Suitable Yields Reflecting Consumer Preferences in 'Hongisul' Grapes ('홍이슬' 포도의 상품성 기준과 적정 착과량)

  • The purpose of this study is to suggest indicators and proper standards to forecast the sensory quality of 'Hongisul' grape. Further, this study determines the optimum fruit load of 'Hongisul' grape reflecting consumer preference. Among several quality attributes, identified through instrumental and sensory evaluation, soluble solid-acid ratio was the most useful indicator of consumer preference for 'Hongisul' grapes. The ideal soluble solid-acid ratio for marketable grapes was found to be higher than 86.3. Analysis on the effects of fruit load control on fruit quality revealed a negative correlation where the latter increased as the former decreased. This trend is common for all grape species. The field with a fruit load of $1,400kg{\cdot}10a^{-1}$ exhibited a soluble solid-acid ratio of less than 86.3, uneven coloring and slow softening texture at the mature stage. However, fruit quality proved excellent in the field with a fruit load of $1,200kg{\cdot}10a^{-1}$ or less. It is therefore proposed that fruit load should be controlled to $1,200kg{\cdot}10a^{-1}$ or less when growing 'Hongisul' grapes to produce high quality grapes. We believe that this result can be used as a standard in judging harvest time and evaluating fruit quality.

Responses of Young 'Fuyu' Persimmon Trees to Summer Fertilization Rate and Leaf-fruit Ratio

  • Small-sized persimmons produced by high crop load are better accepted in the export markets. However, maintaining high crop load frequently results in weakness of tree vigor, deterioration of fruit quality, and increase of the risks for alternate bearing. This experiment was conducted to determine the combined effects of fertilization rate and leaf-fruit (L/F) ratio on container-grown 3-year-old 'Fuyu' persimmon trees. Application of 3.6-g N, 2.1-g $P_2O_5$, 2.7-g $K_2O$, 2.7-g CaO, and 0.6-g MgO was for the control fertilization rate (CF) and that of a 3-fold CF was for the high fertilization rate (HF). Commercial fertilizers were surface-applied to a container on July 6, July 17, and August 10 in three equal aliquots. Single tree for each fertilization rate was assigned for 12 L/F ratios (5, 6.3, 7.7, 9, 10.4, 13, 15.5, 18, 21, 24, 27, and 33) mostly by fruit thinning or rarely by defoliation on July 1. HF did not affect the yield, weight and soluble solids of the fruits but decreased skin color. As L/F ratio increased, yield decreased but average weight, skin color, and soluble solids of fruits increased. With HF, N and K concentrations in leaves, fruits, and shoots increased to some extent but soluble sugars in dormant shoots decreased. Many shoots were cold-injured with low L/F ratio especially at the HF. HF did not increase number of flower buds the next spring either on a shoot or on a tree basis but increased shoot length, compared with the CF. Increasing L/F ratio markedly increased number of flower buds and shoot growth the following year at both fertilization rates. Therefore, an appropriate combination of fertilization rate and L/F ratio should be necessary to maintain stable fruit production and tree vigor at high crop load.

  • Purpose: This study was conducted to investigate the mechanical and physical properties of a Korean red pepper variety for particle behavior analysis. Methods: Poisson's ratio, modulus of elasticity, shear modulus, density, coefficient of restitution, and coefficient of friction were derived for "AR Legend," which is a domestic pepper variety. The modulus of elasticity and Poisson's ratio were measured through a compression test using a texture analyzer. The shear modulus was calculated from the modulus of elasticity and Poisson's ratio. The density was measured using a water pycnometer method. The coefficient of restitution was measured using a collision test, and the static and dynamic friction coefficients were measured using a inclined plane test. Each test was repeated 3-5 times except for density measurement, and the results were analyzed using mean values. Results: Poisson's ratios for the pepper fruit and pepper stem were 0.295 and 0.291, respectively. Elastic moduli of the pepper fruit and pepper stem were $1.152{\times}10^7Pa$ and $3.295{\times}10^7Pa$, respectively, and the shear moduli of the pepper fruit and pepper stem were $4.624{\times}10^6Pa$ and $1.276{\times}10^7Pa$, respectively. The density of the pepper fruit and the pepper stem were $601.8kg/m^3$ and $980.4kg/m^3$, respectively. The restitution coefficients between pepper fruits, pepper stems, a pepper fruit and a pepper stem, a pepper fruit and plastic, and a pepper stem and plastic were 0.383, 0.218, 0.277, 0.399, and 0.148, respectively. The coefficients of static friction between pepper fruits, pepper stems, a pepper fruit and a pepper stem, a pepper fruit and plastic, and a pepper stem and plastic were 0.455, 0.332, 0.306, 0.364, and 0.404, respectively. The coefficients of dynamic friction between a pepper fruit and plastic and a pepper stem and plastic were 0.043 and 0.034, respectively.

