A Study on Recognition and Preference for Processed Product Developments of Mulberry(Morus alba L) Fruit Products (오디의 인식도 및 오디 이용 가공 제품 개발 방향 연구 (관련 산업체 근무자와 전공 학생들을 중심으로))

  • The purpose of this research is to investigate the variability of mulberry fruit products with the trend of increasing number of Mulberry farms and their fields. For this study, a survey on the number of usages of similar manufactured fruit products was conducted, and its results showed that 41.7% of industrial workers drink fruit products 3-6 times per week. The findings from the survey implies that industrial workers preferred the products in the order of syrup, frozen furee and jam while culinary students extracts, jam and syrup. Based on these research results, the primary product form of mulberry fruit for development would be syrup, sugar-free extracts and jam in order. As for bakery products, developing refrigeration products, bread and cake using mulberry fruit is highly required. When mulberry fruit products were used in food items, industrial workers and culinary students preferred vegetable and meat dishes, which means the necessity of developing dressings and sauces using mulberry fruit.

Enzyme Inhibitory and Antioxidant Activities of Fruit and Stem of Opuntia ficus india var. saboten

  • The objective was to verify biological activities of fruit and stem of prickly pear(Opuntia ficus indica L. var, saboten Makino). We have determined inhibitory activities on enzymes, such as dopamine ${\beta}$-hydroxylase(DBH), monoamme oxidase A and B(MAO-A, B), and antioxidant activity, in vitro. We purchased dried stem powder and lyophilized fruit powder of prickly pear from CheJu Island, and prepared the extracts with 80% of methanol. The fruit extract showed stronger inhibitory effects on MAO-A and -B and antioxidant activity compared. to the stem extract, on fractionation with hexane, ethyl acetate, butanol and water. Both the stem and the fruit extracts with ethyl acetate showed stronger enzyme inhibitory and antioxidant activities than other extracts. Now we are isolating active principles from both ethyl acetate extracts.

  • Mycelial expansion and fruit body development of caterpillar fungi, Cordyceps sobolifera(Hill.) Berk. et Br. was examined on various carbon and nitrogen sources, some substrates with various supplements. Best temperature for the mycelial expansion was $25^{\circ}C$, while optimal pH was 7. Glucose and polypeptone were the best sources of carbon and nitrogen, respectively, as well as 1:1 was the best ratio of carbon and nitrogen. The unpolish rice and bean curd lees were used as core substrates combined individually with five various supplements. In substrates based, all the supplements with all combinations were found to exhibit the mycelial growth and fruit body formation. Likewise, yolk was found as a superior supplement and also clarified quite high polysaccharide content in the fruit body.

Assessment of the Sugar Content According to Beverage Types Sold in Korea (국내에서 판매되는 음료 유형별 당류 함량 평가)

  • The purpose of this study was to provide nutritional information for selecting beverages with low sugar contents. The nutritional data, including the sugar contents of 925 beverages, were collected from the nutrition labels through the official websites of manufacturers and analyzed according to the beverage types. The average price and volume of the beverage products were 1,556.6 won and 224.8 mL, respectively. The volume per price was the highest for carbonated beverages at 351.6 mL/1,000 won. The sugar content was high in the order of carbonated beverages (22.6 g), fruit & vegetable beverages (21.0 g), and mixed beverages (19.1 g). The sugar content per 100 mL was high in the order of fruit juice (10.6 g), fruit and vegetable beverages (9.2 g), ginseng and red ginseng beverages (8.5 g), and mixed beverages (8.3 g). The content of the product per 1,000 won was high in the order of carbonated beverages (23.3 g), fruit and vegetable beverages (23.2 g), and mixed beverages (20.0 g). The number of products with energy from a sugar content of 5% or more compared to the energy reference value was significantly higher in the carbonated beverages (52.2%), fruit and vegetable beverages (33.0%), and mixed beverages (26.5%) than other beverages. The sugar energy ratio of beverage products was highest in the carbonated beverages at 88.9%, followed by fruit and vegetable beverages (87.0%), fruit juices (84.3%), and mixed beverages (76.8%). Overall, beverages with high sugar contents per product, volume, and price were carbonated beverages, fruit and vegetable beverages, and mixed beverages.

