키위 농축액을 첨가한 키위 죽의 품질 특성에 관한 연구 (A Study on Quality Characteristics of Kiwi Fruit-Gruel with Added Kiwi Concentrate)

  • In this study, kiwi fruit, which has various medical actions and excellent functionality, was used together with gruels for comparison and analysis of to compare and analyze the changes in physico-chemical quality of a kiwi fruit-gruel according to the amount of kiwi concentrate added to the gruel. Analysis on the sensual quality of kiwi fruit-gruel spread was done to indicate to it was executed to find out the merchandising potential of the preparation and to provide basic data for gruel commercialization. Increasing content of kiwi concentrate decreased the solid content and pH of kiwi fruit, and increased sweetness and viscosity. Significant changes in chromaticity to L(lightness) and a(redness), texture qualities of hardness and cohesiveness, gumminess, springiness, color, flavor, sourness, and sweetness were evident with increasing kiwi concentrate. Concerning overall acceptability and sensory evaluation, 20% softness samples were most preferred. The findings may lead to enhanced medical/nutritional activity and functionality of kiwi fruit-supplemented gruel. The more the kiwi concentrate was added to the gruel, solid content and pH of the kiwi fruit-grue decreased. The sweetness and viscosity of kiwi fruit-gruel increased. For chromaticity to L(lightness) and a(redness) of the gruel decreased and showed significant difference between sample groups. For texture, there were significant changes shown for hardness and cohesiveness the amount of kiwi concentrate added was different, increased There was a significant change between samples for gumminess. As for springiness, there was a significant change between samples. There were significant difference between each sample for color, flavor, sourness, sweetness. For softness, overall-acceptability and sensory evalution 20% group was most preferred based on this study, from the physico-chemical and sensual perspective, 20% group is highly recommended for adding kiwi concentrate into gruel. In conclusion, this study is meaningful as it enhanced the functionality and quality of a gruel by combining kiwi fruit with various medical action and excellent functionality, with Kiwi Fruit and presented a basic material for creating a kiwi concentrate combined gruels.

오미자 추출물을 첨가한 두부의 품질특성 (Quality Characteristics of Soybean Curd With Omija Extract)

  • This study used Omija extract as a natural congelation to compare and analyze soybean curd's physicochemical and sensory quality characteristics in order to improve functional benefits and taste of soybean curd. When Omija extract concentration increased, protein content went up considerably while crude fat and yield significantly decreased. In the pH change, the group with Omija extract were lower than control and the change was not much noticeable but slightly checked as the storage period was extended. The turbidity tended to increase as the storage period was longer. In the acidity change, the group with 0.5% Omija extract showed rapid increase on the 4th day after starting storage, and it can be interpreted that decomposition started at the moment. As the storage period was extended, brightness and yellowness remarkably decreased and redness considerably enhanced: higher concentration Omija extract worked to decreased brightness and to increase yellowness and redness. In accordance with the storage period, hardness, brittleness and gumminess increased and springness decreased, but there was no considerable change in cohesiveness: in accordance with the concentration, hardness, brittleness and gumminess significantly increased, but there was no considerable change in cohesiveness. In terms of sensory quality, the group with 1% of Omija extract showed the best appearance, flavor, taste and after swallowing results. The group with 1% Omija extract was the most preferred, $4.89{\pm}0.32$ in the overall preference. In conclusion, adding Omija extract can improve soybean curd's physicochemical and sensory quality characteristics. Moreover, the extracts can be expected to play an important role in encouraging Omija's value and widening its appliances to various food.

백설기에 제조한 고단백식품과 호화한 쌀가루를 첨가하여 노화지연 및 물성 대한 비교연구 (A Comparative Study of the Retrogradation and Rheology of Backsulgi with Nutriprotein and Gelatinized Rice Powder)

