Effect of Gamma-Irradiated Red Pepper Powder on Physicochemical Properties of Kakdugi, a Korean Traditional Radish Kimchi

  • Physicochemical properties and sensory characteristics of kakdugi prepared with red pepper powder gamma-irradiated up to 7 kGy were determined during fermentation at 5℃. The overall fermentation patterns between kakdugies with irradiated and nonirradiated red pepper powder were similar. Kakdugi prepared with irradiated red pepper powder required one week longer time for optimal ripening compared to the kakdugi control. Irradiated red pepper powder did not affect the hardness and fracturability of kakdugi during fermentation. Kakdugi prepared with irradiated red pepper powder maintained a redder color than the kakdugi control. No significant differences were observed in taste, odor, texture, and overall acceptability (p<0.05) except for color. It can be concluded that irradiation of red pepper powder, up to 7 kGy, did not affect the quality of kakdugi with regard to physicochemical and sensory characteristics during fermentation. Moreover, irradiated red pepper powder was better for maintaining the red color and delaying optimum ripening time of kakdugi fermentation.

Detection of Gamma-Irradiated Grains by Using DEFT/APC Method (곡류의 감마선 조사 검지를 위한 DEFT/APC 방법의 이용)

  • For the screening of gamma-irradiated grains, domestic rice, glutinous rice, barley, and wheat were irradiated with 0.1, 0.3, 0.5, 0.7, and 1.0 kGy and screened using the DEFT/APC (Direct Epifluorescent Filter Technique/Aerobic Plate Count) method. The log DEFT/APT units increased with the dose increment in all samples, whereas the log APC unit decreased gradually. For rice, barley, and wheat, unirradiated and irradiated samples with below 0.3 kGy had 2.0 or lower logarithmic units, whereas those with 0.5 kGy or higher had 2.0 or higher logarithmic units. For glutinous rice, the sample irradiated with 0.5 kGy showed 1.92 logarithmic unit and those with 0.7 kGy or higher had 2.0 or higher logarithmic units. These results suggest that if the grains show 2.0 or higher logarithmic units, they could be assumed to have been irradiated at a dose level of at least 0.5 kGy. In conclusion, grains could be easily screened through the DEFT/APC method.

Hygienic Quality and Genotoxicological Safety of Gamma Irradiated Pork (감마선조사에 의한 돈육의 위생화 및 유전독성학적 안전성 평가)

  • Gamma irradiation was applied to pork for improving its hygienic quality and evaluating its possible genotoxicity. The effective dose of irradiation was 3 kGy in pork for the sterilization of all contaminated microorganisms tested. After 8 weeks of storage at 5oC, no growth of microorganisms except for psychrophile and total aerobic bacteria was observed in the more than 3 kGy irradiated pork. The genotoxicity of high dose irradiated pork(30 kGy) was evaluated by Salmonella typhimurium reversion assay, chromosomal aberration test and in vivo micronucleus assay. The results were negative in the bacterial reversion assay with S. typhimurium TA98, TA100, TA1535, TA1537. In chromosomal aberration tests with CHL cells and in vivo mouse micronucleus assay, no significant difference in the incidences of chromosomal aberration and micronuclei was seen between nonirradiated and 30 kGy irradiated porks. These results indicate that 30 kGy irradiated pork did not show any genotoxic effects under these experimental conditions.

Quality Properties of Ginseng Chicken Porridge Prepared with Individually Gamma Irradiated Raw Materials

  • This study was to establish irradiation process for serving ginseng chicken porridge to immune-compromised patients. Raw chicken, glutinous rice, ginseng, garlic, dried jujube and carrot were used as raw materials for ginseng chicken porridge. The initial level of microorganisms contaminated in raw materials and their predominant species were determined. The level of microorganism detected in raw chicken and in ginseng were 3.4 Log CFU/g and 4.7 Log CFU/g, respectively. Major predominant microorganisms were Pseudomonas fragi in chicken, Enterobactor faecalis in carrot, and Bacillus subtilis in other materials. Chicken and carrot were excluded from irradiation treatment because ordinary thermal treatment can inactivate the microorganisms contaminated in those materials. Five kGy of gamma ray was the effective sterilizing dose required to inactivate B. subtilis in glutinous rice, garlic and jujube, and 10 kGy in ginseng. Ginseng chicken porridge was prepared with each of raw materials gamma-irradiated with the selected sterilizing doses. Control was ginseng chicken porridge prepared with non-irradiated materials. The growth of microorganisms was not observed in the chicken porridge prepared with irradiated raw materials. Sensory results showed that the score of flavor and off-flavor was slightly lower in ginseng chicken porridge prepared with irradiated raw materials than in control. This was considered to be due to the increase of TBARS values by gamma irradiation. However, there was no significant difference on overall acceptance between the porridge prepared with irradiated raw materials and control. The results showed that the individual gamma irradiation of raw materials can be applied to prepare ginseng chicken porridge as meals for the immunocompromised patients.

