파찌감 이용을 위한 분말화의 건조방법에 관한 연구 (Studies on Drying Method of the Powder to Utilize Deteriorated Sweet Persimmon)

  • 단감의 수확 및 저장 중에 발생한 불량과실을 이용할 목적으로 분말화하기 위한 기초연구로서 본 실험을 행하였다. 일반성분 조성은 조단백질, 조지방, 조회분의 순으로 열풍건조 처리구는 0.9-1.1%, 15.0-39.0%, 2.3-3.3%이었으며, 동결건조 처리구는 1.3-2.2%, 27.0-49.0%, 2.5%로 나타났다. 무기성분 조성은 열풍과 동결건조 처리구 모두 potassium, magnesium, phosphorus; calcium, sodium이 주요 무기성분이었으며, 다른 미량원소는 약 3.00ppm 이하였다. 주요 지방산 조성은 열풍과 동결건조 처리구에서 capric acid, lauric acid tridecanoic acid, palmitic acid, palmitoleic acid, oleic acid, linoleic acid, linolenic acid 순으로 나타났다. 동결건조 처리구의 아미노산 조성은 aspartic acid, glutamic acid가 주요 아미노산이었다. 전체적으로 열풍건조 처리구보다는 동결 건조 처리구가 다소 높은 결과를 보였다. 열풍과 동결건조에 의한 분말 제조에서는 변색과 영양적인 측면을 고려할 때 열풍건조 보다는 동결건조가 우수한 결과를 보였으며, 열풍건조가 시간은 단축되었으나 얇게 펴서 건조해야 하는 단점이 있었으며, 단순한 열풍건조 만으로는 대량생산에 의한 분말 제조는 어렵고 좀더 보완적인 방법이 강구되어야할 것으로 생각된다. 이에 반해 동결건조에 의한 건조방법은 건조시간이 다소 걸리기는 했으나 딱딱해지거나 변색의 우려가 없으며 영양학적으로도 매우 안정적이었다. 이상의 결과를 평가해 볼 때 열풍건조에 의한 분말 제조는 구체적인 보완이 필요하며, 동결건조에 의한 분말 제조가 열풍건조에서보다 우수한 것으로 결과가 나타났다. 따라서, 파찌감의 분말건조 방법은 동결건조가 효율적일 것으로 생각된다.

  • Hot air drying is a method that let moistures evaporate by heat exchange between heating air and dry target. This way is dominating more than about 70% of dryers that the use extent is wide fairly, and is established in domestic than dryer that use conduction or radiation etc. Most of research about drying had been emphasized in size of device through analysis for these dry phenomenon plain, heating topology, and aspect of form and so on by dry target's special quality, and research about device development or waste heat withdrawal technology in energy utilization efficiency side is slight real condition. Therefore, in this study, Investigated numerically about thermal efficiency elevation that is leaned against as that change the temperature of inlet and outlet in heat exchanger of the hot air drying tower.

석유증발 건조방법에 의한 Mn-Zn Ferrite의 제조에 관한 연구 (Fabrication of Mn-Zn Ferrite by Hot Petroleum Drying Method)

  • This study attempted to characterize the powder and sintered specimen of Mn-Zn ferrite that was prepared by Hot Petroleum Drying Method. The results of the experiment were as follows: 1. The mixed sulfate powder prepared by Hot Petroleum Drying Method was homogeneous and very reactive. The ferrite formation of this powder occurred at lower temperature than the one prepared by Sulfate Dry Mixing Method. 2. The calcined oxide powder prepared by Hot Petroleum Drying Method was found to be agglomerated, and therefore it was very difficult to compact this powder. 3. The sintered density was 4.95g/㎤, 97% of the theoretical density, when the specimen was prepared by Hot Petroleum Drying method, calcined at 90$0^{\circ}C$ in air for 3h, sintered at 1,30$0^{\circ}C$ in air for 3h, and then cooled in nitrogen. 4. The discontinuous grain growth occurred at lower temperature in the specimen prepared by Hot Petroleum Dyring Method than in the one prepared by Sulfate Dry Mixing Method. The discontinuous grain growth was considered to be due to the presence of liquid formed by addition of CaO and $SiO_2$.

  • Approximately 80% of the world's sea cucumbers Apostichopus japonicas are processed into dried sea cucumbers. The hot air-drying method is currently used in industry, but it has many problems, such as a short drying time, severe browning, high nutrition loss, and low recovery. In this study, the moisture absorption rate, dry recovery rate, and lipid nutrient composition of sea cucumber dried by heat pump decompression and with a hybrid dryer were investigated. The moisture absorption rates for hybrid-dried sea cucumbers at 24, 48, 72, 96, and 120 h were 241.3%, 427.7%, 652.0%, 721.0%, and 742.2%, respectively. The moisture absorption rates for hot air-dried sea cucumbers were 155.8%, 240.0%, 390.3%, 655.5%, and 667.4%, respectively. Thus, moisture absorption was faster and greater with hybrid drying than with hot air drying. The dry recovery rate at 24 h was greater for hybrid-dried sea cucumber (70.7%) than for hot air-dried sea cucumber (59.8%). Saturated fatty acid contents of the hybrid- and hot air-dried sea cucumbers were 30.0% and 37.5%, respectively. Moreover, greater ${\Sigma}n-3$ polyunsaturated fatty acid content was found in hybrid-dried sea cucumber (15.8%) than in hot air-dried sea cucumber (11.7%).

