Effect of Organic Materials on Seedling Growth and Yield of Red Pepper

  • In this study, growth of pepper seedlings was tested by treating organic materials in a plastic green house in Ssangok-ri Dogok-myeon, Hwasun-gun, Jeollanam Province from February 3, 2010 to April 19, 2010. The raised seedlings were planted to the organic planting area with an interval of $70cm{\times}55cm$ on April 20 in Deogam-ri Gogeum-myeon Wando-gun and red peppers were harvested at 7 times from July 22 to September 29. Before planting, the plant length of the overgrowth of seedlings was reduced by 26.8% using plant powder treatment as compared to the control group. The red pepper yield was 27% higher than in the control group when 20g of bone ash powder and 20g of plant powder were mixed. The yield tended to increase in other treatments compared to the control group.

견육요리(犬肉料理)의 연구(硏究) (II) -실태조사(實態調査)- (A Study on Korean Dog Meat Cooking(II) -Survey of Dog Meat Cooking Restaurants-)

  • In this study, the kinds of Dog Meat Cooking, side dishes, ingredients, seasonings and recipes were surveyed in 21 Dog Meat Cooking restaurants in Korea from July to August of 1989. 1. Actually, there were four Dog Meat Cooking recipe. Tang (soup:湯) has been served in 20 (95.2%) restaurants and Sukyuk(boiled in water:熟肉) in 19(90.5%) ones. Junkol(boiling vegetables and meat with seasoning:煎骨) and Muchim(sauteed with seasoning:무침) has been done in 16(76.2%) and 10(47.6%) restaurants, respectively. 2. According to the frequencies, the main seasonings when served were roasted perillar powder (95.2%), soybean paste (95.2%), vinegar(81.0%), Dadegi (mixed much red pepper powder, minced ginger, minced garlic, minced onion and black pepper powder, 66.7%), pepper(61.9%), salt(61.9%), salt(61.9%), minced ginger(57.1%), minced garlic(57.1%) and prepared mustard(38.1%). 3. The number of side dishes were 26. Among vegetables, green pepper(90.5%), sliced garlic(81.0%) were served. Chinese cabbage(61.9%) and Kagtuki(42.9%) out of Kimchi and leek salad(28.6%) were also served. 4. The total 17 ingredients were used in Dog Meat Cooking. The major one were white onion (100%), perillar leaf(72.2%), leek(66.6%) and parsley(47.2%).

김치의 숙성중 색상변화에 관한 연구 (Change in Color of Kimchi during Fermentation)

  • Correlation between pH and color of Kimchi during fermentation was investigated to visually evaluate the fermentation degree of Chinese cabbage Kimchi. Color "a" and 'H" values in the white part, "a", "H" and "C" values in the green part of the Kimchi showed a high correlation with pH, respectively. "a" and "H" values of Kimchi juice. "L" and "V" values of red pepper attached to kimchi had a high correlation with pH. The color of the white part was light greenish white in unripended Kimchi, but changed to redish in ripended kimchi. Green part changed from light green to redish green as ripening. Red pepper powder attached to kimchi showed redish color in unripening, but changed to yellowish re din over ripening.

  • This study was designed to establish Korean food culture by analizing 17 sets of Jinyounuigue(진연의궤) Jinchanuigue(진찬의궤), and Jinjarkuigue(진작의궤) which were the records of royal party procedures in Yi dynasty. Side dishes were classified into 20 groups in this study ; Tang (場) 19, Jungol (전골) 3, J'im 18, Jun (전) 20, Jock 14, Pyunuk (片肉) 14, Cho 12, Hyae 17, Po 8, Chae 3, Bung 1, Nanri 1, Sooran 1, Sookran 1, Jaban 1, Kimchi 2, etc. all of 140 different kinds of side dishes. There was no tendency in omission or addition of food materials. Food materials were beef, pork, lamb, chicken, duck, peasant meat, dock's egg, fish, shellfishes, mollusca, curstacea, seaweeds, vegetables, fruits, beancurds, muk (a starch jelly), d'ock, muchrooms, etc. Seasonings were soysauce, pepper, sesame oil, ginger, green-onion, garlic, bean paste, ginger powder, red pepper powder, red pepper paste, salts, vinegar, honey, sesame power, etc.

배추김치의 표준화 연구 (Studies on the Standardization of Chinese Cabbage Kimchi)

