A Survey on the Sensory Preference for Making Summer Kimchi by Nationwide Region (여름철 배추김치 담금시 지역별 관능적 선호도 조사)

  • The purpose of this study was to investigate the preferred methods for making summer kimchi as a basic research of making commercial kimchi. Questionnaire were collected from 590 housewives nationwide in Korea, and the data were analyzed by SPSS program. The results were as follows: (1) The average salting time of Chinese cabbage was 3~5 hrs when the combined method of dry and brine salting was used, regardless of the region. (2) Seven jeotkals (salt-fermented fishes) including anchovy, anchovy juice, shrimp, northern sand lance juice, hair-tail viscera, flatfish and yellow corvenia were mainly used in kimchi. Among them, anchovy and anchovy juice jeotkals were preferred to all others in Southern area (Busan, Gwangju, Gyeongnam, Gyeongbuk, Jeonnam), while shrimp jeotkal in Seoul, Gwangju, Jeonbuk, Chungnam and Jeju, and northern sand lance juice jeotkal in Daegu, Daejeon and Gyeonggi, respectively. In most regions, however, blending type of 2 jeotkals was used in kimchi. (3) Eleven ingredients such as red pepper, garlic, ginger, green onion, radish, leek, onion, carrot, sugar, sesame and MSG were used as basic components for making kimchi. In particular, MSG was used as a basic ingredient regardless of region and age. However, a standard taste for making kimchi was depended on housewife in this study.

Environmental Character and Catch Fluctuation of Set Net Ground in the Coastal Water of Hanlim in Cheju Island III. Environmental Character and Catch Fluctuation (제주도 한림 연안 정치망 어장의 환경특성과 어획량 변동에 관한 연구 III. 어획량변동과 환경요인)

  • To investigate the relationships between ocean environmental characteristics and thechange of the catch, we analyzed various environmental factors such as mean temperature, salinity, current vectors, lunar day and wind vectors from 1995 to 1996 and the catch fluctuation of Hanlim set net from 1994 to 1996. The results are as follow ; 1) The proportion of fishes caught in Hanlim set net is highest for horse mackere1 ($69.2\%$) and is followed by common mackerel ($18.4\%$), hair tail ($5.6\%$), squid ($2.7\%$) and rabbit fish ($1.4\%$) in order. Two peaks in the monthly catch appeared in June and October in the operation period of May- December. 2) The flow direction was northward in flood time and southeastward in ebb time around the Hanlim set net. Thus, the vortical mixing of sea water was active and continued for more than 3 hours. In addition, mean daily temperature was low due to the presence of middle and bottom water in offshore. Increase in salinity or high salinity of sea water provides a favorable condition for catches of fishes. Catches in the first quarter and the last quarter of the moon were larger than that in full moon and the last of the month. In particular, when south or southeasterly wind velocity reaches about 3$\~$6.5 m/s, the possibility of catches increases.

  • The mesh selectivity of diamond and suare mesh cod-ends at the Southern Korean Sea and the East China Sea were compared for Pampus argenteus, Trachurus japonicus, Trichiurus lepturus. Selection trials were carried out using diamond and square mesh cod-end by trouser type cod-end with cover net. of which the mesh cod-end has four types : A(51.2mm), B(70.2mm), C(77.6mm), D(88.0mm). Selection curves and selection parameters were calculated using a logistic model. The results obained are summarized as follows : 1. Harvest fish : In B. C and D type selection range and fifty percent selection length of the square mesh were about 21mm, 11mm : 12mm, 18mm and 34mm, 5mm higher than those of the diamond mesh, respectively. Selection factor of master curve for the diamond mesh was 1.54 and for the square mesh was 1.68. The optimum mesh size for the diamond mesh was 97.4mm and for the square mesh was 89.3mm, the difference was 8.1mm. 2. Horse mackerel : In A type, selection range was nearly the same for the diamond and the square mesh, but fifty percent selection length of the square mesh was 43mm higher than the diamond mesh. In B. C and D type, selection range and fifty percent selection length of the square mesh were about 6mm, 3mm : 24mm, 21mm and 11mm, 42mm higher than those of the diamond mesh, respectively. Selection factor of master curve for the diamond mesh was 2.37, for the square mesh was 2.77. The optimum mesh size for the diamond mesh was 78.1mm and for the square mesh was 66.8mm, the difference was 11.3mm. 3. Hair tail : In A, B and C type, selection range of the square mesh was about 34mm, 8mm, 60mm higher than those of the diamond mesh. Fifty percent selection length for the diamond mesh was about 5mm, 7mm, 8mm higher than that of the square mesh. Selection factor of master curve for the diamond mesh was 3.11, for the square mesh was 3.48. The optimum mesh size for the diamond mesh was 64.3mm and for the square mesh was 57.5mm, the difference was 6.8mm.

