The survey was undertaken from October to December of 1995. Demographic characteristics, food behavior, composite adaptation score(CAS), composition of Korean and American foods in 1 day, and frequence and preference changes of foods was determined. The results were summarized as fellows : The mean CAS for all subjects was 17.6 with individual scores ranging from 9 to 23. The CAS were significantly different in residing age, American friends, English speaking ability, eat with Koreans, American food experience before, American food experience now, breakfast type in weekday, breakfast type in weekday, and self-food habits change at p<0.05. No significant differences in CAS could be attributed to sex, marital status, children, and job. Food consumption patterns for breakfast was Korean style 58%, American style 39.3%. For lunch both style was almost same, and for supper Korean style was 78.2%. The intake of food most frequent was rice, and then Kimchee. The purpose of this study is to survey eating habits and food preferences of elementary school students, and to offer basic informations for proper guiding method. The findings of this research were as follows : (1) In regularity of eating habit, boys had more regular terms than girls. In other words, girls more often did without meals or didn't have regular eating habit. (2) Boys were more likely to overeat than girls. On the other hand. girls tended not to eat up all food. (3) The 60% of the children, who were given the questionnaire. answered that they were greedy for delicious foods. It shows that good table manner will have to be taught to children. (4) The 70% of the children answered that they were eating the unbalanced meals. It shows that systematic and continuous guidance for correcting unbalanced meals will be necessary to children. Also, considering that the eating habit of unbalanced meals is more serious in lower grade students, the children will have to learn about balanced meals from lower grade. (5) The research showed that the children were eating out more often than before and that the 90% of the children were eating snacks. So, the table manner when eating out and food selection for snack will have to be taught to children systematically. (6) The children were likely to prefer rice to cereals and to prefer meat to fish. (7) The children tended to like fried food better than any ether food. In addition, they showed higher preference for instant foods like noodles. Therefore, the systematic guidance will be necessary for children not to select acidified fried food.
Consumers are becoming increasingly interested in what kind of value their food has. Many studies have focused on consumers' preferences and willingness to pay for specific food values. However, few studies have asked consumers to consider or rank the importance of different food values. This paper determined consumers' food values by implementing the best-worst scaling approach and segmented consumers based on the relative importance of general food values that consumers place on them. Among a list of eleven food values (taste, safety, origin, appearance, price, environmental impact, naturalness, convenience, nutrition, fairness, and habit) which was compiled from previous studies on food preferences, on average, safety, nutrition, taste, and price were the most important values to consumers, whereas fairness, habit, appearance, convenience, origin, and environmental impact were the least important values. However, significant variation exists among consumers in terms of the relative importance of food values. To investigate the heterogeneity among consumers, a Latent Class Analysis was performed to classify consumers into subgroups based on responses to questions. Two latent classes were found and characterized as 'safety-nutrition' and 'taste-price'. The 'safety-nutrition' cluster represents 61% of the sample and a group of people who find safety and nutrition centered values to be the most important. Another cluster represents about 39% of the sample, and relative to the first group, this group finds price and taste values to be more important.
This study was to investigate obesity and food habit of adolescents in Yosu, Chonnam area. It was surveyed using questionnaires with 551 adolescents consisted of 280 boys and 271 girls. The questionnaire included general charac-teristics, obesity index, eating behavior and snack intake pattern. The results were as follows. The proportion of obese subjects was 10% by Rohrer index but the rate of obesity by body mass index was 3.3%. The self perception of body shape were optimal (47.9%), fat (29.8%), slightly lean (14.5%), obese (4.7%) and lean (3.1%). Generally, the propor-tion of girls responded them as “fat” was greater than boys. The greater percentage of boys responded them as “lean” than girls. The subjects don't take breakfast regularly were 50.8% and the main reason for skipping breakfast was the lack of time (55.2%). The main type of breakfast was cooked rice (78.9%). The most favorite snacks hun out to be cookies (36.5%) and 45.7% of subjects take snacks during the rest. The reason for taking snacks was “feeling hungry” (52.6%) and the taste was the most important factor of snack choice. The results of this study showed that the most of subjects were not in a serious obesity condition, and their eating habits were generally satisfactory. As for dietary Pattern, 65.8% of students ate breakfast and 82.9% ate dinner on a daily basis. Their main dish for the meal was boiled rice with soup and this combination accounted for 60.3% of the breakfast items and 67.8% of the dinner items. Students in both rural and urban areas had dinner more regularly than breakfast. Overall knowledge on nutrition was 7.31 points out of 10. Urban students earned 7.33 while rural students did 7.29. Out of the maximum of 20 points, the overall grades on physical health were 15.57. (15.44 in rural areas and 15.70 in urban areas). As a result of their spiritual health condition, rural children recorded 6.63 point and urban children recorded 6.81 point on a 10 point scale. Furthermore, 32.8% of the children of the respondents had spiritual awareness phenomenon. The better the understanding of nutrition, the sounder mind and physical health stemed from the good dietary habits. Also the data showed that relatively young Parents had better dietary habits than the older ones.
