아침결식 예방을 위한 초등학교 영양교육 프로그램의 개발 및 평가 (Development and Evaluation of an Elementary School Nutrition Education Program to Prevent Breakfast Skipping)

  • The purpose of this study was to develop and evaluate a nutrition education program to prevent breakfast skipping for elementary school children. Subjects were 102 5th grade students (51 boys, 51 girls) as the "education group" and 200 5th grade students (102 boys, 98 girls) as the "non-education group." The nutrition education program consisted of 4 lessons over an 8-week period. Teaching materials, including flash animation, panel, PowerPoint, and a bingo game, were developed for this education program. After education, there was significant increase in the percentage of students who had eaten breakfast every day, understood that breakfast has a great effect on health, and will eat breakfast every day in the education group compared to non-education group. Parents' positive behavior toward daily breakfast preparation and the percentage of parents who had their children eat breakfast every day increased significantly. The students of the education group responded positively to the questions of the benefit and importance of nutrition education. The flash animation received high marks, especially in terms of understanding of contents, content clarity, emphasis of the core content, delivery of necessary knowledge, and applicability of breakfast. This study shows the effectiveness of a 4-lesson nutrition education taught during an 8-week time period to induce changes in recognizing the importance of breakfast and in behavior toward breakfast consumption.

성인 여성의 체중조절을 위한 영양-운동 병행 교육 프로그램의 효과 (Effectiveness of Nutrition-Exercise Education Program on Weight Control of Adult Women)

  • This study was conducted to investigate the effectiveness of a nutrition and exercise education program on weight control of adult women. The subjects of this study were 28 adult women aged 20-59 years residing in the Daegu area. The nutrition-exercise educational period was 12 weeks. The collected data consisted of items on general characteristics, anthropometric data, blood biochemical values, physical strength data, dietary behavior and nutrition knowledge scores of the subjects. During the 12 weeks of weight control, body mass index(BMI), % of body fat, body fat mass and waist-hip ratio significantly decreased. The level of plasma triglyceride decreased, but not significantly. The level of total cholesterol did not change compared to baseline before the program. After the weight control program, back muscle strength, sit-ups, push-ups, and sit-and-reach tests of the subjects significantly improved. The nutrition knowledge scores of the subjects significantly increased. Therefore, these results suggest that the nutrition-exercise education program may contribute effectively to weight reduction with improvement of physical strength in adult women.

탁아기관 유아를 위한 영양교육 프로그램의 개발 및 효과평가 (The Development and Effect-Evaluation of Nutrition Education Program for Preschool Children in Children Centers)

  • This study was designed to : (a) develop the nutrition education program for preschool children (b) actually apply the program in the child-care center and evaluate its educational effects by a Non-equivalent control group design. Nutrition education program was developed on the basis of the conceptual framework which consisted of nutrition nutrients. food handling, life cycle and social.psychological needs. Also the program was devised to contribute children's motor, social, emotional and sensory developments. Nutrition achievement test(NAT) based on the table of specifications coinciding with the conceptual framework and was utilized to evaluate the nutrition education program. Subjects consisted of 42 preschool children, with 22 in control group and 20 in treatment group. All the subject completed a pretest and a posttest and the posttest means between control and treatment groups were compared. The control group had a score of 15.08 and the treatment group, 16.76 and the difference was not significant The treatment group's pre and post test means were 14.20 and 16.76, and showed the difference to be significant (p$\leq$0.05).

단기간의 영양교육이 비만도가 다른 여대생들의 식생활 태도와 영양소 섭취에 미치는 영향 (Effects of a short period nutrition education program on the dietary behavior and the dietary intake of female college students with the different adiposity index)

  • Effects of a short-period nutrition education program on the dietary behavior and the dietary intake were investigated in sixty nine healthy female college students. Questionnaires for general health information, character type, dietary behavior and dietary intake were answered by the subjects. All the subjects were participated in the nutrition education program which was carried out twice during the study. Subjects were divided into three groups according to their adiposity indices (AI), which are low AI (33 subjects), normal AI (31), and high AI (5). In the normal and the high AI group, the nutrition education program appeared to influence the dietary behaviors of the subjects significantly. However the program did not significantly influence the dietary intake of three groups, except PUFA ratio. It appears that a longer-period nutrition education program is required for influencing both the dietary behavior and the dietary intake of the subjects.

