Trans fat is a unsaturated fatty acid with trans configuration and separated double bonds. Analytical methods have been introduced to analyze trans fat content in foods including infrared (IR) spectroscopy, gas chromatography (GC), Fourier transform-infrared (FT-IR) spectroscopy, reverses-phase silver ion high performance liquid chromatography, and silver nitrate thin layer chromatography. Currently, FT-IR spectroscopy and GC are mostly used methods. Trans fat content in 6 vegetable oils were analyzed and processing effects including baking, stir-frying, pan-frying, and frying on the formation of trans fat in corn oil was evaluated by GC. Among tested vegetable oils, corn oil has 0.25 g trans fat/100 g, whereas other oils including rapeseed, soybean, olive, perilla, and sesame oils did not have detectable amount of trans fat content. Among cooking methods, stir-frying increased trans fat in corn oil whereas baking, pan-frying, and frying procedures did not make changes in trans fat content compared to untreated corn oils. However, the trans fat content was so low and food label can be declared as '0' trans based on the regulation of Ministry of Food ad Drug Safety (MFDS) (< 2 g/100 g edible oil).

The contents of sterols and stanols in vegetable oils and mist oil were analyzed by gas chromatography using a capillary column. The total sterol contents showed high values of 0.67~0.89g/100g in corn oil, rice bran oil, red pepper seed oil and sesame oil. Mist oil, a byproduct of soybean oil manufacture, was a suitable raw material for the production of stanol since it showed high sterol content (10.2g/100g). In the hydrogenation of sterol contained in mist oil using Pd catalyst, the effects saponification of oil were examined. The conversion of sterol to stanol was improved by a factor of 4~5 through saponification of oil, compared to the reaction without saponification.
This study to elucidate concentrations of impurities such as methanol and fusel oil formed during fermentation process among the different materials and has been applied technical seperation for processing improvement by continuous distillation of super-allospas type. Methanol was formed high concentrations of cutting dried sweet potato and tapioca in order among the different materials during fermentation process. n-Propanol oil was formed high concentration of rice, cutting dried sweet potato, corn, naked barley and tapioca in order among the those materials. I-Buthanol showed high concentration of tapioca, corn, rice, cutting dried sweet potato and naked barley in order and isoamyl-alcohol showed high concentration of tapioca, rice, cutting dried sweet potato, corn and naked barley in order. Using the continuous distillation of super-allospas type, the following are collection ratios of n-propanol, iso-butanol, n-butanol and iso-amylalcohol: 37.9%, 28.6%, 37.4%, and 56.1% when 78.25% (v/v), 68.54% (viv), 50.0% (viv), and 50.0% (v/v) alcohol are used, respectively. Fusel oil and bad alcohol put into the recovery column and then seperated directly by side cut of fusel oil partially from plate of tower bottom after concentration again. Extra impurities seperated by fusel oil seperator when 20 % (v/v) alcohol adjusted with water.
This study was performed to investigate the effect of various levels of Zn(0, 30, 3000 ppms) and different kinds of lipid(corn oil, sesame oil or butter.) in the diet upon lipid metabolism and Zn & Cu concentration in various organs and tissues in weanling rats. The results obtained were summarized as following : 1) Food consumptions, body weight gains and F.E.R.s showed no significant differences among groups. 2) The contents of total lipids and total cholesterols in serum tended to increase with increase in lipid saturation and Zn levels. Those in per g liver were higher in butter groups and tended to be higher in low Zn groups. Total lipids contents in per g muscle tended to be higher in butter and high Zn groups, but total cholesterols contents in per g muscle tended to be higher in corn oil and low Zn groups. 3) Liver, serum and fecal Zn concentrations tended to be higher in high Zn groups than other Zn groups. The Cu concentrations in liver and serum tended to be lower in high Zn groups. On the contrary, the Cu concentrations in urine tended to be higher in high Zn groups.

Flow properties of heated edible oils, such as soybean, rapeseed, rice bran, corn and perilla oils, were measured with Maron-Belner type capillary viscometer. These oils were heated at $180{\pm}5^{\circ}C$ (general cooking temperature) for $5{\sim}20$ hours except soybean oils ($5{\sim}40$ hours). Fluidities of these heated oils except rice bran oil were decreased according to heating time and decreasing ratio of fluidity was outstanding after 15 hour heating in corn oil and 20 hours heating in soybean and perilla oils. All the oils examined in this experiments except rice bran oil showed non-Newtonian motion after 15 hour hinting at high shear stress and Newtonian motion at less than 10 hour heating. In the soybean oil non-Newtonian flow property was outstanding after 30 hour heating at $180{\pm}5^{\circ}C$. Rice bran oil exhibit characteristic flow property, that is, non heated rice bran oil has lowest fluidity but heated one has highest fluidity compared to other oils examined in this experiment. Change of fluidity with extension of heating time was not detected and non heated rice bran oil showed non-Newtonian motion.
It was determined the effect of deodorizing temperature on forming amount and its composition of trans fatty acids by GLC in corn oil. Trans fatty acids were detected a trace amount at the low temperature deodorizing as 240~25$0^{\circ}C$, but it s amounts were showed to 0.30, 0.57, 0.64 and 0.81% at the high temperature deodorizing as 255~27$0^{\circ}C$, respectively. The isomerization phenomenon was remarkably in order that double bond number might to increase, tt, and ttt type were not detected nearly, that the ct, tc, cct and tcc type were detected to the large amount, respectively.

