제조법을 달리하여 제조한 오디주의 품질 특성 (The Quality Characteristics of Mulberry Fruit Wine by Two Different Manufacturing Methods)

  • Oddi is a mulberry fruit that has anti-inflammatory and antioxidative effects. This study was carried out to investigate the quality characteristics of mulberry fruit wines manufactured by two different methods. Where they were processed according to the traditional Korean fruit wine methodology(A) or a modified(B). Sensory qualities, physiochemical characteristics, and biochemical activities of the Oddi wines were analyzed. From the results of the sensory evaluation, manufacturing method A showed higher acceptability. However, the two different methods was not significantly different overall. The method A wine had higher brightness(L)(77.65) redness(a), and yellowness(b). As for the antioxidant activities and ACE(angiotensin-converting enzyme) inhibitory abilities of the wines manufacturing method A had greater values.

Variation for Fruit Yield and Quality Characteristics in Sweet Pepper (Capsicum annuum L.) Germplasm Collection

  • Fifty-five sweet pepper (Capsicum annuum L.) germplasm from the Rural Development Administration (RDA) were analyzed for their fruit yield and fruit quality characters, including fruit weight, fruit size, pericarp thickness, total soluble content, fruit lobe, fruit shape, fruit surface and fruit color. Fruit yield per plot ranged from 200 g to 8150 g (average, 1884 g). Fruit fresh-weight per fruit ranged from 27.3 g to 200.0 g with an average of 97.2 g. Fruit length varied from 4.0 cm to 16.2 cm (average, 9.6 cm). Fruit length-to-width ratio ranged from 0.6 to 3.0 with an average 1.7. The fruit pericarp thickness ranged from 1.8 mm to 10.7 mm (average, 4.8 mm). Total soluble content was the highest ($8.5^{\circ}Brix$) in K156286 and the lowest ($5.3^{\circ}Brix$) in K156208 with the average value $6.7^{\circ}Brix$. Fruit lobes numbers varied from 2 to 4. Blocky, triangular, elongated, rectangular and round fruit shape identified among the sweet pepper accessions. Fruit surface varied from smooth to wrinkle and fruit color also varied. The presence of variability in fruit yield and quality traits within the sweet pepper genotypes can be utilized to develop high yielding sweet pepper variety with better fruit quality characters.

  • A fundamental study was conducted to obtain the basic data involved in nondestructive quality evaluation of the fruit and vegetables. An experimental equipment for ultrasonic propagation characteristics of the fruit and vegetables such as radish , carrot , potato, and apple was set up and also power spectrum analysis system of an ultrasonic wave through the fruit and vegetables was set up. The velocity and attenuation of ultrasonic wave through the tissue specimens from the fruit and vegetables were measured and analyzed. The elastic modulus and density by the mechanical method currently used were compared with those using by ultrasonic method. The ultrasonic tranit time was almost linearly increased with the length of the specimens and attenuation of ultrasonic was mainly affected by the internal flbrous structure of the products. The regression equation was derived from the highly correlated experimental variables.

지베렐린 도포와 폴리아민 살포에 의한 배 품질과 저장성의 변화 (Changes of Fruit Characteristics and storage by Gibberellin and Polyamine Treatment of Oriental Pear (Pyrus Pyriflia))

  • 배의 과경부에 지베렐린을 처리하면 과실비대에 효과는 있으나 저장성이 떨어지는 단점이 있다. 본 시험은 지베렐린 처리가 저장성을 향상시키기 위하여 폴리아민의 처리부위와 처리농도에 따른 과실의 특성변화를 조사하였다. 시험품종은 '황금배', '영산배', '추황배'로 하여 제베렐린을 만개 30일 후에 처리하고 폴리아민을 수확 7일 전에 과총 엽과 수관에 100, 200, 500ppm으로 엽면살포 하였다. 지베렐린 처리에 의하여 과중은 모든 품종에서 $10\%$ 정도 커졌고 경도는 $0.3\~0.4kg/\phi5mm$만큼 낮아졌으나 당도와 식미는 차이가 없었다. 과경부의 형태적 특성은 지베렐린 처리가 무처리에 비하여 수(髓, pith) 부분에서 내피세포까지의 거리와 내피에서 표피세포까지의 거리가평균 $42.0\%$신장되어 양 수분의 이동이 활발해지고 그에 따른 공급량이 많아져 과실의 무게가 비대해 진 것으로 추정할 수 있었다. 저장 30일 후 과실의 특성을 보면 '황금배'는 과총엽 살포의 스퍼미딘 200ppm이, 수관살포는 스퍼미딘 500ppm에서 과육의 경도가 높게 유지되어 식미가 양호하였다. '영산배'와 '추황배'도 비슷한 경향으로 주당 살포량이 적은 과총엽 200ppm살포처리가 저장성 증진에 효과적이었다.