Fruit Growth, Sugar, and Acid Characteristic in Leafy and Leafless Fruits of Satsuma Mandarin (온주밀감에서 유엽과와 직과의 생장과 당산 특성)

  • The study was conducted to investigate the effect of fruit bearing type with leafy (LY) and leafless (LS) fruits on fruit growth, sugar, and acid characteristics in satsuma mandarin. Fruit growth including fruit length, diameter, shape index (diameter/length), weight, and size distribution was not different between LY and LS fruits at ripening time. Total soluble solids (TSS) concentration of the fruit juice increased and acidity decreased continuously and then TSS:acidity ratio increased with fruit development from 100 days after anthesis to ripening time. Soluble sugar was continuously increased, whereas organic acid decreased. Theses tendencies were related to the increase of sucrose and decline of citric acid, respectively. However, there was no effect of fruit bearing type on TSS, acidity, and TSS:acidity ratio, and soluble sugar and organic acid composition in fruit juice. Also, photosynthetic rate and chlorophyll index with SPAD value were not different between leaves adjacent to LY and LS fruits. The results indicated that fruit growth and sugar and acid characteristics were not affected by fruit bearing type with leafy and leafless fruits in satsuma mandarin.

Changes in Fruit Weight and Soluble Solids Content of 'Seolhyang' Strawberry by Fruit Setting Order of the Flower Cluster (딸기 '설향' 품종의 화방별 과실 착과 순서에 따른 과중 및 당도 변화)

  • This study was conducted to evaluate the influence of fruit setting order by flower cluster on the fruit weight and the soluble solids content for the strawberry of 'Seolhyang' cultivar. The first flower cluster had higher fruit number, fruit weight, soluble solids content and ratio of large fruit compared to the second and third flower cluster. The fruit set on the upper position fruit in the same flower cluster had higher fruit weight and the soluble solids compared to the fruit set on the lower position fruit in the flower cluster. The fruit weight was highly positive correlated with the soluble solids content. The result indicated that the number of fruit set for marketable yield seemed to be 9-10 per the first flower cluster, 6 per the second flower cluster, 4 per the third flower cluster and 3 per the fourth flower cluster in 'Seolhyang' cultivar.

Effects of Foliar Spray of Calcium Salts and Ethephon on the Fruit Quality of Satsuma Mandarin (Citrus unshiu Marc. Miyagawa wase) in the Plastic Greenhouse (Ethephon과 Ca제제 혼용 엽면살포에 의한 플라스틱하우스에서 재배된 온주밀감의 품질향상 효과)

  • This experiment was carried out to examine the effects of foliar applications of 100 mg.L$^{-1}$ ethephon mixed with different calcium formulae (10,000 mg.L$^{-1}$ Clef-non, 2,000 mg.L$^{-1}$ Cell-bine, 2,000 mg.L$^{-1}$ Hicalux, and 2,000 mg.L$^{-1}$ calcium acetate monohydrate) on the rind coloration, defoliation and fruit quality of satsuma mandarin cultivated in the plastic greenhouse. Foliar applications of ethephon alone or in mixture with either Clef-non, Cell-bine, Hicalux or calcium acetate monohydrate demonstrated that increased 'a'value of peel chromaticity as compared to the control. The treatments encouraged fruit colour and allowed the harvest date to be predicted. The defoliation ratio decreased considerably by foliar applications of ethephon mixed with Cell-bine or Hicalux. The sugar content of fruit increased by 1.6, 1.54, and 1.54$^{\circ}$Bx with the foliar applications of ethephon, ethephon+Clef-non, and ethephon+Cell-bine, respectively. With the foliar applications of ethephon in mixture with Cell-bine, fruit coloration was accelerated. defoliation was delayed, and fruit quality was improved.

Growth Characteristics and Morphological Variation Analysis of Mutant Lines Derived from Gamma-ray and Chemical Mutagen Treatments in Rubus fructicosus L. (블랙베리(Rubus fructicosus L.) 돌연변이 유전자원의 생육특성과 형태학적 변이 분석)

  • This study was carried out to evaluate growth, morphological characteristics, and sugar content among fifty six blackberry (Rubus fructicosus) genotypes derived from gamma-ray treatment (fifty two lines), MNU treatments (three lines), and cross breed R. fructicosus${\times}$R. parvifolius(one line). While 56 genotypes had similar stem diameter with origin variety, the most of mutants showed reduced leaf size. Also, they showed a wide range of variation in fruit size and one hundred fruit weight compared with origin variety. In fruit size and sugar content, two mutant lines showed large fruit sizes and ten mutant lines showed 20% higher sugar content than the original variety. In the correlation analysis, positive relationships were determined between sugar content and stem diameter, fruit length, leaf wide and fruit length/fruit wide ratio. However, leaf length/leaf wide ratio showed a negative correlation with sugar content. The results will be used as fundamental data for Rubus fructicosus breeding program.

