Green tea powder (3%, 6%, 9%) was added to green tea bread and physicochemical characteristics of green tea bread were investigated. As the result of measuring the pH of the dough, the pH of control was 5.6 and the pH of the investigated. As the result of measuring the pH of the dough, the pH of control was 5.6 and the pH of the samples were 5.34, 5.29 and 5.26 each. As it is seen above, there is no big difference in the pH of the three different dough. Therefore, it could be that the pH of the dough doesn't really affect on the volume of the bread. As the amount of the green powder was changed, the weight of bread, volume of bread, baking loss rate, the color of the surface, the tenderness of the crumb were affected. The 9% of the green powder gave the most distinguishable affect on these factors. As the amount of thee green tea green tea powder caused the change of color. The result of the sensory evaluation showed that the addition of the green tea powder affected significantly on the quality of the bread. Considering the result of the test, 3% of the green tea powder bread is the best for the production of the bread.
The purpose of this study was to examine the effects of dietary green tea powder supplementation on bone metabolism in streptozotocin-induced diabetic rats. Thirty-two male Sprague-Dawley rats (body weight $210{\pm}3g$) were divided into two groups, diabetic and non-diabetic groups. Each group was randomly divided into two subgroups which were fed with the control and 1% green tea powder diets. The serum and urine concentrations of calcium and phosphorus were determined. Serum osteocalcin and ALP and urinary DPD crosslinks value were measured in order to monitor bone formation and resorption. Bone mineral density (BMD) and bone mineral content (BMC) were estimated using PIXImus in the spine and femur. Body weight gain and FER were lower in the diabetic group than in the non-diabetic group regardless of diets. The serum concentration of calcium and phosphorus were not changed among all groups. Urinary calcium and phosphorus excretion were higher in the diabetic group than in the non-diabetic group regardless of diets; however, they were not significantly different by green tea powder intake. Serum alkaline phosphatase (ALP) was increased in the diabetic group than in thenon-diabetic group. Further, there were no significant differences in serum osteocalcin and urinary deoxypyridinoline crosslinks value among all groups. The levels of spine and femur bone mineral density of the diabetic group were significantly lower than that of the non-diabetic group. Within the diabetic group, spine BMD was significantly higher in rats fed with the green tea powder diet than in rats fed the control diet. Therefore, this study suggests that green tea powder has a beneficial effect on bone health, although it is not directly applicable to humans.
We compared antiobese, hypocholesterolemic, antiplatelet and antioxidant effect of 10% green tea powder and 3% green tea extract in rats pair fed 5% cholesterol diets. The final body weight was decreased significantly compared with the control (p < 0.05). Plasma and liver total cholesterol were lower in group of green tea powder or extract, but not statistically different. HDL cholesterol was increased significantly in group of green tea powder compared with the control or green tea extract (p < 0.05). Plasma triglyceride was significantly decreased in group of green tea extract compared with green tea powder, and green tea powder compared with the control respectively (p < 0.05). Liver triglyceride was significantly decreased in group of green tea powder or green tea extract compared with the control (p < 0.01). Platelet aggregations in the maximum and initial slope were not different among groups. Hemolysis was significantly lower in group of green tea powder compared with the control (p < 0.05). Plasma TBARS production was decreased in group of green tea extract compared with the control (p < 0.05). Na passive leak in intact cells was not different, but Na leak in AAPH treated cell was significantly decreased in group of green tea powder than the control (p < 0.05). The leak increase (${\Delta}Na$ Leak) after AAPH treatment was significantly decreased in groups of green tea powder and extract compared with the control (p < 0.05). Isotope excretion after $^{14}C$-cholesterol ingestion was significantly increased in group of green tea extract compared with the control or the green tea powder (p < 0.05). Consumption of green tea in powder or extract may give beneficial effects in weight control and plasma lipid profiles, impeding metabolic syndrome. More studies are needed to clarify what component of green tea and what mechanism are involved in antiobese and hypolipedemic actions of green tea.
