초등학생의 전통음식에 대한 인식, 기호도 및 섭취 실태 -김치류, 떡류, 음료류를 중심으로 - (The Perception, Preferences, and Intake of Korean Traditional Foods of Elementary School Students -Focusing on kimchi, tteok and eumcheong varieties-)

  • This study investigated elementary school students' perception, preferences, and intake of Korean traditional foods, focusing specifically on kimchi, tteok (rice cake), and eumcheong (beverage) varieties; and compared them by gender, living with grandparents, mother's occupation, and meal preparation by the grandmother. The subjects were 287 6th grade elementary school students in Busan. The results were as follows: 80% of children were interested in Korean traditional foods. 40% believed that their intake of Korean traditional foods was decreasing because these foods were not palatable to them. The majority of them, however, said they would continue to eat Korean traditional foods as they had done (54.7%) or eat more than before (36.6%) in the future. The children thought that Korean traditional foods were rich in nutrition and good for their health. The children had the highest preference for Baechu-kimchi among varieties of kimchi, and they had high preferences for Songpyeon, Galaitteok, and Injulmi. They had high preferences for Sikhye, citron tea, and adlai tea. Over 80% reported consuming Baechu-kimchi and Kkakdugi three to four times per week. They had eaten Injulmi the most frequently among the tteoks, while over 80% had eaten the other types of tteok only once or twice per month. Adlai tea, citron tea, and Sikhye were drunk more than once per week. In general, we noted no significant differences in the children's perceptions, preferences, and intake of Korean traditional foods by gender, living with grandparents, mother's occupation, and meal preparation by grandmother, with the exception of several items. The students had a very positive perception of Korean traditional foods. They had higher preferences for and had more frequently consumed the more familiar Korean traditional foods. It is therefore suggested that if the children had opportunities to experience Korean traditional foods more frequently and variously at home or in restaurants, they would appreciate Korean traditional foods even more, and develop higher preferences for these foods.

A Study on Learners' Perceptions and Learning styles of Task Research (R&E) conducted by Science High School Students

  • We studied learners' perceptions and learning styles of project research activities in the chemical field conducted by 54 science high school students. In a survey of students' perceptions of task research, positive responses were found in "internal motivation," "cooperation," "task solving," and "tenacity and immersion," and statistically significant differences were found in "self-directedness," "cooperation," and "tenacity and immersion" by year. The 'lower' group responded most positively in the 'cooperation' category, and the 'higher' group responded most positively in the 'task solving' category. As a result of investigating the learning styles of the students who conducted the task research, it was found in the order of assimilator, converger, accommodator, and diverger. The assimilators showed the characteristic of systematically and scientifically approaching the problem. Convergers were found to have excellent problem-solving and decision-making ability, are practical, and have experimental-based thinking characteristics. In this study, the characteristics of science high school students showed well in the results of the learning style performed.

자연탐사활동이 과학고 학생들의 환경인식에 미치는 효과 (The Effect of Natural Exploration Activity on Environmental Perception of the Science High School Students)

  • Since the effect of environmental education at class using textbooks or materials related to environment is limited, the importance of activities for field experience is getting increased day by day. Thereby, the education tends to change into the type of education providing students with direct environmental experience. Students attending the science high school have excellent aptitude and ability for science and will lead the development of science in the future. Now it is urgent to develop various experiential programs which are helpful for them to establish desirable values on environment. However, the field of environmental education that allows science high school students equipped with ample environmental knowledge to improve environment sensitivity and have proper environment awareness is quite restricted as of now. Natural exploration activities are the programs which provide science high school students having lack of chance for environmental education with good opportunities to contact nature and also play significant roles in arousing their interest in issues related with environment. Therefore, it is thought that they will let science high school students explore the natural features of Korea, understand the importance of preserving environment and ecosystem profoundly, and encourage environmental awareness and will of environmental practice. Thereupon, with the study subjects of 121 first and second graders at U Science High School, this article analyzed their recognition of the necessity for environmental education and environmental pollution problems before and after the natural exploration activities, and conducted a survey on their satisfaction after the natural exploration activities and analyzed it. The result of this research is as follows. First, it was shown that the natural exploration activities were effective to raise the science high school students' awareness of issues related with environmental pollution. Second, the natural exploration activities had effect upon enhancing the students' willingness of environmental practice. Third, there was statistically significant correlation between the science high school students' satisfaction with the natural exploration activities and their achievement in the science subject. Fourth, there also was a statistically non or weakness significant correlation between their satisfaction with the natural exploration activities and preference for the science subject. In particular, it was found that students preferring biology indicated higher satisfaction.

