한국인 상용 과일과 채소의 계절별 무기질 함량 변화 (Seasonal Variation of Mineral Nutrients in Korean Common Fruits and Vegetables)

  • 본 연구에서는 우리나라 농산물 중 한국인이 주로 많이 섭취하는 채소나 과일을 중심으로 봄, 여름, 가을, 겨울의 4 계절간 성분의 차이가 있는지를 알아보고자 하였다. 따라서 4계절에 모두 구입 가능하면서 섭취빈도가 높은과일 4종, 채소 17종 총 21종을 봄, 여름, 가을, 겨울 계절별로 구입하여 그 성분을 분석하였다. 그 결과는 다음과 같이 요약할 수 있다. 1.다량 무기질의 함유량을 살펴보면, Na의 경우 사과에는 가을에 가장 함유량이 많았고 반면 귤에는 가을에 가장 적었으며, 채소 중에는 시금치, 당근, 상추에 비교적 다량의 Na가 들어 있었다. K는 과일 중에는 딸기가 가장 함유량이 많았으며, 채소 중 오이, 배추, 호박, 미나리의 경우 가을철에 가장 K 함량이 많았다. Ca의 경우에는 겨울철 사과와 봄철 딸기, 가을 배, 가을 배추에 함량이 많았으며, 깻잎, 상추, 시금치에도 Ca가 많이 함유되어 있었다. 딸기에는 봄철에 가장 Mg 함량이 많았으며, 사과는 겨울에, 배는 가을에, 글은 겨울에 Mg 함량이 많아 제철 과일에 Mg함량이 가장 많음을 알 수 있었다. 인은 사과는 겨울이, 귤은 가을과 겨울에, 배추는 가을에, 시금치는 봄에 다른 계절에 비해 높은 함량을 보였다. 2. 미량 무기질의 함유량을 살펴보면, Fe 함량의 경우에 귤은 겨울철에, 딸기에는 봄철에, 배와 배추에는 가을에 Fe가 많이 함유되어 있었다. Cr의 경우에는 가을과 겨울사과가 함량이 많고, 겨울 배와 귤에도 많았다. 그러나 다른 무기질과 마찬가지로 딸기는 봄철 딸기에 가장 Cr이 많이 들어있는 것으로 나타났다. 다른 무기질에서와 같이 Mn 함량도 사과는 여름과 겨울에, 배는 여름과 가을에 Mn함량이 많았으며, 딸기는 봄철에 가장 Mn함량이 많았다. Cu의 함량은 사과는 겨울이 딸기의 경우, 봄에 다른 계절에 비해 함량이 높게 나타났다. 채소에서는 깻잎과 양송이버섯, 콩나물, 브로콜리 등이 계절별로 약간의 차이가 있었으나, 비교적 Cu함량이 높은 것으로 나타났다. 배추는 겨울이, 무는 봄의 것이 Zn 함량이 높았으며, 채소 중에는 깻잎, 브로콜리, 상추, 시금치, 오이 등이 높은 것으로 나타났으며 특히 가을의 냉이는 실험한 채소 중 Zn의 함량이 가장 높았다. 채소보다는 과일에 다소 많은 Se이 함유되어 있음을 알 수 있었다. 사과와 귤은 고르게 함량이 높았고, 채소 중 특히 대파, 양파, 당근, 냉이, 콩나물, 깻잎, 브로콜리 등에 $10{\mu}g$정도의 Se가 함유되어 있다. 실험에 사용한 과일과 채소는 전체적으로 Al의 함량이 낮았다. 봄의 딸기와 봄 무와 대파에서 비교적 함량이 높았고 겨울과 봄의 시금치, 당근, 상추에서, 그리고 봄과 여름의 깻잎에서 비교적 함량이 높게 나타났다. 위와 같이 식품의 종류에 따라 제철 과일이나 채소에서 수분 함량이 적으면서 고형물의 함량이 많고 특히 무기질 함량이 많음을 알 수 있으므로 제철 과일을 섭취함이 권장된다고 볼 수 있다. 미량 무기질의 경우에서는 식품의 종류에 따라 차이가 있으므로 필요한 무기질의 종류에 따라, 예를 들면, 당뇨환자의 경우에 Cr, 빈혈환자의 경우 Fe 등의 무기질의 선별적 섭취가 필요하다고 제안된다. 그러나 분석한 시료의 수가 제한되어 계절별 차이를 통계적으로 유의한 수준에서 살펴보지 못한 제한점이 있으므로 미량무기질의 우수한 급 원인 채소와 과일의 계절별 무기질 함량을 ICP-mass와 같은 최신 장비를 이용해 분석한 많은 데이터를 가지고 토의할 수 있기를 기대해본다.