김치의 품질에 미치는 반건조 고춧가루의 영향 (Effect of Semi-dry Red Pepper Powder on Quality of Kimchi)

  • 고춧가루를 보다 위생적이고, 영양소의 파괴를 막으며 또한 홍고추의 색상을 유지하기 위하여, 한반도와 부자의 2가지 품종을 이용하여 반건조 고춧가루를 제조한 후 화력건조 고추가루와 비타민 C, ASTA color 값, 총세균수를 비교하였으며, 또한 이 두 고춧가루로 김치를 제조하여 그 품질의 특성을 비교한 결과는 다음과 같다. 비타민 C 함량과 ASTA color 값은 반건조 고추가루가 화력 건조 고춧가루보다 더 높게 나타났으며, 총세균수에 있어서는 반건조 고춧가루가 더 낮은 수를 나타내었다. 또한 2가지 고춧가루로 김치를 제조한 후 $7^{\circ}C$에서 발효시키면서 PH, 총산도, 총세균수 및 젖산 균수의 변화를 관찰한 결과, 기존의 화력건조 고춧가루로 제조한 김치의 pH, 총산도, 총세균수 및 젖산균 수의 변화 등에서 별 차이를 발견하지 못하였다. 관능검사 결과, 한반도 품종에서 색을 제외한 맛$(3.85\pm0.21)$ 풍미$(3.42\pm0.26)$, 조직감$(3.96\pm0.23)$에서 반건조 고춧가루를 사용한 김치의 선호도가 높게 나타났다. 앞으로 반건조 고춧가루로 김치를 만들면, 경제적일 뿐만 아니라 관능적, 위생적으로 우수한 김치를 생산하여 김치 산업발전에 도움이 되리라 생각된다.

  • An indirect concept and method is proposed to predict the paint dry time at the inside wall of ship block. To implement this concept on computer program, optimal hot air supply-exhaust system of paint dry facility was designed by CFD simulation and experiment was performed to get the paint dry time curve according to various paint dry conditions. After combining the block inside environment from the simulation results and the paint dry time prediction curve from the curve-fitting of experimental result, the GUI program which can be executed in general PC OS has been finally developed.

건조방법의 차이에 따른 천마의 품질 및 성분 변화 (Changes of Components and Quality in Gastrodiae Rhizoma by Different Dry Methods)

  • In order to product dry goods of Gastrodiae Rhizoma with high quality, tubers were treated with various dry methods such as cutting, drying methods and steaming. In cutting than no cutting, they were shown shorter drying hours and lower drying yield. Drying hours in freeze drying was shorter than those of hot air and far-infrared ray. Total polyphenol content was higher in cutting than no cutting. According to steaming, it was increased in freeze drying but decreased rapidly in the other dry methods. Among all treatments, hot air dry treatment with cutting and no steaming had the highest total polyphenol content. Gastrodin and 4-hydroxybenzyl alcohol contents generally were similar or higher in cutting than no cutting. By steaming, gastrodin content in freeze drying was decreased but 4-hydroxybenzyl alcohol content was increased. But hot-air and infrared ray dry, they were shown opposite results. Gastrodin and 4-hydroxybenzyl alcohol contents showed opposite reaction to each other and were shown various response by dry methods.

인도 중정형 주택의 공간 구조와 기후의 연관성에 관한 연구 - 고온 건조 지역과 고온 다습 지역의 중정형 주택을 중심으로 - (A Study on the Relationship between the Climate and Space Organization of India Courtyard Housing - Focused on the Courtyard housings in Hot-dry Region and Hot-humid Region -)

  • The purpose of this study is to compare and analyse the difference between courtyard housings of hot-humid region and hot-dry region in India, in order to identify the affection of climate on the space arrangement of housing. The study starts from the curiosity about similar space structure of Indian housings at different climate area. Indian housings usually have courtyard at the center of its plan, though the 'Courtyard housing' is typical form of dry region's house type. Research method is comparative analysis of traditional houses of India, and the samples are selected from hot-dry city, Ahmedabad and hot-humid city, Bangalore. The conclusion is drawn through comparing main houses with traditional houses of other dry city - Jaipur - and humid cities - Trivandrum and Nilambur. It shows that both dry and humid region's housings has courtyard in common, but their spatial structures are not same at all. Houses of dry region shows organically connected spatial form, in order to maximize the cooling effect of ventilation. In contrast, the plan of houses in humid region shows opened, but can be closed in any time to prevent the penetration of moisture. Both Parekh house(Ahmedabad) and Koramangala house(Bangalore) left inconvenience of its arrangement, though the ventilation of air is the most important point of sustainability in hot region. The study could be the practical reference data for advanced sustainable housings of India which may built in the future.

Drying Kinetics of Onion Slices in a Hot-air Dryer

  • Onion slices were dehydrated in a single layer at drying air temperatures ranging from $50{\sim}70^{\circ}C$ in a laboratory scale convective hot-air dryer at an air velocity of 0.66 m/s. The effect of drying air temperature on the drying kinetic characteristics were determined. It was found that onion slices would dry within $210{\sim}460\;min$ under these drying conditions. Moisture transfer during dehydration was described by applying the Fick's diffusion model and the effective diffusivity changed between $1.345{\times}10^{-8}$ and $2.658{\times}10^{-8}\;m^2/s$. A non-linear regression procedure was used to fit 9 thin layer drying models available in the literature to the experimental drying curves. The Logarithmic model provided a better fit to the experimental drying data as compared to other models. Temperature dependency of the effective diffusivity during the hot-air drying process obeyed the Arrhenius relationship with estimated activation energy being 31.36 kJ/mol. The effect of the drying air temperature on the drying model constants and coefficients were also determined.
