This study was conducted to identify the effect of chilling temperature (-3 and $6^{\circ}C$) and aging (1- and 7-day) on objective meat quality, collagen solubility, and free amino acids in pork (longissimus muscle of Yorkshire). Warner-Bratzler (WB)-shear force indicated that variation in chilling temperature had no detectable effect on meat tenderness and tenderization during the 7-day aging period. Among the 13 detected free amino acids, only 3 amino acids (histidine, valine, leucine) were significantly affected by the temperature treatment (p<0.05). Collagen solubility was significantly increased at $6^{\circ}C$ treatment (p<0.05). There was a significant linear relationship (r=0.67, p<0.05) between changes in free amino acids and WB-shear force during the 7-day aging period. These results confirmed that chilling conditions had significantly affected collagen solubility, and meat tenderization occurred in direct proportion to an increase in free amino acids.
본 연구는 인체에 유익한 효과가 있고 부작용 없이 장기간 안전하게 사용할 수 있으며 간보호 및 간기능 개선에 탁월한 효과가 있는지 양배추출물의 간보호 효과에 대하여 알아보았다. 약물(APAP)에 의해 유도된 간손상 동물모델에서 수행된 실험에서, 양배추 추출물은 간손상 마커인 AST 및 ALT를 효과적으로 감소시킴으로써 간 보호 및 간 기능 개선 효과를 나타냄을 알 수 있었다. 양배추 추출물은 간질환의 예방 또는 치료용 약학적 추출물로서 유효하다는 것이다. 특히, 양배추 추출물은 간손상에 수반되는 급성 염증 반응에 관여하는 염증 매개체 iNOS 및 COX-2 및 전염증성 사이토카인 $IL-1{\beta}$의 발현을 감소시킴으로써 간염 염증을 치료하는데 효과적이었다. 그 결과, $100{\sim}150^{\circ}C$에서 열처리 한 배추 추출물은 생배추 추출물에 비해 간기능 개선 효과 또는 항염증 효과가 우수 하였다.
The purpose of this study were to : a) establish quality managements standards and performance indicators in order to define the concept of the hospital food and nutrition services, b) develop a self evaluation tool for quality management applicable to dietetic department's CQI program on the basis of the estabilished quality management standers, c) investigate the factual quality of hospital food and nutrition services throught the result of the application study of the quality management tool and the perceived quality by the patients servery, and d) verify the validity of the quality management tool through analysing the correlation between the factual quality and the preceived quality. The quality management standards were classifie dinto 3 parts, 'Nutrition Care', 'Foodservice Operation', and 'Management Function'. There consisted of 72 quality management standards and 293 performance indicators. The developed quality evaluation tool using 5-Likert scale was performance at 45 general hospitals over 400 beds in Seoul and Kyungki-do. Also, 1,573 patients in 42 hospitals were participated in the patient survey. The result of quality evaluation tool application study showed that 17 standards were relatively high(more than 4.5) and 22 relatively low(less than 4.0) in score. The categorical mean scores of $\ulcorner$Nutrition Care$\lrcorner$, $\ulcorner$Foodservice Operation$\lrcorner$and $\ulcorner$Management Function$\lrcorner$ were respectively 60.7, 162.8, and 73.5 Each mean score was conversed to 81.0, 83.5, and 81.7 on the basis of 100 point scale, but the range of score was very wide between hospitals. The Cronbach's $\alpha$ was more than 0.6 in 59 quality management standards, this result verified reliability of the quality management tool was proved. The factual quality showed positive correlation with the perceived quality. Therefore, this result verified the criterion validity of the quality management tool.
[Purpose] Functional foods are thought to strongly influence the structure and function of the brain. Previous studies have reported that brain-boosting diets may enhance neuroprotective functions. Certain foods are particularly rich in nutrients like phytochemicals that are known to support brain plasticity; such foods are commonly referred to as brain foods. [Methods] In this review, we briefly explore the scientific evidence supporting the neuroprotective activity of a number of phytochemicals with a focus on phenols and polyunsaturated fatty acids such as flavonoid, olive oil, and omega-3 fatty acid. [Results] The aim of this study was to systematically examine the primary issues related to phytochemicals in the brain. These include (a) the brain-gut-microbiome axis; (b) the effects of phytochemicals on gut microbiome and their potential role in brain plasticity; (c) the role of polyunsaturated fatty acids in brain health; and (d) the effects of nutrition and exercise on brain function. [Conclusion] This review provides evidence supporting the view that phytochemicals from medicinal plants play a vital role in maintaining brain plasticity by influencing the brain-gut-microbiome axis. The consumption of brain foods may have neuroprotective effects, thus protecting against neurodegenerative disorders and promoting brain health.
Purpose: This study aims to investigate the effects of an intervention of self-feeding for elderly residents who were eating with assistance or eating by himself/herself with spilling food. Methods: The Participants were 11 elderly people and 6 formal caregivers from 7 nursing homes in Korea. The intervention was to use the spoon and chopstick sets designed for compensating the weakened eating function. Both quantitative and qualitative data were collected through observation, structured questions, and in-depth interviews. Results: The mealtime was significantly increased by 3.2 minutes (p=.011) after the intervention. Three themes were extracted for the meaning of self-feeding expressed by the elders; fighting alone for self-feeding, pride of participating in the study, and burden for self-feeding and research participation. Caregivers expressed the meaning of the elder's self-feeding such as the regret of missed chances, facilitating rehabilitation, the increase of the eating pleasure and quality of care, and ambivalence. Conclusion: Self-feeding has become an opportunity to recognize life values for the elders in nursing homes; for the caregivers, to reconsider caring of the elderly. Posture and eating utensils were also important to improve self-feeding skills.