시중 유통 과채류 중의 잔류농약에 관한 연구 (A Study on Residual Pesticides in Commercial Fruits & Vegetables)

  • 1999년도 2월부터 9월까지 광주 시내 백화점 및 마트 등지에서 유통되고 있는 과채류 12종, 총 289건에 대한 88종 농약의 잔류량을 분석하였다. 289건의 과채류중 21.1%에서 잔류농약이 검출되었고, 5.2%가 잔류 농약 허용기준치를 초과하였으며, 부적합율이 높았던 과채류는 깻잎, 상추, 시금치, 치커리 등의 순으로 나타났다. 과채류에 사용빈도가 높았던 농약은 프로시미돈, 엔도설판, 빈클로졸린, 클로로피리포스, 싸이퍼메쓰린, 피리미포스메칠, 펜발러레이트, 페나리몰, 모노크로토포스 등의 순으로 나타난 반면, 허용기준을 초과한 농약성분은 프로시미돈, 빈클로졸린, 엔도설판, 피리미포스메칠, 페나리몰, 모노크로토포스 등의 순으로 나타났다. 또한 깻잎, 상추, 시금치, 딸기 및 방울토마토 등과 같은 과채류에서 안전성에 문제가 되는 프로시미돈 및 빈클로졸린 농약 등의 제거 효과를 측정하기 위해 8가지 세정 방법을 사용하였다. 이들 세정 방법을 비교한 결과 초음파 세정법이 프로시미돈 및 빈클로졸린 농약의 제거에 가장 효과적 이었다.

Total antioxidant capacity of the Korean diet

  • BACKGROUND/OBJECTIVES: The objective of this study was to measure and/or estimate the total antioxidant capacity of the Korean diet. MATERIALS/METHODS: Eighty-one plant foods that were expected to exhibit rather high antioxidant activities were selected from the Korean diet using the Fifth Korean National Health and Nutrition Survey (KNHANES V). These foods were categorized into 11 food groups: cereals, potatoes, legumes, nuts, vegetables, kimchies, mushrooms, fruits, fruit juices, sea weeds, and oils. The foods were mixed in the proportions specified in traditional Korean recipes and analyzed. The measured indicators for antioxidant capacities were total phenolics, 2,2-diphenyl-1-picrylhydrazyl (DPPH), oxygen radical absorbance capacity (ORAC), and Trolox equivalent antioxidant capacity (TEAC). RESULTS: Total phenolics were high in the fruit juices, nuts, vegetables, and fruits; and the average DPPH, ORAC, and TEAC values were high in the vegetables, fruits, fruit juices, and nuts. The correlation coefficient between the content of total phenolics of each food and the in vitro antioxidant capacity was relatively high at 0.851. The intake of total phenolics per capita per day in the Republic of Korea was estimated to be 127 mg. The total dietary antioxidant capacity (TDAC) values, which were obtained from the total antioxidant capacity of each food, taking into account the intake of each food, were 20,763, 54,335, and $876.4{\mu}mol$ of Trolox equivalents using the DPPH, ORAC, and TEAC methods, respectively. The food group that contributed the most to the Korean TDAC was cereals at 39.7%, followed by fruits and vegetables at 27.8% and 13.9%, respectively. The contribution of legumes, nuts, fruit juices, and mushrooms was quite minimal at less than 2% each. CONCLUSIONS: The content of total phenolics and the antioxidant capacity of the Korean diet are significantly correlated and the high contributing food groups are cereals, fruits, and vegetables.

천연항균제처리에 의한 과채류의 선도유지 및 병해방지에 관한 연구 -저장중 병리적 장해 방지를 중심으로- (Prevention from microbial post-harvest injury of fruits and vegetables by using grapefruit seed extract, a natural antimicrobial agent)

  • 과채류의 저장중, 신선도를 유지하고 병리적 장해를 감소시키기 위하여 천연 식물성 항균제인 grapefruit종자추출물(GFSE)로 처리하여 과채류의 품질향상을 유도할 수 있었고 저장시 과채류 부패병원균의 감염 및 생육을 억제할 수 있었다. Grapefruit종자추출물은 세균, 곰팡이 등, 광범위한 범위의 식물변패미생물에 대하여 $50\;ppm{\sim}2,000\;ppm$의 처리농도로 뚜렷한 항균효과를 나타내었다. 변패된 과채류에서 분리한 Escherichia coli, Staphylococcus aureus와 같은 세균을 100 ppm의 GFSE용액으로 처리하여 균체세포의 세포막기능이 파괴되어 세포내용물이 균체외부로 유출되어 균체의 생육이 억제되는 것을 관찰할 수 있었으며 곰팡이 Fusarium sp.의 균사체도 1,000 ppm의 용액처리로 세포벽기능이 파괴되었고, Penicillum sp.의 포자 내용물도 GFSE처리로 소실되어 정상적인 발아기능이 저해됨을 알 수 있었다. 한편, 농가에서 수확한 대파, 양파, 고추 등을 GFSE용액에 침지처리하고 동결건조하여 색택 및 조직면에서 우수한 저장효과를 얻을 수 있었고, 감자의 발아를 억제하고, 호박, 오이, 토마토, 밀감 등 과채류의 신선도를 상당기간 동안 연장할 수 있었다.

