에스트로겐/칼슘 혼합요법이 난소절제 쥐의 골대사에 미치는 영향 II. 칼슘, 인 및 질소대사에 관한 연구 (The Effect of Combined Estrogen/calcium Therapy on Bone Metabolism in Ovariectomized Rats II. A Study on Metabolism of calcium, Phosphorus and Nitrogen in Ovariectomized Rats)

  • 본 연구는 폐경 후 여성에게 식이 칼슘염 형태, 에스트로겐 및 에스트로겐/칼슘 혼합요법이 칼슘, 인 및 질소 대사에 미치는 영향을 알아보고자 난소절제쥐를 이용한 총 9군으로 분류하여 6주간 사육한 후, 섭취량과 배설량을 측정하였고, 이로부터 흡수율과 평형상태를 구하였다. 난소를 절제한 군과 난소를 절제하지 않은 군에서의 칼슘 섭취량은 비슷하였으나 소변으로의 칼슘 배설이 난소를 절제한 군에서 유의하게 높았다. 난소절제 후 estrogen투여 및 estrogen/칼슘 혼합 투여군에서의 소변으로의 칼슘 배설량은 낮은 경향을 보였다. 대변으로의 칼슘 배설량은 난소를 절제한 군이 난소를 절제하지 않은군에 비해 유의하게 높았다(p<0.001). 난소절제 후 estrogen을 투여한 결과 대변으로의 칼슘 배설량은 감소하였다. 고칼슘을 투여한 군들 모두에서 대변으로의 칼슘 배설량이 현저히 높았다. 칼슘의 외견적 흡수율은 난소를 절제한 군에 비해 난소를 절제하지 않은 군이 유의하게 높았다. 난소절제 후 고칼슘을 투여한 군들에 비해 난소절제 후 estrogen을 투여한 군이 난소절제 군에 비해 외견적 흡수율이 증가하였다. 칼슘 평형은 난소절제 후 고칼슘을 투여한 군들에서 난소를 절제한 군 보다 유의하게 높은 양의 칼슘 평형상태를 보였다. 난소를 절제한 군과 난소를 절제하지 않은 군에서의 소변으로의 인 배설은 난소를 절제한 군이 다소 증가하였다. 난소절제 후에 고칼슘 투여, estrogen 투여, estrogen/칼슘 혼합 투여군에서의 소변으로의 인 배설이 유의하게 감소하였다(p<0.01). 난소를 절제한 군과 난소를 절제하지 않은 군에서의 대변으로 인 배설량은 난소를 절제한 군이 많았으며 난소절제 후 estrogen 투여군에서는 대변으로의 인 배설량이 다른 군 보다 적었다. 난소절제 후 고칼슘 투여군에서는 대변으로의 인 배설이 다소 증가한 경향이었다. 인의 평형상태도 난소를 절제하지 않은 군에서 유의하게 높았다. 난소절제 후 고칼슘 투여, estrogen 투여, estrogen/칼슘 혼합 투여 및 estrogen점진적 감소와 고칼슘 투여에 의한 효과로는 인의 평형이 다소 증가하였으나 난소를 절제하지 않은 군에 비해서는 평형이 현저히 낮았다. 난소를 절제한 군과 난소를 절제하지 않은 군에서 소변으로의 질소 배설량은 난소를 절제한 군에서 유의 하게 높았으며 난소절제 후 estrogen, estrogen/칼슘 혼합 투여, estrogen 점진적 감소와 칼슘 점진적 증가군에서 각각 배설량이 감소하였다. 대변으로의 질소 배설량은 난소를 절제한 군에서 유의하게 높았다. Estrogen투여에 의해 대변으로의 질소 배설이 감소하였다. 고칼슘 투여군들은 대변으로의 질소배설이 높았다. 이상의 성적으로 보아 난소절제로 인해 칼슘, 인, 질소 평형이 난소를 절제하지 않은 군에 비하여 낮아졌다. 난소를 절제한 군에 비해 난소절제 후 고칼슘 투여, estrogen/칼슘 혼합, estrogen 점진적 감소와 칼슘 점진적 증가군에서 칼슘 평형을 증가 시켰다. 그러나 인과 질소 평형에는 큰 영향을 미치지 않았다.

