천연의 점토광물질 발효산물 급여에 의한 친환경 고품질 원료돈육 생산 (The Environment-Friendly High Quality Pork Production by feeding the Fermentation Products of Natural Clay Mineral)

  • 축산물 생산은 집약적 사육환경으로 인한 각종 병원균이 내재한 가운데 이루어지고 있어 항생제 및 각종 사료첨가제등의 사용이 날로 증가해왔다. 한편, 축산물의 안전성에 대한 인식이 높아짐에 따라 농축산물 생산에 있어서 안전성 확보에 대한 연구가 절실히 요구되고 있다. 따라서 본 연구에서 특수발효 미생물을 이용하여 복합미량원소(Se, Ge, Zn, S)를 강화시킨 점토광물질 발효 산물이 돈육의 생산성 및 품질에 미치는 영향을 조사하였다. 공시동물은 Large White와 Yorkshire 교잡종 80두를 대조구와 실험구로 임의 배치해 실험하였다. 실험 결과, 점토광물질 발효산물을 사료 내 0.3% 첨가 급여했을 때 사료섭취량 및 증체량, 사료효율, 도체의 pH, 육색의 명도와 대퇴부의 밝기 등은 일반사료를 급여한 군과 비슷하였으나, 지육율은 2.7%, 도체육의 적색도는 12%, 보수력은 10% 개선되고 가열감량은 6% 감소하였다. 또한 면역기능조절효과를 조사하기 위해 비육돈의 혈액을 채취하여 혈액 내 말초혈액단핵세포의 증식 및 cytokine 분비 능을 조사한 결과, PBMC는 증식정도가 유의하게 증가하였고, LPS와 Con A를 처리하였을 때 대조구에 비해 더욱 뚜렷이 증가하는 것으로 나타났다. cytokine의 분비량도 TNF-${\alpha}$의 경우 약간 증가하는 경향을 보였다. 따라서 양이온 치환능력이 높고 원적외선 수치가 높은 점토광물 발효산물을 급여함으로써 면역능력이 강화되어 항생제를 사용하지 않고도 안전성 높은 고품질 친환경 돈육을 생산할 수 있는 가능성이 시사되었다.

Effect of Soy Protein Hydrolysates Prepared by Subcritical Water Processing on the Physicochemical Properties of Pork Patty during Chilled Storage

  • The present study was carried out to investigate the effects of soy protein hydrolysates (SPHs) addition on the quality characteristics of pork patties. The SPHs was prepared by subcritical water process (SWP) at 180℃ without holding time and mixed with the pork patty components at varying concentrations (0-3%), and the patties were stored at 4℃ for 14 d. As quality parameters, instrumental color, thiobarbituric acid-reactive substances (TBARS), pH, water holding capacity (WHC) and shear force were measured at the end of storage. Regardless of SPHs concentration, the addition of SPHs significantly manifested low L* and high a* values compared to those of untreated control (p<0.05). For b* value, addition of SPHs in the 0.5-1.5% was unaffected, while >2.0% of SPHs caused significantly lower b* than control (p<0.05). The color changes in pork patties with and without SPHs were also identified in visual appearance where the pork patties containing 0.5-2.0% showed bright red color which was comparable to brownish color of control and patties containing >2.5% SPHs. Lipid oxidation was delayed by the addition of 0.5-1.5% SPHs, while it was accelerated by the addition of 3% SPHs. The pH of patties increased with increasing concentration of SPHs, whereas there were no significant differences in WHC and shear force of patties. Consequently, the results indicated that the addition of 0.5-1.5% SPHs had a potential advantage in suppressing oxidative deterioration of fat-containing meat products during chilled storage.