  • The purpose of this study was to investigate the effect of added nutriprotein and rice powder as a plasticizer on physicohemical property, texture property of Backsulgi. In the physicochemical property, the content of proximate composition of nutriprotein was measured as 6.1% of moisture, 3.6% of carbohydrate, 84.3% of crude protein, 0.6% of crude lipid, 5.4% of ash. The raw material of rice powder was measured as 9.6% of moisture, 83.7% of carbohydrate, 6.0% of crude protein, 0.4% of crude lipid, 0.3% of ash. Swelling power and pore ratio of the control were 78.53% and 72.42%, and tended to increase as the amounts of nutriprotein and plastic rice powder increased. Aging by Avrami eguation retarded in Backsulgi added 10% plastic rice powder than rice powder Backsulgi. All the samples added 2, 4, 6, and 8% nutriprotein at the temperatures of 20 were more effective than others on aging. In texture properties, cohesiveness and springiness were not significantly changed by adding nutriprotein and not significantly changed during the storage period in all samples. Hardness and gumminess decreased by adding 2∼8% nutriprotein and increased during the storage period in all samples. Springiness and gumminess decreased by adding 40% plastic rice powder and increased during the storage period in all sample. Cohesiveness and hardness decreased by the increase of plastic rice powder. The texture characteristics by rheometer showed that Backsulgi with nutriprotein and plastic rice powder exhibited lower in hardness than the control, indicating that nutriprotein and plastic rice powder were effective in retarding retrogradation, which is better when storage time became longer.

신선초설기의 재료배합비에 따른 관능적$\cdot$텍스쳐 특성 (Sensory and Mechanical characteristics of Shinsunchosulgi by Different Ratio of Ingredient)

  • Shinuncho(Angelica keiskei koidz)sulgi is a kind of steamed rice cake by an earthenware steamer. I made Shinuncho-sulgi samples with different amounts of Angelica keiskei koidz - powder and different types of sugars (sugar or honey). The more Angelica keiskei koidz powder it has the bitter it tastes but the lower sweetness, moistness and chewiness it has. Samples with honey have higher sweetness, moistness and chewiness but lower bitterness and after-swallowing than ones with sugar. Color is Shinsuncho-sulgi with $3\%$ of Angelica keiskei koidz - powder and honey has been judged to have the best quality. Flavor and Overall-acceptability are Shinsuncho-sulgi with $2\%$ of Amge;oca keiskei koidz - powder and honey has been judged to have the best quality. The more Angelica keiskei koidz powder it has the higher hardness but the significantly cohesiveness, springiness, gumminess, and chewiness it has. Samples with honey have higher hardness, springiness, cohesiveness, gumminess and chewiness, but lower adhesiveness, than ones with sugar. The moisture content of Shinsuncho-sulgi is $35.89\~37.08\%$. Samples with honey have higher b-value but lower L-value and a-value than ones with sugar. Based on the results of the study, the best ratio of ingredients is as follow non-glutinous flour 196g, Angelica keiskei koidz powder $2\%$ (4g), honey 35ml, salt 2g, water 20ml and $37.08\%$ of moisture content.

향신료를 첨가한 식빵의 품질특성 (Effect of Spice Powder on the Characteristics of Quality of Bread)

  • 마늘분, 생강분, 계피분의 첨가량을 달리하여 제조한 식빵의 품질특성 비교 결과는 다음과 같다. 관능검사에서 마늘분, 생강분, 계피분의 첨가량이 증가할수록 외관의 부드러운 정도(softness)와 색상(color)이 강하다고 평가되었으며, 질감특성의 바삭바삭한 정도(brittle), 경도(hardness), 씹힘성(chewiness)도 첨가량이 증가할수록 높게 나타났다. 기호도면에서는 향신료의 첨가량이 증가할수록 낮게 평가되었으며, 대조군과 마늘분, 생강분, 계피분을 각각 1% 첨가한 식빵을 가장 선호하였다. 색도 측정 결과 향신료의 첨가량이 증가할수록 명도 L값은 감소하였으며, 반면에 적색도 a값과 황색도 b값은 증가하는 경향을 보였다. Texture측정에서 전반적으로 경도(hardness), 응집성(cohesiveness), 탄력성(springiness), 껌성(gumminess), 파쇄성(brittleness) 모두 마늘분, 생강분, 계피분을 각각 1%첨가한 식빵이 가장 낮게 나타났으며, 항신료의 첨가량이 증가할수록 대조군보다 특성이 강하게 나타났다. 관능검사와 기계적검사의 상관관계 결과 명도가 높을수록 선호하였으며, 경도(hardness), 파쇄성(brittleness)이 클수록 기호도가 낮아 입안의 촉감이 부드럽고 부서지는 정도가 적으며 색상이 밝을수록 좋게 평가되었다. 관능검사와 기호도간의 상관관계에서 밀가루의 독특한 냄새, 구수한 맛, 탄력성, 부푼 정도가 높을수록 선호하는 경향을 보여 향신료 특유의 냄새가 강하지 않고 구수하며 탄력성이 좋고 부푼정도가 좋을수록 선호하였다. 이상의 결과 마늘분, 생강분, 계피분을 각각 1% 첨가한 향신료 식빵의 품질이 높게 평가되어 식빵 제조시 향신료의 첨가량은 1%정도가 적당하다고 사료된다.