Development of Optimization Mixture Tea prepared with Roasting Mulberry Leaf and Fruit (반응표면분석을 이용한 로스팅 뽕잎과 오디 혼합차 개발)

  • In this study, we aimed to develop a mixed tea prepared with roasted mulberry leaf and fruit using response surface methodology (RSM). Roasting of mulberry leaf was by 6 stages, as shown in Fig. 1; and mulberry fruit was roasted in 4 stages, as shown in Fig. 2. Subsequently, physicochemical measurements such as total polyphenol content, nitric oxide production content, and ${\alpha}$-glucosidase inhibitory effect were obtained for each sample. Central composite design was applied to prepare samples containing varying contents of roasted mulberry leaf (RoML) and roasted mulberry fruit (RoMF); subsequently, sensory evaluation was conducted. The total polyphenol content of roasted samples (RoML and RoMF) were significantly higher than that of raw samples (RaML and RaMF), respectively. The nitric oxide (NO) production of roasted samples were significantly lower than that of control (LPS induced RAW 264.7 cell). The ${\alpha}$-glucosidase inhibitory effect of roasted samples was significantly higher than that of raw samples, respectively. Based on the RSM estimation for determination of optimum ratio by sensory evaluation (taste, color, and flavor) among 13 mixed samples, the optimum mixing ratio of RoML and RoMF for taste, color, and flavor were 1.64 g (RoML) and 0.88 g (RoMF), 1.35 g (RoML) and 0.92 g (RoMF), 1.65 g (RoML) 1.03 g (RoMF), respectively. Based on results of three sensory evaluations, mixing ratio comprising 1.54 g of RoML and 0.92 g of RoMF is desirable for delicious tea with functionality.

Quality Characteristics of Yanggeng Prepared with Different Concentrations of Mulberry Fruit Syrup (오디시럽을 이용한 오디양갱 제조 및 품질특성)

  • In this research, mulberry fruit was processed into mulberry fruit syrup (MFS) using sugar and then used as stabilizer for anthocyanine pigment in yanggeng. MFS was added to the yanggeng in order to make mixture ratio of 0%, 5%, 10%, 15% and 20%. The resulting sensory and physicochemical aspects, as compared between the various MFS ratio were investigated. The yanggeng L and b values decreased with increasing ratio of MFS. With addition of MFS the sensory evaluation results for, taste, color, flavor, texture and overall acceptability improved. The yanggeng prepared using MFS found to possess more effective antioxidants behavior as observed by in vitro evaluating 1,1-diphenyl-2-picrylhydrazyl(DPPH) radical scavenging and superoxide radical activities. The $IC_{50}$ of the antioxidant was found to be proportional to the mulberry fruit syrup concentration in the yanggeng.

Evaluation of quality indices during fruit development and ripening in 'Wonhwang' and 'Whasan' pears (동양배 '원황' 및 '화산'의 생육기간 중 품질 변화 요인 탐색)

  • In this study, we evaluated the changes of fruit quality indices during fruit development and ripening in Korean new pear cultivar 'Wonhwang' and 'Whasan' to determine appropriate harvest time and to enhance the marketability. The fruit of each cultivar harvested from 100 days after full bloom (DAFB) to 135 and 150 DAFB in 'Wonhwang' and 'Whasan', respectively. The fruit growth of both cultivars showed a typical single sigmoidal pattern. Flesh firmness of two cultivars decreased continuously with fruit development and ripening, reaching a final level of about 2.6 kgF at harvest stage. The starch content of fruit sap was much higher in the fruits of early development stage than the later stage of fruit ripening. In 'Wonhwang' pears, the starch level decreased coincide with fruit ripening (130 DAFB), while that of 'Whasan' decreased from very early stage of fruit development (120 DAFB), 30 days before full ripe. 'Whasan' pear showed much lower acidity level of about 0.13% during fruit development and ripening period compared with that of 'Wonhwang'. Therefore, the ratio of soluble solids to total acidity (TSS/acid) increased gradually with fruit development and ripening, reaching a final level of 80 and 98 in 'Wonhwang' and 'Whasan', respectively. There were no climateric rise of fruit respiration during fruit ripening periods in two oriental pear cultivar. The changes of skin color difference including hunter vale $a^*$ which means loss of green color occurred only after onset of ripening in two cultivars.