  • Mesh selection analysis for the trawl net were carried out at the Southern Korean Sea and the East China Sea during the 1992-1994 years by the training ship Seabada of the National Fisheries University of Pusan, using A type (51.2mm), B type (70.2mm), C type (77.6mm), D type (88.0mm) square mesh cod-ends. The fishing trials were made using bottom trawl of the trouser type cod-end with cover net. Selection curves and selection parameters were calculated by a logistic model for Sphyraena pinguis, Pampus argenteus, Trachurus japonicus, Pagrus major, Callanthias japonicus, Trichiurus lepturus. The results obtained are summarized as follows: 1. Red barracuda : Selection range and fifty percent selection length in the A type was 115.8mm, 292.8mm, respectively. 2. Harvest fish : Each selection range and fifty percent selection length in the B. C. and D type was 37.7mm, 113.8mm : 40.1mm, 131.7mm and 64.8mm, 148.6mm, respectively. Selection parameters of master curve were : slope, 3.81 : intercept, -6.4. Optimum mesh size was 89.3mm. 3. Horse mackerel : Each selection range and fifty percent selection length in the A, B, C and D type was 43.0mm, 148.3mm : 60.7mm, 183.2mm, 214.5mm and 91.4mm, 254.9mm, respectively. Selection parameters of master curve were : slope 2.30 : intercept, -6.4. Optimum mesh size was 66.8mm. 4. Red seabrem : Selection range and fifty percent selection length in the D type was 42.7mm, 203.4mm, respectively. 5. Yellowsail red bass : Selection range and fifty percent selection length in the A type was 84.0mm, 110.6mm, respectively. 6. Hair tail : Each selection range and fifty percent selection length in the A, B and C type was 59.7mm, 176.0mm : 100.9mm, 250.7mm and 178.6mm, 307.0mm, respectively. Selection parameters of master curve were : slope, 1.54 : intercept, -5.4. Optimum mesh size was 57.5mm.

A Research on the Men's Costume on the Bigdata of Movie Napoleon

  • The public can now access movies faster and more easily thanks to over-the-top (OTT) services. The audience may be impacted by period dramas, where accurate costume reproduction is crucial. For filmmakers, it is critical to replicate period costumes using precise historical information. The goal of this study is to act as a reference so that, when it comes to period dramas, viewers can evaluate them using impartial criteria and movie producers can use data based on fact to plan their costumes. The film Napoleon won the British Academy Award for Costume after hiring costume experts to create 95% of the entire costume, according to data from the Napoleon I Museum. Following the French Revolution, the ostentatious and ornate men's attire vanished, to be replaced by a more modest and functional outfit. For tops, vests were cut to waist length, shirts, cravats, and carrick were worn, and tailcoats were the norm. The pants were swapped out for loose-fitting ones. The glitzy hues and embellishments from the bygone era progressively vanished and formed the foundation of the contemporary men's costume, which is dominated by black. The hats worn were tricorn, bicorn, top hat, and bowler, and the hairstyle changed from long to short gradually. The civil class wore short tops called carmagnoles. Napoleon wore a high-collared Napoleon collar and a tailcoat with a bicorn, which became his emblem. Green, navy, and white were the colors of the uniform, and a gray woolen coat was worn outside. The elaborately decorated costumes were worn to court and to banquets; the Napoleonic coronation costume was embellished with gold embroidery on silk, red velvet, and martyred hair; the post-revolutionary costumes gradually became more colorful. In the movie Napoleon, period clothing items were well represented, with the aristocracies wearing dark tailcoats, vests, shirts, and cravats. Based on the data from the men's costume, Napoleon's outfit in the movie was made more similarly. This study's limitation is that not every character in the movie could have their costume examined, and the material matter could not be precisely determined by examining the images displayed on the screen. Given that portraits typically feature a great deal of noble imagery, the clothing worn by common people is also associated with data limitations when it comes to movie costume design.