쑥을 첨가한 두텁떡의 저장성과 품질특성에 관한 연구 (A Study on the Storage and Quality Characteristics of Duteoptteok Added with Mugwort)

  • 본 연구는 두텁떡에 쑥을 첨가하여 저장성과 품질 특성을 평가한 것이다. 쑥 첨가량이 10, 20 및 30%로 증가될수록 두텁떡의 수분 함량과 조섬유 함량은 상당히 증가되었으며 조단백질과 조회분은 감소되었다. 색도는 쑥 첨가비율에 따라 L, a, b값이 감소되었다. 또한 저장기간의 증가에 따라 L값은 감소되었으며, a값과 b값은 유의적인 차이를 나타내지 않았다. Texture 특성은 쑥 첨가 비율이 증가됨에 따라 경도, 탄력성, 응집성, 검성, 씹힘성은 감소되었으나 부착성은 증가되었다. 또한 저장기간의 증가에 따라 경도, 부착성, 검성, 씹힘성은 증가되었지만, 탄력성과 응집성은 감소되었다. 호화도는 쑥 첨가비율이 늘어날수록 증가되었고, 노화도는 쑥 첨가비율의 증가에 따라 감소되었다. 쑥을 첨가한 두텁떡의 생균수, 효모와 곰팡이의 수는 쑥의 첨가비율이 증가됨에 따라 감소되었으며, 저장기간이 늘어남에 따라 증가되었다. 이상의 결과에서 두텁떡에 쑥을 첨가함으로써 품질이 개선되었고 저장기간이 증가된다는 것을 알 수 있었다.

반응표면분석법을 이용한 쥐눈이콩가루 첨가 머핀 제조 조건의 최적화 (Optimization of Muffin with Dried Rhynchosia Molubilis Powder Using Response Surface Methodology)

  • The purpose principal objective of this study was to develop a muffin with the addition of jinuni bean powder. The whole Our analysis was conducted by using using Design Expert 7(Stat - Easy Co. Minneapolis). The jinuni bean muffin was produced by varying the contents of jinuni bean powder(A), sugar(B), and butter(C). According to the Response Surface Methodology(RSM), it showed we delineated 16 experimental points, including two replicants. The optimization We attempted to optimize of the jinuni bean muffins was studied with regard to its analysis of rheology and sensory evaluations. As a result of the redness, hardness, and sensory evaluations, characteristics such as color, appearance, flavor, softness, and overall quality showed a varied in accordance with a quadratic model, whereas lightness, yellowness, and cohesiveness, and gumminess showed evidenced a linear model pattern. Lightness, and yellowness decreased with the increases in the of jinuni bean powder content(p<0.0001), while whereas redness increased with the increases of in the content of jinuni bean powder(p<0.001), in case of over 80g, the redness tended to increase decrease again. In addition, hardness(p<0.05), gumminess(p<0.05), and cohesiveness(p<0.01) showed differed significantly differences with the increases of in the jinuni bean powder content. The results of our sensory evaluation results showed demonstrated significant values in color, appearance, flavor, softness,and overall quality values(p<0.05). The optimal formulation, as assessed by numerical and graphical methods, were was determined to be 50.05 g of jinuni bean powder, 78.56 g of sugar, and 90.97 g of butter.

Hydrolyzed oat flour의 첨가량을 달리하여 제조한 저열량 레이어 케이크의 물리적 및 관능적 특성 (Physical and Sensory Characteristics of Low Calorie Layer Cake Made With Different Levels of Hydrolyzed Oat Flour)