Utility of Post-Mature Kiwi Fruit Powder in Bakery Products (과숙된 키위 파우더의 Bakery 제품에의 이용성)

  • Utilities of kiwi fruit powder prepared from post-mature kiwi fruit in bakery products such as bread and cookie were investigated. The characteristics of bread and cookie with different amounts of kiwi fruit powder were examined through physical measurement (color specific volume, crumb firmness, spread ratio, and extensibility) and seneory evaluation. In baking performance of frozen dough with kiwi fruit powder, $L^{*}$, $a^{*}$, and $b^{*}$ values of crust and specific volume gradually decreased as the concentration of kiwi fruit powder increased. Crumb firmness had significant difference compared to bread without kiwi fruit powder, and sensory characteristics of breads with kiwi fruit powder were more poor than bread without kiwi fruit powder. In a cookie with kiwi fruit powder although specific volume was not significantly different, the spread ratio of cookie and cookie toughness significantly decreased; furthermore, cookie extensibility significantly increased as an amount of kiwi fruit powder increased. Hardness and moistureness of cookies in sensory evaluation had a similar tendency as toughness and extensibility of cookies. Therefore, post-mature kiwi fruit could be utilized to improve the cookie qualities.ies.s.

Detection of Virus in Fruit and Seed of Vegetables Using RT-PCR (RT-PCR에 의한 과채류 열매 및 종자의 바이러스 검정)

  • Tobacco mosaic tobamovirus (TMV), cucumber mosaic cucumovirus (CMV), cucumber green mottle mosaic tobamovirus (CGMMV) and zucchini yellow mosaic potyvirus (ZYMV) from individual fruits and seeds of hot pepper and cucumber were detected by the reverse transcription-polymerase chain reaction (RT-PCR). The dilution end-points for RT-PCR in curde sap from TMV. and CMV - infected hot pepper leaves and CMV - and CGMMV-infected cucumber leaves were 10-5. However, the amount of PCR product obtained from preparation of ZYMV-infected cucumber leaf was 10-fold lower than those of CMV or CGMMV-infected cucumber leaves. In hot pepper, both TMV and CMV were detected in all parts of the fruit wall tissue, but the yields of PCR products in the fruit stalk and its surrounding tissues were higher than those of the end parts of the fruit. On the other hand, in cucumber fruit infected with CMV, CGMMV or ZYMV, the fruit wall tissue and seed located in both stalk and end parts showed higher yields of PCR products than those of intermediate parts. Of five viruses that were analysed, only TMV in hot pepper seed, and CGMMV and CMV in cucumber seed were detected in testa parts.

Gastroprotective Activity of the Unripe Fruit Extract of Juglans mandshurica in Rats

  • The unripe fruit extract of Juglans mandshurica showed significant inhibition on aspirin and indomethacin induced gastric lesion at an oral dose of 1000 mg/kg. The extract did not show inhibition of aspirin induced ulcer and Shay ulcer at the doses of 500 and 1000 mg/kg. The results indicate that the extract had a gastroprotective activity.

  • The effects of the dried fruit powder of Opuntia ficus-indica var. saboten (OF-f) were investigated on gastric lesion and ulcer models in rats. It showed significant inhibition in HCl ethanol and HCl aspirin induced gastric lesion at a dose of 600 mg/kg, p.o. OF-f also showed significant inhibition in indomethacin induced gastric lesion at the doses of 200 and 600 mg/kg, p.o. However, it did not affect aspirin and Shay ulcer in rats. It also did not affect the gastric juice secretion, acid output and pH. These data suggest that OF-f possesses pronounced inhibitory action on gastric lesion of rats.

  • Brand is becoming more important as a way to achieve differentiation since consumers tend to buy brands not products. This study primarily aims to determine the critical success factors of two world famous fruit brands, Sunkist and ZESPRI, and to present management strategies to enhance the value of domestic fruit brands. The lessons learned from the case studies of Sunkist and ZESPRI reconfirm the importance of essential factors for a successful fruit brand, that is, quality control, steady supply, advertising and promotion, recipes and processed products, handling items and regional boundaries.

Effects of eggplant rootstocks on root-knot nematode(Meloidogyne arenaria, race 2)

  • Root-knot nematodes cause a significant damage on fruit yield and quality of green house growing crops. To asses the effect of eggplant rootstock, Torvum vigor', TaibyouVF' and 'Daitaro' were grafted on eggplants(Solanum melongena cv. Chookyang) and planted in root-knot nematode infested microplot in green house and compared their fruit yield, quality and plant growth with non-grafted control. Eggplant grafted with Torvum vigor had the highest fruit yield and top growth and followed by Daitaro. Non-grafted eggplant had lower yield but had higher root weight because of heavy root-knot nematode infection. Rootstock grafting in eggplant farming is a good alternative technique in root-knot nematode infested green houses without compromising fruit yield and can be applied instantly as organic farming practice.
