible plants, and 5 kinds of sea weeds using plasma recalcification test(Tr). In the first screening several extracts of the plants, Alisma calndiculatum, Corydalis ternata Panax notoginseng, Allium sativum, Ganderma luidum, Codium fragile, showed high activities. When the plants were reextracted with various solvent conditions, acidic water extracts of Codium fragile showed the highest activity in APTT. A crude polysaccharide fraction(CF-1) was prepared by methanol reflux, ethanol precipitation, dialysis and Iyophilization of the acid extracts. CF-1 comprised 80.8% total sugar consisting of arabinose, galactose and glucose as the main monomers, 8.7% protein, and 13.3% sulfate. The anticoagulant activity of CF-1 was not changed by pronase digestion, but decreased by periodate oxidation, and this indicated that the anticoagulant activity was attributed to the polysaccharide portion.

Mineral Contents of Underground Vegetables Produced in Different Regions of Korea (국내산 식용 지하 부위 채소의 생산지역에 따른 무기질 성분 함량에 관한 연구)

  • This study was carried out to estimate mineral contents of some underground vegetables including potatoes, sweet-potatoes, carrots, radishes, onions, and garlics produced in Korea using ICP-AES (Inductively Coupled Plasma-Atomic Emission Spectrometry). According to the measurements, the contents of Na, Mg, Al, K, Ca, Mn, Fe, Zn, and P in Korean underground vegetables were variable depending upon producing areas and individual plants. Compared with other underground vegetables, the contents of Na in carrots and lotus roots were quite high. The contents of Cd, Ag Co. and Sr appeared to be below hazard levels. It is expected that this study can be used to calculate the mineral intake from underground vegetables.

  • Mulberry leaves are believed to be a potent inhibitor of intestinal $\alpha$-glycosidase and the digestion of sucrose in the small intestine. Mulberry leaves are also blown to help prevent the postprandial hyperglycemia. The objective of this study was to elucidate the functionality and anti-hyperglycemic effect of mulberry leaves, and to develop a functional drink using mulberry leaf, silk peptide and oriental medicine. Several mixtures of mulberry lear extract silk peptide and oriental medicine were made for the purpose of manufacture and formulation of products. These mixtures were tested to check the $\alpha$-glycosidase inhibition effect to find the best formula. The optimum conditions for a mulberry leaf hot water extract were that the size of leaf was under 3mm, the amount of leaf needed 50~100 g/L, extraction temperature 9$0^{\circ}C$ and extraction time 2 hr. The yield of extraction was 20~25%. The anti-hyperglycemic effect of mulberry leaves was at maximum when the concentrations of mulberry leaf extract and silk peptide were 1% and 0.1%, respectively.

Preliminary studies on the microplastic pollution in Dal lake, Kashmir (first report)

  • We provide the first study on the occurrence of microplastics in Dal lake, Kashmir, India. Microplastics act as catastrophe that trigger many environmental problems. The key origins of microplastics are larger plastics, which split into smaller plastics after UV light disintegration. There is relatively little work carried out on the existence of microplastics. The present work has been undertaken on the occurrence of microplastics at four pre-selected sites (surface water) in Dal lake, Kashmir. The samples were taken to the laboratory to dissolve organic matter by using H2O2 (6%). To speed up the organic digestion; the treated mixture was heated on a hot plate at 70℃. The mixture was then subjected to density separation. The supernatant obtained was observed under the microscope (10X) and measurements were taken. At site-I, the microplastics ranged from 2-3 mm, site-II 5-6 mm, site-III 3-4 mm, site-IV 4-5 mm in thickness, indicating the presence of microplastics in the lake. The presence of microplastics indicated that the lake has undergone an anthropogenic change over a period of time. Our research highlights the value of enhancing the quality of the drainage system and sewage disposal. This work can be helpful to recognize successful microplastic control management techniques and possible threats associated with the Dal lake. So far, no such data on the presence of microplastics in Kashmir lakes is available.
