Nutrient composition and in vitro fermentability of corn grain and stover harvested at different periods in Goesan, a mountainous area

  • With South Korea's limited capability of feed production because of its relatively small cultivable area, the country is pushed to depend on foreign feed imports despite the immensely fluctuating price of corn. Hence, intensive efforts to increase the total cultivable area in Korea like extending of farming to mountainous area is being practiced. Corn was planted in Goesan County, a mountainous area in the country. Grain and stover were harvested separately in three harvest periods: early-harvest (Aug 8), mid-harvest (Aug 18), and late-harvest (Aug 28). The nutrient composition such as dry matter (DM), crude protein (CP), crude fat (EE), organic matter (OM), neutral detergent fiber (NDF), acid detergent fiber (ADF), and non-fibrous carbohydrates (NFC) was determined after harvest. Effective degradability (ED) of the major nutrients (DM, NDF, ADF, and CP) were measured through in vitro fermentation of rumen fluid from Hanwoo (Korean cattle). pH, ammonia-N concentration, volatile fatty acid (VFA) concentration, and gas production were periodically measured at 0, 3, 6, 12, 24, 48, and 72 h. Corn grain showed higher nutrient content and ED than stover. It also had higher gas production but its pH, ammonia-N, and total VFA concentration were lower than corn stover. The best nutrient composition of corn grain was observed in early-harvest (high CP, EE, NDF, OM, NFC, and low ADF). Early-harvest of corn grain also had high effective degradability of dry matter (EDDM), effective degradability of neutral detergent fiber (EDNDF), effective degradability of acid detergent fiber (EDADF), and total VFA concentration. On the other hand, the best nutrient composition of stover was observed in mid-harvest (high DM, CP, NDF, and low ADF). EDDM, EDNDF, and EDADF were pronounced in early-harvest and mid-harvest of stover but the latter showed high total VFA concentration. Hence, early and mid-harvested corn stover and grain in a mountainous area preserved their nutrients, which led to the effective degradation of major nutrients and high VFA production.

Effect of Cold Plasma on Total Polyphenol Content and Anti-Inflammatory Activities of Peanut (Arachis hypogaea L.) Hull

  • In recent studies, cold plasma has been used to induce exudation of polyphenols and flavonoids from food materials, leading to enhancement of functional properties. And it is known that polyphenols interact with inflammation related metabolism. The objectives of this study were to investigate the effects of cold plasma treatments on the increase of total phenolic content (TPC), total flavonoid content (TFC), and anti-inflammatory activities of 'Sinpalkwang' peanut (Arachis hypogaea L.) hull. Plasma treatments were carried out using a dielectric barrier discharge gas exchange system at different radicals and temperatures (O3-25℃, O3-150℃, NOx-150℃). Significant differences in TPC, TFC, and inflammatory mediator such as nitric oxide (NO) and tumor necrosis factor a (TNF-α) in lipopolysaccharide stimulated Raw 264.7 macrophages were observed between treated and non-treated peanut hull samples (p < 0.001). Cold plasma treated samples showed higher content (TPC: 2.87-2.93 mg/g sample, TFC: 0.96-0.98 mg/g sample) than non-treated sample (TPC: 2.47 mg/g sample, TFC: 0.78 mg/g sample). Cold plasma treated samples showed lower content of NO (3.3-5.0 uM) and TNF-α (141.4-162.2 ng/mL) than non-treated sample (NO: 11.1 uM, TNF-α: 210.2 ng/mL). This study suggests that cold plasma has potential to improve functionalities of food materials and that cold plasma treated peanut hull can be used as immune enhancing materials.

Effect of different transplanting and harvest times on yield and quality of pigmented rice cultivars in the Yeongnam plain area

  • The effect of transplanting and harvest timing was evaluated for the production of high quality pigmented rice in the Yeongnam plain area. Rice was transplanted on June $2^{nd}$ and $14^{th}$ and harvested between 35 - 55 days after panicle heading at 5 - day intervals. Three black- and 3 red-pigmented rice cultivars (such as early cultivar : Josengheugchal, Jeogjinju; medium cultivar : Heugseol, Hongjinju; and mid-late cultivar : Sintoheugmi, Geongganghongmi) were studied. Yield components like spikelet number, ripened grain ratio, and 1,000 - grain weight of the black- and red-pigmented rice cultivars were similar for both the June 2 and June 14 transplantings but panicle number per $m^2$ was higher for the June 14 transplanting than for June 2. This contributed to a higher brown rice yield for the June 14 transplanting, by 6 - 19% for black-pigmented rice, and by 10 - 21% for red-pigmented rice than the yield for the June 2 transplanting. Total anthocyanin and polyphenol productions of the pigmented rice were also higher in the June 14 transplanting than that in the June 2 transplanting due to high brown rice yield. Based on the combined pigmented brown rice yield, we concluded that the optimal harvest timing would be 40 - 45 days after panicle heading (DAH) for the black-pigmented rice and 45 - 50 DAH for the red-pigmented rice. This study suggests that optimum transplanting and harvest timings play an important role for production of high quality pigmented rice in the Yeongnam plain area.