This study was carried out to produce high functional and biodegradable coating agents for pulp mold by evaluating various kinds of biodegradable polymers. Five kinds of biodegradable polymers were used. In addition, the mixture of the carboxymethylated starch and biodegradable polymers(${\kappa}$-carrageenan, chitosan) were used for mixed coating agents. Physical properties of coated paperboards were evaluated. Conclusions obtained were as follows. 4% ${\kappa}$-carrageenan and 5% chitosan showed higher water and oil resistance. 10% sodium alginate, 4% corn zein and 15% polycaprolactone showed high water resistance while no improvement was found on oil resistance. The optimum mixture ratios for the mixed coating agents were 90:10(carboxymethylated starch : ${\kappa}$-carrageenan) and 50:50(carboxymethylated starch : chitosan). Since these mixed coating agents have excellent biodegradability with higher water and oil resistance, these can be used for the environmental-friendly coating agents.
We carried out separation and guantitation of flavor components by GC about essential oils extracted from deodorized corn oil at the different deodorizing temperature. Flavor components were detected total 16 kinds included aldehydes of 8 kinds, major components were propane, pentane, hexanal etc. These major components content was about 70~75% of the total flavor components. According to rise of deodorizing temperature, both ethane and aldehydes of 8 kinds content were in proportion to increase, but propane, pentane, hexane, octan, pentyl furan content were decreased by contraries, respectively. On the other hand, total flavor component content was appeared the lowest level at 245$^{\circ}C$ treating group, aldehydes content was in proportion to increase according to rise of deodorizing temperature. These phenomenons consider that the undesirable reactions such as partial auto-oxidation, degradation, polymerization and hydrolysis etc. by effecting factors of stripping steam and vacuum degree. Conclusively, deodorizing temperature under high temperature was undesirable for the minimization of off-flavor materials.
It has been reported that dietary polyunsaturated fats (PUFA) increase liver injury in response to ethanol feeding. We tested the hypothesis that diets rich in linoleic acid (18:2n-6) would affect acute liver injury after acetaminophen injection and that protein restriction might exacerbate the liver injury. We examined effects of feeding diets with either 15% (wt/wt) corn oil or 14% beef tallow and 1% corn oil for six weeks with either 6 or 20 g/100 g protein on acute hepatotoxicity. After the feeding period, liver injury was induced by injecting either with 600 mg/kg body weight acetaminophen suspended in gum arabic-based vehicle, or with vehicle alone during fasting status. Samples of liver and plasma were taken for analyses of hepatic glutathione (GSH) levels and liver-specific enzymes [(Glutamate-pyruvate transaminase (GPT) and glutamate-oxaloacetate transaminase (GOT)], respectively. Whereas GSH level was significantly lower in only group fed 15% corn oil with 6 g/100 g protein among acetaminophen-treated groups, activities of GPT and GOT were significantly elevated in all groups except the one fed beef tallow with 20 g/100 g protein, suggesting low protein might exacerbate drug-induced hepatotoxicity. The feeding regimens changed the ratio of 18:2n-6 to oleic acid (18:1n-9) in total liver lipids approximately five-fold, and produced modest changes in arachidonic acid (20:4n-6). We conclude that diets with high 18:2n-6 promote acetaminophen-induced liver injury compared to diets with more saturated fatty acids (SFA). In addition, protein restriction appeared to exacerbate the liver injury.
The effects of indigestible dextrin on lipids in serum, tissue, and feces were investigated in two experiments carried out with 64 male Sprague-Dawley rats for eight weeks. Experiment I diet(normal fat diet) containing 5% corn oil and experiment II diet(high fat diet) containing 18% fat(13% beef tallow and 5% corn oil) and 1% cholesterol were divided into four groups with 0.5% cellulose(0.5CL : control), 10% cellulose(10CL), 10% Indigestible dextrin I(ID-I) and 10% indigestible dextrin II(ID-II), respectively. ID-I and ID-II diets produced a decrease in serum total lipid and cholesterol concentrations in both normal and high fat diets but more significantly in the groups fed high fat diet. ID-I, ID-II, and 10CL of high fat diet decreased serum glucose concentration. ID-I and ID-II diets also decreased liver cholesterol and triglyceride concentrations in rats fed normal and high fit diets. The fecal excretion of cholesterol in ID-II/high fat diet was significantly higher than that of 0.5CL diet. Bile acid excretion was increased in the rats fed 10CL and ID-II diets of normal and high fat diets. These observations indicat the hypolipidemic and hypocholesterolemic effects of indigestible dextrin on the rats.