한국 여자 고등학생의 비만도에 따른 식습관, 체형 인식 및 체중 조절 행동 양상 -제 6차 청소년건강행태 온라인 조사를 중심으로- (Eating Habit, Body Image, and Weight Control Behavior by BMI in Korean Female High School Students - Using Korea Youth Risk Behavior Web-based Survey 2010 Data -)

  • This study was performed to investigate the eating habit, body image, and weight control behavior by BMI in Korean female high school students. Data on the 16,574 subjects was obtained from the sixth Korea Youth Risk Behavior Web-based Survey (2010). Only 52.2% of the subjects had regular breakfast. The rate of skipping breakfast was higher in the underweight group than in the obese group, but the rate of skipping dinner was on the contrary to this. Underweight students had a higher intake frequency of fruits, fast food, instant noodle, and snacks than the obese groups. 3.5% of underweight students considered themselves to be overweight or obese. 53.4% of obese students considered themselves to be overweight. The experience of weight control increased according to BMI, but underweight students considered weight control as an effort to be slimmer. Meal restriction was used more frequently to control weight. The perceived stress level was higher in obese student, especially due to appearance. Therefore, an appropriate, integrated and personalized high school nutrition program should be established for proper body image perception and to develop the self-esteem of female high school students.

수능 직업탐구 영역의 성과와 과제에 대한 공업계열 특성화고 현장 교사의 인식 (Perception on Outcomes and Challenges of Vocational Education Division CSAT by Industry Department Teachers of Specialized Vocational High School)

  • The purpose of this study was to inquiry of perception on outcomes and challenges of vocational education division CSAT by industry department teachers of specialized vocational high school. Therefore, it is highly desirable that researchers to survey what are the biggest outcomes of vocational education division CSAT and positive ripple effects of outcomes, what are the biggest challenges of vocational education division CSAT and importance of challenges undertaken 10 years. The survey included 100 industry department teachers of specialized vocational high school on 9 region from Korea. The analysis of survey results was by regions, industry department teacher's career of specialized vocational high school. The results are as follows. The biggest outcomes of vocational education division CSAT was extension of opportunity on continuing education and supply a demand for entrance university on specialized vocational high school students. The biggest positive ripple effects of the outcomes was also extension of opportunity on continuing education and supply a demand for entrance university on specialized vocational high school students. The biggest challenges of vocational education division CSAT and importance of challenges was not to use vocational education division CSAT score for the entrance on the most universities.

중 고등학생 대상 영양교육 목표 설정을 위한 영양 관련 문제점 분석 (Setting Instructional Goals for Nutritional Education Program Through an Analysis of Problems Identified in Junior/senior High School Students)

  • For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs. 경기지역 남녀고등학생의 웰빙 인식에 대한 연구 (A Study on Perception of well-being among the High School Student's in Gyeonggi Area)

  • In this study investigation, 550 high school students attending school in Gyeonggi Area were surveyed for their knowledge of well-being perception. The major findings of the study were as follows: The boys found themselves in a better health compared to the girls. Students recognized the well-being food as all kinds of foods, which can improve their health although they had a significantly different opinion on the other things (p<0.001). The students acquired information on well-being through TV shows and the Internet. The students thought that physical and environmental well- being are the most important. In terms of physical well-being, they emphasized regular workout, balanced diet and enough sleep, while reduction of food waste and the use of disposables along with restriction of behavior not to generate environmental hormone were the important aspect for environmental well-being. In terms of eating-out habits, the girls choose healthy menus more often than the boys, and their menu choice was the most influenced by the information provided by TV and newspaper. Generally, the boys expressed more satisfaction with healthy menus than the girls, but the former didn't have a strong intention to reorder the same menu. Although the boys and girls did not have a same reason to select specific menu, both group choose menu to promote their health. The balance of taste and nutrition was identified as the top priority for their choice of well-being menus.

일 실업 고등학교 학생들의 건강개념과 건강행위에 대한 조사 연구 (A Study on Health Concepts and Health Behavior in Vocational High School Studnts)