A Research on Airborne Nicotine Exposure during Harvest and Weaving Tasks in Tobacco Farms (담배농가의 수확, 엮기작업 중 공기 중 니코틴 노출에 관한 연구)

  • Objectives: This study was conducted to evaluate personal and area exposure of airborne nicotine during harvest and weaving tasks in tobacco farms. Methods: Nicotine was measured with NIOSH method 2551 and Passive sampler which was validated in previous papers for area and personal sampling. Results: The average (geometric mean) concentrations of nicotine with two different tasks in personal sample were 6.5 ${\mu}g/m^3$ (harvest), 32.6 ${\mu}g/m^3$ (weaving) and in area sample were 0.8 ${\mu}g/m^3$ (harvest), 57.2 ${\mu}g/m^3$ (weaving). There was significant difference in area sample between harvest and weaving task (p=0.000). Also, there was significant difference with personal sample (p=0.000). Conclusions: It was found that weaving task should be considered to be the first priority for reducing nicotine exposure.

Quality characteristics of commercial liquid type yogurt in Korea (국내 시판 액상요구르트의 품질특성)

  • Yogurt is produced by fermentation of milk using bacteria known as "yogurt cultures". Most of these bacteria are probiotics such as Lactobacillus delbrueckii subsp. bulgaricus, Lb. rhamnosus, Streptococcus thermophilus, and Bifidobacterium. The domestic fermented milk market is increasing, and about 30 companies are producing yogurt. The purpose of this study was to analyze the quality characteristics of domestic commercial liquid yogurt. Total 30types of commercial yogurts were sampled and their physicochemicial properties, including pH, sugar content, acidity, viscosity, and microbial characteristics of lactic acid bacteria counts, were measured. Commercial liquid type yogurt showed a pH of 4.5, sugar content of 7.4-21.2%, total acid content of 0.4-0.9%, and viscosity of 0.1-250 cP. In terms of microbial populations, lactic acid bacteria counts were 7.2-11.3 log CFU/mL and anaerobic lactic acid bacteria counts were 8.0-11.5 log CFU/mL. The quality characteristics differed depending on the constituents of the sample and the microorganisms used. These results are related to the quality characteristics of yogurts and are useful for identifying new trends in the domestic fermented milk industry.

Quality Characteristics of Satuma Mandarin by Harvest Areas and Sea Level Altitude in Cheju (생산지역과 고도별 궁천조생 온주밀감의 품질특성)

  • Quality characteristics of Satsuma mandarin (Citrus unshiu Marc.var.miyagawa) harvest on early December according to production areas and sea level altitude of Cheju were investigated. Soluble solids and flesh ratio were distributed 9.32∼12.50, 75.95%-81.3 in citrus fruits harvested in orchards located below 10m sea level altitude (lower area), and was 10.23-12.17 , 77.35%-80.29% on those over 150m sea level altitude )higher area), respectively. Acid content of citrus juice was 0.95%-1.26% in fruits harvested inlower area, and was 1.02%-1.39% in higher area. In proportion to late harvesting , Brix/acid ratio and fruits quality was improved. Soluble solids of fruits harvested in higher area were higher than those of fruits from higher area, but acid contents were on the contrary . In sensory evaluation on fruit appearance, the differences between two altitudes were not clear.

Quality characteristics of barley Makgeolli prepared with different barley cultivars and milling recovery (보리의 품종 및 도정률에 따른 막걸리의 품질특성평가)

  • The purpose of this study was to evaluate the effects of barley cultivars (Saessalbori, Saechalssalbori and Huinchalssalbori) and different milling recovery (95%, 85% and 75%) on quality characteristics of barley Makgeolli. The content of moisture, ash, crude protein, and crude fat in barley seeds were reduced with decreasing milling recovery. The qualities of barley Makgeolli were also significantly affected by the milling recovery. Decreasing milling recovery of all cultivars resulted to increase in total sugar content and reducing sugar content but decrease in pH while alcohol content and total acidity were not significantly affected. Moreover, the lightness and yellowness of barley Makgeolli increased by milling while its redness decreased. The sensory evaluation showed that the consumer preference for barley Makgeolli increased at the lowest milling recovery (75%). The results of this study suggest that the milling recovery and cultivar of barley were important factors to improve the taste and color of barley Makgeolli.

