Potato starches are obtained from Irish Cobbler (the dry type), Shepody and superior (the intermediate type) and Dejima (the moist type). Rheological properties of heat-gelatinized potato starch paste were studied to elucidate difference of various potato starches. Heat-gelatinized 3 to 7% potato starch paste showed pseudo plasticity in yield stress. As starch paste concentration increased, the values of consistency index was increased. Relationship between logarithmic consistency index and concentration of potato starch paste was linear at 5% starch concentration. Concentration dependence of consistency index and yield stress of Shepody was highest. As measuring temperature increased, the value of consistency index was decreased. Irish Cobbler starch paste at $50^{\circ}C$, Shepody, Superior and Dejima starch paste at $60^{\circ}C$ showed linear relationships with different slopes. The activation energies of Shepody starch paste was 3.97㎉l/㏖.
In order to find out the effect of low level of starch acetylation on physicochemical properties of potato starch, amylose content, digestibility of raw and gelatinized starch, thermal properties, pasting properties, and the swelling power of native and acetylated potato starches were measured. The amylose content was significantly lower in acetylated starch than in their counterpart native starches. Though a tendency in the decrease in digestibility of raw starch was observed with starch acetylation, acetylation did not alter the proportion of readily digestible starch (RDS), slowly digestible starch (SDS), and resistant starch (RS) of both raw and gelatinized potato starches. No clear increase in the swelling power was observed, however, the peak and onset gelatinization temperatures and the enthalpy required for starch gelatinization decreased with starch acetylation. Peak and breakdown viscosities were reduced due to acetylation of potato starch while final viscosity and set back were increased.
Rheological properties of gelatinized potato starch were investigated with Brookfield wide-gap viscometer at various conditions. The gelatinized potato starch at 3-7% showed a pseudoplastic behavior with yield stress, and presented thixotropic properties with time-dependent structural decays. The consistency index and yield stress of gelatinized starch were proportional to starch concentration but inversely proportional to measurement temperature, and the flow behavior index did not show constant relationship. The consistency index and yield stress of the gelatinized starch on addition of phosphate decreased as the flow behavior index increased. The values of activation energy at initial and equilibrium were 1.52 kcal/g.mole and 127 kcal/g.mole, respectively.

Rheological properties of gelatinized rice starch solutions were investigated with Brookfield rotational viscometer. The 8% starch solution showed thixotropic behavior with yield stress. The alkali gelatinized starch was more thixotropic than the thermal gelatinized one. The time dependent characteristics of starch solutions followed Tiu's model. The value of rate constant $(a_1)$ in Tiu's model increased linearly with shear rate, and was exponentially dependent on concentration and temperature. Temperature dependency of rate constant and apparent viscosity followed Arrhenius type equation and the activation energy were about 14.3 and 6.8 Kcal/g mole, respectively. The $a_1-value$ was found to be useful to evaluate changes in structaral decay on the shearing time of gelatinized rice starch solutions.
To increase utilization of Korean yam, the rheological properties of gelatinized yam (Dioscorea aimadoimo) starch solutions at various concentrations $(1{\sim}5%)$ and temperature $(30{\sim}60^{\circ}C)$ were investigated. The rheological behavior of gelatinized yam starch solutions was illustrated by power-law model and Casson equation and exhibited pseudoplastic behavior with yield stress. The pseudoplasticity of starch solutions increased largly concentration of starch increased. As the temperature increased from $30^{\circ}C$ to $60^{\circ}C$, the dependency of starch concentration decreased, B were decreased from 0.40449 to 0.39352. The activation energy of flow of gelatinized yam starch solutions were increased from 4.1415 to $5.45329{\times}10^6\;J/kg{\cdot}mol$ by increasing starch concentration from 1% to 5%.