경기지역 유치원 아동을 위한 영양교육 프로그램의 효과 평가 (The Effect Evaluation of Nutrition Education Program for Preschool Children in Gyunsggi-do)

  • The following study has been conducted by carrying out the nutrition education program for preschool children and measuring the change in their food preference and nutritional knowledge. The 28 boys and 22 girls with the average height of $117.4{\pm}5.1cm$ and weight $21.8{\pm}3.5kg$ participated in the study. The favorite foods of the children were: meat (51.1%) being the highest, fruits (38.3%), carbohydrates (23.4%), while the least favored food was vegetables (75%). It indicated that 36.2% of the children were having unbalanced diets. The change in food preference after the implementation of the nutrition education program was the significant increase in preference in vegetables and fruits (p<0.01) and proteins such as meat, fish, eggs and beans (p<0.05). The differences in food preference among boys and girls were that the boys showed significant increase in vegetables and fruits (p<0.01) while there was a decrease in the simple sugar groups (p<0.01). Regarding girls, there were significant increases in vegetables and fruits as well as protein groups of meat, fish, eggs and beans (p<0.01). The changes in the nutritional knowledge of the preschool children after the implementation of the nutrition education program were scores for the fruits and vegetables group and carbohydrates group showed a significant increase while the scores for the oil and nuts group had decreased considerably. The average score on nutritional knowledge has significantly increased from 9.07 to 10.17 (p<0.01) and the score on the roles of the nutrients increased from 3.02 to 3.48 (p<0.05). The changes in eating habits of the children after the nutrition education were the answer for the change in eating habits of the children after the nutrition education was 'slight change' 61.4%. Also, the change in food preference was 'slight change' 61.4% and the improvement in nutrition education was 'slightly' 50%. According to the results of this study, it is evident that the change in eating habits and the acquisition of nutritional knowledge is very difficult, thus requiring consistent and prolonged education. Therefore, it seems to be best to include a more systematic and professional nutrition education program in preschool education. Also, the education for the parents should be implemented since the effect of education on children is greater when it is closely connected with the education at home.

국내식품을 이용한 이유식 개발에 관한 연구(I) - 이유식의 개발과 성분 및 영양소 분석 - (Development of the Supplementary Foods for Infants Using Korean Foods - Development and Analysis of Nutrients of the Supplementary Foods -)

  • This study was carried out in order to develop supplementary foods for infants using Korean foods. Thirty-four different kinds of supplementary foods were developed and fourteen representative ones were selected to be analyzed chemically. The results are as follows: 1. The developed supplementary foods were 34 kinds and divided into 3 stages. First stage is designed for the babies just beginning to eat pureed vegetables and fruits. Second stage combined the nutritional attributes of both vegetables and meat. Third stage featured tender, bite-size pieces of meats and vegetables that appealed to the most mature tastes of basies. 2. In the production of prepared foods; water, milk, vegetable juice, fruit juice, and soy milk were used as the liquid source; rice, rice starch, chestnut, noodle, potatoes, sweet potatoes, rice cakes as the carbohydrate source; fish, meats soybean curd, beans, eggs, chicken, cow liver as the protein source; and vegetables and fruits were used as vitamin & mineral source. 3. The approximate composition range of the products were 10.91∼24.46% carbohydrate, 0.15∼6.06% protein, 0.092∼7% fat, 0.13∼ 1.37% ash, 0.63∼36.34% calcium, 0.092∼0.48% iron and 0.42∼16.36% vitamin C.

Forecasting performance and determinants of household expenditure on fruits and vegetables using an artificial neural network model

  • Interest in fruit and vegetables has increased due to changes in consumer consumption patterns, socioeconomic status, and family structure. This study determined the factors influencing the demand for fruit and vegetables (strawberries, paprika, tomatoes and cherry tomatoes) using a panel of Rural Development Administration household-level purchases from 2010 to 2018 and compared the ability to the prediction performance. An artificial neural network model was constructed, linking household characteristics with final food expenditure. Comparing the analysis results of the artificial neural network with the results of the panel model showed that the artificial neural network accurately predicted the pattern of the consumer panel data rather than the fixed effect model. In addition, the prediction for strawberries was found to be heavily affected by the number of families, retail places and income, while the prediction for paprika was largely affected by income, age and retail conditions. In the case of the prediction for tomatoes, they were greatly affected by age, income and place of purchase, and the prediction for cherry tomatoes was found to be affected by age, number of families and retail conditions. Therefore, a more accurate analysis of the consumer consumption pattern was possible through the artificial neural network model, which could be used as basic data for decision making.