노인복지시설 사용자 중심의 영양·식생활관리 프로그램 요구 분석 (A study on the Needs for Nutrition Management Program for Elderly Who use Welfare Facilities)

  • Objectives: This study was performed to investigate the nutritional status, health conditions, eating habits and experience and demand for nutrition dietary management of senior citizens. And these data are formed foundation of development of nutrition dietary management education program and contents in welfare facilities for the aged. Methods: We visited 3 public health centers, 3 senior citizens centers, and 4 welfare centers in Seoul, Gyeonggi-do, Chungnam province, and Daejeon area and carried out interview by semi-structured questionnaire for senior citizens older than 65 years who use those facilities. Results: The study included 17%, 30.7% and 52.3% of senior citizens from public health centers, seniorcitizen centers and and welfare centers, respectively. The age range of 43.9% of the population was 65-74 years and and 56.1% were older than 75 years. We observed that 83.2% of subjects took some medicines due to diseases that they have and 58.0% took prescription medicines for hypertension. The thing that they considered the most when selecting food was 'the taste'(p<0.05). Regarding the level of practice to keep the dietary life, they answered more than 'average' for most of items but answered less than 'average' for lot of salt intake, drinking, exercise. For the experience of nutrition dietary life education, only 19.8% answered 'Yes' and the service for nutrition dietary life management showed the highest score in the demand for 'provide nutritious food'. For the size of consulting group for nutrition/dietary life education, the public health center and welfare center preferred a larger group size but the senior citizens center preferred a smaller group. With regard to who will carry out the consulting, the demand for dietitian was the highest and the operation type showed the high demand in the order of consulting, education. The contents that they want to have consultation in nutrition dietary life education were diet therapy for diseases and the ordinary diet therapy for health. Conclusions: This study suggested the management of nutrition dietry life necessitates qualitative measures according to the different types of welfare facilities. For these, it is in need of development of counseling and education program included therapy for disease. Above all, the policy to secure dietitian of welfare facilities for the aged to perform these should be achived.

Association of Soy Foods With Gastric Cancer Considering Helicobacter pylori: A Multi-Center Case-Control Study

  • Purpose: This study aims to explore the relationship between soy food consumption and gastric cancer (GC) risk, accounting for Helicobacter pylori infection status. Materials and Methods: We analyzed data from patients with GC and healthy individuals prospectively enrolled by 6 hospitals between 2016 and 2018. Dietary intake was evaluated using questionnaires that categorized seven dietary habits and 19 food groups. Multivariate logistic regression models were applied to examine associations. Model I adjusted for various epidemiological factors, while Model II included further adjustments for H. pylori infection. Primary exposures examined were consumption frequencies of nonfermented, unsalted soy foods (soybean/tofu) and fermented, salty soy foods (soybean paste stew). Results: A total of 5,535 participants were included, with 1,629 diagnosed with GC. In Model I, the frequency of soybean/tofu consumption was inversely related to GC risk; adjusted odd ratios (aORs) were 0.62 (95% confidence interval [CI], 0.48-0.8), 0.38 (95% CI, 0.3-0.49), 0.42 (95% CI, 0.33-0.53), and 0.33 (95% CI, 0.27-0.42) for 1 time/week, 2 times/week, 3 times/week, and ≥4 times/week. Consumption of 2 servings/week of soybean paste stew showed the lowest GC association, forming a V-shaped curve. Both low (aOR, 4.03; 95% CI, 3.09-5.26) and high serving frequencies of soybean paste stew (aOR, 2.23; 95% CI, 1.76-2.82) were associated with GC. The association between soy foods and GC in Model II was similar to that in Model I. The soy food-GC associations were consistent across sexes in Model I. Nonetheless, the positive correlation between frequent consumption of soybean paste stew (≥5 times/week) and GC was more pronounced in women (aOR, 7.58; 95% CI, 3.20-17.99) compared to men (aOR, 3.03; 95% CI, 1.61-5.88) in Model II. Subgroup analyses by H. pylori status and salty diet revealed a consistent inverse relationship between soybean/tofu and GC risk. In contrast, soybean paste stew showed a V-shaped relationship in H. pylori-positive or salty diet groups and no significant association in the H. pylori-negative group. Conclusions: Soybean/tofu intake is consistently associated with a decreased risk of GC. However, the relationship between soybean paste stew consumption and GC risk varies, depending on H. pylori infection status and dietary salt intake.