Characteristics of Bridal Palanquin Covers and Changes in Style from the late 19th Century to the early 20th Century (19세기 말~20세기 초 신부 가마덮개의 특성과 양식 변천)

  • In the late Joseon Dynasty, when the bride would ride a palanquin when she went to live with her in-laws, it was a custom to cover the palanquin with tiger skin to ward off misfortunes that may come her way. The higher classes used tiger skin or leopard skin for this purpose, but the common people had to substitute this expensive item with a tiger pattern painted on a blanket. Such blankets were called hotanja, hogu, hoguyok and the like. The term "hotanja" is a pure Korean word. It is not known when the cover for the bridal palanquin was first used, but it was popular from the end of the 19th century and then gradually disappeared. This is due to the introduction of new Western style weddings that eliminated the need for a bridal palanquin. The tiger print blanket was used not only to cover the bride's palanquin but also to cover a table or floor during the wedding ceremony. This study ran a material analysis on nine pieces of tiger print blankets. All of the blanket artifacts examined in this study had an outer cover and a lining made of fabric that used cotton thread for the warp and wool thread for the weft. Two kinds of wool were found in the weft thread in the outer covers: fat-tailed sheep hair from China and goat hair for carpets from the Hebei province, China. Records show that "blankets with painted tiger patterns" were imported from Russia, and the imported blankets were from Russia and China. The outer cover can be categorized into six types, and the lining into three types depending on the weave and direction of the thread twist. The hem facing can be divided into four types. The lining and outer cover use the full width of the fabric, which was woven in wide widths of 135 cm or wider. The tiger pattern on the blanket was made by stenciling. The stencil design of the body and tail of the tiger were placed on a red blanket to be painted in white, and then the background color of the tiger, which is yellow, would be painted over the white, and then black stripes would be added. The pattern of the tiger varies, which shows that the blankets were made by various craftspeople. The pattern of the tiger print blanket is usually of a tiger lying down, but there were tiger print blankets with a tiger standing up. The pattern of the tiger grew smaller over time, and flower patterns were added in the background. Decorative elements were gradually added to the tiger print blanket patterns, but its function as a palanquin cover became lost. By taking the features of tiger print blankets into consideration, it can be assumed that there are imported pieces among the remaining pieces, and were produced in various places because it was popular at that time.

Monitoring Total Mercury and Methylmercury in Commonly Consumed Aquatic Foods (다소비 수산식품 중 총수은 및 메틸수은 모니터링)

  • Total mercury and methylmercury concentrations were determined in 15 commonly consumed aquatic food species using total mercury analyzer and gas chromatography with electron capture detector. The mean total mercury and methylmercury concentrations (mg/kg) were 0.088 and 0.034 in mackerel, 0.061 and 0.016 in hair tail, 0.030 and 0.005 in yellow croaker, 0.032 and 0.008 in Alaska pollock, 0.059 and 0.023 in eastern catfish, 0.110 and 0.045 in snakehead, 0.030 and 0.011 in Japanese common squid, 0.026 and 0.009 in common octopus, 0.035 and 0.008 in swimming crab, 0.009 and not detected (ND) in oyster, 0.011 and ND in shortneck clam, 0.008 and ND in mussel, 0.018 and ND in sea mustard, 0.007 and ND in nori, and 0.019 and ND in sea tangle, respectively. The total weekly dietary intakes of total mercury and methylmercury were estimated, respectively, using food consumption data from diet surveys and the concentrations of total mercury and methylmercury from this study. They were $0.178\;{\mu}g/kg$ body weight (b.w.)/week (3.57% of provisional tolerable weekly intake (PTWI)) and $0.052\;{\mu}g/kg$ b.w./week (3.34% of PTWI) respectively, and all were within their respective PTWI set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA). Therefore, considering that the main contributor to mercury intake in the diet is aquatic foods and that the 15 aquatic food species examined in this study are highly consumed, it is concluded that the mercury levels in the foods measured in this study do not present a concern for consumer health.

The survival rate of fish discarded from trawler (트롤 어선에서 어획후 투기된 어류의 생존율)