Effects of Irradiation Temperature on the Sensory Quality Improvement of Gamma-irradiated Ganjang-gejang, Korean Traditional Marinated Raw Crab Portunus trituberculatus in Soybean Sauce

  • This study was conducted to confirm quality properties of sterilized Ganjang-gejang (marinated crab Portunus trituberculatus) with Korean soy sauce using by gamma irradiation and to improve quality of sterilized Ganjang-gejang. The Ganjang-gejang was irradiated at dose of 3, 6, 9, 12, and 15 kGy by gamma irradiation and there was evaluated in microbiological, physicochemical, and sensory properties. Total aerobic bacteria and fungi contents of non-irradiated samples were about 6 and 4 log CFU/g level, respectively. Gamma-irradiated samples at above 9 kGy did not contain aerobic bacteria or fungi at detection limit less than 2 log CFU/g, but sensory scores were significantly decreased depending on the irradiation dose. To improve the sensory qualities of gamma-irradiated Ganjang-gejang, the temperature was adjusted during sample irradiation. When samples were irradiated under freezing temperatures, especially on dry ice, the TBARS and the deterioration of sensory qualities of Ganjan-Gejang were reduced. Different odor patterns were observed among samples, as observed using electronic nose analysis system. The results of this study indicated that treatment with irradiation under low temperatures may help to preparing high-quality Ganjang-gejang.

Changes in Allergenicity of Porcine Serum Albumin by Gamma Irradiation

  • Pork is an excellent source of essential nutrients such as protein. However, pork can trigger hypersensitivity and serum albumin of pork is known as major allergen. In this study, to evaluate the effect of gamma irradiation on the allergenicity of porcine serum albumin (PSA), PSA solution was irradiated at 3, 5, 7, 10, 15, and 20 kGy. The changes in the ability of PSA to bind IgG and patient's serum caused by gamma irradiation were observed by ci-ELISA and immunoblotting. SDS-PAGE was used for measuring the conformational change of gamma-irradiated PSA. The ability of 3-kGy-irradiated PSA to bind p-IgG and patient's serum was decreased to 30% and 15%, respectively. The binding ability showed no significant differences among all irradiated samples. SDS-PAGE showed that the irradiated PSA bands were degraded and aggregated. Immunoblotting of irradiated PSA revealed that IgG and patient's serum were rarely recognized at 3 kGy. Therefore, gamma irradiation could be applied to less-allergenic pork products.

Changes of Physicochemical Properties of Gamma Irradiated Porks during Storage (감마선 조사된 돈육의 저장중 이화학적 성질 변화)

  • The changes in physicochemical properties of gamma irradiated porks were investigated during storage at different temperature and periods. TBA values increased according to the increment of irradiation dose levels. TBA values of nonirradiated and irradiated samples drastically increased with storage period and temperatures at both $5^{\circ}C\;and\;-20^{\circ}C$. The acid value of porks stored at $5^{\circ}C$ was increased rapidly with the elapse of storage period in both nonirradiated and irradiated samples. However, the value decreased with increasing irradiation dose levels. VBN values increased more rapidly in nonirradiated samples than in irradiated samples with the storage period. Especially, VBN value of nonirradiated pork was four times higher than that of 3 kGy-irradiated one. No significant differences in the composition of fatty acids were observed in gamma irradiated samples. Free amino acids were changed with storage periods, but were not significantly affected by gamma irradiation.

  • The radiation-induced changes taking place in poly(vinylidene fluoride)(PVDF) exposed to $^{60}Co\;\gamma-ray$ irradiation were investigated in correlation with the applied doses. Samples were irradiated in air at room temperature by $^{60}Co\;\gamma-ray$ to doses in the range of 200 to 1000 kGy. Various properties of the irradiated PVDF were studied using nm, differential scanning calorimetry(DSC) and gel fraction. $^{60}Co\;\gamma-ray$ irradiation was found to induce changes in chemical, thermal, structural properties of PVDF and such changes vary depending on the radiation dose.

  • This paper describes the degraded properties of between the charge and discharge current for ${\gamma}$-ray irradiated in electric power cable rubbers using in nuclear power generating station. The charge and discharge current of degradation in EPR(Ethylene Propylene Rubber), which were irradiated with the radiant capacity of 0.033 Mrad/h, have been measured in order to investigate the influence of the atmosphere(in amount of reinforcing agent, moisture absorption and heat treatment) on electrical properties. When ${\gamma}$-ray were irradiated on the EPR with more reinforcing agent from 4 to 40 Phr, charge and discharge currents was increase due to the amount of reinforcing agent. It was verified that the discharging and charging currents irradiated by ${\gamma}$-ray were higher than those that was not irradiated. The amount of the degraded current was more after moisture absorption than before moisture absorption. The charge and discharge current after heat treatment was similar to that of before heat treatment and it was decreased with the time elapsed. As these properties related with ${\gamma}$-ray irradiation dose, it is suggested that these properties can be utilized as a index of irradiation degradation.

  • Structural modification of corn starch by gamma irradiation was evaluated for under dry conditions at varied intensities from 0 to 40 kGy. Under scanning electron microscopy, the granule shape of corn starch was not significantly affected by the irradiation up to 40 kGy. In addition, X-ray diffraction and melting patterns of the irradiated starches were similar to those of the native starch, indicating that crystalline regions in the starch granules were not changed by irradiation. However, the pattern of gel permeation column chromatography showed a significant increase in partial hydrolysis of gamma irradiated starch samples. The degree of polymerization and the paste viscosity of irradiated starch samples dose-dependently decreased significantly with irradiation, and increased solubility and clarity were observed in the irradiated starch solution. In addition, the degree of retrogradation decreased as irradiation dose increased. Irradiation of corn starch has advantages over the ordinary acid or the enzyme hydrolysis modification methods. It does not affect the granular shape and crystalline phase of starch during hydrolysis, and the process can be carried out in dry state.