전자레인지 가열시 분쇄 돈육 패티의 지방함량과 가열특성과의 상관관계에 관한 연구 (The Relationship between Fat Level and Quality Properties of Ground Pork Patties Cooked by Microwave Energy)

  • This study was carried out to elucidate the relationship between different fat levels (0%, 5%, 10%, 15%, 20%, and 25%) and the quality of ground pork patties cooked to reach an internal temperature of $75^{\circ}C$ in a microwave oven. The relationship between fat level and cooking rate of pork patties cooked by microwave energy was highly significant ($R^2=0.72$), and had a low determination coefficient ($R^2=0.55$). The relationship between fat level and total cooking loss of pork patties cooked by microwave energy was also very significant, with a high correlation coefficient of $R^2=0.89$. The correlation coefficient between fat level and cooking drip loss of patties cooked by microwave energy was 0.92, which was highly significant. Although the correlation coefficient between fat level and evaporation loss had a negative value ($R^2=-0.63$), there was a highly significant relationship between fat level and shear force of pork patties cooked by microwave energy.

Effects of Dietary Protein Level and Phase Feeding Regimen on Growth Performance, Carcass Characteristics and Pork Quality in Growing-finishing Pigs

  • Two experiments were conducted to study the effects of dietary protein level and phase feeding regimens on performance, carcass characteristics and pork quality in growing-finishing pigs. In both experiments, growing pigs (n=90; barrows; Landrace $\times$ Yorkshire $\times$ Duroc) were allotted to 3 treatments. Each treatment had 3 replicate pens comprising 10 pigs in each. In Exp. 1, pigs (average body weight $25.06{\pm}0.57\;kg$) were fed diets having low (17.50-14.50-12.51%), medium (19.49-17.50-13.87%) or high (22.47-19.49-16.36%) CP concentration (LP, MP and HP diets, respectively) diets during grower-finisher I-finisher II phases, respectively. Feeding of MP diet resulted in higher (P<0.05) ADG and better FCR than pigs fed LP diet. Pigs fed HP diet had lower (P<0.05) pork color and marbling score. Meat of pigs fed LP diet had higher (P<0.05) Thiobarbituric acid reactive substances (TBARS), while meat of pigs fed HP and LP diets had greater drip loss than pigs fed MP diet. In addition, meat from pigs fed LP diet was darker while meat of pigs fed HP and MP diets was paler and redder. In Exp. 2, pigs (average body weight $10.40{\pm}0.61\;kg$) were subjected during 126 days to three or four phase regimes of different duration. The treatments T1 and T2 were subjected to four phase feeding regimens (grower I, grower II, finisher I and finisher II) for 22, 42, 32 and 30 days (T1) and 40, 40, 25 and 21 days (T2), respectively, while T3 was subjected to three phase feeding regimen (grower I, grower II and finisherI) for 40, 56 and 30 days, respectively. Duration of phase feeding regimens had no effect (P>0.05) on the performance, carcass traits and meat quality of pigs. These results suggest that both high and low levels of CP have a negative effect on performance and pork quality; however, alterations in the phase feeding regimens do not have any discernible effect on the performance and pork quality in growing-finishing pigs.

감마선조사 천연케이싱의 사용이 소시지의 제조적성에 미치는 영향 (Quality Properties of Sausage Prepared with Gamma-Irradiated Natural Casing)

  • 고품질의 위생적인 소시지를 제조하기 위하여 천연 돈장 및 양장에 감마선을 조사하고 천연장을 케이싱으로 하여 고급유화형 소시지를 제조한 후 저장기간에 따른 품질 변화를 조사하였다. 감마선 조사된 천연케이싱으로 제조된 소시지의 총균수는 돈장과 양장 구분없이 현저하게 감소되었고, 계산상의 $D_{10}$값은 돈장소시지는 1.71 kGy, 양장소시지는 1.58 kGy였다. 감마선 조사 및 비조사 돈장과 양장으로 제조하여 진공포장으로 $4^{\circ}C$ 냉장한 소시지의 지방산패는 저장 10일째 다소 증가하는 경향이 있었으나 그 외에는 유의적인 차이가 없었다. 소시지의 전단력은 감마선 조사로 인하여 낮은 값을 나타내었고, 관능검사에서는 감마선 조사구와 비조사 구간에 차이를 보이지 않았다. 따라서 감마선을 조사한 천연돈장 및 양장으로 제조한 소시지는 위생적 품질특성을 유지 하면서 고급육제품을 제조하는데 매우 효과적이었다.