  • Experimental fishing was carried out to investigate the survival rate of fishes discarded after hauling from the trawl and to develop the fishing gear and method for fisheries management which can improve the survival rate of young fishes escaped from the trawl codend in offshore korean southern sea and off Cheju Island of Korea. The young fishes were bred in fish cage on the board to measure the sustainable survival time for fishes escaped from grid panel and codend. The obtained results are summarized as follows' 1. Japanese flying squid(Todarodes pacjficus), mitra squid(Loligo chinesis), hair-tail( Trichiurus lepturus), john dory(Zeus japonicus), spanish mackerel(Scomberomorus niphonius), redlip croaker (Pseudosciaena polyactis) and blackthroat seaperch(Doederliinia berycoides) were dead instantly after hauling. 2. Survival rate of tiger shark(Galeocerdo cuvier), conger eel (Conger myriaster), red skate (Dasyatis akajei), black scraper(Navodon modestus) and japanese fan lobster(Ibacus ciliatus) might be high after discarding because they survived for long hours in fish cage. 3. Blotched eelpout(Zoarces gili) escaped from the escapement device(grid) was dead within 6 hours in the water tank installed on the board but 97% of tiger shark and 72% of conger eel survived over 72 hours. 4. Red skate escaped from trawl codend was dead within 60 hours in the water tank installed on the board but sustainable survival time of 25% of octopus(Paroctopus dofleini) and 100% of black scraper was over 72 hours. 5. Compared with the survival rate of rosefish(Helicolenus higendorfi) escaped from the escapement device(grid) and trawl codend, all of the rosefish escaped from the grid was dead within 7.2 hours but 8.3% of the rosefish escaped from the codend survived over 72 hours. 6. In comparison with the survival rate of japanese fan lobster survived over 72 hours, survival rate of japanese fan lobster escaped the codend was much higher as 75% than 33% of japanese fan lobster escaped from the grid.

Present Status and Future Prospect on Fishing Industry in North Korea (북한수산업(北韓水產業)의 현황(現況)과 전망(展望))

  • In recent years, the communication and the trade between the Republic of Korea(South Korea) and the Communist bloc has been activated. The simultaneous entrance of South Korea and North Korea to the United Nations will accelerate the political dialogue and also the trade which is indirectly carried out through a third country at present will be turned into direct way. Fisheries products are also treated as one of the important trade goods and there is a hopeful prospect that the amount of trade will be steeply increased in the near future. Furthermore, there is a great possibility of development up to the joint utilization of fishing grounds or the joint investment in fisheries projects. Concerning such points, since it is very much important to understand the present status of fisheries in North Korea, the author made a study on this field as requested by the Board of Unification, and report a part of the study here. The prominent character of North Korea's ruling sea area is that the sea is completely separated into two regions-the East Sea Region and the West Sea Region-and no continuity exists between them. The East Sea Region locates in the fringe of the biggest fishing ground of the world-the North Pacific Ocean-and very rich in resources not only warm water fishes but also cold water fishes. Especially alaska pollack, Theragra chalcogramma, is caught abundantly in this region. Contrary to that, fishing activity in the West Sea Region seems to be interrupted in winter. Even though some valuable warm water fishes-yellow corvenia, Pseudosciaena manchurica, and hair tail, Trichiurus lepturus, and so forth-come to this region from spring to summer along the coast line of this region for spawning, and vigorous fishing activity is carried out. But the most of them migrate southward to the neighboring waters of Cheju Island for wintering from autumn to winter, and so the fishing activity in this region seems to be interrupted greatly during winter. The total number of fishing boats in North Korea is estimated at 36 thousand and the rate of mechnization at about 70% compared with 99 thousand and 78% in South Korea. North Korea proclaimed an exclusive economic zone of 200 nautical miles in 1977. Specific character of this zone is setting of military boundary zone, up to 50 miles from the base line in the East Sea Region and also it covers whole region of the economic zone in the West Sea Region. Especially in the East Sea Region she set up a straight base line which can not be permissible by the international law. North Korea's statistics on fisheries product has not been announced officially on account of her unique isolationism, but it can be estimated through several data procured. At the first, the amount of fisheries products in the North Korea is reported as about 1.7 million ${\frac{M}{T}}$ by Fisheries Statistics which issued by the FAO in 1987, but a North Korea's trade organization announced the amount as 3.5 million ${\frac{M}{T}}$ in 1988. The former seems to be underestimated and the latter must be an exaggeration. According to Chikuni, who is a Japanese worker for FAO, prepared the unofficial statistics based on the evidence which he collected through the fineries development plan of the FAO/UNDP, and estimated the mean amount between 1982 and 1984 was 2.4 million ${\frac{M}{T}}$ or so. The Board of Unification estimated on the basis of various factors that the amount was 2.2 million ${\frac{M}{T}}$ or so in 1987 and in 1988. This seems to be the most reasonable. To solve the chronic lack of foreign currency, North Korea makes effort on the development of fisheries, and has even aimed fisheries product at 11 million ${\frac{M}{T}}$ by 1993, but this target looks unrealistic under the present circumstances. Somehow, we can exploit her extreme policy which has gone so far as to establish such an excessive and impractical target. Nevertheless this will be helpful to promote the joint development of the fishery activity between South Korea and North Korea.