  • 서울대학교농과대학남녀기숙사생(大學校農科大學男女寄宿舍生) 552명(名)을 위(爲)한 영양관리향상(營養管理向上)과 영양교육(營養敎育)의 중요성(重要性)을 강조(强調)하기 위(爲)해서 위양조사(爲養調査)를 남자기숙사(男子寄宿舍)에 대(對)하여 1966년(年) 3월(月) 7일(日)부터 13일(日)까지 또 여학생기숙사(女學生寄宿舍)에 대(對)하여 동년(同年) 3월(月) 14일(日)부터 20일(日)까지 1주간(週間) 실시(實施)하였다. 상록사급식(常綠舍給食)은 한인(韓人) 25(歲男子營養勸?量)에 비교(比較)하면 Riboflavin 섭취량(攝取量)의 약간(若干)의 부족(不足)이 있는 이외(以外)는 칼로리 및 모-든 영양섭취량(營養攝取量)을 훨씬 능가(凌駕)하였다. 녹원사(鹿苑舍)의 급식(給食)은 한인(韓人) 25세여자권장량(歲女子勸?量)에 비교(比較)해서 칼로리 섭취량부족(攝取量不足)을 보였으나 생활양식(生活樣式)이 유사(類似)한 숙명여자대학교(淑明女子大學校) 기숙사생(寄宿舍生)을 대상(對象)으로 실측(實測)한 1 일평균(日平均)칼로리소비량(消費量)에 비(比)하면 150 칼로리만 부족(不足)하였다. 녹원사(鹿苑舍)는 철분(鐵分)과 Ascorbic acid를 제외(除外)한 모든 무기질(無機質)과 비타민류섭취량(類攝取量)이 약간(若干)식 부족(不足)하였다. 양기숙사(兩寄宿舍)의 P.cal%는 12.8% 내지(乃至) 12.8% 이었고, 단백가(蛋白價)는 상록사(常綠舍)에 있어서는 70, 녹원사(鹿苑舍)에 있어서는 79, NDp Cal%는 상록사(常綠舍)가 7 녹원사(鹿苑舍)가 8, Reference protein은 상록사(常綠舍) 55.8g, 녹원사(鹿苑舍)가 36.9g 임이 밝혀졌다. 일반적(一般的)으로 단백질(蛋白質)은 최소한도(最小限度) 1/3은 동물원(動物源)에서 섭취(攝取)할것을 영양학적(營養學的)으로 권장(勸?)하고 있으나 이연구조사(硏究調査)에서 얻은 결과(結果)와 Reference protein 및 NDp Cal%의 권장치(勸?値)를 비교(比較)하므로서 동식물성단백질(動植物性蛋白質)을 1 : 5의 비율(比率)로 섭취(攝取)하여도 질적(質的)으로 우수(優秀)한 다종류(多種類)의 식물성단백질(植物性蛋白質)의 합리적(合理的)인 혼식(混食)으로 말미암아 만족(滿足)스러운 결과(結果)를 나타낼수가 있음을 명백(明白)히 알게되었다. 조미료소비량(調味料消費量)에 있어서는 남녀사생간(男女舍生間)에 현저(顯著)한 차(差)를 보게 되었다. 남자사생(男子舍生)은 고춧가루에 있어서는 1.5g로서 여자사생(女子舍生)의 15 배(倍)를 소비(消費)하였으며, 고추장은 13g로서 여자사생(女子舍生)의 약 21 배(倍)를 소비(消費)하였다. 소금의 섭취소(攝取消)은 남자사생(男子舍生)이 34g를 소비(消費)하였고 여자사생(女子舍生)은 23g 를 소비(消費)하였으며 남자사생(男子舍生)이 여학생(女學生)보다 매웁고 짠것을 더 즐기는것을 알게 되었다. 상록사(常綠舍)에게는 단배질(蛋白質)의 량(量)을 다소감(多少減)하고 질(質)을 높이며 지방섭취량(脂肪攝取量)을 증가(增加)시켜, 급식(給食)의 부피를 줄일 것을 권하며 Riboflavin 의 증가(增加)도 필요(必要)하다. 녹원사(鹿苑舍)는 칼로리 및 비타민 B군(群)의 섭취량증가(攝取量增加)를 위(爲)하여 더많은 곡류(穀類), 특(特)히 보리를 취(取)하여야 할것이다. 또 녹황색채소(綠黃色菜蔬)의 증가(增加)시킬 필요(必要)가 있다.

