초등학교 저학년과 고학년 학생의 식습관 및 기호도 조사 - 대전지역을 중심으로 - (Survey on the Eating Habit and Food Preference of Lower and Higher Grade Elementary School Students - Based on Daejeon Area -)

  • The purpose of this study is to analyze the differences of food habits and food preferences between lower and higher grade students through the survey of elementary school students in Daejeon four elementary schools located in Jung-Gu and Seo-Gu in Daejeon are selected for this survey randomly and the completion of the questionnaires are according to grade. 1. Practical Analysis of Food Habits: For regular meals, the highest number of subjects skipped breakfast. It is being found that the girl students (81.61%) consumed more cooked rice than the boys (78.85%) and more boys (13.10%) ate bread or milk more than the girls (9.20%). The most important thing for the lower grades students (34.20%) when consuming is the nutritious foods, while the higher grades students (49.67%) consumed the set meals. During consumption, the highest number of the subjects watched TV or read books from time to time. More higher grades students (38.98%) preferred spicy and salty foods than the lower grades (22.09%). 2. Food Preferences: Between rice and noodles, most subjects preferred cooked rice (81.38%), Jajangmyeon (80.80%), Ramyeon (79.43%), and disliked bean-mixed rice (28.39%). For soups, Most students enjoy the Deokkguk. Majority of the subjects prefer meat and fried or steamed foods, and also grilled and pan-fried dishes. For the pan-roasted and fried dishes, most subjects did not enjoy the rhizome fry and sweet-pumpkin fry methods, and for vegetables, they did not like wild vegetable and seasoned cucumber (40.57%) The higher grades students enjoy the vegetables and salads more than the lower grades students. For Kimchi varieties, it is found that subjects like the cabbage Kimchi (69.66%) the most. There is little difference in food preference between the lower and higher grade students, but the rankings of food preferences are different according to various grades.

폐유를 이용한 하수슬러지 유중 건조 연구 (A Study for Drying of Sewage Sludge through Immersion Frying Using Used Oil)

  • 유기성 슬러지의 직접 매립 금지와 가까운 장래에 해양투기가 금지될 전망이므로 발생되는 슬러지의 적절한 처리에 대한 발전된 기술의 연구가 필요하다. 본 연구에서는 슬러지 건조기술 중 하나인 폐유를 활용하여 하수슬러지를 유중 건조시키는 방법에 대한 연구를 수행하였다. 이 공정의 기본 원리는 오일을 가열함으로써 형성되는 급격한 압력변화에 의해 슬러지 공극을 통하여 수분이 빠르게 증발하도록 하는 것이다. 일련의 건조 실험 결과, 건조온도, 건조시간, 오일종류, 슬러지 형상 등 중요한 실험변수에 따른 건조곡선이 얻어졌다. 건조 오일로 폐식용유를 사용한 경우 건조시간에 따른 수분함유량 변화는 건조시간 10분이 지나면서 현저히 감소하기 시작하여 14분 이후에는 건조온도에 관계없이 수분함유량이 5% 이내로 감소하였다. 유중 건조 온도는 120$^{\circ}C$에 비해 140$^{\circ}C$ 이상에서 수분 증발이 급격히 증가한 것으로 나타났다. 그러나 140$^{\circ}C$ 이상에서는 큰 차이를 나타내지 않았다. 슬러지 직경이 감소할수록 효율적으로 건조되는 것으로 나타났는데 이는 단위체적당 표면적의 증가에 기인하는 것이다. 오일 종류의 변화에 따른 영향을 살펴보면 폐 엔진오일을 사용한 경우 점도가 증가함에 따라 폐식용유에 비하여 수분 증발이 현저히 지체되는 현상이 나타났다. 그러나 건조온도 140$^{\circ}C$ 이상에서는 120$^{\circ}C$에 비하여 건조시간이 경과함에 따라 수분 증발이 비교적 크게 증가하는 결과를 나타내었다. 그러므로 폐오일의 종류에 관계없이 건조온도는 140$^{\circ}C$ 이상으로 유지하는 것이 바람직한 것으로 사료된다.