  • Health has occupied a position of importance in the human history, whether it be in the East or in the West, and it is a subject in which people have been constantly interested. The concept of health has changed continuously as the society has developed, industrialized and become more structured. The perception of health concept can be an esential factor which is to determine the health behaviors. This study is a descriptive inquiry done to identity high school students' perception of health and what they do as health behaviors. The subject consisted of 503 voctional high school seniors, 129 boys and 374 girls, from a school located in An-san Si, kyong-gi Do. The instruments used for this study were open-ended questionnaires and data were collected by having the students fill out the questionnaires which took 10 minutes, in their first class, April 6, 1995. The collected materials were classified and recorded on the cards according to each question using the terms which students had written. After putting statements which had common meanings together, the representative categories were labelled. The results obtained are as follows. 1. Categorizing and labelling of health concepts What high school students descripted as health concepts were classified as the absence of illness, physical comfort, strong physical strength and physique, not having a deformity, resisting power, self control mental-rest(or psychological comfort), wholesome ideas, self-control, harmony in body and in mind, maintenace of daily life, pleasant life, good friends, peaceful family life and realizing objectives. 2. Categorizing and labelling of health behaviors These were classified as preventive life, good dietary habits and regimen, maintenance of clean body, exercises, preventing obesity, rest, environmental balance or control of environment, limit one's tastes, making use of leisure, peaceful mind, sound thought and regular living habits. The result indicates that the health concepts were positive and included not only absence of illness but also harmony in body and in mind and pleasant life; health behaviors which had high frequency were good dietary habits and regimen, exercises and sound thought. It is hoped that these findings well serve as practical references for teachers when they counsel with, and provide the students with guidance programs which include health care.

초등과학영재학생의 과학지식과 과학창의성의 관계 - 생명 영역을 중심으로 - (The Relationship between Scientific Content Knowledge and Scientific Creativity of Science-Gifted Elementary Students - Focusing on the Subject of Biology -)

  • This study aims to analyze the relationship between scientific content knowledge of science-gifted elementary students and their expression of scientific creativity, and the characteristics of divided groups according to the levels of their scientific content knowledge and scientific creativity. A science-gifted program was implemented to 33 forth-graders in the Science-Gifted Education Center of an education office in Seoul, Korea. The method of evaluating scientific knowledge was divided into well-structured paper-pencil test (asking specific and limited range of content knowledge of plants) and ill-structured descriptive test (stating all the knowledge they know about plants) to find out which methods were more related to scientific creativity. In addition, in order to find out the characteristics of each group according to the level of scientific content knowledge and scientific creativity, students were required to answer a questionnaire about their own self-perception of scientific knowledge and scientific creativity and how to obtain scientific knowledge. The main results of this study are as follows. First, Both well-structured paper-pencil test (r=.38) and ill-structured descriptive test (r=.51) results of elementary science gifted students were significantly correlated with scientific creativity. Second, As a result of the regression analysis on scientific creativity of science-gifted elementary students, both the knowledge measured by the two evaluation methods have the ability to explain scientific creativity. Third, the students were categorized into four groups according to the levels of their scientific content knowledge and their expression of scientific creativity, and the result showed that the higher the knowledge of science, the higher the scientific creativity. Fourth, the description about self-perception of scientific knowledge revealed that the highest percentage of Type LL students of all 13 students (53.8%, 7 students) answered 'I have little knowledge of plants because I have little interest in them.' Fifth, the description about self-perception of scientific knowledge revealed that the highest percentage of Type HH students of all 15 students (40%, 6 students) answered 'I think my science creativity is high through my experience of scientific creativity. Sixth, the responses to the Questionnaire revealed that 'reading' was the most popular way to obtain scientific knowledge, with 27 out of total 33 students choosing it. In particular, all 18 students from Type HH (high scientific knowledge and high scientific creativity) and Type HL (high scientific knowledge and low scientific creativity) - those with high scientific knowledge - gave that response. On the basis of this research, we should explore practical teaching methods and environment for gifted students to improve their scientific creativity by revealing the nature of the factors that affect scientific creativity and analyzing relationship between knowledge and scientific creativity.

용인지역 고등학생의 식품표시제에 대한 인식도 (Recognition of Food Labeling of High School Students in Yongin Region)

  • This study investigated recognition of food labeling of high school students (males 94 and females 85) in Yongin region. Recognition of food labeling was very high at 81.6%. For checking food labeling at the time of purchasing, 53.6% of the respondents always checked and the main reason was healthier food choice (49.2%). Satisfaction of food labeling was very low at 18.4%. In spite of very low satisfaction, 70.9% of respondents recognized necessity for education of food labeling. In terms of education method, respondents preferred 'school lecture' the most with 48.6%, which are in the following order: TV/newspaper/journal/book (37.4%) > internet lecture (10.1%) > education from parents (3.9%). Moreover, 83.2% of respondents answered 'positive change (ex. checking food labeling)' after getting education. Consequently, high school students had low level of utilization of food labeling at the time of purchasing. However, they showed high level of perception and educational need of food labeling as well as possibility of positive change after receiving education. Therefore, appropriate school education for food labeling may be able to lead a healthy eating habit of high school students.