한국 성인의 대사증후군 예방을 위한 건강한식 교육프로그램 개발 (Development of healthy Han-sik nutrition education program featuring consumption of Korean foods for prevention of metabolic syndrome in Korean adults)

  • Metabolic syndrome is a cluster of metabolic risk factors associated with increased risk of cardiovascular diseases. Recently, the prevalence of metabolic syndrome has increased in Korea. The aim of this study was to develop a Healthy Han-sik Nutrition Education Program (HHNEP) based on commonly recognized Korean foods in order to decrease metabolic syndrome risks. The target population of the HHNEP is adults with metabolic risk factors. The initial version of the HHNEP was developed based on a review of literature and various dietary guidelines by expert committees as well as the results of a survey on the perception of common Korean dishes and foods as Han-sik. The focus group discussion conducted of nine participants from the target population. After minor modification, the final version was developed. The contents included five sections: 1) aims, 2) introduction of Korean Food Guidance System, 3) cholesterol contents in food, 4) menu planning method using Han-sik, and 5) examples of daily Han-sik menu. The Han-sik list was selected based on the results from a Han-sik perception answered by 35 Korean adults aged 30-60 years using 517 frequently consumed Korean foods from the fourth Korea National Health and Nutrition Examination Survey. The nutrition education program was developed based on scientific evidence for the prevention of metabolic syndrome and focuses on tailoring education to an individual's dietary problems. Educational method was developed by a group of expert committees based in planned behavior theory and related research results. The education method consisted of assessment of current diet, four face-to-face nutrition education sessions over 8 weeks, and evaluation after 8 and 16 weeks. Initial version of nutrition education materials and methods was tested for feasibility by a select group of nine Korean healthy adults. Successful implementation of the program would include application by nutritional professionals at the health promotion center of the hospitals, public health center, and work sites. Intervention studies are needed to evaluate the feasibility and effectiveness of this program before large-scale applications.

지역사회 고혈압환자 영양교육의 효과 평가 (Evaluation of the Effectiveness of a Nutrition Education Program for Hypertensive Patients at the Community Level)

  • Hypertension is the major risk factor for cardiovascular disease which is considered the leading cause of death in Korea. Since nonpharmarologic dietary intervention is recommended as the first step in the management of hypertension, evaluation of intervention programs is needed to formulate strategies for improving patients' dietary adherence. This study was designed to evaluate the overall effectiveness of a hypertension nutrition education program (HNEP) at a public health center, by assessing changes in nutrition knowledge, food attitude, self-efficacy, dietary behavior, and nutrient intake after program completion. An HNEP was conducted in Suwon city for 5 months in 1999 by a public health center. The program provided 3 sessions of group education with individual nutrition counseling. Thirty-five patients participated fully in the program out of 62 enrollees. Data about nutrition knowledge, food attitude, self-efficacy, dietary behavior, and intake (24-hour recall) were collected before (baseline) and after the program. Post program results indicate the following : 1) nutrition knowledge and perception of importance of nutrition significantly increased, 2) food attitudes also improved, 3) the self-efficacy for maintaining a low salt diet was increased significantly, whereas self-efficacy for maintaining a low fat diet or dietary guidelines was not improved, 4) frequency of intake of processed food, animal fat, and sweets as well as frequency of dining out were significantly reduced, 5) nutrient intake was not improved after the program, 6) the most serious barrier for participating in the program and practicing diet therapy was lack of time and willingness. In conclusion, it appears that HNEP might improve food attitudes, individual perceptions and self-efficacy for desirable eating behavior, but it might not improve dietary intake. It follows then, that a long term intervention program may need to increase effectiveness of patient dietary adherence.

당뇨병 노인을 대상으로 한 영양교육의 효과 평가 (Evaluation of Nutrition Education for Diabetes Mellitus Management of Older Adults)

  • Diabetes mellitus is the prevalent disease among older adults. The purpose of this study was to implement and evaluate the nutrition education program for diabetes mellitus patients aged 60 and over. The one group pretest and posttest design was employed to evaluate the program effectiveness. Nutrition education program for diabetes mellitus patients was carried out at the public healthy center in Guri city. The 38 out of 63 patients completed education program. They received four sessions of group education during four weeks. Nutrition education materials (booklet, leaflet) for older adults were provided to participants. Data about blood glucose, blood pressure, nutrition and diabetes mellitus knowledge, dietary behavior, dietary intake by 24-hour recalls were collected before and after nutrition education to evaluate the program effectiveness. All data were statistically analyzed using SAS package (ver.8.2) and significant difference was evaluated by $X^2$-test, paired t-test and Wilcoxon signed rank test. Study results showed that blood pressure and blood glucose were slightly decreased after nutrition education but they did not reach statistical significance. There were positive changes in nutrition knowledge and dietary behavior. The total score of nutrition and diabetes knowledge increased significantly (p < 0.001), and the total score of dietary behavior was improved (p < 0.05) after nutrition education. Dietary intakes of most of nutrients examined were not significantly different between pre- and post-test. Based on study results, it appears that nutrition education program for the aged diabetes mellitus patients might effectively increase nutrition knowledge, dietary behavior and diet quality. This nutrition education program can be used at the public health centers or senior centers for the management of diabetes mellitus for older adults.