과숙된 키위 파우더의 Bakery 제품에의 이용성 (Utility of Post-Mature Kiwi Fruit Powder in Bakery Products)

  • 과숙된 키위로 제조한 키위 파우더를 냉동생지나 쿠키와 같은 bakery 제품의 품질개량제로서 이용 가능한지에 대하여 조사하였다. 키위 파우더를 첨가한 냉동생지로 제조한 빵은 빵 속과 거죽의 색이 전체적으로 진해졌고, crumb firmness, 비용적과 관능적인 특성이 좋지 않아서 키위 파우더의 빵 제품에 대한 적용은 어려움이 있었다. 그러나 쿠키의 경우 쿠키의 비용적은 첨가량에 따라 유의적인 차이를 나타내지 않았고 쿠키의 spread ratio는 유의적으로 감소하였으나 퍼짐성은 첨가량에 따라 조절할 수 있었다. 또한 키위 파우더는 오븐 내에서 쿠키의 수분증발을 지연시켜 쿠키를 촉촉하게 할 수 있었고, 유기산에 의해 신맛을 제거 하거나 masking할 수 있다면, 쿠키의 품질(조직감)개량제로서 가능성이 있음을 알 수 있었다.

Morphological Differences between Larvae of the Oriental Fruit Moth (Grapholita molesta Busck) and the Peach Fruit Moth (Carposina sasakii Matsumura) in Korea

  • The oriental fruit moth (Grapholita molesta Busck) and the peach fruit moth (Carposina sasakii Matsumura) are the most severe insect pests affecting apple orchards in Korea. To prevent an outbreak of these two species and to control these agricultural insect pests, it is important to identify them accurately. However, it is hard to classify them when they were in the larval stage since they tunnel into the apple fruit. In this study, surface structures of the two species of larvae were observed using stereo microscope and scanning electron microscope. Distinct differences between the two species of larvae were found. The prothorax spiracles of oriental fruit moth larvae were approximately twice as large as those of peach fruit moth larvae. The arrangements of subventral setae, located around the proleg, were different between oriental fruit moth and peach fruit moth larvae. Furthermore, subdorsal setae of oriental fruit moth were located next to the spiracle on the 8th abdominal segment, while that of peach fruit moth was located above the spiracle. The identification of the two species of larvae observed in this study was confirmed using polymerase chain reaction-restriction fragment length polymorphism method. Surface structural differences are intrinsic characteristics for each species of larvae and can easily be identified using stereo microscope. These specificities will be helpful where a large number of field-collected larvae need to be identified routinely in pest control research.

Fruit Set and Fruit Characteristics of Highbush Blueberries (Vaccinium corymbosum cvs. Bluecrop, Coville, and Northland) in an Open Field and a Rain Shelter