광주 전남지역 성인의(19-64세) 건강생활실천과 대사증후군 인지와의 관련성 - 2010년 지역사회건강조사 자료를 이용하여 - (Associations between the Practice of Health Behaviors and Awareness of Metabolic Syndrome among Adults (19-64 years) in the Gwangju-Jeonnam Area: 2010 Community Health Survey)

  • 본 연구는 2010년 광주 전남 지역사회건강조사에 참여한 19-64세 성인 16,473명을 대상으로 건강생활 실천과 대사증후군 인지와의 관련성을 파악하기 위하여 수행되었다. 고려한 건강생활 실천은 흡연, 음주, 중등도 이상 신체활동, 저염 식습관, 스트레스 인지 등 5개 영역으로 개별 건강생활을 실천하는 경우 1점, 그렇지 않은 경우는 0점으로 환산하여 건강생활 실천점수를 계산하였다(범위: 0-5점). 복합표본설계를 고려하여 가중치를 적용하여 분석하였고, 카이제곱검정, 다중로 지스틱회귀분석을 이용하여 개별 건강생활 실천여부와 건강생활 실천점수와 대사증후군 인지와의 관련성을 파악하였다. 연구대상자의 19.8%가 대사증후군을 인지하고 있었으며, 개별 건강생활 실천과 대사증후군 인지와의 관련성은 금연하는 경우(aOR=1.33, 95% CI=1.14-1.56), 고위험음주를 하지 않는 경우(aOR=1.54, 95% CI=1.27-1.88), 중등도 이상 신체활동을 실천하는 경우(aOR=1.48, 95% CI=1.28-1.72), 저염식습관을 실천하는 경우(aOR=1.30, 95% CI=1.13-1.51)에 대사증후군 인지의 교차비가 통계적으로 유의하게 높았다. 건강생활 실천점수는 0점에 비해 2-3점(aOR=1.64, 95% CI=1.01-2.66)과 4점 이상(aOR=2.47, 95% CI=1.51-4.04)에서 대사증후군의 교차비가 높았다. 또한 개별 건강생활 실천을 모두 고려할 경우 대사증후군의 인지에 대한 교차비가 가장 높았던 것은 중등도 이상 신체활동 실천이었다(aOR=1.50, 95% CI=1.29-1.74). 이상의 결과를 살펴볼 때 건강생활 실천과 대사증후군의 인지는 유의한 관련이 있었고, 중등도 이상 신체활동 영역과 다수의 건강행위를 실천하는 경우에 대사증후군 인지가 높았다. 따라서 대사증후군의 인지도 향상, 나아가 대사증후군 예방을 위해서는 개별적인 건강행위별 접근보다는 금연, 절주, 신체활동, 영양 등의 건강행위 개선 사업이 통합적으로 연계되어 수행되는 것이 더욱 효과적일 것으로 생각된다.

