Quality Characteristics of Glutinous Rice Dasik added with Burdock (Arctium lappa) (우엉을 첨가한 찹쌀 다식의 품질 특성)

  • This study investigated the quality characteristics of burdock glutinous rice dasik prepared with different contents of freezedried burdock powder (0, 3, 6, 9 and 12%) and roasted glutinous rice. The moisture contents of burdock glutinous rice dasik significantly increased as the amount of burdock powder increased(p<0.001). The L-value, a-value and b-value of burdock glutinous rice dasik were lower than those of the control group. The sugar content of glutinous rice dasik added with 6% or more burdock powder was higher than that of the control group. The hardness and adhesiveness significantly increased as the amount of burdock powder increased. The DPPH free radical scavenging activities of burdock glutinous rice dasik added with 9% and 12% burdock powder was higher than that of the control group. In the sensory evaluation, the burdock glutinous rice dasik added with 6% burdock powder was highly preferred, and was thus as the optimal mixing ratio for texture and sensory characteristics.

  • The purpose of this study was to determine the most appropriate ratio for burdock glutinous rice Dasik. Burdock glutinous rice Dasik was prepared with different levels of burdock powder (0, 3, 6, 9 and 12%) and the quality characteristics of burdock glutinous rice Dasik were analyzed. Moisture contents of burdock glutinous rice Dasik increased as the amount of burdock powder increased (p<0.001) compared to the control group. The L-value, a-value, and b-value of burdock glutinous rice Dasik showed a tendency to decrease compared to the control group. The sugar content of burdock glutinous rice Dasik increased (p<0.001) with the amount of burdock powder. The hardness and adhesiveness of the glutinous rice Dasik with burdock powder of 6% or less were decreased, but those with 9% or more burdock powder had higher hardness and adhesiveness than the control group. In addition, the cohesiveness, springiness, gumminess, and chewiness of glutinous rice Dasik with burdock powder increased compared to the control group. The DPPH free radical scavenging activity of the glutinous rice Dasik with 9% and 12% burdock powder were higher than that of the control group (p<0.001). In the sensory test of burdock glutinous rice Dasik, the samples added with 3% and 6% burdock powder gained higher preferences, but the evaluations of others were lower than that of the control group. The glutinous rice Dasik with less than 6% burdock powder was highly evaluated, so it is considered as the most appropriate sample.

Quality Characteristics of Glutinous Rice Dasik by the Addition of Job's Tears Flour (율무가루 첨가량에 따른 찹쌀다식의 품질특성)

  • The aim of this study was to determine the optimum amount of Job's tears flour to add to glutinous rice flour in the preparation of Dasik. As the Job's tears flour level in the formulation increased, the moisture contents of samples increased (9.70-10.97%), L- and b-values decreased, and the a-value increased. According to the mechanical evaluation results, hardness decreased with increasing amounts of Job's tears flour, cohesiveness was highest in the 60% Job's tears flour sample, springiness and adhesiveness were highest in the 40% sample, and gumminess and chewiness did not differ significantly according to the level of Job's tears flour. From the sensory evaluation results, the 30% sample received the highest color, nutty taste, roughness, softness, chewiness, and overall acceptability scores. In conclusion, based on its sensory and mechanical qualities, the optimal Dasik formulation consisted of 30% Job's tears flour added to glutinous rice flour.

Quality Characteristics of Glutinous Rice Dasik by the Addition of Baekbokryung Powder (백복령가루를 첨가한 다식의 품질특성)

  • The aim of the study was to determine the optimum amount of Baekbokryung powder to add to lutinous rice flour in the preparation of Dasik. As the Baekbokryung powder level in the formulation increased, the moisture contents of samples increased (10.97~12.19%), Land b-values decreased, and the a-value increased. According to the mechanical evaluation results, hardness increased with increasing amounts of Baekbokryung powder and springiness decreased. Cohesiveness, gumminess and adhesiveness did not differ significantly according to the level of Baekbokryung powder. Chewiness was highest in the 0% Baekbokryung powder sample. From the sensory evaluation results, the 6% sample received high color, nutty taste, bitterness, softness, chewiness, after taste, and overall acceptability scores. In conclusion, based on its sensory and mechanical qualities, the optimal Dasik formulation consisted of 6% Baekbokryung powder added to glutinous rice flour.

  • Regional foods is influenced by weather, local and social environment etc. The purpose of this study was to understand that regional foods in the middle of Chosun Dynasty through Domundaejac. Some of representative dishes of the Hansung and Kyonggi-do Area is duck(rice cake) of seasonally celebrated days, hangua(korea confectionary) and rice wine. Typical foods in Chungchong-do Area is included persimmon, jujube, watermelon and wax gourd. Some of the well-known food in Kangwon-do Area is pear, bangpungchuk(gruel), sukebyung(rice cake), woongjijunggua(korea confectionary) and sanat-kimchi(picked mustard leaves and stem) that is seemed characteristics of mountainous section. Some of the famous dishes in Cholla-do Area is backsanja(korea confectionary), tea, chuksun kimchi(bamboo shoot pickle), citrus fruits and ear shell. Kyongsan-do Area ia famous persimmon, bamboo fruit, dasik(korea confectionary) and yakban(glutinous rice cake). Hwanghae-do Area is famed pear and choshi as assumed the eatly form of gochujang(thick soypaste mixed with red pepper). Representative dishes are deljjuk(blue berry), herring, sangat-kimchi(picked mustard leaves and sterm) in Hamgyong-do Area and daemandu(big dumpling) in Pyongan-do Area. The coast area is famous for using lots of sea food. Fresh seafood is consumed raw, and clams, fish and seaweed are liberally added to soups and other dishes. The East coast is catched salmon, flatfish, codfish, sandfish and mackerel The West coast is catched yellow corvenia, lobster, tiny shrimp and large-eyed herring. The South coast is catched sea mussel, codfish and laver.