Green tea and their major constituents such as catechins are famous materials for their anti-oxidative and anti-carcinogenic activity, but many compounds with reducing power can promote the oxidation in their oxidized form or in the presence of metal ion. We investigated the pro-oxidative effect of the ethanol extract equivalent up to 30mg of dried weight of green tea leaves in four in vitro systems which could be used for detecting DNA damage. Although ethanol extract of green tea did not show significant mutagenicity in Salmonella typhimurium TA102, which is sensitive strain to oxidative stress, it degraded deoxyribose extensively in the presence of $FeCl_3-EDTA$ complex, promoted 8-oxoguanine formation in the live bacteria cell, Salmonella typhimurium TAI04, and cleaved super coiled DNA strand with the help of copper ion. It suggested that green tea, famous anti-oxidative material, can be pro-oxidant according to the condition of extraction or metal existence.

The aspect of visual accessibility to urban green spaces is an important factor because it contributes making pleasant environment by increasing the visual experience of nature in urban environment. But we have tried neither to consider nor to measure it. Since he concept of visual accessibility has not formally defined yet, it was operationally defined in this study. And then the model of measuring visual accessibility was suggested and verified through the case study on neighborhood parks in Seoul. The findings are as follows : 1) The concept of visual accessibility is defined as opportunity and potentiality to observe green spaces. 2) The model of measuring visual accessibility deals with not only adjacent area but also viewshed area. In adjacent area, considering factors are the area of road adjacent to green spaces and the area of exposed green spaces. In viewshed area, considering factors are the area of road located in viewshed area, the area of exposed green spaces, and the weight according to observing distance. 3) The final model of measuring visual accessibility suggested in this study is as follows.
The effects of dried leaf powders and water and ethanol extracts of persimmon and green tea on lipid metabolism, lipid peroxidation and antioxidative enzyme activity were investigated in 12-month-old rats. Forty-nine male Sprague-Dawley rats weighing 520$\pm$19g were blocked into seven groups according to body weight. Rats were raised for four weeks with control(no tea leaf powder or extracts) and experimental diets containing either 5%(w/w) dried leaf powders of persimmon(Diospyros kaki Thunb) or green tea(Camellia sinensis O. Ktze), or water or ethanol extract from equal amounts of each dried tea powder. Food intakes of all tea diet groups were higher than that of control. Weight gains and food efficiency ratios of all tea diet groups were not significantly different from those of control. All tea diets decreased plasma triglyceride level, especially, green tea powder and persimmon ethanol diets were more effective than other diet. All the tea diet groups showed decrease in liver triglyceride level, and persimmon powder and ethanol extract increased fecal triglyceride excretion. Plasma cholesterol levels of all the tea diet groups were not significantly different from the control, but control. Fecal cholesterliver cholesterol concegroups were significantlntrations of all tea y lower than that of ol excretions of persimmon powder, green tea ethanol extract, persommon ethanol extract and green tea ethanol extract groups were significantly higher than that of control. Plasma and liver thiobarbituric acid reactive substance(TBARS) concentrations of all the tea diet groups were lower than that of control. Especially, plasma TBARS concentrations of green tea powder and persimmon ethanol extract groups were sinificantly low. Red blood cell(RBC) superoxide dismutase(SOD) activities of persimmon ethanol extract and green tea water extract groups were increased, and RBC catalase activities of all experimental groups were not significantly different. RBC glutathione peroxidase(GSH-px) activities of persimmon ethanol extract, persimmon water extract and green tea powder groups were increased. Liver SOD activities of all the tea diet groups except green tea ethanol extract group were higher than that of control. Liver catalase activities of all experimental groups were not significantly different, and liver GSH-px activity of green tea powder group was significantly higher than that of control. In conclusion, dried leaf powders, and water and ethanol extracts of persimmon and green tea were effective in lowering lipid level, inhibiting lipid peroxidation and increasing antioxdative enzyme activities in 12-month-old rat. Green tea leaf powder with high contents of flavonoids and water soluble dietar fiber was most effective in lowering plasma triglyceride, cholesterol and TBARS level. To prolong the shelf life of green chili pepper, packaging films such as 30 $\mu\textrm{m}$ low density polyethylene(LDPE), 20 $\mu\textrm{m}$ perforated polyolefin (SM250), 30 $\mu\textrm{m}$ cast polypropylene (CPP) and 15 $\mu\textrm{m}$ polyolefin (MPD) were used. LDPE showed a suitable gas concentration which consisted of 3-5% O$_2$ and below 5% CO$_2$for keeping quality of green chili peppers after 10 days. Though weight loss was 9.3% for SM250 after 5 days, others showed below 2.0% weight loss after 40 days. Green chili peppers inside CPP package revealed a great decrease in ascorbic acid content after 30 days. SM250 showed a less total microbial count among packages, but there was no great differences among packages.