해조의 식용분말화에 관한 연구 (A Study on the Nutritive Value and Utilization of Powdered Seaweeds)

  • I. Subject of the study A study on the nutritive value and utilization of powdered seaweeds. II. Purpose and Importance of the study A. In Korea the shortage of food will be inevitable by the rapidly growing population. It will be very important study to develop a new food from the seaweeds which were not used hitherto for human consumption. B. The several kinds of seaweeds have been used by man in Korea mainly as side-dishes. However, a properly powdered seaweed will enable itself to be a good supplement or mixture to certain cereal flours. C. By adding the powdered seaweed to any cereals which have long been staple foods in this country the two fold benefits; saving of cereals and change of dietary pattern, will be secured. III. Objects and scope of the study A. Objects of the study The objects will come under four items. 1. To develop a powdered seaweed as a new food from the seaweeds which have been not used for human consumption. 2. To evaluate the nutritional quality of the products the analysis for chemical composition and animal feeding experiment will be conducted. 3. Experimental cocking and accepability test will be conducted for the powdered products to evaluate the value as food stuff. 4. Sanitary test and also economical analysis will be conducted for the powdered products. B. Scope of the study 1. Production of seaweed powders Sargassum fulvellum growing in eastern coast and Sargassum patens C.A. in southern coast were used as the material for the powders. These algae, which have been not used for human consumption, were pulverized through the processes of washing, drying, pulverization, etc. 2. Nutritional experiments a. Chemical composition Proximate components (water, protein, fat, cellulose, sugar, ash, salt), minerals (calcium, phosphorus, iron, iodine), vitamins (A, $B_1,\;B_2$ niacin, C) and amino acids were analyzed for the seaweed powders. b. Animal feeding experiment Weaning 160 rats (80 male and 80 female rats) were used as experimental animals, dividing them into 16 groups, 10 rats each group. Each group was fed for 12 weeks on cereal diet (Wheat flour, rice powder, barley powder, potato powder, corn flour) with the supplementary levels of 5%, 10%, 15%, 20% and 30% of the seaweed powder. After the feeding the growth, feed efficiency ratio, protain efficiency ratio and ,organs weights were checked and urine analysis, feces analysis and serum analysis were also conducted. 3. Experimental cooking and acceptability test a. Several basic studies were conducted to find the characteristics of the seaweed powder. b. 17 kinds of Korean dishes and 9 kinds of foreign dishes were prepared with cereal flours (wheat, rice, barley, potato, corn) with the supplementary levels of 5%, 10%, 15%, 20% and 30% of the seaweed powder. c. Acceptability test for the dishes was conducted according to plank's Form. 4. Sanitary test The heavy metals (Cd, Pb, As, Hg) in the seaweed powders were determined. 5. Economical analysis The retail price of the seaweed powder was compared with those of other cereals in the market. And also economical analysis was made from the nutritional point of view, calculating the body weight gained in grams per unit price of each feeding diet. IV. Results of the study and the suggestion for application A. Chemical composition 1. There is no any big difference in proximate components between powders of Sargassum fulvellum in eastern coast and Sargassum patens C.A. in southern coast. Seasonal difference is also not significant. Higher levels of protein, cellulose, ash and salt were found in the powders compared with common cereal foods. 