This study investigated the general information, unbalanced diet, and dietary habits of 86 children in Daegu. The research was undertaken to analyze the current state of diet and dietary habits of children, and to provide basic data for nutrition education. The results reveal that younger children have a more unbalanced diet. Children dislike side-dishes the most. Furthermore, due to the longer time taken to consume food, parents persuade children to eat quickly. Children were also determined to have a high intake of foods and drinks containing sugar; beverages containing sugar are consumed 1-2 times a week by 5-year-olds, and once daily by 6- and 7-year-olds. The results of this study can be applied to provide basic data for nutritional education, and assist in the development of dietary programs for young children.
Now days, the life style of people is getting more scientific and more specialized, so food habit as well as food culture are a measure of cultural level of a country. Studies on consumer behavioral model show that food habit is closely related to consumer preference due to changing life pattern and increasing family income. Therefore, The definition of the impact of menu characteristics on customer menu selection is the object of this study. For that purpose, some attempts are made: First, discuss the theories on Korean food and customer purchasing behavior as a standard of analysis. Second, find out if there are any differences in customer menu-selection factors for Korean restaurantin in a hotel. Third, make an empirical analysis of menu-selection factors for Korean in a hotel to suggest which direction it should go forward. Fourth, analyze the relationship between demographic characteristics and menu-selection factors.
This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of health promotion at community level. Nutrients intake of 135 housewives were assessed by 24 hour recall methods. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Our results indicated dietary intake of calcium and vitamin $B_2$ were insufficient when they were compared to Korean recommended dietary allowances(RDA). Among five food groups, intakes of milk and dairy product was inadequate as compared to the recommended amount. When we compared the fatness indices to self-evaluated meal problems, overeating and speedy eating were significantly related to fatness indices. Fatness indices such as relative body weight(RBW) and body mass index(BMI) were significantly higher in the subjects who self-evaluated their unsound food behavior as overeating. However, there were no significant differences of food habit score and nutrition knowledge among groups classified by fatness or meal problem. Body fat ratio, frequencies of night snack and skipping meal significantly increased with age. Food habit score was positively related to health-concerned attitude and active attitude toward change. We concluded that nutrition education program for housewives should include detailed strategies to modify unsound food behaviors for healthy weight.
The purpose of this study was to explore dietary attitude among middle school students by sex. The subjects were collected from 211 boy students and 198 girl students in the city of Kunsan, Jeonbuk province. The mean age of the subjects was 13.7 years old. The average score of food habit was 4.61 $\pm$ 1.92. The average score of food habit of boy students was higher than the score of girl students. The correlations between the score of food habit and father's education level. family income, and nutritional supplements were positive. The correlation between the scores of the nutrition knowledge and father's education level was also positive. On the other hand the mother's occupation did not have any influence on the scores of food habits and the scores of the nutrition knowledge. As a staple food, cooked rice was preferred on boy and girl students at breakfast(82.7%) and supper(94.3%). The preference of snacks was fruit and fruit juice. The reason of skipping breakfast was the lack of time and no appetite, and skipping lunch was due to no appetite. Lastly the main reason of skipping supper was playing computer on boys. on the other hand no appetite and weight control on girls. In order to improve the nutritional status of the middle school students, they must establish good food habits by eating three regular meals per day and balancing their diet. Also they should be notified that severe weight control is very harmful for health. This study indicate that nutrition education and correct information for body image. balanced diet. regularity of meals and food selection are required for middle school students at both school and home.
This study examined the weight control and food habits in 160 obese children and 191 normal-weight children in 4th, 5th and 6th graders of some elementary schools in Gumi city. Regarding the subjects' self-recognition of their body shape, 27.8% of the normal weight group and 92.5% of the obese group acknowledged themselves to be obese. 58.9% of the normal weight group and 61.0% of the obese group were not satisfied with their own body shape and the difference between two groups was very small, 23.6% of the normal weight group and 87.5% of the obese group have tried to reduce weight. The main causative factor of weight gain that children themselves recognized was a sedentary life style. All the students showed a high rate of irregular and unbalanced diet. The obese children showed a significantly higher rate of skipping meals and eating meals faster than the normal weight children. More obese children disliked exercise, and did less excercise than the normal weight children. There was a negative correlation between the obesity index and the food habit score. In other words, they frequently skip a meals, eat in a hurry and dislike vegetables and dairy products. In addition, there was a positive correlation between the student's BMI and the parents' BMI. Overall, many normal weight children showed a high level of self-consciousness of being obese or underweight. Both groups showed a low degree of satisfaction with their own body shape. Therefore education for the distorted perception of body shape is needed because, even normal weight children have tried to reduce their weight. Obese children should be encouraged to exercise, not skip a meals and eat slowly. They also need a systematic education program on weight reduction and weight maintenance. Moreover, education on a healthy diet, healthy food habits, and healthy body shape are necessary for elementary school children.