This study was conducted to investigate the recognition and uses of Astragalus membranaceus. The survey methodology employed was a questionnaire, which interviewed 272(37.8%) males and 448(62.2%) females from the Seoul and Kyunggido area. The main results are as follows: 40-50 years old like and eat Astragalus membranaceus more frequently than 10-30 years old. The most popular reason provided for the preference of Astragalus membranaceus was good health benefits. People indicating a dislike for Astragalus membranaceus had generally fewer previous experiences of eating this plant. The main purchasing place appears to be traditional markets and supermarkets. Astragalus membranaceus was acknowledged as having the following characteristics ‘excellent nutrition’(3.82), ‘natural food’(3.76), ‘possessing anti-cancer and anti-oxidization characteristics’(3.70) and ‘good for liver function, a depressant and good coelenteron effects’(3.62). However, it was not associated with a ‘cheap price’(3.02) and was regarded as ‘difficult for buy’(3.10). Recognition and eating experience was low for Astragalus membranaceus kimchi and rice bread, bread, sauce and Astragalus membranaceus added health drinks. However opinion of its taste was regarded highly.
This study investigated the utilization status and awareness of adults living in Daegu and Gyeongbuk region. Frequencies, t-tests, ${\chi}^2$ tests, analysis of variance, Duncan's multiple range tests, and Spearman rank correlation were conducted by SPSS Windows V.18.0. Sixty-five percents of the respondents purchased Yaksun ingredients and cooked at home, 54% purchased cooked Yaksun at food shops of markets or department stores, and 82% purchased Yaksun at specialty stores. Many respondents answered that the main motivation for use of Yaksun was for improving health. Sixty-six percent of the respondents used Yaksun less than one time per month. Yaksun cooked with chicken was the most favorite Yaksun menu item. In addition, sanitary management of Yaksun ingredients was the most important item for distribution of Yaksun. Most respondents answered that Yaksun was more expensive than general foods. However, respondents demonstrated positive awareness regarding the function and efficacy of Yaksun for improving health.
Ginsenosides of 20(S)-protopanaxadiol and 20(S)-protopanaxatriol classification including the aglycones, PD, PI and ginsenosides Rh2, Rhl were shown to posses characteristic effects on proliferation of THP-l human leukaemia cells. A similar result was not apparent for ginsenoside Rg3 or dexamathasone. The concentration to inhibit $50\%$ of cells $(LC_{50})$ for PD, Rh2, PI and Rhl were 13 ${\mu}g/mL,\;15{\mu}g/mL,\;19{\mu}g/mL\;and\;210\;{\mu}g/mL$ respectively. Cell cycle analysis showed apoptosis with PD and PI treatment of THP-1 cells resulting in a build up of sub-G1 cells after 24, 48 and 72 hours of treatment. Rh2, and dexamathasone treatments also increased apoptotic cells after 24 hours, where as Rhl did not. After 48 and 72 hours Rh2, Rhl and dexamathasone similarly increased apoptosis, but these effects were significantly (P<0.05) lower than observed for both PD and PI treatments. Furthermore, treatments that produced the largest build up of apoptotic cells were also found to have the largest release of lactate dehydrogenase (LDH). It can be concluded from these studies that the presence of sugars to PD and PI aglycone structure reduces the potency to induce apoptosis, and alternately alter membrane integrity. These cytotoxic effects to THP-l cells were different from dexamethasone.
A new herbal composition. HemoHIM, was developed using irradiated animal models and was successfully applied as an immune-improving agent. In a view that the protection and recovery of immune, hematopoietic and self-renewal tissues are essential for radioprotective agents, HemoHIM was developed based on a novel combination of three edible herbs (Angelica Radix, Cnidii Rhizoma. Paeonin Radix) that meet all those requirements. HemoHIM significantly protected the immune and hematopoietic system and enhanced their recovery in y-irradiated mice. For the application of HemoHIM as a health functional food and a supplementary agent for the cancer patients, the efficacy of HemoHIM to improve the immune functions was further evaluated in immune-depressed animals and humans. Animal studies demonstrated that HemoHIM significantly improved the immune functions in cyclophosphamide-treated mice, aged mice, and dexamethasone-treated mice. In human studies, HemoHIM enhanced the immune activity and cytokine secretion in sub-healthy volunteers, and alleviated the severe leukocyre depression in cancer patients during radiation and chemotherapy. Based on these results, HemoHIM was approved by Korea FDA as a material of health functional food for immune function improvement and will be commercially available soon. This case of HemoHIM research and development suggested that irradiated animals can be good models for biological degenerations such as immune depression, self-renewal tissue damage, and aging for the development of biological modulators.
This study conducted 8 weeks of foam roller & mobility, core, and weight training for 9 middle school soccer players 5 times a week for 90 minutes to determine the effect on changes in body composition, thigh circumference, basic physical strength, and functional movement. To analyze the data according to the results of this study, SPSS 25.0 statistical program was used for analysis, and the mean (M) and standard deviation (SD) were calculated to present the descriptive statistics of all dependent variables. In addition, to analyze the difference between before and after exercise, it was verified using a paired t test. The statistical significance level (α) in all reasoning statistics was set to less than 5%. As a result, there were no significant changes in body composition and thigh circumference through 8 weeks of training. However, there were significant changes in agility and muscular endurance, and the total score for functional movement changes was significantly increased, and statistically significant changes were observed in three variables. Therefore, complex training is effective in changing the physical strength and functional movement of middle school soccer players, and further research will be required for a control group and various complex exercises.