  • 본 연구에서는 옐로우 레이어 케이크 제조시 쇼트닝 대신 탄수화물계 지방 대체물인 hydrolyzed oat flour가 사용될 수 있는지 그 가능성을 조사하고 여러 가지 비율로 대체하여 제조한 저열량 레어어 케이크의 특성을 평가하였다. 케이크 반죽의 비중과 점도는 지방 대체율이 증가할수록 비중은 감소하지만 점도는 증가하였다. 주사전자 현미경 측정 결과 지방 대체물이 증가함에 따라 air cell과 함께 지방구의 수와 크기는 감소하였고 점도는 높을수록 치밀한 구조를 보였다. 물성 특성 측정결과 대체율이 증가 할수록 hardness, gumminess, 및 chewiness는 감소하였고 springiness와 cohesiveness, resilience는 증가하였다. 관능적 평가에서 hydrolyzed oat flour 45% 첨가시 가장 우수한 것으로 평가되었고 지방 대체율이 크게 증가하여도 관능적 평가에서 우수한 것으로 나타났다. 따라서 지방 대체물인 hydrolyzed oat flour는 저열량 레이어 케이크 제조시 쇼트닝 대신 다량 첨가하여도 양질의 품질을 나타내는 지방 대체 소재로 사용될 수 있음이 시사되었다.

매실농축액을 첨가한 설기떡의 품질특성 (Quality Characteristics of Sulgidduk by the Addition of Maesil(Prunus Mume) Cocentrate)

  • The purpose of this study was to determine the most desirable mixture ratio of Maesil (Prunus Mume) concentrate torice flour for the preparation of Sulgidduk. The five different levels of Maesil (Prunus Mume) concentrate were 0%, 4%,8%, 12%, and 16% and were stored over 3 days. The results of this study were as follows. First, the water activity of Sulgidduk was significantly increased upon addition of Maesil(Prunus Mume) concentrate to rice flour. However, in terms of mechanical texture characteristics, the hardness of Sulgidduk was decreased, Maesil(Prunus Mume) concentrate was added to Sulgidduk. The control was $764.58{\pm}5.3\;g/cm^2$. Each amounts of added Maesil(Prunus Mume) concentrate to rice flour (4%, 8%, 12%, and 16%) resulted in hardness levels of $633.44{\pm}13.0\;g/cm^2$, $617.64{\pm}16.2\;g/cm^2$, $585.31{\pm}27.5\;g/cm^2$, and $350.98{\pm}10.2\;g/cm^2$, respectively. In addition, both gumminess and cohesiveness of Sulgidduk increased with increasing amounts of added Maesil (Prunus Mume) concentrate to rice flour. Regarding the color value of Sulgidduk, with added Maesil(Prunus Mume) concentrate the L-value decreased, while both a-and b-value increased. In the sensory evaluation, surface color, taste, and flavor were improved with increasing amounts of Maesil(Prunus Mume) concentrate, whereas texture decreased. Based on sensory evaluation, Maesil (Prunus Mume) concentrate resulted in intensified color, taste, and flavor of Sulgidduk. Consequently, 4% to 8% Maesil (Prunus Mume) concentrate to rice flour was determined to the best formula for improving Sulgidduk in terms of sensory qualities such as moistness, color, taste, flavor and so on.

국내산 비파(Eriobotrya japonica Lindley)를 첨가한 Stirred Yoghurt의 제조 (Preparation of Stirred Yoghurt from Milk Added with Korean Loquat (Eriobotrya japonica Lindley))

  • 비파를 첨가한 stirred yoghurt를 제조하기 위하여 비파 착즙액 $15\%$를 Skim milk에 첨가하여 Streptococcus thermophilus 와 Lactobacillus acidophilus 혼합균주로 발효시킨 발효유에 비파 과육 첨가량 $(5\%,\;10\%,\;15\%,\;w/v)$과 올리고당 첨가량 $(10\%,\;15\%,\;20\%,\;25\%,\;w/v)$을 달리하여 제조한 stirred yoghurt의 품질 특성을 조사하였다. 관능검사 결과에서는 비파 과육 $15\%$와 올리고당 $20\%$를 첨가하였을 때 단맛, 신맛과 전체적인 기호도에서 가장 좋게 평가되었다. 색도 측정 결과 비파 과육 $15\%$ stirred yoghurt에 올리고당의 첨가량이 증가할수록 명도(L값)와 적색도(a값)는 감소하였고 황색도(b값)는 증가하였다. Texture 특성은 $15\%$ 비파 과육 첨가 stirred yoghurt에 올리고당 $20\%$ 첨가시 견고성(hardness), 탄성(springiness), 응집성(cohesiveness), 껌성(gumminess)과 탄력성(resilience)등에서 가장 높게 나타났다. 따라서 $15\%$비파 착즙액 첨가 발효유에 $15\%$비파 과육과 $20\%$ 올리고당의 첨가가 비파 첨가 stirred yoghurt 제조를 위해 가장 적합한 것으로 사료되었다