  • 배추김치의 표준화를 위하여 조리서 및 관련 연구 논문과 김치공장에서의 담금방법과 재료배합비의 표준값을 구하여 표준화김치로 선정하고 뚜렷한 차이가 있었던 고춧가루의 첨가농도는 관능검사 및 이화학적 실험과 항돌연변이 효과와 in vitro 항암 기능성을 검토하여 결정하였다. 배추김치 담금시 사용빈도가 50% 이상인 부재료는 무, 파였으며, 양념류로는 고춧가루, 마늘, 생강, 젓갈, 설탕으로 나타났다. 또 재료배합비는 절인배추 100에 대해 무 $13.0{\pm}7.0$, 파 $2.0{\pm}0.5$, 마늘 $1.4{\pm}0.4$, 생강 $0.6{\pm}0.3$, 멸치액젓 $2.2{\pm}1.6$, 설탕 $1.0{\pm}0.3$, 최종염도 $2.7{\pm}0.3$로 결정되었으며, 고춧가루의 배합비는 차이를 보여 $2.5{\pm}0.3$$3.5{\pm}0.8$로 나타났다. $15^{\circ}C$에서 0, 2, 4, 6, 8, 10일간 김치를 발효시키면서 관능검사및 이화학적 실험을 실시한 결과 발효 기간은 4일이 가장 적당히 익은 상태였다. 고춧가루의 배합비는 3.5%인 경우가 2.5%인 경우에 비해 관능적으로 우수하였고, pH가 서서히 감소되어 보존성도 있었으며, 김치의 맛에 관여하는 젖산균인 Leuconostoc속 젖산균수도 높게 나타났다. 특히 선정된 표준화 배추 김치 즙액은 $AFB_1$에 대한 높은 항돌연변이 효과를 보였고, SRB assay에서는 AGS 인체 위암세포의 성장을 억제함을 알 수 있었는데 고춧가루의 배합비는 3.5%인 경우가 2.5%인 경우에 비해 항돌연변이 및 암세포 성장 억제 효과가 더 뛰어남을 관찰할 수 있었다. 따라서 표준화 배추김치의 재료 및 배합비는 배추 100에 대해 고춧가루 3.5, 무 13.0, 파 2.0, 마늘 1.4, 생강 0.6, 멸치 액젓 2.2, 설탕 1.0, 최종염도 2.7로 결정되었다. 배추김치의 담금방법은 배추를 10% 소금물에서 10시간 절이고, 물기를 뺀 후, 무, 파는 채 썰어 고춧가루 갠 것을 넣은 다음, 멸치액젓을 넣고, 마늘, 생강, 설탕을 섞은 후 고루 버무린다.

한국 전통음식에 사용된 매운 맛 (Spicy Taste of Korean Traditional Food)

  • The origin of Korean traditional food's spicy taste dates back to the first telling of the Dangun myth-a story of a tiger and bear who tried to reincarnate themselves in human form by eating garlic and wormwood. For a long time, Koreans have eaten spicy vegetables such as green onion, garlic, ginger, mustard, leeks, corni, cinnamon bark, and Chinese peppers (Zanthoxylum schinfolium) and Zanthoxylum bungeanum. In prehistoric times, spicy vegetables were probably used to eliminate the smell of meat. In the agricultural age, they were used to supplement meals with fresh taste. They were also used as a substitute for salt (salt was very precious and expensive) as well as side dishes for the poor. Spicy vegetables have also been used as a substitute for main dish like medicinal gruel and used to increase the spiciness of soup, and they are usually used as a side dish and with condiments in namul (cooked vegetable dishes), sangchae (salad), ssam (wrapped in greens and garnished with red-pepper paste or other condiments) and Kimchi. In addition, chili pepper was introduced to the Korean Peninsula in the middle of the Joseon Dynasty (mid-15th, 16th century). The soil and climate of the Korean Peninsula are suitable to growing chili pepper, and chili pepper has excellent adaptability and productivity. Accordingly, it is processed to red pepper powder and has become a major part of traditional Korean food along with Chinese pepper. Since the Joseon Dynasty, many kinds of Kimchi made with red pepper powder have been developed, and most Koreans enjoy them these days. The main characteristics of Korean food are spiciness and honest-to-goodness taste.

김치 부재료가 젖산균 생육에 미치는 영향 (Effects of Kimchi Minor Ingredients on the Growth of Lactic Acid Bacteria)

  • 파, 마늘, 생강, 적생고추, 고추가루의 멸균 추출액의 농도가 2%와 4%가 되도록 첨가한 배지에서 김치의 주된 젖산균들인 Leu. mesenteroides와 Lac. plantarum의 생육을 조사하였는데, 모든 부재료가 Lac. plantarum의 생육을 저해하였으며 마늘은 이 균에의 저해효과가 가장 컸으며, 생강이 Leu. mesenteroides의 생육에 증진 효과를 보였고, 마늘이 역시 Leu. mesonteroides의 생육에 저해효과를 나타내었다. 마늘, 생강 및 고추가루의 연속분획추출 후 멸균액을 배지에 첨가해 역시 두균의 생육정도를 조사하였을 때 마늘의 부탄을 분획물이 두균의 생육에 저해효과를 보여 그 효과물질은 alkaloid나 flavonoid일 것으로, 또 생강과 고추가루의 물 분획물이 Leu. mesenteroides의 생육 촉진 효과를 나타낸 바 그 효과물질은 당류일 것으로 추정되었다.