Student feedback to improve the United States Department of Agriculture Fresh Fruit and Vegetable Program

  • BACKGROUND/OBJECTIVES: Fruit and vegetable consumption of children in the United States falls below recommendations. The U.S. Department of Agriculture Fresh Fruit and Vegetable Program (FFVP) is a national free-fruit and vegetable school distribution program designed to address this problem. This permanent, legislated program provides funding to qualified elementary schools for provision of additional fruit and vegetables outside of school meals. The objective of this study was to understand children's perceptions of FFVP after the intervention and formulate recommendations that may improve success of the intervention. SUBJECTS/METHODS: Secondary data were obtained from 5,265 $4^{th}-6^{th}$ graders at 51 randomly-selected FFVP intervention schools in Indiana. Anonymous questionnaires were completed late in the 2011-2012 academic year. Multilevel logistic regressions were used to determine associations between students' perceptions of program effects (4 close-ended items) and their preference toward the program. Content analysis was applied to a single open-ended item for program comments. RESULTS: Over 47% of students reported greater intake of fruit and vegetables due to FFVP, and over 66% reported liking the program. Student-reported program effects were positively associated with preference for the program (P < 0.01). Themes that emerged during analysis of 3,811 comments, included, students liked: the opportunity to try different kinds of fruit and vegetables, types and flavors of fruits served, and benefits of eating fruit. Fewer students liked the types of vegetables and their benefits. A small group disliked the program citing poor flavor of vegetables and quality of fruits. Important suggestions for the program include serving more dipping sauces for vegetables, cooking vegetables, and providing a greater variety of produce. CONCLUSIONS: The degree that students liked FFVP may predict the program's effects on fruit and vegetable intake. FFVP may become more acceptable to students by incorporating their suggestions. Program planners should consider these options for achieving program goals.

Educational attainment and differences in fruit and vegetable consumption among middle-aged adults in the Korean National Health and Nutrition Examination Survey IV

  • We investigated whether socioeconomic differences affect fruit and vegetable (FV) consumption with respect to total intake and intake of various FV subgroups. Our study included 6667 adults aged 40-64 years who completed a dietary survey in the fourth Korean NHANES (2007-2009). FV intake was estimated from 24-hour recalls and food frequency questionnaires. Differences in FV consumption related to educational attainment were analyzed according to different nutritional categories of FV. Both men and women in the low-education group had the lowest intake of total FV and total fruits, and women also had the lowest intake of total vegetables. Also lowest in this group was consumption of mushrooms and vegetables (excluding kimchi) among men, and cruciferous and allium vegetables (excluding Chinese cabbage and radish) among women, while kimchi consumption was the highest in this group. Additionally, an association between educational level and intake of citrus fruits was evident among men. Adults in the low-education group consumed less carotene-rich FV, red fruit and/or vegetables, and dark-green leafy vegetables, fewer total vegetable dishes, and fewer types of fruit than in other groups. Men in this group had the lowest intake of yellow/orange fruit and/or vegetables, and women consumed the least folate-rich FV. There is a clear association between educational attainment and FV intake with regard to total intake, and to specific nutrients, bioactive compounds, colors, and variety.

Korean Female Adolescents' Food Attitudes and Food Intake Relative to the Korean Food Tower (I) : Food Intake

  • A survey was conducted to examine the food intake of 285 Korean female students attending a secondary school in Seoul. Food intake was assessed using a food frequency based on the Korean Food Tower which consists of five food groups, i.e., grain products, vegetables and fruits, meat, milk, and fats and sweets. To describe food intake descriptive statistics were obtained using SPSS. The food frequency analysis indicated that the participants ate rice, cabbage kimchi, radish, and soybean/red pepper paste most frequently along with milk, ice cream, tea, and seasonal fruits such as citrus fruits, apples, watermelon, and grapes for snacks. Distributions of the total standardized serving frequency for each food group indicated that approximately 84, 83, 45, 60, and 34%, respectively, of the respondents met the recommended serving frequency for grain products, vegetables and fruits, meat, milk, and fats and sweets groups(mean servings per day 5.5, 10.6, 5.5, 2.1, 3.5). Income was the only demographic factor that affected food intake, particularly with respect to meat, milk, and fats and sweets(p < .01).