전기전도도 기준에 의한 PSE육과 정상육의 육질 및 도체 특성에 관한 연구 (Characteristics of Technical Meat Quality Parameters & Carcass Traits between the PSE and Normal Pork Classified by Conductance Threshold)

  • The two hundreds and twenty two pork carcasses from commercial breed were tested to compare technical quality characteristics and relationships with meat quality parameters between PSE and normal pork classified buy 24hr postmortem conductivity($C_u$). In characteristics of PSE and normal pork by $C_u$ value, highly significant differences were found in NPPC color scale and CIE L*(p<0.001), moderately significant differences in $C_3$ and cooking loss(p<0.01), and significant differences were in $C_6$, CIE b*, WHC and juiciness(p<0.05). In correlation coefficients between $C_u$ and other meat quality determining factors, $C_u$ was poorly related with $pH_1$($R^2$=0.28, p<0.001), CIE a*($R^2$=0.14, p<0.05), b*($R^2$=0.28, p<0.01) and cooking loss($R^2$=0.26, p<0.01). Also, relatively low correlation coefficients were observed in $pH_u$($R^2$=0.32, p<0.001), WHC($R^2$=0.39, p<0.001) and juiciness($R^2$=0.41, p<0.001). Moderately high coefficients were found in NPPC color scale($R^2$=0.59, p<0.001) and CIE L*($R^2$=0.58, p<0.001).

Characterization of pork patties containing dry radish (Raphanus sativus) leaf and roots

  • Objective: This study investigated the effects of dry radish leaf and root on the quality of pork patties during refrigeration storage. Methods: The patties were divided into the following three groups: the control containing 0% dry radish leaf root powder, RL1 containing 0.5% dry radish leaf root powder, and RL2 and RL3 containing 1% and 2% dry radish leaf root powder, respectively. Proximate composition, pH, cooking loss, microbial analysis, lipid oxidation analysis, color, texture profile analysis and sensory test were performed. Results: Moisture, crude protein, and crude ash contents in RL2 and RL3 were significantly higher than those in other groups (p<0.05), whereas crude fat contents in RL2 and RL3 were significantly lower than other groups (p<0.05). Lightness was significantly lower in RL2 and RL3 than in CON (p<0.05). Cooking loss for RL2 and RL3 were significantly lower than those for the other groups (p<0.05). The pH, thiobarbituric acid levels, and total plate counts of RL2 and RL3 were significantly lower than those of CON at days 7 and 14 (p<0.05). Hardness values of RL2 and RL3 were significantly lower than those of CON, whereas chewiness values were higher than those of CON (p<0.05). In addition, the juiciness of RL2 were significantly greater (p<0.05) than those of the other groups. Conclusion: Dried radish leaves and roots improved the proximate composition and quality characteristics of pork patties, providing a basis to produce high-quality patties with extended expiration dates. Thus, dried radish leaves and roots are effective ingredients for health or functional foods.

QTL Scan for Meat Quality Traits Using High-density SNP Chip Analysis in Cross between Korean Native Pig and Yorkshire