2. The levels of calcium (Ca) and iron (Fe) in the powders were significantly higher than common cereal foods and also rich in iodine (I). Existence of vitamin A and vitamin C in the Powders is different point from cereal foods. Vitamin $B_1\;and\;B_2$ are also relatively rich in the powders.'Vitamin A in ·Sargassum fulvellum is high and the levels of some minerals and vitamins are seemed4 to be some influenced by seasons. 3. In the amino acid composition methionine, isoleucine, Iysine and valine are limiting amino acids. The protein qualities of Sargassum fulvellum and Sargassum patens C.A. are seemed to be .almost same and generally ·good. Seasonal difference in amino acid composition was found. B. Animal feeding experiment 1. The best growth was found at.10% supplemental level of the seaweed Powder and lower growth rate was shown at 30% level. 2. It was shown that 15% supplemental level of the Seaweed powder seems to fulfil, to some extent the mineral requirement of the animals. 3. No any changes were found in organs development except that, in kidney, there found decreasing in weight by increasing the supplemental level of the seaweed powder. 4. There is no any significant changes in nitrogen retention, serum cholesterol, serum calcium and urinary calcium in each supplemental level of the seaweed powder. 5. In animal feeding experiment it was concluded that $5%{\sim}15%$ levels supplementation of the seaweed powder are possible. C. Experimental cooking and acceptability test 1. The seaweed powder showed to be utilized more excellently in foreign cookings than in Korean cookings. Higher supplemental level of seaweed was passible in foreign cookings. 2. Hae-Jo-Kang and Jeon-Byung were more excellent than Song-Pyun, wheat cake, Soo-Je-Bee and wheat noodle. Hae-Je-Kang was excellent in its quality even as high as 5% supplemental level. 3. The higher levels of supplementation were used the more sticky cooking products were obtained. Song-Pyun and wheat cake were palatable and lustrous in 2% supplementation level. 4. In drop cookie the higher levels of supplementation, the more crisp product was obtained, compared with other cookies. 5. Corn cake, thin rice gruel, rice gruel and potato Jeon-Byung were more excellent in their quality than potato Man-Doo and potato noodle. Corn cake, thin rice gruel and rice gruel were excellent even as high as 5% supplementation level. 6. In several cooking Porducts some seaweed-oder was perceived in case of 3% or more levels of supplementation. This may be much diminished by the use of proper condiments. D. Sanitary test It seems that there is no any heavy metals (Cd, Pb, As, Hg) problem in these seaweed Powders in case these Powders are used as supplements to any cereal flours E. Economical analysis The price of the seaweed powder is lower than those of other cereals and that may be more lowered when mass production of the seaweed powder is made in future. The supplement of the seaweed powder to any cereals is also economical with the criterion of animal growth rate. F. It is recommended that these seaweed powders should be developed and used as supplement to any cereal flours or used as other food material. By doing so, both saving of cereals and improvement of individual's nutrition will greatly be achieved. It is also recommended that the feeding experiment for men would be conducted in future.