중랑천의 수서동물에 관한 생태학적 연구 (An Eclogical Study on the Aquatic Animals in Jungrang Stream of Seoul)

  • Most of urban streams in Korea have been changed channel forms and suffered from direct inflow of domestic sewage, etc. Therefore, maintenance of structure and function of those ecosystem are hard. The present study was carried out to examine the life survival maintenance ability of the stream by community analysis of aquatic animals in typical urban stream (Jungrang stream) in Seoul. The aquatic animals were composed of 31 species, 18 families, 8 orders, 5 classes in 4 phyla. Seasonal species number showed big fluctuation between 8 species in Winter and 24 species in Autumn. Major dominant species in Jungrang stream were Tubificidae sp.1, Chironomidae sp.1, Chironomidae sp.2 and Physa acuta, and above endurance species for water pollution occupied very high dominance indices. But, Cercion hieroglyphicum, Ischnura asiatica, Rantra chinensis, Herochares striatus, Agabus japonicus in benthic macroinvertebrates of a few individuals are appeared. Also, fry of Carassius auratus and Silurus asotus in fish are occurred. Therefore, we can be inferred on posibility of growth and spawning of above species in the stream. Jungrang stream has a small quantity of natural riffle areas, ponds and watergrass areas by channel form of water course. Aquatic animals in Jungrang stream has been suffered by reduction of self-purification reaction ability and have mass production of attached algae on the stream bed. For analysis of fluctuation of life survival maintenance ability in Jungrang stream, long-term survey is needed.

식품원가 분류에 따른 산업체급식의 식단관리 및 영양공급량평가 (Evaluation of Menu Management and Nutrition Supply in Industrial Foodservice by Food Cost)

  • Unit price of meal provision in industrial foodservice differs with each business. It is believed that menu management work, contents of menu, and nutrition supply performed by dietitian are different with unit price of meal provision. In this sense, purposes of this study are to examine meal management work and contents of menu, by food cost, at industrial foodservice in Taegu, Kyungbuk area and to evaluate variety of menu and nutrition supply. Results of the study are as follows: 1. Average number of side dishes provided at meal, including Kimchi, was 2 at low unit price, 3.0 at middle unit price and 3.1 at high unit price. 2. Possession ratio of account books using for menu management was low. 3. With regard to kind of menu, high unit price was most various and showed more various, compared to low unit price, especially in cooking oil-used cook methods such as broil, pan-fried food, fry, and roast. 4. High unit price was found as the highest in kind of used food and supply volume. 5. Sugar, Mineral, Vitamine, and Protein were satisfied with standard food content, but fat and calcium were not. 6. Supply volume of food was positively correlated to supply volume of nutrient, but kinds of cook methods and food type were not correlated to that of nutrient.

Effects on the Proton Conduction Limiting Barriers and Trajectories in BaZr0.875Y0.125O3 Due to the Presence of Other Protons

  • Kinetic Monte Carlo (KMC) and graph searches show that proton conduction limiting barriers and trajectories in $BaZr_{0.875}Y_{0.125}O_3$ are affected by the presence of other protons. At 1000 K, KMC limiting conduction barriers increase from 0.39 eV to 0.45 eV as the proton number is increased. The proton-proton radial distribution begins to rise at $2{\AA}$ and peaks at $4{\AA}$, which is half the distance expected, based on the proton concentration. Density functional theory (DFT) calculations find proton/proton distances of 2.60 and $2.16{\AA}$ in the lowest energy two-proton configurations. A simple average of the limiting barriers for 7-10 step periodic long range paths found via graph theory at 1100 K shows an increase in activation barrier from 0.32 eV to 0.37 eV when a proton is added. Both KMC and graph theory show that protons can affect each other's pathways and raise the overall conduction barriers.

경골어류의 성전환에 관한 연구 II. $17\beta$-Estradiol 및 $17\alpha$-Methyltestosterone을 이용한 Guppy 및 Tilapia의 성전환에 관한 연구 (Sex Reverse in Teleost Culture II. Sex Reversal of Guppy and Tilapia by $17\beta$-Estradiol and $17\alpha$-Methyltestoserone)