  • We attempted to generate a linkage map using Illumina Porcine 60K SNP Beadchip genotypes of the $F_2$ offspring from Korean native pig (KNP) crossed with Yorkshire (YS) pig, and to identify quantitative trait loci (QTL) using the line-cross model. Among the genotype information of the 62,136 SNPs obtained from the high-density SNP analysis, 45,308 SNPs were used to select informative markers with allelic frequencies >0.7 between the KNP (n = 16) and YS (n = 8) F0 animals. Of the selected SNP markers, a final set of 500 SNPs with polymorphic information contents (PIC) values of >0.300 in the $F_2$ groups (n = 252) was used for detection of thirty meat quality-related QTL on chromosomes at the 5% significance level and 10 QTL at the 1% significance level. The QTL for crude protein were detected on SSC2, SSC3, SSC6, SSC9 and SSC12; for intramuscular fat and marbling on SSC2, SSC8, SSC12, SSC14 and SSC18; meat color measurements on SSC1, SSC3, SSC4, SSC5, SSC6, SSC10, SSC11, SSC12, SSC16 and SSC18; water content related measurements in pork were detected on SSC4, SSC6, SSC7, SSC10, SSC12 and SSC14. Additional QTL of pork quality traits such as texture, tenderness and pH were detected on SSC6, SSC12, SSC13 and SSC16. The most important chromosomal region of superior pork quality in KNP compared to YS was identified on SSC12. Our results demonstrated that a QTL linkage map of the $F_2$ design in the pig breed can be generated with a selected data set of high density SNP genotypes. The QTL regions detected in this study will provide useful information for identifying genetic factors related to better pork quality in KNP.

돈육의 사후 24시간 pH 수준에 따른 육질 특성 (Comparison of Pork Quality by Different Postmortem pH24 Values)

  • 도축 후 돈육의 육질평가에 있어 중요한 요인인 사후 24시간 pH를 측정하여 pH가 5.31-5.50, 5.51-5.70, $\geq$5.71에 따른 육질을 조사한 결과, 사후 pH가 더 낮을수록 단백질 함량이 높고, 지방 함량이 낮았다(P$<$0.05). 사후 24시간 pH가 높을수록 보수력은 증가하였으며, 가열감량과 육즙감량은 유의적으로(P$<$0.05) 감소하였다. 육의 경도, 탄력성, 씹힘성과 지방경도 역시 사후 24시간 pH가 높을수록 유의적인 증가를 보였다(P$<$0.05). 육색특성 중 CIE L*값은 사후 24시간 pH가 낮을수록 유의적으로 높았으며, a*와 b*값, chroma 값은 최종 pH가 5.71 이상의 돈육에서 유의적으로 낮게 나타났다(P$<$0.05). Hue 값은 pH 5.31-5.70 범위에서 가장 높았으며, $\Delta$E 값도 pH 5.31-5.50에서 가장 높았다. 관능적 특성의 분석결과, 다즙성과 연도는 최종 pH가 높을수록 향상되었으나, 향미는 최종 pH 범위에 따른 차이가 인정되지 않았다. 따라서 본 연구결과, 도축 후 24시간 돈육의 pH 범위에 따라 육질의 차이를 보이기 때문에 사후 적정 pH를 유지할 수 있도록 도축전 관리, 도축방법, 도축 후 냉각 온도관리 등을 개선하는 것이 고품질 돈육생산에 있어 중요한 것으로 사료된다.

Evaluation of Cudrania tricuspidata Leaves on Antioxidant Activities and Physicochemical Properties of Pork Patties

  • Characterization and utilization of the bioactive compounds from natural resources is one of the most concerns to maintain quality properties of foods, especially to prevent the oxidation of lipids in meat products. Phytochemical components and antioxidant activities of Cudrania tricuspidata (CT) leaves extracted using various solvents and their effects on physicochemical properties of pork patties during refrigerated storage were measured. The combined solvents of 80% ethanol, 80% methanol and pure double-distilled (dd)-water obtained the higher total phenolic compounds, flavonoids content, and antioxidant activities as compared to the pure solvent alone. Among the individual antioxidant components, catechin was the predominant polyphenol in CT leaves in all extracts. The addition of CT leaves extracts into pork patties showed high antioxidant activities since thiobarbituric acid-reactive substances (TBARS) values of added CT extracts were lower than those of the control (p<0.05). In conclusion, CT leaf phytochemical components displayed antioxidant activity that varied with the extract solvent used. CT extracts were superior to control in retarding lipid oxidation of pork patties, which was evident as reduced TBARS and peroxide values (POV).