Cowpea(Vigna unguiculata L. Walp) has excellent physical properties and texture of starch, so it is mainly used in various ways for songpyeon sediment, rice-cake paste, and porridge. To utilize it as various processed products such as songpyeon sediment and cowpea milk, 'Okhyun', which has green cotyledons and black seed coats and can be harvested by combine was developed. A cowpea variety 'Okhyun' was improved from the cross between IT145379 and IT208081 at the JARES in 2022. 'Okhyun' has an erect plant with an intermediate plant habit, a light purple-colored corolla, and heart-shaped leaflets. 'Okhyun' has green cotyledons and black seed coats, and has straight black brown pods when mature. The stem length of 'Okhyun' is 47cm, and the weight of 100-seed weight was 12.9g, which was lower than the control variety 'Okdang'(16.6g). 'Okhyun' contains 25.8mg/100g of anthocyanin, 279mg/100g of total polyphenols, and 335mg/100g of total flavonoids, respectively. The average yield of 'Okhyun' was 1.97ton per hectare, 11% higher than that of the control cultivar 'Okdang'. 'Okhyun'' does not require the installation of an espalier-net net, so it is possible to harvest with a combine. In addition, 'Okhyun' variety with green cotyledons and a black seed coat is expected to contribute to developing regional specialties and various processed products.
The effects of Rhizobium inoculant, compost, and nitrogen on nodulation, growth, dry matter production, yield attributes, and yield of pea (Pisum sativum) var, IPSA Motorshuti-3 were assessed by a field experiment. Among the treatments Rhizobium inoculant alone performed best in recording number and dry weight of nodules/plant. The highest green seed yield of 8.38 ton/ha (36.9% increase over control) and mature seed yield of 2.97 ton/ha (73.7% increase over control) were obtained by the application of 90 kg N/ha. The effects of 60 kg N/ha, Rhizobium inoculant alone and Rhizobium inoculant along with 5 ton compost/ha were same as the effect of 90 kg N/ha in recording plant height, root length, dry weight of shoot, and root both at preflowering and pod filling stages, number of mature pods/plant, number of mature seeds/pod, 1000-seed weight, green, and mature seed yields of pea.
The effects of high relative humidity (RH) on the physicochemical properties and microbial activity of mature green tomatoes ('Dombito') during refrigerated storage were determined at three temperatures (5, 10, and $15^{\circ}C$) and four different RH levels (91, 94, 97, and 99%). At each temperature, the weight loss rates of tomatoes at different levels of RH were significantly (p<0.05) different from each other. For the samples stored at $10^{\circ}C$, the weight losses were generally higher than those for the samples at $15^{\circ}C$ within the same RH level (i.e., greater vapor pressure deficit). The color change rates ('a' value) showed positive slopes, indicating that the tomato color was changing from green to red. Neither bacteria nor fungi caused visible damages to the samples, and the microbial counts were below 650 colony forming units/$cm^2$ during the test period.