  • Guppy fry were treated for the first 40 days of life with 0, 20, 40, 60 & 100$\mu\textrm{g}$ of estradiol per gram of food in order to change the sex of normal males to functional females(genetic male). The present investigation deals with the effects of steroid hormones, such as $\beta$-estradiol and testosterone, on the sex differentiation in guppy and tilapia. The results obtained were summarized as follows. 1. In B (20$\mu\textrm{g}$/g diet) group 17$\beta$-estradiol-treated, 67.8% of male offsprings were produced. 2. In D (60$\mu\textrm{g}$/g diet) group 17$\beta$-treated, 67% of female offsprings were produced. 3. B, D groups of genetic male brooders had significantly different effects (P<0.01) upon sex ratios of their progeny. 4. This strongly indicates that sex direction has been achieved and that the male is the heterogametic sex. 5. The group that produced the highest percentage of male offspring(male percentage of observed number to expected number was 91%) contained only full-sibling male brooders to the sex-reversed female brooders. 6. After 7 months following treatment, the sex-reversed males had ovarian portion in the anterior region and a testicular portion in the posterior region of the same intersexual gonad, respectively. 7. At 7 months after treatment, the ovareis revealed a complete arrest of the ovarian formation, and appearances of spermatogenetic cell cysts among surviving auxocytes. 8. In most of sex-reversed fish, anterior portion of test is was devoid of sperm ducts including the seminal vesicle and vas deferens. 9. The male transferrin showed two strong bands, while the female transferrin showed a single weak band. 10. One of the two bands of male transferrin showed the same mobility with band of female transferrin.

Genetic Variability Comparison of Wild and Cultured Far Eastern Catfish (Silurus asotus) of Korea using Microsatellite Marker

  • The Far Eastern catfish (Silurus asotus) is an important commercial freshwater fish in Korea. Investigation of the genetic diversity of wild and cultured domestic catfish groups is essential for the restoration of fishery resources and for increasing local revenue. However, there are relatively few genetic diversity studies on wild and cultured catfish in Korea. In the present study, we analyzed the genetic diversity and association of wild and cultured catfish using five microsatellite markers. We determined that the number of alleles per locus (NA) ranged from 9 to 25, wherein the Jeonbuk catfish demonstrated the highest mean number of alleles per locus and the cultured catfish exhibited the lowest. The average expected heterozygosity (He) of the wild catfish samples was 0.907, and that of the cultured catfish showed was 0.875. The genetic distances (GD value) among populations of all catfish ranged from 0.138 to 0.242. Jeonnam and Jeonbuk wild catfish were located closest to each other, and the cultured group was separated from the other groups. In conclusion, the present study confirmed that the genetic diversity of wild and cultured catfish was maintained at a high level. In the case of the wild group, it is effective in maintaining diversity due to the continuous fry release by the local fish research institute. However, the genetic diversity of cultured catfish declined. Low diversity is associated with slow growth and weakened immunity, and therefore continuous monitoring is necessary.

초어 및 백련의 종묘 생산에 관한 연구, 1971 (PROPAGATION OF GRASS CARP AND SILVIR CARP, 1971)

  • 1963년에 일본으로부터 도입한 치어 (금, 1963; 등삼, 1963)로부터 자란 초어와 백련을 이용하여, 1970년도에 이어 1971년도에 인공 채란 부화에 의한 종묘 생산을 시도하여 $2\~3cm$되는 종묘 약 15만 마리를 생산하였으며, 종묘 생산 과정에 있어서 문제된 점을 요약하면 다음과 같다. 1. 채란 부화에 사용하는 친어는 사전 관리의 충실, 외관상 충실한 친어를 선택하여 hormone을 주사할 것 등은 물론이고, 주사 또는 채란시 상처가 나지 않도록 하여 알이 성숙 배란할 때까지 친어의 몸이 쇠약하지 않아야 성숙 배란이 가능하다고 인정되었다. 그리고, 사용하는 뇌하수체의 양은 피주사어의 $2\~3$배 체중량의 어체로부터 뽑은 정도로 조금 많이 사용하는 것이 좋았다. 2. 성숙한 알은 성숙치 완료한 후 지체 없이 배란 수정시켜야 한다. 만약 배란 수정이 늦어지면 알의 부화운치 심하게 낮아진다고 인정된다. 3. 한번 부화시킨 물을 갈지 않고 즉시 계속하여 새로운 알을 수용, 부화를 시키니 부화전에 알이 모두 용해하는 현상이 일어났다. 4. 가두리에서 치어 사육을 하면, 생산된 종묘의 포획과 분양에 대단히 편리하지만, 가두리 속의 수질 관리를 철저히 해야 한다. 특히, 용수는 호오스 또는 파이프를 통하여 가두리 속으로 계속 주입시켜야 한다. 5. 자어 또는 치어 사육용 가두리 속에 Spirogyra 사상 조류가 발생하기 시작하면 그 피해가 심하다. 이 때는 광선을 차단하고, 플랑크톤 조류가 적당히 발생한 못의 물을 주입함으로써 그 피해를 막을 수 있었다. 맑은 샘물을 주입하니 사상 조류의 발생이 대단히 심하였다. 6. 백련 종묘는 수온이 높은 여름철에는 포획 운반을 하면 대부분 죽는데, 가두리에서 육성시킨 $1.5\~2cm$ 정도 소형 종묘는 여름철에도 포획 운반이 가능하므로 가을 운반을 위한 성장 억제를 할 필요가 없어진다.