  • Three highbush blueberries (Vaccinium corymbosum cvs. Bluecrop, Coville, and Northland) grown in an open field and in a rain shelter were compared to evaluate the potential benefits of rain-sheltering systems on growth and fruit quality. Shrubs grown in rain shelter flowered 5-14 days earlier and were in full bloom earlier than those in the open field. All three cultivars set fruit by nearly 90% of flowers when they were grown in the open field, but was markedly reduced when they were grown in the rain shelter, to approximately 50% for 'Bluecrop' and 'Coville'. Fruit sets ratio of 'Northland' grown in the in the rain shelter was 14.5. Fruit from greenhouse-grown 'Northland' were larger, heavier, and had more seeds per berry. Soluble sugar content (SSC) of fruits varied both with the cultivars and growing conditions. SSC of fruits grown in the greenhouse was higher in 'Bluecrop' compared to that grown in the field, but this pattern was reversed in 'Northland'. Titratable acid was significantly higher in fruits from rain shelter-grown shrubs of both 'Bluecrop' and 'Northland' than in fruits from open field-grown shrubs (P < 0.05), although there was no difference in TA with respect to growing conditions for 'Coville'. The number of seed per fruit, fruit length and diameter, weight, SSC, and TA were similar in 'Coville' shrubs grown in the open field and the rain shelter. Fruit firmness of 'Bluecrop', 'Coville', and 'Northland' was higher in the rain shelter than in the open field. 'Coville' and 'Northland' fruits harvested in the open field had higher blue chroma than those harvested in the rain shelter. However, this pattern was reversed for 'Bluecrop'. On the whole, sheltering from rain affected most fruit characteristics of the three cultivars differently. Therefore, suitable blueberry cultivars for the rain shelter should be chosen by purpose.

양잠용 뽕품종인 “水原뽕” 의 稔性 및 오디의 果實的 特性 (The Fertility and the Characteristics of Mulberry Fruit on the Suwonppong for Silkworm Rearing (Morus spp.))

  • 양잠용 장려뽕품종인 수원뽕의 임성과 오디의 과실적 특성은 다음과 같다. 1. 종자형성률은 61.8%, 침종자율은 54.7%이었고 발아율은 94%에 달하였으며 교잡성공률은 31.8%이었다. 2. 오디의 단과중은 3.58g로 중대과형이고 오디색은 흑색이다. 3.오디의 당도는 15.7%(Brix), 총산도는 0.18%이며 pH는 6.3이다 4.오디의 숙기는 중숙성이고 착과정도는 청일뽕과 같이 많았다.

  • Finite element method(FEM) was used to obtain an approximate solution, since the mathematical formulations for the problem are complex and cannot be solved analytically. In this study, the fruit as well as the aluminum support on vibrator are discretized into small elements, and the approximate functions are used to describe the displacements in each element in terms of nodal values, and because of the complexity of the problem of viscoelastic materials such as the fruit and vegetables, it was necessary to validate the modeling approach before pear simulations were performed, and the finite element modeling approach was first validated by comparing the results obtained from simulation and experiment for the pear in the frequency range 3 to 150 Hz and acceleration level of 0.25 G-rms. Based on the relatively good agreement between simulated and measured frequencies for the pear, finite element models of tomato and oriental melon were created to study the vibration characteristics of the fruit and vegetables. The resonance frequencies of the pear, tomato and oriental melon using FEM were 62.50, 39.45 and 62.73 Hz and the peak accelerations of them using FEM were 2.21, 1.38 and 1.98 G-rms.

Morphological Characteristics and Antioxidant Activity Changes in 'Autumn Sense' Hardy Kiwi (Actinidia arguta) as Honey Plant during Fruit Ripening

  • In this study, we studied the changes in antioxidant activity of Actinidia arguta fruit of Autumn Sense cultivar during fruit ripening. The aim of this investigation was to find the knowledge of the changes of physiochemicals associated with fruit quality, antioxidant properties (free-radical scavenging activity and reducing power), total phenolics and vitamin C during fruit ripening. The highest free-radical scavenging activity (at $100{\mu}g/ml$) and reducing power (at $100{\mu}g/ml$) in A. arguta fruit were 78.57% and 0.22, respectively. Total phenolic content and vitamin C content in fruit of 10 days after fruit set were $639.48{\mu}g/g$ and $1052.2{\mu}g/g$, respectively. In general, the antioxidant activity and the related parameters, including total phenolic content and vitamin C content decreased during fruit ripening. These results improve knowledge of the effect of ripening on the antioxidant activity and related compounds contents that could help to establish the optimum A. arguta fruit harvest data for various usages.