Ethanol fermentation of chemically gelatinized starch and uncooked raw starch was nested with various starchy materials. Starches were gelatinized by 5.4% NaOH and neutralized by sulfuric acid. The patterns of $CO_2$ evolving and the ethanol yield for the chemically gelatinized starch resemble those obtained with thermally gelatinized starch. The alcoholic fermentation of raw starch was carried out by the simultanous saccharification-fermentation using a commercial glucoamylase and yeast. Ethanol yield from uncooked rice starch fermentation was highly comparable to that from cooked one. $CO_2$ evolving rates of the uncooked starches of corn, barley, tapioca and sweet potato were lower than those of the cooked starches. However, the final ethanol yields were similar or slightly lower, depending on the types of starch.
The effects of alum$(Al{\cdot}K(SO_4)_2{\cdot}12H_{2}O)$ on the rheological properties of $3{\sim}9%(w/v)$ gelatinized solutions of nonwaxy and waxy rice starches were investigated to evaluate the possibility of utilizing a starch modifying agent. Gelatinized non-waxy and waxy rice starch solutions showed a pseudoplastic flow behavior with yield stress. Pseudoplasticity of two rice starch solutions increased by the addition of alum$(0.05{\sim}1.0%,\;w/w)$. Alum increased the yield stresses and consistency indexes of two rice starches and these values decreased with increasing starch concentration. Also, alum(0.5%, w/w) increased the flow activation energy of gelatinized waxy rice starch solution and activation energy decreased with increasing waxy rice starch concentration in the range of $3{\sim}7%(w/v)$, but for the nonwaxy rice starch, activation energy decreased at starch concentration of 7%(w/v). From the above results, it was found that alum had the possibility of utilizing a modifying agent for the rheological property of gelatinized starch solution.
The activity and characteristics of ${\alpha}$-amylase in soy milk as well as in Jeungpyun batters were determined to investigate the enzyme system related to Jeungpyun preparation. ${\alpha}$-Amylase activity was detected in soy milk as well as in Jeungpyun batters. Soy milk had ${\alpha}$-amylase activity of 0.79 units/mg protein for gelatinized starch and 0.036 units/mg protein for raw starch. ${\alpha}$-Amylase in soy milk showed maximum activities at pH 5.92∼6.87 and at 60$^{\circ}C$ for both gelatinized starch and raw starch. ${\alpha}$-Amylase activities of Jeungpyun batters containing soy milk were 25.59 units/mg protein for gelatinized starch and 1.37 units/mg protein for raw starch. Jeungpyun batters without soy milk demonstrated ${\alpha}$-amylase activities of 3.37 units/mg protein for gelatinized starch and 0.49 units/mg protein for raw starch. ${\alpha}$-Amylase of Jeungpyun batters showed an optimal activity at pH 5.25 and at 60$^{\circ}C$ for both gelatinized and raw starch. The results demonstrated that Jeungpyun batters with soy milk showed significantly higher ${\alpha}$-amylase activity than the ones without soy milk.
The product specificity of Bacillus ${\alpha}-amylase$ on raw rice starch has teen studied by using HPLC and scanning electron microscopy (SEM). Analysis of starch degradation products digested by ${\alpha}-amylase$ showed considerable differences between raw and gelatinized rice. The hydrolysis of raw rice starch resulted in formation of more glucose and maltose than those of gelatinized starch. SEM revealed characteristic enzyme degradation patterns. Hollow curvatures were observed in gelatinized starch, indicating the substrate is hydrolyzed in the interior of the starch chain by Bacillus ${\alpha}-amylase$. In contrast, raw starch were hydrolyzed from the end of the substrate, resulting in pinholes over the surface of the starch granules.

The rheological properties of gelatinized arrowroot stach solution $(4{\sim}7%)$ followed the power law and showed a pseudoplastic behavior at the temperature range of $30{\sim}66^{\circ}C$. The flow behavior index was essentially remained constant at all temperatures, but decreased as starch concentration increased. The consistency index was exponentially increased with the increase of starch concentration. The activation energy of flow of gelatinized starch solution was $4.068{\sim}4.542\;kcal/mole$.