Yield and Seed Quality Changes According to Delayed Harvest with Rainfall Treatment in Soybean (Glycine max L.) (강우처리 및 수확 지연에 따른 콩 종실 특성 및 수량성 변화)

  • Recently in Korea, soybean harvesting has been delayed due to rainfall during the harvesting season, resulting in a reduction in yield and seed quality. This study was conducted to analyze the changes in yield and seed quality during delayed harvest with rainfall treatment using different harvesting methods, including field harvesting and polyethylene film covering after cutting fully-matured soybean plants (PE covering after cutting), with two major Korean soybean cultivars (Glycine max L), Pungsannamulkong and Daewonkong. The shattering rate of Pungsannamulkong, which is higher than that of Daewonkong, increased up to 41.8% when the harvest was delayed for 40 days without rainfall treatment by harvesting with PE covering after cutting. The weight of 100 seeds tended to decrease slightly as harvesting was delayed. When Daewonkong was harvested using the PE covering after cutting method with rainfall treatment, the yield decreased to the lowest level with a 0.8 kg ha-1 daily reduction rate. Pungsannamulkong showed the lowest yield when harvested using PE covering after cutting without rainfall treatment with a 3.4 kg ha-1 daily reduction rate. The infected seed rate increased according to the harvest delay in both cultivars, and significant differences were observed according to rainfall treatment and harvesting method. The germination rate was maintained above 95% even after 40 days of delayed harvest if there was no rainfall treatment. However, with rainfall treatment, the germination rate was significantly lowered as harvesting time was delayed. In the field harvesting with rainfall treatment, the germination rate decreased to 77.2% for Daewonkong and 76.5% for Pungsannamulkong after 40 days of harvest delay. For the 100-seed weight, effects of individual treatments and interactions between treatments were not observed. In contrast, the effect of interactions between treatments on the shattering rate was significant in both cultivars, indicating that the shattering rate had the greatest impact on the yield changes during delayed harvest.

Quality properties of samkwang and palbangmi treated with atmospheric-pressure plasma by storage (대기압 플라즈마에 의한 삼광 및 팔방미의 저장에 따른 품질 특성)

  • Atmospheric-pressure plasma (APP) was applied to determine quality characteristics of brown rice (BR) and white rice (WR) of Samkwang and Palbangmi. APP (250 W, 15 kHz, ambient air) was generated and dielectric barrier discharge was applied for 0, 10, and 20 min for 2 weeks at 4 and $25^{\circ}C$. The growth of total aerobic bacteria and mold increased depending on the storage. Water content of BR and WR decreased by storage temperature and periods. No viable counts were detected for molds by APP-treated 20 min at $4^{\circ}C$. Changes in protein and damaged starch contents in plasma were not observed. Amylose contents were not changed, but WR (Palbangmi) showed a tendency to increase. The results show that APP improved the microbial quality of BR and WR of Samkwang and Palbangmi, although further studies should be conducted to determine change in quality by APP.

Anti-Inflammatory and Enzyme Inhibitory Activities of Polyphenols from Peanut (Arachis hypogaea L.) Hull

  • Peanut hull as by-product has been discarded during peanut processing. However, peanut hull contains plenty of polyphenols that shows various physiological activities. The objectives of this study were to investigate anti-inflammatory and enzyme inhibitory activities of polyphenols from 'Sinpalkwang' peanut (Arachis hypogaea L.) hull. Compounds were isolated from methanol extracts of peanut hull by preparative-high performance liquid chromatography after identifying and quantifying polyphenols using Ultra performance liquid chromatography (UPLC) and UPLC-Quadrupole time-of-flight-mass spectrometry profiling. The structures of compounds were elucidated by one-dimensional [1H, 13C] nuclear magnetic resonance (NMR) and two-dimensional NMR (correlated spectroscopy, heteronuclear single quantum coherence and heteronuclear multiple bond correlation). Three compounds were identified as 5,7-dihydroxy-4H-chromen-4-one (peak 2), luteolin (peak 4) and eriodictyol (peak 5). Significant differences in inflammatory mediator such as nitric oxide (NO), interleukin-6 (IL-6) and interleukin-1β (IL-lβ) in lipopolysaccharide stimulated Raw 264.7 macrophages and in enzyme (xanthine oxidase [XO] and α-glucosidase [AG]) inhibitory activities were observed between three compounds (p < 0.05). Peak 5 treated Raw 264.7 macrophages showed lower content of NO (16.4 uM), IL-6 (7.0 ng/mL), and IL-1β (60.6 pg/mL) than peak 2 (NO: 28.3 uM, IL-6: 11.3 ng/mL, IL-1β: 66.9 pg/mL) and peak 4 (NO: 24.7 uM, IL-6: 9.3 ng/mL, IL-1β: 62.6 pg/mL). Peak 5 showed higher XO inhibitory activity (84.7%) and higher AG inhibitory activity (52.4%) than peak 2 (XO inhibitory activity: 45.4%, AG inhibitory activity: 21.6%) and peak 4 (XO inhibitory activity: 37.9%, AG inhibitory activity: 37.5%) at concentration of 0.5mg/mL. This study suggests that peanut hull could be a potential source of anti-inflammatory and physiological materials while creating new use of discarded peanut hull as by-products concomitantly.