산간지(山間地) 농촌주민(農村住民)의 영양실태조사(營養實態調査) (Nutrition Survey in a Korean Mountainous Farming Area)

  • The main character of the Korean diet has been found to be low in protein both quantity and quality and high in carbohydrate. The purpose of this survey was to study the amount of salt intake related to the dietary pattern in Korea. The nutrition survey was conducted in a mountainous farming area located in Auhchun-ri, Gaebuk-myon, Changsoo-gun, Chunbuk Province, February 14-19 in 1973 (7 days). The precise weighing method was used in evaluating the kinds of foods and nutrients intake for 24 households during a three day period. The physical examinations were performed by a doctor on 120 persons and a detailed biochemical test on both blood and urine was made on 42 persons over 40 years old. The results obtained are summarized as follows: (1) Average nutrients intake of an adult per day: calorie intake was 2,446 Cal and its components-protein(61.1g) was 10 percent, fat(12.9g) was 5 percent and carbohydrate(521g) contributed 85 percent of the total calories. Other nutrients-calcium (443mg), thiamine(1.09mg), riboflavin (0.90mg), niacin (14.4mg) and vitamin C (63.2mg) were lower than the recommended daily allowance but vitamin A(2,083 I.U.), iron(11mg) and phosphorous(998mg) were slightly higher than that. (2) To evaluate the nutritional deficiences, clinical examinations were conducted. Angular stomatitis was present in 16.7 percent of those examiners. No edema was found. The rate of osteoarthritis, hepatomegaly diseases appeared in 20 percent of the total subjects and the symptoms appeared highest among those Iron 50 to 59 years old. (3) The following chemical components of blood serum were analyzed and found to be within the normal range: glucose, blood urea nitrogen, uric acid, total protein, albumin, globulin, bilirubin, total cholesterol, inorganic phosphate, alkaline phosphatase, sodium, potassium, chloride, calcium and lecithine dehydrase. One case of each of the following were found: hyperglycemia, hypocholesterolemia, renal problem, hypoproteinaemia and diabetes mellitus, and two persons were classified as showing hypoglycemia and hyponaturemia. (4) The sodium content in urine was 199.6 mEq/L, potassium content was 24.6 mEq/L. The sugar, pH and specific gravity in the urine was shown to be normal.

Effect of Replacing Cereal Grain in Concentrate With Wheat Bran on the Performance of Lactating Bos indicus×Bos taurus Cows Fed Green Fodder ad libitum in the Northern Plains of India

  • Thirty-one multiparous Bos indicus${\times}$Bos taurus cows were offered concentrate supplements based on (1) 2 kg wheat bran; (2) 4 kg wheat bran; and (3) concentrate (30 maize: 67 wheat bran) at 0.5 kg per 1.0 kg milk produced, in a one year study in India. All supplements also contained 2 parts of a mineral mixture and 1 part salt. Cows were allocated to treatments at calving on parity (2nd and 3rd calf) with 13, 8 and 10 cows respectively in treatments 1, 2 and 3. They were individually fed for whole lactation, the basal diet being ad libitum berseem clover plus 2 kg wheat straw in the cool season/winter (period 1) and chopped maize in summer (period 2). Diets with berseem offered TDN and CP contents of 67.6, 18.2; 65.5, 16.8; and 67.5, 16.8 percent; and with maize fodder 62.6, 12.0; 62.6, 12.5; and 63.3, 12.5 percent for treatments 1, 2 and 3, respectively. Total dry matter (DM) intakes (1) 9.9 kg, (2) 10.9 kg and (3) 11.1 kg DM/day and intake of nutrients (TDN, CP) increased with level of supplementation (p<0.01), but effects of treatment on animal performance were not significant. Cow milk yields averaged (1) 7.9 kg, (2) 8.1 kg and (3) 8.8 kg milk/day (p>0.05) for lactation lengths of 252, 270 and 220 days (p>0.05) and cows gained +7.3; +8.1; and +12.0 kg respectively over their lactation (p>0.05). Wheat bran was used effectively as the sole energy component in concentrates for lactating dairy cows. Its use could potentially reduce feed costs and demands for cereal grain. Reduced concentrate levels may be considered if green forages of high nutrient content are fed ad libitum. Associated economic advantages or disadvantages require further evaluation.

여대생의 Sodium 섭취량과 짠맛의 기호도에 관한 연구 (Study on Sodium Intake and Preference for Salty Taste in College Women)