고학력 사무직 남성을 대상으로 한 반복적인 영양교육이 만성질환 예방에 미치는 효과와 DQI-I를 이용한 식사의 질 평가 (The Effect of Repeated Nutrition Education on Health Improvement Program by Diet Quality Index-International (DQI-I) Evaluation in Office Workers)

  • The purpose of this study was to investigate the effect of 3-month nutrition education (First Time Intervention, FI) + additional 3-month nutrition education (Repeated Intervention, RI) which was performed after the 8-month followup. FI was conducted during 0-3 months and RI for 11-14 months. Ninety-two subjects completed FI program, and 38 out of 92 subjects who received FI finished the RI. Anthropometric data, dietary assessment (24hr recall) and fasting blood analysis were measured at 0 month, 3 months, 11 months and 14 months time points. After FI (3 mo), waist circumference, triglycerides, total cholesterol were significantly decreased. At 11 month follow-up, body weight, BMI, hip circumference, SBP, DBP were significantly rebounced and HDL cholesterol was significantly decreased. Therefore, the effect of short-term nutrition education was not being sustained. After the secondary nutrition intervention (14 mo), waist circumference and hip circumference were again significantly decreased. Total diet quality index-international (DQI-I) score was significantly increased in both FI group and RI group. The changes in DQI-I scores were significantly correlated with the changes in body weight (r = -0.129, p < 0.05) and counts of nutrition education (r = 0.159, p < 0.05), indicating that effective nutrition education helps improve the diet quality leading to a possible role in CVD prevention among male workers. Although a short-term intervention seems to be a success, the effect was not retained in this study. Therefore, we suggest incorporating nutrition education as a routine program for male worker at worksite.

Effectivenes of Weight Control Program for Obese Children in Chuncheon

  • The effects of a four-week weight control program including nutrition, exercise, behavior modification and meditation were studied in 15 obese children who resided in the Chuncheon area. There were no differences in anthropometric value, health perception, self-esteem and nutrition knowledge before and after the nutrition education program. Food behavior significantly improved after the program, especially in the area of binge eating (p〈0.05). Consumption of ramyon and fried chicken significantly decreased (p〈0.05). These results showed that short-term nutrition education programs did not do enough to change the anthroppometric value of study subject. These results suggest that it is necessary to include parents in nutrition education programs for greater effectiveness. And there is a need to develop an apply systematic nutrition education programs to reduce the weight of obese children.

중학교 재량활동 중 실시한 영양교육의 효과 평가 (Effects of Nutritional Education Program through Discretional Activities in Middle School Students)

  • The effects of a nutritional education program for first grade middle school students were evaluated from August to December, 2006. The study subjects were 82 boys and 90 girls, residing in Gwangju, Korea. To assess the effects of the nutritional education program, pre- and post-questionnaires examining nutritional knowledge, dietary attitudes, and dietary habits were developed. Paired t-test and repeated measures ANOVA were used to evaluate the effects of the nutritional education program. In the general subject, the main after-school activities were studying, watching TV, and using computer (85.5%), and sports (9.3%), suggesting their low physical activity. Parents (46.5%) were indicated as the source of nutritional education rather than teachers (13.4%). Twenty-five percent of girl students had diet experience of skipping meals (54.6%), suggesting the need of proper nutritional education for adolescents' health care. In dietary attitudes, both genders showed some improvement of recognition after education. In the changes in dietary habits, both genders had a significant effect on 'three meals a day, eating breakfast, and regular meal' after education. After education, the rate of having breakfast everyday increased from 52.4% to 65.9% for boys and from 33.3%to 57.8% for girls. In the changes in nutritional knowledge, the appreciation of the importance of school meals increased in both genders from 50.6% to 80.8% after education. The nutritional knowledge, scores of regular eating and well-mannered eating increased in both genders regardless of the students' characteristics. The study results revealed that this education provided an important motivation to improve basic nutritional knowledge and dietary habit. It is recommended to develop systematic and various educational programs and learning materials tailored to subjects before nutritional education.