길항세균 Bacillus sp. KBC1004를 이용한 고추탄저병의 생물학적 방제제 개발 (Development of Biofungicide Using Bacillus sp. KBC1004 for the Control of Anthracnose of Red Pepper)

  • 고추 재배토양에서 분리한 세균 중에서 고추탄저병균의 균사생장을 강하게 억제하며 분생포자의 발아를 현저히 억제하는 균주를 선발하였다. 이 균의 형태적 생리적 실험과 16S rRNA 분석결과를 토대로 Bacillus sp KBC1004로 명명하였다. KBC1004를 동결 건조하여 얻은 건조물을 원제로 하여 탄수화물과 증량제를 포함하는 수화제형($2{\times}10^8cfu/g$)으로 제조하였을 때 상온에서 2년 이상 안정된 밀도를 유지하였다. 수화제 형태의 KBC1004가 활성화 되어 탄저병균 분생포자의 발아를 억제하려면 최소 24시간이 경과되어야 하였고 실내에서 고추 열매를 이용하여 탄저병의 발병 억제력을 조사한 결과도 24시간 전에 KBC1004 수화제를 살포하고 병원균을 접종하였을 때 효과적인 병 방제가 이루어졌다. 고추포장에서 KBC1004 수화제를 500배로 희석하여 탄저병이 발생하는 6월 말부터 4회 처리하고 10일 경과 후 이병과율을 조사한 결과 화학농약의 방제가가 86.3%이였을 때 80.3%의 높은 방제가를 나타내었다.

LED 처리에 의한 고춧가루의 미생물 저감화 및 품질특성 (Effects of LED Treatment on Microbial Reduction and Quality Characteristics of Red Pepper Powder)

  • 고춧가루의 LED(적색, 황색, 청색, 녹색광) 처리시 저장기간 중 미생물 저감화, 수용성 색소, capsanthin 함량, 표면 색도(Hunter L, a, b, ${\Delta}E$) 및 관능평가를 실시하였다. 저장기간 중 총 호기성 세균은 유의적인 차이를 나타내지 않았으며, 효모 및 곰팡이의 경우 황색 LED 처리군에서 1.76 log 감소되었다. 표면 색도는 저장기간이 경과함에 따라 모든 시료군에서 명도(L), 적색도(a) 및 황색도(b)가 유의적으로 감소하는 경향을 나타내었다. 전반적인 색차는 황색 LED 시료에서 ${\Delta}E$ 값이 3.0 이하로 나타나 다른 시료군에 비해 색도의 변화가 적은 것으로 나타났다. 수용성 색소는 저장기간 중 유의적인 차이는 나타나지 않았으며, capsanthin 함량은 저장기간이 경과함에 따라 감소하였으나 적색 LED 시료와 황색 LED 시료는 저장 10일 후 초기와 유의적인 capsanthin 함량 차이를 나타내지 않았다. 관능적 품질은 대조군의 경우 외관, 색 및 상품성이 저장기간 중 유의적으로 감소하는 경향을 나타내었으나 황색 LED 시료와 녹색 LED 시료는 유의적인 차이가 나타나지 않았다.

한국의 무김치에 관한 역사적 고찰 (A Historical Study of Korean Traditional Radish Kimchi)

  • Radish kimchi is a typical side-dish in Korean traditional food and is a way of keeping vegetables for a extended period using fermentation. This study examined the classification, usage, eating history, variety, and recipes of Korean radish kimchi through ancient and modern era literature. The Korean radish kimchi were categorized into six groups: kkakttugi, seokbakji (or nabakkimchi), dongchimi, jjanji, jangachi, and jangkwa. According to the record, the eating history of radish kimchi comes from before the age of the Three Kingdom period. Radish was preserved in salt, vinegar, soybean paste or lees of fermented liquor in the early times. This pickled radish was not supposed to be watery. Radish kimchi was divided into watery kimchi (dongchimi) during the period of United Silla and the Koryo Dynasty. Kimchi was mixed with Chinese cabbage to make seokbakji or nabakkimchi. Up to the early Chosun Dynasty, the key ingredient of kimchi was radish. After the middle of the Chosun Dynasty, kimchi was mixed with red pepper powder, salted fish, soybean sauce, and various ingredients. There were many kinds of radish kimchi during the late Chosun Dynasty. In the 11 Korean recipe books published within the past 100 years, there are nine kinds of kkakttugi, three kinds of seokbakji, four kinds of dongchimi, three kinds of jjanji, nine kinds of jangachi, and five kinds of jangkwa. Kkakttugi (cubed, sliced or julienne radish) was pickled with salt, red pepper powder, garlic, green onion, oyster, sugar, salted fish, and more. Seokbakji and nabakkimchi were not as salty, so they could not be preserved as long. Dongchimi (watery radish kimchi without red pepper powder) was made of radish, water, salt, 18 side ingredients, 13 condiments, and seven garnishes. Jjanji was pickled to be very salty and was eaten during summer. Jangachi can be used as a regular side dish and is made of radish or dried radish slices pickled or seasoned with salt, soy sauce, vinegar, soybean paste, lees of fermented liquor, and spices. Jangkwa is used as a stir-fry method and has been segregated from jangachi relatively recently.