  • 짠맛의 기호도 및 식이에서의 Na섭취량을 알기 위하여 경북지역의 여대생을 대상으로 자주 먹는 식품을 선택하여 표준식 단을 작성하고 NaCl 9, 12, 15g을 첨가하여 짠맛에 대한 관능검사를 실시하였고, 식이의 Na량은 정량 실험 및 식품성 분표를 이용한 계산치와 비교하였다. Na의 과잉 섭취는 고혈압의 주요 유발 원인이 되는 것으로 알려져 있어 짠맛의 기호도와 고혈압의 가족력과 관계를 조사한 결과는 다음과 같다. 조사 대상자들의 식품 섭취 빈도에 의해 작성된 표준 식단의 영양소량은 1786.5Kcal, 탄수화물 260.74g 단백질 71.59g, 지방 30.64g, NaCl 1.42g이었다. 표준 식단의 식품성분표를 이용한 Na계산치는 5118.84mg였으며, Na 분석 실험을 통한 Na량은 5120.24mg이었다. 조사 대상자의 짠맛의 기호도는 표준 식단에 NaCl 12g 첨가한 식단에서 58.82%로 가장 높은 기호를 나타내었으며 이는 식이 내에서 1일 NaCl 섭취량은 약 13g정도 있었다. 육수를 이용한 관능 검사에서는 0.6% 식염 농도에서 50.73%로 가장 선호하였고, 짠맛의 식습관 관념에 대한 짠맛 기호도 결과 $\ulcorner$짜게 먹는다$\lrcorner$고 생각한 사람들은 실제로 짠맛이 강한 음식을 선호하는 경향이 있었다(p<0.001). 조사 대상자 중 가족이 고혈압 내력을 가진 경우는 73명 (50.7%)으로 나타났으며 , 이들의 육수에 대한 짠맛 기호도는 52.05%가 NaCl 0.4% 육수를 선호하였고, 가족 중 고혈압 내력이 없는 경우는 63명(46.3%)으로 육수에 대한 짠맛의 기호도 66.84%가 NaCl 0.6% 육수를 더 선호하였다(p<0.001).

에스트로겐/칼슘 혼합요법이 난소절제 쥐의 골대사에 미치는 영향 -III. 골격 구성성분에 미치는 영향- (The Effect of Combined Estrogen/Calcium Therapy on Bone Metabolism in Ovariectomized Rats -III. A Study on Skeletal Composition in Ovariectomized Rats-)

  • 본 연구는 폐경 후 여성에게 식이 칼슘염 형태, 에스트로겐 및 에스트로겐/칼슘 혼합요법이 골격 구성 성분에 미치는 영향을 알아보고자 난소절제쥐를 이용한 총 9군으로 분류하여 6주간 사육한 후 그 효과를 살펴보았다. 오른쪽 대퇴골의 젖은 무게, 밀도, 길이, 강도, 회분 함량은 난소를 절제한 군과 난소를 절제하지 않은 군간에 차이는 없었다. 그러나 대퇴골의 젖은 무게는 체중 당으로 표현한 값은 난소를 절제한 군에서 낮았다. 이것은 난소를 절제한 쥐의 체중부하로 인해 골격 구성 성분은 변화가 없는 것으로 사료된다. 난소절제 후 estrogen 투여, estrogen/칼슘 혼합군에서 체중당 젖은 무게는 증가함을 보여 주었다. 난소절제 후 estrogen 점진적 감소군에서 강도, 회분 함량, 칼슘 함량, 인 함량이 가장 낮았다. 견갑골의 젖은 무게, 밀도, 회분 함량, 칼슘 함량, 인 함량은 난소를 절제한 군과 난소를 절제하지 않은 군간에 차이는 없었다. 난소절제 후 estrogen 점진적 감소군에서 뼈의 젖은 무게와 회분 함량이 모든군에 비해 낮았고 고칼슘을 투여하거나, 칼슘을 점진적으로 증가시키는 것이 골손실을 다소 감소시킴을 알 수 있었다. 이상의 성적으로 보아 난소절제 여부에 따른 골격구성 성분에는 변화가 없었다. 난소절제 후 estrogen 및 estrogen/칼슘 혼합요법 골격손실을 상당량 방지 할 수 있었고 estrogen 점진적 감소군은 골격손실을 가져옮을 알 수 있었다. Estrogen 점진적 감소에 고칼슘, 칼슘 점진적 증가투여는 골격 구성 성분의 손실을 다소 방지할 수 있음을 알 수 있었다.