서해 자연산 돌가자미, Kareius bicoloratus의 포란수와 부화율 (Fecundity and Hatchability of Natural Stone Flounder Kareius bicoloratus from the West Coast of Korea)

  • 본 연구는 돌가자미의 인공종묘생산을 위한 기초자료를 확보하고자 2003년 10월에 충남 격렬비역도 해역에서 자연산 어미를 채집하여 실내에서 자연산란을 유도하고 산란 특성과 포란수를 조사하였다. 실험에 사용된 어미는 암컷 12마리(전장 34.5~51.0 cm, 체중 540~2,200 g), 수컷 23마리(전장 29.0~38.0 cm, 체중 310~680 g)이었다. 난소의 발달은 12월부터 꼬리쪽으로 길게 확장되어 육안적으로 쉽게 확인되었다. 돌가자미 어미는 실내에 수용하여 3개월 후부터 산란을 시작하였으며, 2004년 1월 9일부터 3월 27일까지 77일간 이루어졌다. 산란기간 중 일장은 9.8~12.1시간으로 연중 가장 짧았으며, 수온은 $8.4{\sim}12.2^{\circ}C$이었다. 총 산란량은 19,844,000개였으며, 산란중기에 15,433,000개(77.8%)로 가장 산란량이 많았다. 총 산란량중 평균부상율은 50.4%, 수정률은 58.5%, 부화율은 55.6%, 부화자어의 정상 출현율은 93.8%이었다. 전장당 절대포란수의 총 난수는 전장이 커짐에 따라 증가되는 경향을 보였으며, 상대포란수(cm 당)의 총 난수도 전장이 커짐에 따라 증가되는 경향을 보였다. 체중당 절대포란수의 총 난수는 체중이 증가됨에 따라 증가되는 경향을 보였으나 체중당 상대포란수(g 당)의 총 난수는 체중이 증가됨에 따라 증가되나, 일정 체중 이상으로 커지면, 오히려 체중 증가에 따라 감소하는 경향을 보였다.

Variance of Agronomical Quantitative Traits in Mung Bean (Vigna radiata (L.) R. Wilczek var. radiata) Germplasm

  • Mung bean(Vigna radiata (L.) R. Wilczek var. radiata) is a legume that originated in India. It is the third most cultivated legume in Korea after soybean and adzuki bean. Recently, the use of mung bean seeds and sprouts in trendy foods such as rice noodles and Chinese-style stir-fry is expanding thereby increasing its demand. Subsequently, improvement of mung bean varieties is also being actively conducted. In this study, the important agricultural characteristics of 324 mung bean germplasm were recorded and statistically investigated. Seeds of the mung bean germplasm were cultivated at an experimental field located in the National Agrobiodiversity Center (Jeonju, Korea) and 10 quantitative agricultural traits were investigated. Basic statistics, correlation analysis, and principal component analysis were then performed. The results showed significant variations of the quantitative traits among the germplasms (p < 0.05). The days to flowering, maturity, and growth were in the ranges of 31~80, 22~72, and 57~110 days with means of 45, 47, and 92 days, respectively. The highest frequency (f = 192) was for lodging score with 11~50%, while simultaneous maturity (f = 182) was below 50%. Other quantitative traits related to yield including the number of seeds per pod (CV = 10.9%), number of pods per plant (CV = 41.2%), and one-hundred seeds weight (CV = 36.6%) also showed significant variations. Correlation analysis showed positive correlations between the days to maturity and one-hundred seeds weight (r = 0.41) and the days to growth and simultaneous maturity (r = 0.39). In contrast, one-hundred seeds weight was negatively correlated to the number of pods per plant (r = -0.41) and the days to flowering (r = -0.29). Similarly, the days to growth and the number of pods per plant had a negative association with each other (r = -0.29). The principal component analysis revealed the number of days to maturity as the most influential variable along the first principal component (23.7%). In general, this study revealed wide variations in quantitative traits among the studied mung bean germplasm, which could provide several options for cultivar development.
